Spectacular Sophisticate Fine Dining Experience
A meal in TABLE by Sandy Keung is an amazing roller-coaster ride of real explosive flavours and textures that its difficult to find a Sophisticated Seafood Chinese restaurant which gives you an experience example of all elements harmoniously integrated in each dish.
The main reasons are the elevated level of preparation and all passionate cooking technics.
I was surprised that Sandy prepares all Shellfish that includes shrimp, crayfish, crab, lobster, clams, scallops, oysters, and mussels with Unique Depuration Technique
Depuration of seafood is the process by which marine or freshwater animals are placed into a clean and appropriate water environment for a period of time to allow purging of metabolic wastes and biological contaminants (eg E. coli) and physical impurities (eg sand and silt). Most common seafood to be treated with depuration are oysters, clams, etc, which are most likely consumed raw.
Ozone, the powerful oxidizing agent, is added to the water to increase the efficacy of depuration. It destroys bacteria, yeasts, moulds, and parasites. Ozone depuration is a non-thermal technique applied to sewage-contaminated shellfish to increase the supply of safe and nutritious bivalves. Really after this purification the often results in a greater purity of flavours . dishes offer an excellent balance of finesse experience, surprise and profoundness.
She attention to detail both on the plate and in the dining room is extraordinary. Chef Sandy consistently delivers expectational plates and food both in the signature menu and in the vegetarian menu. Expect incredible mouthfuls with imaginative, often highly surprising flavours combinations, like Lobster Espresso, Hokkaido Uni, 36Hr US Prime Beef Short Ribs, HK Typhoon Shelter Angel Hair, Smoked Caviar, S.A. Abalone Confit Lardo Crudo, Roasted Pigeon-Plankton Jus, Walnut, Chinese Olive Noir, Mud Crab Roe & Meat, Garlic Rice.
Service is very attentive and very knowledgeable about the food and wine pairing . Table have an amazing around the world wine list by the glass and as well by the bottle .

煙燻椰菜仔 口感又咸又硬 平時自己係屋企煮點煮都唔會硬到咁
最正常除左杯house wine同杯水就係個黑毛豬頸肉 不過個肉有點紅
等左一個鐘 可以形容食垃圾
原來心入面black list就算
食完仲要肚屙 一定無下次!
