週末喺荃灣,下午茶時間覺得有啲肚餓,又突然想食日式拉麵,Google一下,見到呢間唔係太多人講但係口碑幾好嘅拉麵店,咁就行去試吓。落單紙上面寫住「日本最先端技術、真空低溫調理、真•叉燒拉麵」,似乎係鎮店之寶😆,咁就揀呢個試吓。好快就嚟到,全碗麵鋪滿叉燒,叉燒呈粉紅色,賣相幾好🥰,日本菜包括拉麵,賣相係好重要。飲啖湯先,幾濃郁幾好味。試塊叉燒先,非常滑非常軟熟,粉紅色嘅叉燒似乎係剛剛熟或99%熟,火候控制得好,亦都要本身豬肉靚先至可以咁煮;其實所謂「日本最先端技術、真空低溫調理」,簡單來講係唔係等於「慢煮」🤔😆。點都好,呢幾片叉燒係幾好味😋有要求店員煮最硬身嘅拉麵,雖然我覺得依然唔夠硬,但係都可以接受。如果店內可以乾淨啲就更加好。

平日避開午飯時間,可以免排隊直接入座。店內只有十多個吧檯位,可以看到師傅煮麵過程,有日本風味。大片牆身是人手畫的油畫,可惜地方淺窄不適合打卡拍照。丸京賣的是豚骨湯底,另外亦有魚介湯底和辣味的地獄湯底。湯底又可選擇濃或清湯,另外可以追加配料:叉燒、半熟蛋、荀、紫菜、粟米。我點的是每日限量20碗的「真•叉燒拉麵」($93),湯底選了濃的豚骨湯,另外加配半熟蛋和粟米。粉紅色的叉燒舖滿碗麵,大大滿足視覺效果。叉燒用低温慢煮,雖不至於入口即溶,但總算肉質鮮嫩又軟熟,而且切得夠薄。濃湯有濃肥豬骨味,不會有太油膩漿口感覺,不過食到尾聲會稍為偏咸。拉麵煮得偏爽口,半熟蛋有流心效果,好食!檯上有蒜、辣醬、醋。餃子($30/5隻)餡料是普通椰菜豬肉,但勝在皮夠薄又煎得香脆,新鮮煎成熱辣辣。飲品方面有幾款日本梳打汽水或茶。價錢不算太便,但百物騰貴下$80-90一碗拉麵已經是標準價。

丸京賣的是豚骨湯底,另外亦有魚介湯底和辣味的地獄湯底。湯底又可選擇濃或清湯,另外可以追加配料:叉燒、半熟蛋、荀、紫菜、粟米。

講左清湯叉燒拉麵先啦,湯底清甜,食哂成碗都唔覺得好肥膩或者好鹹,幾適合口味清淡嘅人。叉燒黎講,普通款嘅叉燒都好食,唔「鞋口」,但就無真·叉燒比人嗰種嫩滑嘅口感。

相反,地獄拉麵就真係好濃味,地獄拉麵之所以叫地獄拉麵,係因為佢喺湯底入面加左秘製辣醬,作為小小嗜辣之人,我都覺得個辣係辣得幾過癮,你會見到個湯入面有啲辣椒係度,一覺唔覺意食到都幾刺激下~但係食多幾啖就發現,個麵好鹹,我覺得可能係因為我揀左配濃湯,本身秘製辣醬都有一定嘅鹹度,所以食到後期,我已經唔係好分到碗麵嘅味道,淨係覺得好鹹,要狂飲冰水。呢個我唔怪間拉麵店,因為係我自己配搭嘅問題。

最後叫左個自製餃子試下,個餃子都搞左幾耐先上菜,味道同賣相都麻麻地,餃子皮是幾薄但薄到穿左,同埋煎得唔脆唔香口,可以唔使特別試。

總括黎講,真·叉燒拉麵嘅叉燒係值得推介,至於湯底、拉麵口感等我都會比中上分數佢,考慮埋價錢嘅話,呢間係非常值得去,唔使100蚊食到呢種質素嘅拉麵,算係好好!推薦比糧尾但又想食好西嘅朋友~~

we ordered the tonkotsu shoyu ($63) and the tonkotsu gyoukai ($78), and they can pretty quickly. The noodles were perfectly cooked and both broths had rich broth. I personally prefer stronger tasting broth, but it was still good. Chashu isn't the best but it's also not bad. There is room for improvement!

我同朋友都叫咗極上拉麵,成碗死拉麵上面佈滿叉燒,加加埋埋應該有成七八塊,啱曬啲食肉獸。叉燒佢唔係有燒到表面黑黑地厚身嗰隻,而係薄身食落去有嫩滑,充滿肉味嗰隻, 呢間拉麵就做到嫩口個質地,但又唔會感覺一pat嘢,做得幾好食。而溏心蛋就不過不失,冇話特別好食,同一般拉麵店差唔多,正常味。 


總結嚟講呢個唔係我食過最好食嘅拉麵, 但係以一百唔洗價錢,俾到呢個質數我就絕對收貨, 好過好多出面賣得好貴但係平平無奇嘅拉麵店

呢排呢間拉麵店都幾Hit,次次經過都見到好多人排隊,有人比較夜食飯,唔算太多人排,咁我就同朋友試吓啦!呢間餐廳最貼心係,佢有一個冇叉燒嘅option,對於我唔鍾意食叉燒嘅人來講(唔好歧視我),簡直就係Perfect。呢個option會有返粟米、蛋、紫菜呢啲素食配菜。我揀咗濃湯底,係我鍾意嘅口味,因為濃得來唔算太鹹,個面嘅韌度亦調校得唔錯。店員亦都幾殷勤,一個人負責帶位加送餐,但都幾快手,同埋態度唔錯。🙂🙂🙂

今日提早收工,所以就去荃灣行街,去到路德圍見到有間拉麵,其實都開了一段時間,只是成日都有人排所以今日見冇人排就等不用十分鐘就可入去,麵屋丸京終於食到啦,今次叫了半熟蛋拉麵和义燒拉麵,等當中飲了杯水十分夠凍又好有檸檬味。拉麵湯底有分清和濃湯,味道二款有少許分別但都不太滯的感覺,肉比較薄不油身,肉味都有可以,份量都不少,蛋有點咸,麵質喜歡硬的我就覺不錯,但朋友就覺得有點怪,份量食完女仔可以但男可能就不太夠食。
