开业没几年,但已经蝉联了三年的香港Top 1 Pizza,可谓出道即巅峰,用实力说话,是好吃的!·沿着半山自动扶梯一路上坡,SOHO这个路口不仅集结了三家人气bakery,还有常常座无虚席的Fiata/The Savory Project等餐厅酒吧,从白天到深夜都是不间断的活力与热闹。·奶酪/火腿/番茄等Napoli披萨灵魂元素都是DOP级别,光是菜单就能看出对食材自信满满。炭烤是如今意式披萨的主流,没想到Fiata是电烤,anyway,火候把控得相当不错。·【BEEF TARTARE】这里的牛肉塔塔相当有趣,滑韧带筋的肉粒被burrata的浓厚奶香和pistachio的坚果脂香包裹,咸度也很克制。·【PARMIGIANA CONTEMPORANEA】大饼砸上仿佛铺开了一张和谐的田园风光画卷,番茄干和茄子丁的酸甜清爽从这头钻出,愉悦的罗勒草本香又从那头冒出来,底下是奶酪贴着薄薄的饼底拉丝缠绵。·口感更是令人心服口服,饼边在炉底高温的淬炼下膨起,形成小山丘一样连绵起伏的纹理,弹性,焦香,润泽,充分咀嚼时像给嘴巴裹上了散发着小麦香的毯子,打包第二天吃都香得要命。·【BRONTE 5.0】蓬松柔韧的饼边依然像一块会呼吸的海绵,撕扯开来,气孔争先恐后释放着热乎的小麦香气。延展到中心则又柔软起来,托住沉甸甸的馅料,可以像棉被一样卷起来吃。·Ricotta奶油松散地点缀其间,中和了mortadella的咸,口感也更顺滑了。番茄干有点重复,早知道点一款番茄酱base的了,不过这款也很赞。·【TIRAMISU】香港优秀的提拉米苏很多,相比之下这款不算太出彩。手指饼干浸没了但还没完全与mascarpone融为一体。甜度很好接受,espresso的苦香突出,还吃得到细碎的cacao。·Walk-in应该也有位,不过只有60mins time limit,想慢慢吃最好预定一下。店面略拥挤,不过就该是这个热热闹闹的vibe。杯卖🍷一般,配餐凑合喝点,于是刚出门又扭头进了隔壁TSP~

假日同友人行街順便食晚飯,今次去一間人氣店,由意大利人主理的Fiata Pizza,主打拿坡里手工pizza,感覺正宗,之前想去但好full,今次book定位唔洗等。假日的19:00去到已經好多人,堅!餐廳有兩層,格局似酒吧,燈光昏暗,我地2人坐2樓,樓底較矮,坐位較迫,但同時幾有氣氛,但因為空間細比較嘈。餐牌,一場來到即試下人氣之選。FRESCA (Grapefruit Soda),$45,有柚子及微微的檸檬清香,冰涼酸酸地,爽!MARGHERITA,$165,人氣之選,餡料係蕃茄醬、牛乳莫扎瑞拉芝士及羅勒等,意大利國旗主色,餅皮邊位較厚,焦香微脆內裡帶點煙韌,中間餅底好薄,餡料份量十足,芝士味恰好,蕃茄醬酸甜配合羅勒的清新,食起上來唔會好有飽滯感,味道不俗。ESTATE,$225,餡料係巴馬火腿、布拉塔芝士及紅洋蔥果醬調味, 巴馬火腿味道鹹香,布拉塔芝士口感柔軟似乳酪味的,再配合紅洋蔥果醬調味,較為輕盈的Pizza易入口。Tiramisu,$80,以酒杯盛載,賣相精緻,入口香甜軟滑,咖啡味濃郁,略帶點酒香味。2個女子竟然都食得晒2個Pizza~食物果然係有水準,下次有機再戰。

Fiata Pizza is a name that pops up frequently in Hong Kong's pizza scene, especially since it's been recognized with the 50 Top Pizza award. Naturally, I had to see what all the fuss was about. Located in Central, the pizzeria is known for using fresh D.O.P. ingredients imported from Italy.Ordered ESTATE, described as a focaccia with Grana Padano DOP 24 months, Parma ham (24 months), burrata cream, and Alife red onions jam. The ingredients sounded promising, highlighting quality components. While the ingredients themselves were undoubtedly high-quality, the overall combination wasn't quite my thing. The salty Parma ham, creamy burrata, and sweet onion jam created an interesting mix of flavors, but something felt slightly off-balance to me.The crust, however, deserves praise. It had a good chew and a slight char, indicating proper pizza-making technique. Despite being recognized as one of the best pizzerias, with awards in 2022, 2023, and 2024, Fiata Pizza, while good, did not completely win me over. Perhaps my taste leans towards simpler, more classic Neapolitan pizzas. If you're keen on trying an award-winning pizzeria and enjoy gourmet ingredients, Fiata is worth a visit. However, manage your expectations; it might not be everyone's cup of tea.
