看到平貝超大的橫截面表示驚歎,師傅在平貝切成薄片再介上多個十字,火炙後平貝肉質厚實,用紫菜夾著像佐酒小吃!


❅ 櫻煮八爪魚
把整條八爪魚足呈現給客人觀賞,再切出最精華的部位,難得地煮得既入味軟腍又帶有咬口,師傅說是有獨門秘方但就不便透露🤭另外伴碟的大根也超有驚喜,無渣清甜多汁!


❅ 北海道厚岸真蠔
嚴選100-150ɢ的生蠔,份量剛好不會太ᴏᴠᴇʀ !日本北海道厚岸灣是出產生蠔的勝地,亦是日本唯一全年都有產出牡蠣的地方😲真蠔的肉身厚肥,海水味較淡令蠔肉的甘甜鮮味突出,挺容易入口的!


❅ 鹽燒太刀魚
太刀魚又稱白帶魚或牙帶魚,是夏天的代表性魚種,師傅用鐵籤串起再燒製,比起刺身料理,魚皮燒到微脆,魚肉帶有豐富油香,最後可以沾少許柚子蘿白蓉ʀᴇғʀᴇsʜ口腔,超喜歡這一道菜式💕


❅ 禾稈草煙燻鯖魚
師傅私心額外準備給我們,特別地使用禾稈草煙燻方法,表面有烤過的痕跡,但內裏則是半生熟的口感,大大提升了魚香氣味,以芽蔥及木魚絲伴碟營造精緻賣相🌾

與鰤魚又名油甘魚同科,是體長達到兩米以上的大型鰤魚,但脂質含量比起鰤魚較少,所以口感肥而不膩!

地金目的意思是在指定產地所釣的金目鯛,品質屬於最頂級!師傅採用湯霜法處理魚皮,即用滾水汆燙表面使其變色成熟,可以活化皮下脂肪,激發出魚皮油脂的旨味🔥

愈呈現橙紅色的赤貝代表愈新鮮,於席前一拍能令肉質即時收縮,證明赤貝非常新鮮,捲縮的赤貝肉更具彈性!

今次有幸試到鳥取縣境港市的熟成拖羅,師傅非常好客,將原條熟成拖羅展示,熟成後魚肉味更加凜烈,肉質則更為緊實!個人比較喜歡中拖羅,魚油味與肉鮮味的平衡度十足😌

富山灣特產白蝦,體型比較細少,蝦肉晶瑩通透,口感黏軟綿密,拌上新鮮海苔更添風味!


❅時不知鮭
ᴏᴍᴀᴋᴀsᴇ竟然會出現鮭魚,就知它一定來頭不少!時不知鮭這個名字很有趣,是指在非洄游季節游回北海道的天然野生鮭,只在每年的五至六月能品嚐到,今次六月底仍有幸吃到!選用禾稈草煙燻帶有絲絲的稻草幽香,加上鮭魚脂豐肉嫩絕對是難得一見的珍品🥰


❅ 炭燒黑鯥魚
全晚最驚艷的一貫壽司,黑鯥這款深海魚帶有鮮甜濃味的特質,師傅事前提早開抽氣扇,於廚房夾出一塊備長炭,輕輕炭烤魚皮,鼻息與舌尖也充滿享受,炭香味遠勝普通火炙☺️

一如既往最後一貫為海膽軍艦,馬糞海膽色澤帶淺橙黃色,口感奶滑濃郁,甘甜而不腥!

🥂Lobster with Lobster Roe Cream Sauce
Most of the meat was taken out already but you can still remove the remaining meat easily as it was cooked just right. The cream roe sauce went perfectly with the lobster without being heavy. Loving the thinly sliced white mushrooms that added a mild fragrance and absorbed the sauce well. Even the strawberries on the side were very sweet. Surely satisfying your taste buds.

Five big beef slices and each had fried garlic and scallions inside. You could dip a bit of the sea salt, rose salt or kombu salt to elevate flavour. The beef itself wasn’t disappointing, but very juicy and beefy. Each mouthful was so satisfying.

In Sanwa Jo, you can taste sushi, teppanyaki and robatayaki at the same place. The sushi here is better than my expectation. Using aging red vinegar as the root of sushi vinegar is the Edomae style. The amberjack, white shrimp and saury fish are the highlights and other sashimi are fine in quality. The communication and tempo of serving is a bit messy and chaotic but the staff is attentive enough that hasn’t affect my dining experience much.
