Marinated Pigeon with Huadiao Wine $180
This dish also known as ‘drunken pigeon’, and it is a Shanghainese cold dish.  The strong and distinctive Huadio Wine infused the pigeon with a deep and complex flavour, leaving a trace of herbal and strong wine aftertaste.  The pigeon was also very tender and soft, unlike many that you would find elsewhere.

Marinated Sea Cucumber with Sichuan Peppercorn and Chilli Oil $180
This is the sliced sea cucumber served with Sichuan peppercorns and chilli oil. The sea cucumber itself was crunchy and had a kind of firmness to it.  The immense flavour of Sichuan peppercorns and chilli oil that leaves your tongue numb and tingling.

The garoupa fillets were soft, flaky and meaty.  The sauce was delicious with the earthy aroma of black truffle and mushrooms, therefore making this dish even more enticing.

Stewed Pork Trotter with Dried Plum $220
The biggest surprise of the meal was this stewed pork trotter. I'm normally not a big fan of them but the flavours were so complex and enticing.  The pork trotter has a nicely ratio of fat and meat, the sauce was appetising and fragrant with the use of dried plum.

上網見到好多名人食過呢間餐廳,而且都讚口不絕,所以訂咗位打算同屋企人一嚐佳餚。由門口到餐廳內既所有裝飾擺設雖然唔係話金碧輝煌,但都已經好華麗。頭盤叫咗蔥油拌紐西蘭青口,味道好清新又唔油膩,做頭盤一流,而且肉質都好肥美!再嚟叫咗脆炸九肚魚,九肚魚炸得非常鬆化,食落一啲都唔覺得油膩,而且啖啖肉完全唔會食到骨,啱哂中意食香口嘢嘅小朋友同老人家!重頭戲叫咗懷舊八寶鴨,一上菜就香味四溢,八寶鴨配埋蓮子嘅清香同鹹蛋嘅甘香加埋真係一絕!最後叫埋甜點桂花糕中和下,桂花糕十分清甜,好推介大家叫嚟做飯後甜品!

今晚係中環收工後黎同屋企人食晚飯屋企人鍾意食中菜於是就黎左呢間中華滙館食先食個話梅南瓜佢既口感幾特別,偏向似南瓜糕而且佢係用話梅浸所以係非常入味而且擺盤都好靚之後叫左隻鮑魚佢係用味淋醃過 好入味而且完全唔會韌炸鳳尾蝦好酥脆,而佢既外層係有用芋泥包住蝦都夠鮮味口感有好多層次黑松露星斑球好香既黑松露味,而且星斑球非常新鮮加左菇類去炒,更可以帶出鮮味鱆魚炒飯不濕也不乾剛剛好鱆魚切得好幼細,可以帶出到鱆魚既香味咕嚕肉粉漿夠薄身值得一讚

雖然食到半飽,但作為今餐嘅主角八寶鴨,一出場已經令人驚喜期待。


無他嘅,因為八寶鴨真係唔多地方有得食, 始終功夫繁複,而且好考師傅手勢, 有賣呢一道菜嘅菜館已經買少見少,估唔到呢一間咁現代嘅中菜館,居然有賣呢啲咁傳統咁大氣嘅菜式, 絕對不得不試。

中菜成日去酒樓食都覺得有點厭倦,好像都係個d 味道. 今次去呢間,睇menu 菜式已感到同平時中菜唔一樣,好多都好有創意好吸引蔥油新西蘭青口 $120一碟4隻,蔥油香味幾香. 青口雖唔算好大隻,但都唔會好腥.酥脆一口腸$80豬腸炸得酥脆而不油膩,而豬腸本身已醃得入味,加上少許七味粉調味就更香口蟹粉焗蟹蓋 $320以蟹蓋裝住起好蟹絲再炸脆表層. 用匙輕輕一畢,兩層口感,香脆炸面加上中間柔軟鮮美蟹肉. 倒上幾滴醋,其鮮味就更提昇每一口都係滿滿蟹絲... 不過定價唔平,$320只有一隻.西施牛尾 $180牛尾以紅棗,蘿蔔蕃茄sauce 烹製. sauce 調味真係唔錯,除左蕃茄酸甜,再夾有紅棗清香. 牛尾本身亦係煮得好軟眠,輕易切開椒麻和牛肩肉 $220講到和牛,我仲以為會好似steak 咁中間係嫩紅色原來係well-done. 牛肉切片炸過外層所以微脆,中間係軟腍牛肉,同個 sauce 幾搭生炒臘味糯米飯 $280飯炒得粒粒分明,伴上切粒臘腸潤腸等,香味更出

第一次黎中華匯館,係高檔中菜。餐廳環境舒服,服務亦都好好,會不斷幫我地加茶。黑魚子流心蛋 $110蛋白軟滑,流心蛋黃蛋味濃郁,加上咸香魚子,得半隻真係唔夠喉。潮蓮燒鵝 例牌 $280一上枱已經好香好吸引,食落皮脆肉嫩,好juicy而且夠入味,唯一缺點係個汁偏咸。花雕醉鴿 $180醉雞食得多,醉乳鴿都係第一次食。醉鴿肉質更嫩滑,充滿濃濃酒香,而且比想像中多肉。水煮星斑 $420湯底香辣帶麻,食到多種香料風味,味道多層次。魚肉口感結實,唔會煮到過火。用上石鍋可保持熱度。欖菜肉碎炒飯 $180飯粒分明,好咸香,不過偏油,再乾身會更好。

為補祝媽咪生日,我特別book了這間在中環的中華滙館,以迎合她老人家的口味。雖然不在大街,但由地鐵站出發也不過是10分鐘左右,算是方便。店內沒有普通酒樓般大,卻十分寬敞,裝橫也很有氣派。先叫了壺普洱,蠻有有茶香味,不會過濃。溫馨提示,那裡的冷氣很凍,要記得多帶件外套。頭盤我們先點了鹿兒島茶美豚叉燒 ($280) 和麻辣口水雞 ($90)叉燒充滿濃郁肉味,口感份外鬆化,這裡的叉燒都偏瘦,肥膏的份量恰到好處,很是滑溜,不肥也不膩,必吃!口水雞絕不會覺得「鞋」口,平常我是不吃雞皮的,但這雞皮不會給人感覺很肥很溜,連皮一起吃口感也不錯,加上帶辣的感覺很香口,很惹味。海鮮方面,我們點了四川豆酥鱈 ($320)魚鱈魚外脆內香, 豆略咸,配合鱈魚就很鮮味,不過如果淡一點會更好,而且油了一點。當然少不了叫蔬菜啦:油雞縱法邊豆 ($180)法邊豆非常爽口,配搭少咸的油雞縱很match。不過,跟鱈魚一樣,油份多了一點兒,不過喜歡吃菜的我也很推薦。還有 鴨汁鱆魚飯 ($230)所謂貴精不貴多,鱆魚炒得剛好好,粒粒分明,料足味道好,加上鴨汁的點綴令炒飯更香很濃,實在不錯。甜品就略為簡單,有芝麻卷和馬拉糕芝麻卷

芝麻卷是凍食的, 好處是重芝麻味亦不會痴牙,甜度適中。
馬拉糕也一樣,不會太甜,十分鬆軟也不痴牙。

整體來說是很好吃的,很優雅也很舒服,而且每台都有獨特的擺設,很有心思,不過價錢並不便宜,想吃好西就要儲多點彈藥啦。
