總結黎講,呢一餐飯我好滿意!不論氣氛同味道都十分不錯,值得再食!

Lava自家制的手工包,論外型個子與一般台灣所賣的刈包很類似。其實刈包就是白麵割包蒸好後就像一個虎嘴,裡面包滿五花肉,閩南語稱為『虎咬豬』,含有『福咬住』之意,內裡夾住的酸菜,人人稱之為福菜,有留住福氣的意思。

手工包的外表蒸得和暖鬆軟,被切開一半後仍然保持漲卜卜的身型,雪白的外表如果也說成是老虎,這隻老虎也未免太可愛吧。手工包味道輕帶像白糖糕的甜兒,夾住醃洋蔥、叉燒和炸腐皮,層次感很豐富卻又很的骰。

叉燒與以往所見的火紅邊黑的不同,經由醬油醃製過,叉燒被分成片狀,呈半肥半瘦,入口帶著一種五花腩嫩化的口感,潤而不油,醃得相當入味而不過鹹。醃洋蔥爽脆帶酸,正好平衡叉燒的鹹度。再襯上炸過的層皮,脆口十足,比起吃紫菜還要脆得多,一脆一軟的層次口感,非同凡響。

用紅酒慢浸去燴辣肉腸,令腸質保持煙韌而充斥濃醇的酒香和果香,不過當中的酸性都很強,酒酸的後勁很高,筆者有點受不了當中的酸。一開始吃落去味道不太受落,但後來懂得配上洋蔥和車厘茄,令酸性下調起來,吃落去咸咸酸醒,又挺開胃過癮的。

據知廚師會先以慢火燒6小時後再以猛火燒1小時,令外皮充滿酥脆,脂肪位爽而不膩,鮮嫩多汁有咬勁的瘦肉部分,入口散發出陣陣單純迷人的鹹香,比起一般廣東燒臘經典所製造出來的燒豬腩肉少了一份死鹹。再醮點墊底的蘋果薯蓉汁,平衡味蕾的油膩感,每一啖都難以抵擋,每一啖都回味無窮。

齋吃肉類始終感覺有點膩,所以多點一客鹽焗鱸魚來吃。上枱時一早把原本密蓋住的粗鹽拆開,看到的是完整無缺的一條肥美鱸魚,拆開魚肉時還看到近魚肚的位置加了點點蘿勒,令魚香更富清香。

用鹽焗的方法,既可保持魚肉的濕潤度,又可嚐到魚的鮮味,魚骨較大而明顯,去骨也比較方便,容易夾起大大夠的魚肉。一啖咬下去,盡是魚肉的鮮味,一點也不腥臭,肉質滑滑嫩嫩又不嚡口,再淋上大大個檸檬汁來吃,so fresh !

海綿蛋糕不是完整一個端上枱,而是撕開兩、三束隨意擺放,插上藍天白色的蛋白糖霜,再放上兩小匙的雲呢拿雪糕,在碟中唧有幾點果莓醬和數塊食用花瓣,形成一岩一窟、充滿凌亂卻隨心的藝術畫,美麗得毫不簡單。

蛋糕充滿輕盈的質感,微微的蜂蜜香滋潤了不少味蕾,還多帶點幾分杏仁的香氣。細看點點的雲呢拿籽在雪糕上,可看得出餐廳的用心並非用上普通精油去調味,而雪糕底下還墊有香脆的開心果仁,一脆一軟的口感,突顯出雪糕的軟心甜美,最後整碟都一滴不剩的吃光光,但卻令人留下滿足的笑容。

今個農曆新年前,公司特別多嘢做,年尾又多應酬,今晚約咗朋友落酒吧傾偈,鬆一鬆啖氣。去到太子酒吧街,求其搵咗間環境清靜,坐得舒服,就行咗入去,叫幾款小食。巴塞隆拿多士 : 四片法式麵,焗得脆卜卜。每塊上面都放有不同的美食,有牛油果配鹹蛋黃,又有啲放蝦仔、有啲又放魷魚仔、又有新鮮銀魚仔配番茄,每一片都有自己嘅風格。仲可以配沙律菜一同食,又變成另一種味道。西班牙脆皮豬腩肉 : 睇落以為好肥嘅燒腩肉,原來佢係非常好食嘅五層腩,一啲都唔覺肥膩。 豬皮燒得脆脆嘅,腩肉又甘香又美味。作為送酒小食,絕對一流。 不過因為聽朝要趕返工,唔可以飲酒。所以朋友陪我飲水果特飲。完成手頭上工作,一定要再約朋友過嚟,在摸住酒杯底,食住美食,再來傾下偈。

太子酒吧街的酒吧眾多,但要選食物都好食的酒吧餐廳就未必容易了。這家 LAVA 主打西班牙菜,食物質素很有水準!先點了一客沙律,有法國菜苗、48 個月黑毛豬火腿和脆烤藜麥。黑毛豬火腿充滿鹹香風味,片數頗豐。法國菜苗相當鮮嫩,非一般雜菜沙律可媲美。LAVA 手工包是此處名物,有點似刈包,口感軟熟帶有彈性。餡料是慢煮牛腩,一咬肉汁溢出而不會過鹹。千層腐皮亦酥脆,增加清爽感。西班牙脆皮豬腩肉每塊皆是厚切,所以豬皮又大塊又脆!半肥瘦的豬腩肉滋味得很,淺黃醬料略帶酸甜味,清新好吃!西班牙海鮮飯賣相吸引,鋪滿各式各樣的海鮮,燉飯頗 al dente。作為酒吧餐廳,座位難得的全是梳化椅,很好坐!裝飾也不錯,環境不會嘈吵。

餐廳位於太子酒吧街,鄰近旺角警署及港鐵太子站A出口,步行兩分鐘即達。所謂酒吧街,通菜街兩旁有逾幾十間酒吧/ 酒吧餐廳,而LAVA BAR & RESTAURANT是云云中之一。說好的酒吧餐廳,當然先點一杯Mahou Draught Beer ($68),是一款麥啤,小麥味較濃厚,蠻不錯。香煎西班牙辣肉腸配扒紅洋蔥,溫室車厘茄 ($105): 辣肉腸只是統稱,其實不辣,反而經醃製肉腸是偏鹹,一口香腸一口啤酒是完美的組合。西班牙脆皮豬腩肉 ($158): 腩肉即點即烤,豬皮極為香脆,而豬肉爽口滑嫩而多肉汁,有那種'short short'聲的質感,肉味適中,但未許太香濃,如果配Mustard會好一點。西班牙海鮮飯 ($260): 西班牙海鮮飯幾乎是西班牙菜的Signature,不吃也說不通,一般而言,也會做三至四人份量,因此價位會較高。含豐富配料,包括虎蝦、魷魚、蜆、辣肉腸及紅椒等等,飯粒爽身有咬口,但醬料的西班牙風味未及充分。

首先嚟嘅係黑毛豬,我最初以為係一塊豬鞍咁,上菜見到原來好似沙律咁,又幾surprise喎~
將黑毛豬切成一塊塊薄切,配上甜椒同雞油菌,再加上啲火箭菜同車厘茄。
黑毛豬食落去好夠油香,但因為食時夾埋啲車厘茄同菜食,真係好Match ! 
車厘茄超爽甜,火箭菜有非常濃嘅芝蔴味,足以證明係好新鮮啊 !

慢煮咗嘅牛腩煮到一絲絲咁,微微嘅辣更加惹味,點晴在牛腩上面嘅醃洋蔥,少少酸味直情係加分位。
只係牛腩加手工包可能會成個軟淋淋嘅口感,廚師加上炸好嘅千層腐皮,所有嘢都計算好 !

最後就係食西班牙菜成日都會點嘅西班牙海鮮飯 !
啲海鮮真係搶哂風頭呀 !!!中蝦有三隻,一啲都唔小家,調味剛好,唔會蓋過本身嘅鮮味。
啲蜆隻隻都脹卜卜,大大隻,甜。到。呢。
只係因為我本身唔想魷魚,益哂大少 ,不過佢都話幾好味啊 !
