Nestled in TST, this humble wagyu ya, as the name suggested, offers a very decent wagyu tasting menu that you could savour wide range of wagyu dishes. They are famed for its A5 Gyusho Iwate Wagyu 牛匠岩手. It’s specially imported from Japan🇯🇵 and was only available in HK since last year. There are only 1,000 cows per year so grab your rare chance here! The shop even put up the certificate on the counter to show its authenticity and pride. Do give them a try if you are craving for some fatty beef 🤤𝗪𝗮

It was a very nicely done fried wagyu. The wagyu was just lightly heated that the fat just started to melt. The shiso leaves then played a very vital role to give out the unique herbal and grassy refreshness to balance the heaviness. The texture was another highlight! Crispy fried leaves on the outside while tender and succulent meat in the inside👍🏼

How can you not get a wagyu sando when you eat in a wagyu ya? Here’s the upgraded version😍 It was like the ultimate evil yet comforting food. A small bite already filled your entire mouth with templating fatty fragrances from both wagyu and foie gras🤤 A must get here! Since it was very strong and heavy, a salted plum pickled tomato🍅 was served to clean your palate for the main course. It was super delicious and could totally be ok to be put on the menu 🥰

The highlight of the night: a platter of 5 different cuts of wagyu. The staff was very friendly that they could offer you the table side service🔥We wanted some DIY so they only helped with the usuyaki (a thin cut wrapped with spring onion and fried garlic). My favourite was the sirloin for its balanced beef and fat flavour. I mean wagyu are all tender and soft so it’s all about the flavour to me👍🏼 The ox tongue was actually nice too since they got a special sauce with pepper and wasabi that worked well with the tongue. You must get some meat for yakiniku here😍

An amazing clay plot rice. The rice was steamed with maitake first and I was impressed that this small amount of maitake could already give so much flavour to the rice. Then they added the lightly seared wagyu into the plot and cooked for a little longer for the wagyu oil to go into the rice without overcooking it. It was a simple but impressive plot of rice🤩

雖然呢個天婦羅有六舊,大細比較少啲,但食落去有驚喜,賣相精緻,用紫蘇葉包住和牛炸成嘅天婦羅,和牛上面見到有少少金箔。

天婦羅嘅外層炸次非常薄,所以食落去唔會覺得油膩,但會帶酥脆嘅口感,入口首先係紫蘇清香嘅味道,我本身對紫蘇葉唔係好有好感,但呢個味道突出得來我又可以接受,之後就會品嚐到和牛既味道,食落肉質鮮嫩,呢一舊肉味比較重,而且完全唔韌,而紫蘇葉同時可以中和和牛嘅油膩,口感有層次,配搭完美,六粒完全係唔夠喉。

和牛三文治大家可能聽過或者食過,但呢個係有埋鵝肝,組合上已經係犯晒規,上枱時賣相吸引,係兩人份,一啖食唔晒嘅和牛鵝肝三文治,同樣和牛上面有少少金箔,隔離仲有食用乾花同紅葉,即刻有秋天嘅感覺。

釜飯一打開蓋個時已經聞到舞茸既香味,。如果等一陣再搞就可以有飯焦,上面見到有唔少和牛,和牛係靠釜飯嘅溫度燜熟,夠粉嫩,囃落去唔韌無筋,飯食落去係偏粘,軟硬適中,有輕微嘅櫻花蝦同舞茸香味,不過和牛嘅油脂就冇滲入飯入邊,略嫌味道可以再重啲,舞茸入口夠爽,加上蒜片嘅香味,非常惹味。

和牛拼盤:(牛舌、西冷、肉眼、牛三角、薄片各兩塊)這個組合絕對是完美的,不可能不好吃,可以自己燒,我很享受燒的過程。(看圖的拼盤,由於每)牛舌爽彈!西冷是指牛胸脊肉部分,肉質細嫩,接近牛柳的嫩度。高品質的肉眼及西冷牛最好不用燒超過五成熟,要掌握熟成的程度,才能食出真正肉眼及西冷牛的味道。西冷牛較有嚼勁,肉味比肉眼濃郁,油花不算多,但分佈平均,而且有彈性。
