Omakase第一印象很多時都係好貴同份量好少,有人會覺得用呢個價錢已經可以食好多次放題或自助餐或日本餐廳。的確價錢系香港咁多種選擇屬於偏貴,但呢一間我誠意推介比有意去試唔同omasake既人。起初呢間餐廳係無意中搵到,主要係對於住葵涌既人要食omakase好多時都要出到尖沙咀,銅鑼灣,但呢間就系荃灣交通同位置都尚算方便,所以就試一試,位置坐落系比較清靜的商場一角。環境比較簡約開明,主要用方形同木製既設計,簡約中帶點嚴肅,坐位間隔闊,每個位既空間都舒適,而且中心位置作為廚師即場烹調的空間都好整潔,擺放位置都好有規律,對於我這種有點潔癖和強迫症既人嚟講真係值滿分,每件用具和食材都存放得好有秩序。另外好感謝全程都有廚師的講解,令我更加容易了解到廚師的各種心思同埋細膩的地方。最緊要係知道自己食緊咩同埋食材帶出的味道。事不而遲,先介紹一下菜式(抱歉,部份名已經唔記得,只係記得味道唔錯)漬物:左上角果個小碟,係煙燻蘿蔔,醃蘿蔔,芥末淮山,個淮山好爽脆帶小小芥末味真係好惹味,我個人非常喜歡。茶碗蒸:入面個蝦膠好鮮甜彈牙加埋個滑蛋同埋有少少湯汁,上面既泡泡都好有心思,連埋一齊食好有海鮮湯既feel。

漬物:左上角果個小碟,係煙燻蘿蔔,醃蘿蔔,芥末淮山,個淮山好爽脆帶小小芥末味真係好惹味,我個人非常喜歡。

八爪魚同八爪魚粒粒吸管,吸管輕輕燒過有點爽脆少少焦邊,純粹個人意見呢個好有心思,好小見有人會專登分開兩樣煮(或者係我見識少),個刺身都好有嚼勁,嫩滑,唔會好似外面食到既橡筋咁咬極都咬唔開。

我個人麻麻地食魚生,但呢度份量唔大都去試下,好多都係第一次食既魚生,因為冇食過好多,所以冇比較冇傷害😆以下純粹個人感想。總括黎講我覺得呢間既魚生比我想像中易入口同埋冇果種好討厭既滑潺潺。

䱽魚(好似係)呢個加左柚子汁,微微燒過後有少少焦香和柚子香。令整件刺身有厚實唔會有種好膩既感覺。

鴨肉,下面一片紫蘇葉同洋蔥,加小小黃芥末夾住食,好有越南菜同韓式燒烤既感覺,紫蘇葉好香加埋小小辣既洋蔥包住一齊食比起就咁食多左一種香葉既清新(純粹個人偏愛香葉)鴨肉本身既鴨味唔太濃,肉既質感好嫩滑。

蠔(品種已經唔記得)味道比較鮮甜,礦物味唔重,比一般蠔既size大,我個人認為蠔味未去到非常濃郁,但佢肉質爽甜我好喜歡。

蟹肉天婦羅,肉質結實而且一梳梳,個炸粉唔會太厚,同埋新鮮食有少少蟹肉汁系入面,我諗住會好鹹,但食落唔會鹹仲會有少少蟹肉既鮮甜。

我個人好喜歡呢個啫喱,秋葵都係我其中一個喜愛既食物,秋葵幼嫩味道清爽,下面啫喱清新帶有少少藻類既鹹味

由於只可以放12張圖片,我選了最愛的兩種手握壽司,每件壽司都係由師傅即場手握(呢句有點廢),重點係佢提到某些魚刺身需要時間解凍會更好味,而且有些需要雪凍保持口感爽甜,每件壽司選用配料都好細緻,可以見到廚師對食材味道配搭要求好仔細好有心機,同埋師傅都有提到每位師傅都有自己既特色,唔係一set咁規限要個個跟住做。呢樣我個人好欣賞,始終食材都要睇時令同質素,配搭會唔會帶比人新鮮感就好睇師傅功力。今次呢個師傅系以下呢兩款壽司比我好大新鮮感。

鬼蝦,蝦肉比一般生蝦較為軟身,重點在於上面既蝦油,真係一試難忘。蝦油本來好容易有腥味或者少許苦澀味,但呢個油有好濃既蝦膏味,雖然睇嚟好似冇咩特別,但食落就會發現因為蝦肉軟身令油滲入空隙,加埋個微微暖既紅醋飯,個油真係令成個味道好融洽。
旁邊的漬物係爽爽小姜粒,好嫩冇渣,小小辣帶有好香既姜味,都係相當值得試。

熟成野生吞拿魚,點解要講明野生唔係想標籤佢,而係師傅準備左兩種熟成吞拿魚,分別係飼養同野生,我個人喜歡野生所以先標明,先講飼養,味道唔錯,油份比較重,好似食緊綿花糖果種化開既感覺,而呢個就係肉質比較實同滑,有彈性,味道較為濃郁,最緊要冇滑潺潺果種感覺。我個人都係喜愛爽滑彈牙既肉質。
另外有喜之次壽司和鮑魚配肝醬壽司味道都好值得一試。
壽司尾聲時上左一碗魚湯,真係不得不推薦,真係好濃郁既魚味,唔係腥味,佢個湯真心令我好有用嚟煮米線既衝動,同埋佢提早少少上令到個胃好舒服,可能自己唔係好慣連續食咁多生野,突然有一碗熱既魚湯果下真係覺得好sweet~
之後就係海膽軍艦壽司,入口果時陣陣甜味,軟滑好似cream咁,之後有一陣淡淡回甘,真係好正。然後就係手卷,詳細既材料已經唔太記得,但味道可以形容一下,入面係好多粒粒既野,爽脆既粒粒加上煙韌既粒粒加埋少少清新(碎上)既葉,令到成個手卷層次好豐富,每一口都咬到爽爽地韌韌地交錯,感覺唔會太滯。
最後師傅都好sweet咁提供一個熱食,湯烏冬。雖然唔係好特別既配搭,但佢記得我地一開始提過有人唔太喜歡食香料既野,呢個我覺得窩心,同埋每一道菜都會問我地有咩感覺,佢又會分享一下材料本身既味道或質感,令到成餐飯都好有互動,氣氛唔會好冷清。好多謝佢地好貼心既安排,送上既甜品都令我朋友好驚喜,每一個小小既舉動都看在眼內,就連一個今晚不停為我地加茶既人我都覺得好窩心,或者咁岩有一班熟客既出現,佢地同幾個師傅既互動都好令我印象深刻。呢個地方比我感覺有一種溫馨,希望呢度可以令多d人認識到同嘗試到omakase呢樣野,欣賞到師傅的用心。以上只供參考,純粹個人意見,人人口味唔同,但都希望大家抱着勇於嘗試既心態。

🍵一開始食個海帶茶碗蒸~
味道十分鮮甜,因為個底有好多具類~

🐟刺身方面都唔錯~

✨象拔旁 :呢款好食~肉爽又新鮮~
而且仲有好靚嘅紫蘇花配襯🌸

✨蛋醋+白子:(驚喜之作)第一次食白子,本來都驚唔鍾意,但食落好有驚喜,師父將外層輕輕燒過,口感有少少外脆内軟棉棉👍🏼佢地自家嘅蛋醋都係驚喜部分😌酸甜酸甜,可以幫單調嘅白子味道提鮮,整體味道更有層次

✨天婦羅帶子:粒帶子好大粒,又夠厚肉,廚師拿捏個火喉啱啱好,中間係緊熟,所以係外脆内鮮甜👍🏼👍🏼

🍣壽司方面~都不錯,最有印象係👇🏻

✨牡丹蝦:内加左少少日本柚子皮~幾清新

✨青魚 :而家係食青魚嘅季節,所以好有魚味😍我本好鍾意青魚,而家食仲加分

✨大toru :我唔太鍾意呢款,因為有筋🙈之前睇好多YouTube,啲omakase達人都話有筋即係唔掂😅但師父話日本人鍾意食大TORU就係鍾意食筋😂但師父都有補充就話如果要做到無筋都得,但就要花更多時間去處理

✨ 不過值得一讚嘅係,佢哋嘅壽司飯酸度啱啱好,好多Omakase 都會自己調個飯嘅味道,我覺得呢間好合我個人口味~~

🍚迷你丼:用左三文魚子、海膽、Toru混合,一睇就會覺得好好食嘅組合,但食落又無想像中咁好味,我覺得個海膽同魚子唔夠鮮甜,海膽都新鮮,但就應該唔係好靚果種質素🙈整體不過不失

🍲燉湯:
燉湯好好飲!師父話當由我一入座就開始整個湯,連個小茶壺一齊燉,個湯係無油~好鮮甜,都係有好多貝類,可以飲倒4小杯,份量都多🤣

總結全餐飯嘅食後感😌👇🏻

餐廳服務好好,好細心,仲不時遞上紙巾,好似有專人服侍咁😆👍🏼👍🏼好貼心
師父都好用心介紹,仲不時問吓我覺得有咩改進😊
話晒都係新餐廳~大家都謹守崗位👍🏼讚

另外值得一讚嘅係~佢個收據會放係個厚卡套比您,正正做法好似係名店買野一樣😆,我覺得咁樣好好,因為我啲收據日左攝又右攝,如果咁樣,我就會收得好好~

食材方面我自己就覺得以呢個價位~可以多少少特別啲嘅食材~或者係擺盤上花點心思~
我明白OMAKASE係重食材質素,但當餐廳本身又係咁新,而係食材方面未敢用到最好,但係呢個打卡時代~我就覺得要係外觀上再花D心思,咁先引到更多人去試先~😌✨✨

每次食Omakase 師傅都會問客人有咩唔食,除了食物敏感之外,會按照客人口味和喜好去度身訂造

一般師傅會避開客人唔食既去迎合其口味
今次令我印象非常深刻係因為小妹由細到大好怕魚皮魚鱗魚骨 見到銀色皮既魚生自然直接跳過

今次負責我哋既料理係阿信師傅
