談起蘭桂坊,很多人都只會聯想起酒吧和club吧?但其實有不少高質食府隱身其中呢~ 今天帶大家品嘗這家主打sushi和teppanyaki的高級日本料理,享受一趟正宗的日本味覺旅程。

❝Teppanyaki Dinner Set❞ — $1380 per head

➤ Appetizer
磯煮鮑魚味道鮮甜香濃,口味不會死鹹, 肉質依然保持鮮嫩彈牙。另一款前菜為水母刺身,即是大家常吃的海蜇,口感清爽,配上酸啫喱同吃十分開胃。

➤ Foie Gras, Seasonal Sauce
煎到外脆內軟的法國鴨肝,吃起來油香豐腴,入口即化,配以新鮮啤梨、玉桂、八角及紅酒熬製的醬汁中和膩滯口感,吃起來清新不膩。最特別的是店家特意以蝴蝶酥代替常用的多士,吃起來口感更香脆,整體口感非常豐富。

香煎過的虎蝦香氣四溢,肉質爽口彈牙,而且有頗多蝦膏。配上酸酸甜甜的賓利士醬汁,豐富整體味道之餘亦能帶出大蝦的鮮味。

非常足料的海鮮洋蔥湯,但略嫌調味較濃重,適合重口味人士。銀鱈魚表面魚皮煎得香脆,魚肉仍能保持嫩滑細膩。湯底充滿焦糖化洋蔥的香甜味,加上大蜆的鮮味,的確風味十足。

➤ USDA Beef Steak
來自美國的牛柳,厚切後在鐵板燒香表面封鎖肉汁,燒至肉質粉嫩,吃時簡單佐以焦脆的日本蒜片、芥末和岩鹽,突顯牛柳肉味及油香。入口有平衡的肉香及油脂,柔軟綿密。

➤ Fried Rice
飯粒炒得乾身而不失油香,粒粒分明,鑊氣滿滿。

➤ Soup
𩶘魚濃湯,以十幾斤新鮮𩶘魚熬製而成,呈奶白色,魚味鮮甜。

➤ Dessert
來自日本的赤肉蜜瓜和靜岡葡萄,清新香甜。

又係時候對自己好啲😌before happy hour,當然要食咗餐豐富嘅晚餐-鐵板燒!先上前菜,有水母刺身,仲有磯煮鮑魚👍🏻好醒胃,又美味。銀雪魚洋蔥湯魚湯特別鮮甜,魚肉依然保持嫩嫩的。估唔到加入蜆肉,冇腥不特止,仲會令啖更出嗰鮮味!鐵板燒大蝦最正係係蝦膏汁,啲精華我一滴都冇留底😂蝦肉有手掌咁長,好厚好扎實。鴨肝蝴蝶酥估唔到會用蝴蝶酥做base!師傅話佢地試過好多間蝴蝶酥,要揾一間又要脆又鬆化又有牛油香又不太甜係好難㗎,好欣賞佢地咁用心!鴨肝入口即溶,仲有蘋果片同蝴蝶酥嘅襯托下,一點也不油膩。厚切牛肉粒7成都仲係咁好味,可能本身都用到上等美國牛,牛味好濃。而且食到呢到,已經好飽!因為未切前都見到好大份牛扒。牛肉炒飯再配以湯和野菜炒飯夠乾身,而且每啖都食到牛肉粒。可以同師傅講走葱👍🏻野菜有芽菜,夠爽口👍🏻仲有湯暖胃。最後會送上人人都喜歡嘅日本蜜瓜同埋提子,糖度極高!

估唔到會用蝴蝶酥做base!師傅話佢地試過好多間蝴蝶酥,要揾一間又要脆又鬆化又有牛油香又不太甜係好難㗎,好欣賞佢地咁用心!鴨肝入口即溶,仲有蘋果片同蝴蝶酥嘅襯托下,一點也不油膩。

呢道菜我好鍾意呀♥️蠑螺好彈牙同好鮮,店員話廚師先將螺肉取出再切片,再放番入殼用特製高湯連殼煮滾,上枱既時候個殻仲係好熱,摸上去辣手嘅🥲不過個高湯因為咁所以超級鮮甜😆我恨不得將成個殼拎起嚟直接飲晒入面啲湯

終於到廚師即席烹調既時候,師傅幾下身手將蟶子放喺鐵板上面煎煮,香噴噴,個個都圍住影相🤓往往新鮮既食材就只需要簡單既烹調👍🏻蟶子王有兩種不同既口感,近頭部分比較彈牙同緊致,而裙邊位置就比較鮮嫩

又係要飲曬啲湯既菜式,師傅用咗清酒連殼煮熟啲蜆,蜆肉煮得剛剛好咬落無渣,每人都分到七、八粒,上面既明太子有提鮮既作用,令到個湯更鮮甜,清酒喺煮嘅過程中將入面嘅酒精揮發晒,所以唔驚飲完個湯醉醺醺🥴

一到餐廳已經見到啲瀨尿蝦喺枱上郁來郁去等我地今晚食佢🤩師傅喺鐵板上面煎香左瀨尿蝦再起肉,大大條飽滿既蝦膏露左出黎😍師傅再放左啲烏魚子碎喺蝦肉上面,令海鮮味更出,同埋烏魚子碎本身自帶天然咸香味,所以食瀨尿蝦既時候就唔洗另外再點調味😋

鯛魚濃湯同埋炒菜係一齊端上嘅,食完炒飯後我首先試佢個炒菜,一食先發現個菜有陣松露味😍原來師傅喺炒嘅過程落咗白松露醬,令到本來平平無奇嘅炒雜菜多咗一陣香氣👍🏻而鯛魚濃湯作為結尾前真係非常適合,魚湯本來就比人感覺非常滋潤同充滿膠原☺️餐廳提前將個魚湯隔左渣,淨返湯既精華端上比客人,客人可以一飲而盡😌飲完個胃暖笠笠好舒服

🍚 Fried Rice and Miso Soup
炒飯炒得夠乾;仲要粒粒明明真係夠哂火候。
另外日本豆苗用左白松露醬去烹調,去除左豆苗本身既草青味、仲可以帶出白松露既香氣以及蔬菜既甜味!
麵豉湯就帶微甜,整體都唔錯!


💡小知識:等小編今日教教大家黑松露與白松露既分別啦!前者味道濃郁,只需要用上少量都已經飄香十足,反而後者氣味就比較細膩多變,果種獨特既香氣有少少難以形容。
不過生吃白松露就最能品嚐到當中既香甜味,而白松露正正就可以令本身清淡既蔬菜增添一份香氣,為菜式帶來一種不同既味道,如果有機會小編都建議大家試下用白松露醬烹調,相信一定令大家愛上呢種口味😉
