炒麵去了的靠得住魚湯靚粥,試試食品的味道如何。 蠔仔粥, 油皇炒麵,一夾便碎了,辛苦的夾了一些放進口,有很重的醬油腥味,水放得太多,麵也很軟身,完全沒有「炒」的感覺,明顯是,雖然炒麵是用大鑊一次過炒再上碟的,但 再吃了蠔仔粥,粥底非潮州粥般稀,是稠的,應該是一般粥的粥底,有單才勺給客人,但蠔仔粥配普通粥底,而蠔的味道未能入粥;粥底味道還是可以的,不太咸和帶點魚湯的味,值得讚是味精不多,吃過也不覺得口乾,但略嫌不夠滾燙,米漿和米粒不太明顯,雖然易入口,但沒有了粥的質感, 太貴了。

Although mine wasn't the specialty, but I liked it a lot. Not many places congee is this thick, it's thick, smooth, and filling. Can be a little bit more salty or have more taste, but I still find it quite nice. The veggie is good, cooked just right. My friend seemed to like her fish congee a lot, so I take it that's very good as well.

Overall, a very nice congee place, and they have good and fast service. I would definitely go again and recommend friends.

I wasn't having much of an appetite, merely felt like having something light. There's probably no choice better than having congee, and so I also finally get a chance to try out the restaurant. The restaurant had received a Michelin's recommendation, and that made me anticipated even though I actually don't have much of an appetite.
It was not a big restaurant, just a small shop. As it was still early for dinner, the restaurant was pretty quiet when I got in. I flipped through the menu immediately after I sat down. To be frank, their congees are somehow a bit expensive. It makes me wonder if it's really that good and worth the value, given that it's a Michelin-recommended restaurant.
I ordered the mushroom chicken congee in the end. Although it was not one of the recommended dishes and specialties on the menu, I thought it still wouldn't go too wrong with it and my appetite felt more like having this flavor.
The congee was served pretty quickly. I originally expected that it would take some time to wait for it but no, it came in a blink of an eye.

The congee was nicely presented. I mean the scallions and spring onions were nicely put onto the middle of the congee instead of merely sprinkling it over the congee messily.
The texture of the congee was great, won't be too watery or thick, the consistency was just right. It was also well-flavored, at least I didn't need the addition of white pepper for flavoring. I think the congee was probably cooked with a soup base, as it could be tasted out that it was not solely water and rice, so a stronger flavor has been brought out. The chicken was smooth, the seasoning of it won't be too much that it completely covers the freshness of the chicken. In overall the congee was light yet flavorful.
I think the quality of their congee can be said 'as reliable as their name', nonetheless I still think it's too expensive for congee. Perhaps it's the Michelin recommendation that made its price went up, but is it necessary? Is the food that fabulous that it wowed and amazed people and make people come over to try no matter how far, inconvenient and expensive it is? I don't really think it reaches such level. Once in a while, it's acceptable to pay for it, but in most times I don't think I will just come and pay an unworthy value for the congee, unless it can wow me.

生拆泥鯭粥--熱騰騰的端上來,用匙羹一搯,粥底綿綿的掛在羹上,稀稠適中.慢慢地把它吹涼再送進嘴,緩緩噎下,舌底兩邊竟殘留微微的甜味.飲茶就話回甘啫,你點諗到食粥會回甘?呢種感覺真係從未試過.即使稍後發現靠得住啲泥鯭真係超唔掂,粥底我仍舊會俾滿分.筆者認為,一間食肆能不能讓客人返轉頭,獨特性非常重要.靠得住的粥底,好味之處是獨立於生記和新興棧以外,要食這種粥就真的只有在靠得住,難怪坊間的評價能夠那麼高!說回粥料,所謂生拆泥鯭,筆者可以肯定那是急凍貨.肉質霉軟不在話下,入口還有微腥.結果我是挑開了沒吃,奉勸各位還是避開泥鯭為妙.

炒麵--碟頭真的很細,粗豪點其實可以一啖食完.我喜歡把炒麵當成炸麵,用粥把麵泡一下,一來可以令麵變熱,二來吃麵時又可以吃到粥的鮮甜味.單以炒麵而論,算是中上,吃畢碟上沒有多餘的豉油和油膩.不過碟頭真的很細,當作正餐的話準會吃不飽.
夠乾身,不油膩,是一碟不錯的炒麵.

早前跟一名廣州老饕討論過粥品,他說現今的生滾粥很多都是同一款味,原因是粥底味道調較得太濃,結果雞粥魚粥送進嘴裡全是同一種味道.見到靠得住的雞粥標榜用雞湯處理,真的很想邀約他來試試.日後想食靚粥,又多一個好選擇.不過泥鯭是大忌,切記切記!是日一人埋單HKD30,價錢普通.

一大班朋友去完一個 Beauty Cocktail Event 之後, 由於未食飽, 所以就要再去找野食, 因為我地身處灣仔, 所以當中有朋友提議去食生滾粥及其他中式食物, 於是就去了呢一間叫做 既粥品店, 睇完菜牌, 各人都點了自己喜歡的粥品及小食, 由於餐牌上大大隻字話任何粥品食物不會添加味精的, 但我地食完之後, 個個都覺得非常口渴, 而且都感覺佢既招牌好應該改為 先岩呀, 如果真係無味精的話, 以新鮮生滾粥來講, 食完係唔會有口渴既感覺的, 而且佢呢度價錢並不便宜的

餡料來說,不算重油水的蛋黃仍有其鹹香之味,口感上也見鬆化,再加上呈粉質的緑豆味香,和那件關鍵的肥身腩肉,這帶出的味香,可是成隻粽子的靈魂。沾其醬油伴吃,略帶甜味下原來是加了「美極」上去,也不知何解,這鮮味的醬油配上粽子,總是最為匹配的組合。

整體來說,這裡的鹹肉粽也真水準不錯,至於說是全港最佳的出品,倒是有所保留,論餡料份量也是僅夠,來得不夠重手總是美中不足。內裡亦欠上冬菇或花生在內,其實只要是有心機包製的話,坊間不乏上佳之作,如家母沒有「退休」,就一定不會弱於他人。
粥底也真大碗,以口感來說,大部份的粥身也呈現綿滑之感。

來得粥店自然要來碗米皇出品,既然這裡以魚湯馳名,相信來一碗魚粥也是穩當之選。過往多以魚的骨腩作為首選,見到牆板寫上「咀胶好靚」等字眼,就來一點新意,來一碗四十元的魚胶魚尾粥,等候也是需時,到端上來的大碗粥底時,心中也不禁說句「找對地方」

急不及待地舀了一口,這粥底也確真弄出綿滑的口感,來得如膠似漆,內裡也見其爆開了米花,這可是長時間火侯下弄出來的成果。以味道來說,濃厚米香之中亦略帶微腥,正是「食得鹹魚扺得渴」,吃草鯇之魚自然有這味道,嚐不出下酒辟腥這等功夫,唯有灑點胡椒粉上去,其味道總算變得平宜近人。
爆出粒粒米花,是火侯的見證,加上內裡的魚胶和魚味,也真皮滑肉鮮,但要注意多骨。

粥料來說除了少許蔥段之內,主要還是大塊的魚尾魚胶部位,相對於近腩部位,吃不著大啖的魚肉,細骨來說也是偏多,倒是其帶皮及胶骨的部位更見嫩滑,如吃生灼魚皮一般,中間之處總算嚐出些許白肉,沾點醬油下伴吃,對於作為魚怪的我,已是有所交代。

至於Menu提到是首間採用魚湯作粥底的粥店,個人就覺得有點吹大牛皮,自來用鯪魚骨腩吊水來推加粥底之味,已屬傳統做法,外地的評審不明,還以為是獨家特色,若以地區性來說,這粥底在灣仔或銅鑼灣一帶,不失為「靠得住」之選。

期間加了七元來一客炸麵,還說是即炸油條,結果端出來的,是一碟又油又膩的隔夜出品,和上面兩道食品比較,其水準確實有天淵之別,吃這些油器,最好還是即叫即炸,否則的話離鑊亦不能太久,這裡沒見到大大個的油鑊,自己也是敗在心多和疏忽。

尾段來一杯凍豆漿,呈現淡黃的色澤,豆味來說不算濃郁,淡淡的味香,甜度來說尚算適中,難得口感滑溜,是可以接受的水平。最後以七十三元的價錢來結束這一餐,若論食物的評價,這鹹肉粽與生滾粥也來得有點水準。始終其他地區亦不乏可觀的粥品之選,如上環的生記或廟街的粥林等,若以附近來說已能獨霸一方,有機會的話可會品嚐其他粥款或小吃麵食。最後要說傳統的節目值得珍惜,就借此地盤祝各食友端午節快樂

門面貼有米芝蓮的推介,但必然是好事嗎?!
鹹肉棕的味道果真不錯。
餡料是傳統味道,個人覺得可以重手一點。
粥底也真大碗,以口感來說,大部份的粥身也呈現綿滑之感。
爆出粒粒米花,是火侯的見證,加上內裡的魚胶和魚味,也真皮滑肉鮮,但要注意多骨。

我們點的雞粥是手撕雞粥,故名思意,就是用上了手撕的雞絲,再加上粥底吧,雞粥的粥底用了雞湯來煲,可是雞味不太明顯,但總算粥底是夠味的,加上又夠綿又有米香,米花爆得燦爛,加上點蔥花及易入口的雞絲,總算是不錯。

記得曾經有某食店留言說我不懂分味道還是夠味,皆因我說它的食物一定用了味精,其實本人在此重申,本人是懂得分的,那店死雞撐飯蓋是沒用的,食物質素是沒得騙人,人家吃得多了,每次也如是一樣穿煲,在此可能也偏離了點話題,說回這碗粥,那魚的甜味是濃得蓋過了米香,加上適量的薑絲,一點也不腥,至於那四件大大的骨腩,多骨就真的在所難免,然而入口肉質夠實在,蘸一點辣椒豉油來吃,惹味中帶魚肉香,不錯不錯。

吃粥時也要了油條來贈興,油條是軟腍得很的老油條,炸過的油回潮了更是令人難受,如果有再翻炸一回的老油條就會好吃一點,不過用它伴粥來吃,油條中的細孔吸飽了香甜的魚粥,其功能有如火鍋時吃豆卜或冰豆腐一樣,入口美味。
珍珠蠔仔湯當然都是夠湯底,真的很鮮甜呢!

最後嚐的是那碗魚湯,本人點的是珍珠蠔仔湯,魚湯是魚粥之本,所以也是都是很有魚的鮮甜,入口帶丁點的胡椒味,在內的料有點點薑絲、粟米粒、雲耳、豆芽及蠔仔,薑絲切得幼細,吃了入口也不會太辣,辟了腥味而辣味又不着跡,很是細心有意思,粟米粒清甜,豆芽爽口,雲耳爽中帶點酸味,最棒的就是那蠔仔,蠔仔雖小,但卻是粒粒飽滿,入口爆出蠔漿,感覺美妙,這碗湯確是令人想一喝再喝的湯呢,加米線或一點軟飯,又是一頓美味的簡餐。

所謂真金不怕紅爐火,煮出一手好出品的店子,才是真正可以存承下來的味道。

我一向覺得自己有點怪。人家來靠得住,定必吃粥,但我今次來,卻吃了個麵。不是我不想試這裡的粥,而是最近的天氣令我不想吃粥。在灣仔工作了一個年頭,才第一次來靠得住,在未獲米芝蓮推介之前,我已想一試,但奈何同事去過一次,判了死刑,我也因此而未去過。話說那次判死刑的原因,也不是因為這裡的粥,而是因為這裡的稯,所以,今次我不是吃粥,某程度上也是因為想想印證一下同事的味覺。今天中午12點來到,人不多,很易有位,慢慢開始多人,所以如果想吃,還是早點吧。早聞這裡的豬潤不錯,午市套餐就叫了一個正黃沙豬潤湯麵配豆漿。這個麵,配了一小碟豉油,不要少看這碟豉油,應該是加了點胡椒粉的。這裡豬潤應該無經過特別的調味,所以吃豬潤都靠這豉油了。豬潤沒有煮過老,仍帶點爽口感,又有少少粉的感覺,不錯。湯麵湯底是白色魚湯,鮮味並不特出。其實豬潤,最好味我覺得還是那豬潤湯,就像維記那樣,豬潤煲湯煲至的出豬潤渣,這個湯最合我意。如果這個湯可以有這個效果,可能更好。麵條是比較弱的一環,賣相似伊麵,但既不彈牙,又無麵香,只覺得自己在吃澱粉質,真是棄之可惜。豆漿不過不失,雖有點稀,但無加糖水已值一讚。靠得住標榜無味精,但這一餐實在是

這個麵,配了一小碟豉油,不要少看這碟豉油,應該是加了點胡椒粉的。這裡豬潤應該無經過特別的調味,所以吃豬潤都靠這豉油了。豬潤沒有煮過老,仍帶點爽口感,又有少少粉的感覺,不錯。

湯麵湯底白色魚湯,鮮味並不特出。其實豬潤,最好味我覺得還是那豬潤湯,就像維記那樣,豬潤煲湯煲至的出豬潤渣,這個湯最合我意。如果這個湯可以有這個效果,可能更好。

靠得住標榜無味精,但這一餐實在是過份清淡。不設加一,這一餐感覺依舊不便宜,因為我吃完還是不夠飽的。

我然我不會因為吃的不是招牌菜而定死刑,畢竟她的豬潤是不錯的,有機會天氣凍d,我會再來吃個試試的。

上次介紹過靠得住的粥不錯,今次特別來試食他自我吹捧的糉。十分失望!糯米和綠豆的比例不合理,令糉身太散,也可能煮過火了。餡料也嫌不足,而且少得像珍珠鷄餡,不明白為甚麼會夠膽自稱糉王!比它好吃的,香港還有很多!

魚湯粥無料, 粥底是魚湯, 味道OK啦, 不過不失.

粽-店牆上話全港最好味, 誇大吧! 普通, 糯米粒不分明, 一舊舊, 料一般 (又不是綠豆, 肥肉,

在好友推介下光顧,試了聞名的鹹肉粽及肉丸魚腩粥。鹹肉粽沾上清清的粽葉香氣,粽身相對較乾身,味夾微微豆香。粽內餡料不算食多,有一小隻鹹香蛋黄,亦有肥瘦適中的豬肉,味道還算不錯。肉丸魚腩粥方面,配料份量OK,肉丸味道普通,口感亦唔算彈牙。魚腩相對較佳,味道鮮甜,質感結實細滑。粥底以不含味精及以魚湯烹制作招來,老實說,粥底雖味道不錯,稀杰恰宜,但魚香味道不什突出。店中無茶水供應,感覺有點不足。多點柑桔蜜一杯,味道淡淡的,不太欣賞。另外,未知是否漏單緣固,那碗粥需待二十五分鐘加嗺三次才有得吃,差了一點喎?!
