Went to drink tea with my colleagues last week and this place is good as usual. We saw this $10 上海小籠包 and it's surprisingly very good. Their steam rice rolls are always a good choice. Their service needs improvement and the price is ok, not as pricey as their dinner time. Overall the experience is ok.

推門入內就看見一條通上二樓的樓梯,樓梯旁邊有一個凍櫃,儲存了很多真空包裝的外賣老火靚湯,全部都是高級貨色如杏汁白肺湯、原隻花膠湯等,價錢當然比較「鴻福堂」、「健康工房」貴。樓梯的另一方向就是一個大型海鮮魚缸。

對正樓梯的牆壁掛了一個尺寸相當巨大的紅色膠牌,上面用白色毛筆寫上了各種是日精選海鮮,還要用上懷舊中式花碼標註價格,這種標籤海鮮價錢的模式似乎是刻意保留70、80年代小炒店的格局,但80後的香港人應該看不懂中式花碼記數法;今時今日,即使是露天街市及上環一帶的海味舖這些傳統行業,也已經棄用中式花碼記數法了。

餐廳安排我們一行五人坐在樓上,靠近樓梯位置的牆壁上掛了兩幅50、60年代的香港街頭夜景黑白舊照片,街道兩旁都是霓虹光管招牌,現在已經買少見少了。細心留意一下,當中有些招牌如單眼佬涼茶、大方公司等,很明顯是虛構的;再仔細比量整張相片構圖,原來是用電腦軟件推砌出來。

餐廳除了保留舊店的馳名海鮮及鑊氣小炒,也加入了新的招牌菜式:現場即烤燒味,又自誇燒鵝及乳豬頂瓜瓜。在其他分店曾經分別品嚐,個人口味燒鵝並非特別出眾,但乳豬確有一手。五個人分享金牌即燒乳豬(半隻)($358)剛剛好。燒乳豬是現場即叫即烤,由於差不多是每枱客人也會落單的名物,所以也不需要等很長時間,師傅不停燒烤、不斷斬件上枱。乳豬大小只有幾斤,是真真正正的皮薄肉嫩兼沒有脂肪的乳豬仔,亦即是酒樓飲宴乳豬全體的標準。講真,上菜時候除了沒有一首振奮人心的「乳豬進行曲」之外,過程根本沒有什麼分別。當然,好味是否以及質素都卻可以有天淵之別。

傳統廣東燒乳豬有兩種炮製方法:沙皮及光皮,前者乳豬皮鬆化、後者則硬脆。若果講到燒烤技巧及出品達標的難度,光皮其實更難;至於沙皮燒乳豬,由於賣相佳、更加香口、口感普遍被接受,所以無論筵席、酒樓、燒味店都採用沙皮燒烤方法,「新斗記」也沒有例外。先講賣相,乳豬皮的沙眼均勻幼細,顔色深紅,非常吸引,未食已經覺得會好味道。採用了「皮不連肉」的切件方法,乳豬皮仍然微温,最重要是非常鬆化,每一片、每一啖都「卜」「卜」有聲。至於乳豬肉,調味剛剛好沒有坊間偏鹹的毛病;以廣東燒豬來說,肉質已算鮮嫩,蘸一點海鮮醬,也是一絕。

自從禽流感一「疫」,香港再沒有新鮮即宰鵝鴨,新鮮鵝腸已成絕響,但仍然有冰鮮及急凍兩種不同貨源。急凍鵝腸就是那些已經完全去除鵝膏、經過漂白程序,已經變成半透明的貨色,價錢固然便宜一大截,最弊是一丁點味道都沒有,只得爽口。夾起一條鵝腸,雖然也不見鵝脂,但隱約仍然見到脂肪底層,而且顏色啡黃、不透明,咀嚼下來爽、腍、韌三者並存,有微微鵝羶,絕對是貴價冰鮮貨色。相信廚師是花多一點功夫刻意去除過多的鵝脂,迎合現今的健康飲食潮流。

所謂「啫啫」就是用燒到火紅熱燙的瓦煲,將已經煮至六七成熟的蔬菜,再加入馬拉盞、蝦醬之類的濃味醬料,靠熱力逼至全熟。由於瓦煲保溫能力極強,上菜打開煲蓋後將蔬菜放在其他位置會「啫啫」作響,因此得名。這種烹調方法只適用於爽身蔬菜或者菜莖,而且需要裁走大部份綠葉,否則葉片被瓦煲燙到焦燶、變得苦澀就不好吃了,最適宜配合中國唐生菜或芥蘭莖。瓦煲內的芥蘭莖雖然粗身,但廚師將粗硬的表皮全部削走,加上合時、選料又靚,只食到芥蘭的清甜爽脆,沒有苦澀。

We had ordered the Blanched Squid, Dried Seafood and Mixed Vegetable Pot, Royal Chicken, plus the Slimy Spinefoot Porridge. The Blanched Squid is good, with the marinated sauce not too salty and adding the right flavors to the bean sprout and squid. The squid is also blanched beautifully so it is not rubbery in texture. The Dried Seafood and Mixed Vegetable Pot is a common dish found in many Cantonese restaurant. This one has also a nice taste with the vegetable absorbed the essence of the dried seafood and stock, at the same time well-boiled to completely break down the fiber to allow an easy bite. The Royal Chicken is quite tender and marinated well, full of flavors and yet not salty. The ginger and spring onion dipping sauce adds further to the overall enjoyment of the dish, The chicken is not too fat too, which is important as I cannot accept those you would find having a layer of fat under the skin.

However, the porridge is quite a disappointment. The amount of spinefoot is decent and there is also some dried mandarin peel to add the fragrances to the porridge, but it is simply too salty, with a high dose of MSG one can feel. Though strong in taste, for someone who is sensitive to MSG like myself it brought headache and thirsty sensation which is not pleasant. I even had to drink a bottle of coke to lessen the effects.

The service is quite good with attentive and friendly staff responsible for serving our table. He also offered to provide a dessert free when we finished our dinner. But the price is a bit higher than normal, with the four dishes costing a total of $597. In fact we did not order their signature dishes on the night.

My overall rating is 50/100.

名不虛傳~皮薄不帶肉,脆卜卜勁香口,薯片控必食!! 下層肉片微暖嫩口,唔錯唔錯。
2.椒鹽鮮魷
合格有餘~椒鹽味不重無搶味,鮮魷厚身啖啖肉,唯炸皮雖不厚但脆口D更佳。
3.鍋貼小棠菜
驚喜之作~開始以為只係小棠菜上鋪鍋貼,原來是炸小棠菜墨魚餅,脆口鬆軟驚喜十足。
4.琵琶豆腐
味道ok但唔會令你嘩一聲嘅一味,可能呢道菜本身性格不愛出風頭吧。
5.姜蔥桶蠔煲
上枱時熱辣辣吱吱聲,桶蠔大隻沾滿醬汁,姜蔥又夠惹味。

還記得小時候一到新年我便很開心,因為可跟媽媽回娘家拜年討利是(可知媽媽有12兄弟姐妹啊),現在人大了渴望的並非利是而係齊齊整整的跟親朋戚友吃一頓新年飯^0^多謝九舅父相約一衆親友濟濟一堂到新斗記相聚一個快樂的晚上^0^見到支裝可樂大家不難估到一定係車媽媽的啦^0^先來個{揚州炒飯}$98兩位表姨甥主食,我也試了一口炒得頗乾身而且足料非常內有不少爽口蝦粒和叉燒~新斗記出名{招牌即燒乳豬}$698/隻,皮脆肉嫩做到了,但豬件比較凍冰冰吃落沒那麼吸引啊~九舅父將他們那檯的{馳名脆皮燒鵝皇}$498/隻分了半隻給我們 ,可能凍咗鵝皮未算脆口,但肉質軟滑肉香滿滿~{白灼海蝦}隻隻飽滿札實充斥海水鮮甜味很美味喔~{鎮店鹵水頂鴿皇}$98/隻,乳鴿個子魁梧一隻可開六件叫兩隻已夠一圍同吃,咪睇佢色澤不吸引其實鹵得入味非常但又不失肉香,而且質感軟滑比起早前在粗菜館食的更為誘人^0^{鍋貼小棠菜}$118早在10多年前經常和好友Jacky到太子好彩酒樓便是為了它^0^這兒也做得頗出色外層

碧綠蝦籽柚皮$98自從在金紫荊吃過人生第一片柚皮便深深愛上那惹味無窮的滋味所以一見到雙眼發光了,上檯看外表也很可口似的可惜啤水功夫差了點因為還有"澀味"其它味道已變得不重要了!!

雖然新斗記噶門口唔大,不過入面噶野食都喺一流噶,而且呢度如果唔提前book位噶味,排隊喺好難排噶,更何況今日喺Sunday,好彩bb提前幫我book好味,先可以撐抬腳脆皮乳豬,兩個人真係食唔曬,乳豬皮好香脆,而且入面噶豬肉又唔會太肥,鮮嫩多汁。燒鵝噶色澤好靚,睇得出喺只靚鵝!!外皮好脆,而且肉質鮮美,肥肉好少,唔會好肥膩。蝦仁魚翅撈飯,蝦仁好多,占咗半個碟,炒飯炒得金黃金黃,撈住啲湯一齊食口感好特別。粟米炸魚塊超級好食吖,第一次咁樣食魚,好新奇好special!
