一直以嚟都好鍾意呢間pho bar,好耐冇嚟食過,今次就分享一吓。今日2點半嚟到,唔逼人,坐得舒服~至尊 ($98)貪心嘅我唔洗諗梗係食至尊,有齊牛腩、牛𦟌、牛丸、美國牛肉、牛栢葉及扎肉。牛肉肉味濃郁,湯底顏色清澈入味,而且一啲都唔油。仲可以按照個人口味加減薄荷葉、金不換、芽菜及最重要嘅炸蒜!最鍾意食炸蒜,去其他地方食野落單嗰陣指明要多炸蒜但總係冇人理,但喺呢度啲蒜量非常慷慨!金邊粉口感彈牙,而且夠晒有份量,2點幾3點開始食,真係飽肚到夜晚!

位於中環一條小巷中的Pho Bar,店子小小,黑漆漆的門面,店名亦很隱蔽及低調,簡單的裝修,開放式廚房,一排的吧枱,有如日式拉麵店般,師傅在客人面前即席煮麵,很少越式食店會有這樣的裝修。餐牌選擇不多,落單紙只得一頁,只得麵類,沙律,小食及飲品。各款麵類可自選麵底及配料,還可以額外加配料。當中有個很特別的意大利翠玉瓜麵底,很想試,但可惜早已賣光。那便點了生熟美國頂級牛肉金邊粉及豬頸肉金邊粉,份量大大碗的,牛骨湯底很濃郁,不油膩亦不會過咸。切得薄透的半生熟牛肉很嫩滑,炸過的豬頸肉很爽口,但相對豬頸肉會比較油膩一點,金邊粉好容易熟得過淋,但這裡煮得剛好,配上金不換,芫茜,洋蔥,炸蒜等,立即令味道提升。 另外點了一個越南地道小食-炸春卷,見著他們即叫即炸,十分香脆。 食越南菜當然少不了一杯青檸疏打,跟餐加$20 就可以了。

呢碗都唔錯,佢既美國頂級牛肉片真係食得出有分別👆🏻,肉質嫩滑,食落去係無渣架!牛味比牛柳片更濃,而且帶少少油脂香,而且因為係薄片,所以好吸汁👅。

平時都鍾意食越南野,咁岩今日行開中環,來到利源西街見到有間越南餐廳pho bar,就同朋友入去試下。餐廳雖小但五臟俱全,我們找了個位置坐下邊叫野食。一張小小的menu,食物類別不多,好似點車仔麵咁。我們點了一份生熟美國頂級牛肉配義大利脆肉瓜麵,可以自選配料,而我選了金不換,芫茜,和芽菜。另一份pho bar 秘制沙拉,再加多份小食秘制雞翅,兩杯凍奶茶,我們就開餐啦。首先講下個脆肉瓜麵,我第一次食這個義大利脆肉瓜麵,真係好特別,全部都係脆脆的口感,好似食緊麵但口感咬落去係瓜,又好味又爽口,真係好正。而沙拉裡也有這種脆肉瓜,我覺得好好食。秘制雞翅係炸的脆脆的,外面鋪滿sauce, 這個sauce 係秘制的,甜甜酸酸好開胃好好味,這間越南餐的食物同以往食開的不一樣,試到不同既野,真係好有驚喜。

兩碗粉份量也頗多,越式湯底傳統是以牛骨淆製以成,這間餐廳嘗到也不例外,湯底的牛味香濃且不膩。

其中牛腩及牛展煮得非常綿軟,用筷子夾起也近乎會截開的程度~ 
牛丸彈牙,牛味十足!  
牛肉片味重,較美國牛更有咬口一點,各有風味。
牛栢葉比較靱一點,算普普通通。
扎肉爽口彈牙~值得一讚!

秘制雞翼是已開邊的單骨雞翼,方便食用。炸得卜卜脆,即使上面淋了不少醬 (其中一種為蛋黃醬),仍能食出其香脆,內裏雞肉亦保持到嫩滑。輕微少辣十分滋味。
