Sing Kee manages to make this most common dish to be a highlight of the table. We have several dishes that night, but what lingers in our mind is definitely this. Basic requirement, the meat is tender and juicy. What makes it magical is the coating. When you eat this, it reminds you one of the traditional dish “Chinese Caramel Banana”. The coating is not only crispy but it marries with the sauce and when you dig out a piece from the plate, there is like a maltose floss pulling you back. It melts in the mouth and lasts so so so long.

Will definitely come back for this dish, and many more.

📍星記 (Central) Michelin Guide Restaurant Back at Sing Kee, my go to place for quick and good quality Chinese food. This time I was craving for their 大蝦煎米粉底. It is so good. Back at Sing Kee, my go to place for quick and good quality Chinese food.

This time I was craving for their 大蝦煎米粉底. It is so good. The米粉底 was pan fried to perfection with just the correct amount of crunch whilst soaking up all those 上湯🤤

I always can’t resist but kept on reordering their signature dishes whenever I come back which are 椒鹽鮮魷and生炒骨. They are just too good to be missed each time.

The free soup and dessert are always a bonus.

• 三色蒸水蛋

幾位朋友相約午飯揀咗星記。朋友力推之前試過嘅椒鹽鮮魷,我就揀咗馳名嘅生炒骨同藕餅,最後點個清清地嘅蒸水蛋撈飯。等餸期間上咗個例湯紅蘿蔔豬骨湯,無乜味精味合格。魷魚新鮮炸起,全部魚身無魷魚鬚,配喼汁脆中帶稔有驚喜。生炒骨酸甜味道平衡,排骨唔會好肥食到一口炸粉咁,水準保持得好好。藕餅反而有少少跌watt,以前蓮藕比例多d咬落去脆脆地沙沙聲,今次魚肉比例多咗無乜𡁻頭太稔。而且鯪魚肉味道有d重會覺得腥腥地,但鍾意食鯪魚肉嘅朋友就話正。水蛋剛剛好,有蛋味,配料肉碎又唔會好鹹。最後仲送雪耳桃膠糖水,好滋潤~!
