The chef simply seared the beef briefly before sprinkling it with a little sugar then adding the sweet soy sauce. The first piece is rib eye cooked with spring onion. This is also my favorite part of wagyu, soft, tender and rich beef taste.

我們一個點牛,一個點豚肉。
牛是A4近江牛,總共有四片,包括肉眼、西冷、牛肩
豚肉總共有八片,包括豬扒位置、豬肩
看上去色澤粉嫩,油花分明,脂肪比例分佈均勻。

接下來就燒肉了。

先灑一點砂糖在鍋上,再把肉輕輕燙一下,加入醬汁,上菜。
師傅會以味道排列煮肉的順序,比如說比較味淡的會先弄,讓客人可以從淡到濃味的品嚐肉類。

近江牛的肉質軟綿、有嚼勁,先吃一口,再沾一點蛋漿,更加滑溜。由淡到濃味的吃,各款牛肉都十分有特色。
豚肉的味道也非常好,很肥嫩。

配白飯,可以無限添加,不過吃一碗到一碗半就好了,因為最後還會有滑蛋牛肉/豬肉飯,要為肚子留空間喔!

然後師傅就開始燒菜類,豆腐、蒟蒻、麵筋、冬菇、洋蔥、蒟蒻麵等等。蔬菜吸收醬汁、油脂後,更加香甜可口。
有一款菜比較特別,名叫「春菊」,味道跟皇帝菜類似,不是每個人都喜歡喔。

師傅會肉、菜、肉、菜的讓客人梅花間竹的吃。

最後奉上的菜類名為「三葉」,師傅說帶有一點點草青味,讓客人清清味蕾,再享受接下來的滑蛋飯。

滑蛋牛肉/豬肉飯,先把牛肉粒/豬肉粒炒香,加入蛋漿,蓋在白飯上。蛋非常的滑溜,濃濃的蛋香味💞
