I was visiting from Honolulu, and we are no strangers to great Japanese cuisine. It was my second time visiting Takigumo and it was always a great experience.  The food was super fresh and they had a great variety of seafood and fish on the menu.  The chef told us they had their fish flown in 3-4 times a week directly from Japan.  I loved their omakase as I didn’t have to think about what to order.  My mother didn't eat too much "raw" fish and the chef was able to accommodate and torched certain

首先覺得每個服務員很熱情,服務周到。點了一個大概二千元 的二人晚餐,有一板海胆,海胆質素不過不失,海胆味不算太出,但沒有苦味,新鮮的。刺身普通不算吸引,吃不出魚味燒魚是一個驚喜,燒得剛剛好,又滑又嫩又夠熱。龍蝦正常發揮輪到壽司又是另一個驚喜,飯好夠味,有些魚又漬過,味道很夾,吃完7件後還有點想繼續。甜品是芝士餅,這個覺得有點HEAVY,未能劃上最完美的句好。後話:最可惜的是,隔離坐了一個性情太活躍的女士,高談濶論之餘,飲酒突然噴酒,濺到我身上,枱上,食物上,遇上這個用餐經歷真有點殺風景,幸好服務員應對很周到,重新清潔周邊一番,換過哂前菜杯碟給我。

疫情前香港已經很多樓上舖鮨店,間間都做 omakase。三年疫情,香港人冇得去日本,鮨店就更加越開越多;同時間,價位方面也出現越來越大範圍差別的情況,未包括酒水最貴嘅可以接近$5000一位,入門級別(午餐價)平均也要$700一位。最近偶然發現有些鮎店竟然可以$400左右一位,就似時光倒流20年,回到omakase 在香港方興未艾、正在茗芽發展的初階。今日就去了其中一間【滝雲】試試。位於金馬倫道以地舖形式經營,以為係港式日本料理。打開門竟然見到一個壽司吧!受制於地舖面積所限,又要預留店舖趟門入口位置,壽司吧的座位佈局就要比較擠迫;尤其壽司吧後師傅準備食材的空間,顯得侷促。蝦蛄拆殼、松葉蟹拆肉都要在一角進行。今日一行六人,有大有細,有老有嫩;安排唔到壽司吧,只獲編配店內最入位置的六人餐枱。除了壽司廚師發板之外,尚有其他多款午市定食;還有二人商務午餐、串燒加自選壽司一人午餐。整體感覺還是比較似一間相最高級的港式日本料理。先付係合桃銀魚仔,好腥、好鹹,好難食。個人口味原因,不太喜歡黑松露醬茶碗蒸;即使撇除表面的黑松露醬芡汁,蛋香唔夠,蒸蛋太稀、水份太多。廚師特選壽司午膳(10 貫)($308)

先付係合桃銀魚仔,好腥、好鹹,好難食。個人口味原因,不太喜歡黑松露醬茶碗蒸;即使撇除表面的黑松露醬芡汁,蛋香唔夠,蒸蛋太稀、水份太多。

廚師特選壽司午膳(10 貫)($308) 唔係坐喺壽司吧前,冇辦法逐件壽司送上,結果分開三輪。第一轉係左口、深海池魚及活北寄貝。壽司造型唔靚,魚料雖然唔係優質貨,慶幸尚算新鮮;活北寄貝相比下較差,有少許腥,唔夠爽身。

第二轉有日本大尾魷、平貝及黑鯥。平貝略嫌太亁身;黑鯥欠光澤、欠油香,未夠新鮮。大尾魷最鮮,口感軟腍,咀嚼下有膠質。

最後一轉有火炙銀鱈、馬糞海膽、蝦蛄(瀨尿蝦) 及大拖羅。一分錢一分貨,馬糞海膽鮮味欠奉;大拖羅有筋膜,雖然油份豐膄,但油香唔夠。

午市商務二人前($580)同樣有先付及茶碗蒸,之後就是時令刺身五選。是日魚料有赤蝦、帆立貝、鯛魚、油甘及煙燻鰹魚,碰巧全部與壽司午膳所選用的食材並不相同。刺身稍欠光澤,品道清淡、欠缺明顯鮮味;但平均質素仍然稍勝於壽司魚料。

和食六選二,揀了汁燒小牛排鹽燒羊架。羊架大件,但肉質唔夠鬆軟,咬落硬身欠肉汁。汁燒小牛排更硬身、欠肉汁,嚼下有渣有筋。

和食味道一般,燒烤肉類質素麻麻。至於壽司,處理魚料的刀功差,整體外型唔吸引;拿起壽司後,飯粒又有點鬆散,魚料亦有缷下來之勢。師傅手藝一般。食材方面尚算新鮮,但食得出唔係優質魚料。當然,只需 $300左右的10貫壽司午膳,還有茶碗蒸及味噌湯,有這種質素已合格,好過不少港式日本料理。如果只要求一頓價錢相宜兼大眾化的 omakase,可以一試,但不要有期望。
