前一陣子吃得自己也覺得有點過份,決定今晚吃日本菜,希望清淡點。Sushi Shin是常來的店,但多數午餐,晚上較少來。是夜想多點時間聊天,於是點了omakase, 放心由廚師發辦。先來三片右口魚,爽口,鮮甜。個人偏好爽身白魚,不會太膩。(7/10)再來的刺身,蝦非常鮮甜,溫度是我最喜歡的少許冰涼,就像吃沙律,適當的溫度非常重要,會提升質感。Toro肥美,鯛魚面輕炙魚皮,超薄超脆,也把魚的甜味誘發出來。(8/10)冰葉爽脆,伴微酸醬汁,很開胃。(7/10)炸帶子以紫蘇葉包著炸,外香脆,內熱燙,炸的時間剛好,否則便會韌。(8/10)烤魚鮫比想像中肉多,竟吃不完要打包。(7/10)小杯海膽加蟹子,下面放了少許飯,用小匙舀來吃,這個吃法不會弄到一手都是,不錯啊!(8/10)蟹肉加蟹羔壽司,上面鋪滿蟹肉和蟹羔,當造的海鮮果然無敵。最好的地方,是不用自己拆肉,懶人恩物。(9/10)另一款壽司,魚身輕𠝹再炙燒,滿口油香。由頭至尾,由爽身魚到油份豐富的魚,由淡至濃,安排恰當。(9/10)蜆湯的蜆肥美嫩滑,時間仍掌握得準確,非常美味。(8/10)無花果新鮮,熟的程度剛好,嫩嫩甜甜的,比起午餐的雪糕較健康

I am sorry to hear all these bad comments about this restaurant but I beg to differ.  I come to this restaurant once in a while and I must say it's one of the best in Hong Kong.  The fish is fresh and the chefs are very serious about the cuisine.  Their Tonkatsu is probably one of the best J have tasted in HK.  Light fluffy batter, high quality pork chop and not even a tad bit oily.  There are always special fishes you can order and the variety if sashimi is quite a large selection.  The beef di

It's not over-flavoured and the quality is always up to par and never over cooked.  

From what I have heard in many of the negative reviews I feel that these reviews are very biased and are negative simply because these critics find the food too expensive.  I am sorry to say but $3xxxHKD for fine Japanese food in Hong Kong is really common and sure in North America tastings are around $100-120/head but this is Hong Kong a mediocre meal is easily over $1000 hkd.  

I not here to argue with other food critiques but I just want other people to know that have not tried sushi shin that this place never disappoints me.  Mind you, it's not cheap, but just because Chateau Lafite is unreasonable expensive that does not mean it is not of high quality and worth trying.

Sushi shin 是常來的店,午市來時很難訂位,常常客滿。很多熟客,家庭客亦多,偶有明星惠顧。蠻喜歡午市的sushi set, 可自選,亦可由師傅自己發辦。海鮮都很新鮮,因人流旺,但不知是師傅功力未夠,還是人客太多,影響質素,壽司每有飯粒散落。如以日本師傅的標準,已經不合格。我到日本吃著名的壽司店,都是大師傅親自在人客面前做壽司,如水谷,老師傅功夫紥實,小師傅只是在旁幫手。拿在手上是一件完美的藝術品,顯示了選料、刀功、手藝,全都是以時間浸出來的功力。醬料亦是師傅用掃塗在壽司上,甚至壽司較大件,師傅會切成兩小件給女士,充分發揮在壽司枱與人客互動的好處。午市set,有蒸蛋、壽司、卷、麵豉湯、咖啡或雪糕,份量充足。飯後的咖啡不錯,雪糕也有多款味道選擇。希望香港的壽司師傅要多下苦功,日本成名的師傅都是年紀較大的,證明功夫不是一朝一夕練成的。

Food: starting with the rice, both the temperature and the acidity was spot on but it was too loose. About half of the pieces had rice fall apart even when I was using my hand as opposed to chopsticks. Perhaps it is because the restaurant was fully packed and the chefs were rushing. On the other hand, the quality of the fish was very good - favorites were the Kohada and the Aji, the uni is also of very high quality. Disappointed that you have to apply your own soysauce here - at most other sushi bars the chef will apply the soy sauce for you.

Service: below average service, one of the diner in the group is served first while we watched and waited. This, to me, is unacceptable for a sushi house of this calibre. I have actually never had a sushi meal where one diner is served before the other in the same group. In addition, they also forgot to serve a couple of pieces and we had to remind the waiters. Due to them trying to turnover as fast as possible, we were asked to leave a few times before we even finished the food.

Overall I think the quality of the rice and fish was very high at Sushi Shin, it is unfortunate that the details (rice being too loose, no applicatino of soy sauce etc.) were lacking and the service was, at best, subpar.

This place is always full during lunchtime...even during weekdays.  If you intented to go, you should make a reservation the day before.They have a variety of lunch sets.  I tried a few before and I concluded that the 10-pcs sushi set is best of value.  The set comes with 10-pcs of sushi, 1 maki roll, steamed egg and ice-cream/coffee.For the sushi, they have a list which you can choose from, including medium-oily tuna and sea urchin.  They also have some daily (or weekly?) special which will be

The sushi are very high quality and I just love them.  Many people will say that the set is quite expensive ($250), but I think it's quite worthwhile, especially when you consider the price here for dinner.

There ice-cream are pretty nice as well, especially for people who like sesame ice-cream.

This place is a 2 minute walk from where I live. It looks quite expensive so I never have been there before. Last week my colleague suggested to have team lunch there, so it became my first time. I ordered the 10-choice assorted sushi lunch set, it came with a variety of sushi with rolls. Also it has steamed egg custard and salad as starter. I like the daily special recommended by the friendly staff too, its called Kimmeda. My fav however goes to the uni..word can't describe. But the miso soup lacked the flavor I expect. The lunch cost around $258, expensive, but worth it. This place was a pleasant surprise.

我和老公十二點多walk in入去,見到只有2成滿,但店員說全部位都被訂滿了,只餘下bar位(?!),和一張路邊位,因為很肚餓,所以隨便坐下了,但整整一小時,其他人都陸續走了,所謂book咗的,沒有一人進來,只餘我們2人,卻坐得很不舒適,老公的袋同報紙,亦無處可放,不明白這麼多位,為何我們卻要迫在一起。說回食物,我們在午餐牌上點了燒三文魚和生薑牛肉燒,份量少得可憐,味道也一般,麵鼓湯是即沖貨色,最後連餐茶都沒有。雖然價錢一般,但這樣的服務態度,實在不敢恭維。最後想跟店主講,其實大坑噤多食店,要留住d客,食物之外,比人 一個舒適同享受的experience才是致勝之道。

不過友人和自己都不是對魚生有太大的追求

扁身的稻庭烏冬 口感亦不錯

又是用心的分兩碗上
麵豉湯底煲鮮魚
味道濃郁又有鮮味
真的值得推介喔

晚餐的尾聲還奉送雪糕
有芝麻抹茶提子冧酒等
選了抹茶味
總算為今餐劃上一個美滿的句號


題外話
店員很有禮 服務態度配得起這種比較高級的日本食肆

同行友人極力推介 冰菜
但今趟來沒有貨

Firstly, the table we were given had a 2 cm gap from the table next to us so we felt like we were dining with total strangers throughout the whole dinner. Firstly, the table we were given had a 2 cm gap from the table next to us so we felt like we were dining with total strangers throughout the whole dinner. I expect this at a local Chinese noodle place and not a high end Japanese restaurant.

Secondly, the food took ages to come and they got the order wrong and brought the wrong food. i have also had my fair share of sushi to know that it doesn't take 30 mins to make a handroll.

During the meal, we were mostly ignored by the waiters and waitresses because they were too busy serving frequent customers.

Lastly, most of the time when I have had the omakase at this restaurant, we usually get charged 1000hkd per omakase. However, today the bill was 4400hkd for 2 omakase and one small pot of sake. I honestly don't know how the charge their customers and feel like the restaurant overcharges you when they want to. Most of the food were "seasonal" so did not have a price tag when I inquired why it was so expensive. And the bill took 25 mins to arrive!!

After today's experience, I will never come back to this restaurant again. Everything about this place has just gone downhill. If I want to have quality sushi, there are other places I will go since the meal was so overpriced anyways.

If you want bad service and overpriced sushi then this is the place to go. For others, I would suggest looking for another place cause nothing about the meal was enjoyable!

I went to this restaurant for lunch with my family arriving about 12pm. At about $300 to $400 per person for lunch in this location I would say is not cheap. The food is of good quality but not superb. The environment for a Japanese restaurant at this price point is sub-par. The service I would rate as poor.I was fine about returning back the table in one hour BUT WAS NOT impressed when the Sushi Chef refused to let us add to our initial order as "it was not enough time to make another hand roll

It was also not okay for us to change the lunch set coffee back to ice cream as there was also not enough time given we had to give the table back at 1pm. Literally we felt rushed throughout the one hour meal.

The overall dining experience is that they wanted to squeeze money from people and have them leave ASAP. They were not interested in customer service but just wanted to get your money. I will never go back to Sushi Shin again. BTW I have also been there for dinner and be prepared to drop over $2,000 per person plus get the same service and attitude.

I was a little bit worried about coming here having read reviews for this restaurant. However, I was coming here with my Aunt, who has never gone wrong.I want to state at the outset that I agree that this place is exceedingly overpriced. I want to state at the outset that I agree that this place is exceedingly overpriced. However, if you ignore the value, the food is really good. I will write the rest of this review solely on the quality of the food.

We arrived promptly at 6:45pm and were seated immediately. My overall impression of the place was that it was very small and intimate. The lighting was excellent, which made me very happy, allowing me to take good photos. There was a sushi bar, and three other tables. I later learned that there were more tables in the back. We were seated at a table for four, but they added an extra chair for the fifth person. The waiter gave us menus, but did not really give us time to really peruse it. She started suggesting the fish of the day, and all the specials. Normally, this would really tick me off, but she was extremely friendly. My Aunt was not in the mood to choose, so we specified a couple things we really wanted to try, and then let the waiter help us suggest a myriad of other dishes. The waiter also tried to push us to buy alcoholic drinks, however when we politely declined, she just smiled politely back. After a couple of minutes, our food started to arrive.

This was a tiny appetizer, but very potent and delicious. I really enjoyed the simplicity of this dish and the little kick of spice was very refreshing.

The sashimi was very fresh. The taro was amazing, it literally melted in my mouth. I loved that some were sliced thickly and others were sliced thinly, this catered to everyones taste. The salmon was scrumptious and very fatty. Sashimi of the highest quality.

frozen salad with peanut dressing

The frozen salad leaves were a neat touch. The tomato was fresh and the peanut sauce was good. There was nothing else really special to say.

snail

I am not a big fan of snail, but this was nice and juicy. The snail was very fresh and there was no dirt in the shell which was excellent.

I am a huge fan of scallops. Normally, I really love scallop raw, but this one was cooked thoroughly and perfectly. It was really large, probably one of the largest ones I have ever had. The scallop and the seaweed combination was lovely. It was served piping hot and presented beautifully.

Super fresh, super sweet, super delicious. The portion was large and also presented beautifully. My only problem was that it was served warm. I think that it would have been great if it was served cold with a chilled spoon or fork for an extra touch of class.

This dish was an assortment of the monthly specials and fresh catches of the day. It was so fresh, and every piece melted in your mouth. There were four different sauces that accompanied all the different fishes. The presentation was excellent and the variety of colours was enchanting.

At first, this just looked like an ordinary sea bass. I love a good salted fish, and this was a really good salted fish. It was very fresh and very succulent. The salt really added an extra dimension to the whole experience. The fish meat was juicy, tender, and soft, like a really good piece of steak. I would highly recommend this dish, although it took almost 45 minutes to prepare. It was piping hot when it served and once again presented beautifully.

The uni came from Hokkaido and was orgasmically good. It was really big and the colour was inviting. It melted in your mouth and left a sensational after taste in your mouth. Each piece is charged separately, but worth every dollar.

The soba was very tender. The soup was not over seasoned. The shrimp tempura was excellent; the shrimp was huge and cooked beautifully. My favourite part was the sweet potato tempura. It was large and very floury. Absolutely delicious and the portion was ideal.

The portion and presentation was great. The eel was not over sauced and the japanese sushi rice was great.

The presentation was impeccable. The colours complemented the dishes perfectly. The tofu was fried perfectly. The actual tofu was very smooth and soft. It was amazing. The sour mild sauce also added so much to this dish. We had to order another round of this dish, it was this good.

green tea ice cream

Just ordinary good old ice cream. A great way to finish the meal.

The waiters were very friendly throughout the entire course of the meal. They kept refilling our tea and changing our plates in an orderly manner. When the bill came, I was shocked by the price, but I'll have to admit the food was amazing. I hope this review will reinstate the good status of this restaurant, which has received a slew of poor reviews. Unfortunately, I won't be coming back in the immediate future, but definitely in the distant future.

題外話/補充資料: You have to book in advance if you want to come here in the weekend. The sushi chefs are also very friendly. When we left, everyone waved, said good bye and made eye contact with me.

晏晝突然間想食魚生飯 諗起呢間係大坑嘅舖頭仔~Book 左12點半 去到原來都幾多人! 好在有book 位! 2個人坐bar 枱 可以望到師傅整壽司~首先黎既蒸蛋 蛋好滑~ 不過味就唔係太濃~自選魚生飯 ~ 揀左三文魚,牡丹蝦, 海膽飯有得簡壽司飯/暖既飯 ~~ 當然係簡壽司飯la!飯面有D 紫茶 買相唔錯三文魚食落好新鮮好甜 不過海膽就普通 唔算好甜蝦既口感都係一般蔥花吞拿魚飯呢個飯真係冇得頂!!吞拿魚蓉既鮮味 加埋好香既蔥花食落好開胃! 比起一片片既吞拿魚飯魚蓉更加食到佢既味 !!而且價錢比自選既魚生飯平最後有ice cream / coffee 跟餐~coffee 好香~ 不過有D酸.. 個人唔係太鐘意~試左個杏仁coffee ice cream 味道都okay~

Plan好了的飯局自然令人期待,但有時即興的,或者行到邊食到邊,也是另一種飲食樂趣。這晚就跟舊同學去到大坑覓食,沒布想定吃什麼菜色,隨意的選一間餐廳,推門進去。沒訂位,無緣坐吧檯的位置,要花點眼力才能看到師傅的表演,但也沒所謂,反正我們都有些事要傾,柯打檯大概會更方便。想不到吃什麼,只想吃好東西,索性又師傅發板,實冇死。先上一小碟的餐前小食,是海蜇來的,質感爽口,有微微的辣,同埋頗重的芝麻香,都幾開胃,滿意。之後送來的炸鱈魚片,很乾身,像薯片般,一點不油,咬落肯定香脆,味道也很好,不沾任何醬汁也行。配上醒胃的沙律醬,又會是另一番風味,總之兩種食法都吸引,悉隨尊便。刺身的大集會,據我認出來的,有立魚、油甘、拖羅、甜蝦、帶子、赤貝等等,大致新鮮,盤頭靚仔,食慾大增。當中拖羅肥美,甜蝦很鮮,帶子厚肉又極之鮮甜,吃得滿意。照憤常,刺身打後便是壽司,飯糰握得還可,至少結實,裡頭有wasabi的。池魚壽司鮮甜味不算很好,但已是收貨的水平;白魚的滑溜質感不是人人喜歡,但我喜歡;海膽軍艦是最讚的,份量多,完全沒腥味,有質素。還有一件,火炙左口魚壽司,左口魚本身的味道並不出眾,但經火炙,香味得以提算,再

手卷是吞拿魚做餡,很喜歡這吞拿的鮮味,絕對新鮮,外圍的紫菜卷又脆卜卜,不一會便把整條手卷清掉。

到了熱的食物,鹽燒的A4和牛,據說非常搶手,只剩下一份,馬上要了。個人認為,火候稍為過了,不單沒有入口溶化的口感,咬落甚至有點韌,加之和牛的肉味一向淡口,只靠黑椒的味道,未算出色。

原本還有其他食物,不過實在已飽得動彈不得,唯有叫停,直接上甜品好了。是雪糕,有幾款口味,想要的口味售罄,便來一球最常見的柚子。味道都幾好,有柚子皮在內,合心意。

埋單不便宜的,但在極忙碌的時候抽空出來吃餐好得,已經是最大的補償!
