Sift Chocolate Cake
這是在下點的,排在第一加上有店的名字,明顯就是招牌之作。表面上是一個四正的朱古力蛋糕,有點似心太軟,切開來又沒有軟心,有點像Mousse但又沒有那麼軟身,但卻保持那種滑溜。朱古力味十分香濃,應該是高級的品種,而最精彩還是香滑當中又混上了脆口的感覺,當中包括蛋糕內的脆夾層、外面的黑朱古力漿,及舖上面的脆片。
對在下來說,這可以說是最夢幻的口感組合,因為在下吃朱古力就是喜歡有脆口的感覺,小時候吃吉百利都是喜歡吃果仁的,而這一個Sift Chocolate Cake就好像是果仁朱古力的終極進化版,就是在下一直期待的東西,可算是在下於香港吃過的甜品中三甲之選。
而查過資料,原來這蛋糕是用上了法國Valrhona的朱古力,人稱「朱古力界的Hermes」。而這牌子的最大特色,是採用了像紅酒那樣的以「產地」來區分不同朱古力產品,80年來一直沿用傳統的生產朱古力方法,其他朱古力品牌都做不到Valrhona的味道,故此是很多五星級酒店及米芝蓮星級餐廳的指定朱古力品牌。
而這個蛋糕,主體是Sour Cream Cake,中間有Jivara(Valrhona四大產地之一,以帶咖啡及牛奶香味聞名的朱古力)製成的奶醬層,還有果糖脆片層,而最後於面頭加上72% Araguani(由兩種委內瑞拉可可豆混合而成的Valrhona系列)製作的Ganache(加入乳製品軟化而成的半融化朱古力)。
果然是系出名門的作品,天生優秀的朱古力食材,加上後天用心製作混合得非常好的口感,絕對是一試難忘之選。

Sticky Toffee Pudding
那Pudding本身就像是普通很鬆軟的蛋糕,又或者像麵包那樣,上面淋上了拖肥糖漿,對在下來說並不是很對的口感和味道,可能是要很喜歡拖肥味道的人才會懂得欣賞。
但在旁邊的香蕉雪糕卻很不俗,淡淡的香蕉味道加上不太甜的雪糕口感,不像是一般預製的貨色,如果把這個雪糕運用在其他的甜品上可能會有更佳的效果。而那個裝飾的焦糖脆片在下沒試。

Chocolate Fantasie
顧名思義,是全朱古力主打的一道甜品,總共有四種,包括Chocolate Napoleon、Chocolate Creme Brulee、Warm Chocolate Tart、Caramel Mousse Cup。Napoleon是脆但沒有太大感覺,Molten Cake就是心太軟,朱古力香濃的流心很不錯。Creme Brulee在下本身就對於這種甜品的口感不太欣賞,就算變成了朱古力味也是如此,Sorbet放在明顯是超冰凍的杯內,故此吃的時候還要花一定的氣力。
應該也是用Valrhona朱古力,如果是朱古力愛好者的話應該會覺得滿足,但對在下來說因為這個甜品「太朱古力」,四種東西都差不多是純而濃的朱古力味道,感覺就如把排裝的朱古力一塊一塊的放入口,感覺有點膩,不是在下的那杯茶,不像上述那個招牌蛋糕,蛋糕、Cream、脆層混合口感那樣豐富。

Chocolate and Strawberry Pavlova
在Menu內排第二,又知道是名物,但在下完全不知道Pavlova是什麼,回家查完之後發現是這樣的東西。
Pavlova是一蛋白及糖霜為主的甜品,再加入醋、粟粉、雲呢拿等,以慢火焗的方法,造成外層鬆脆,但內層卻軟如棉花糖的結果,最後於上面加上生果而成。
名字是源自1920年左右,俄羅斯芭蕾舞家Ánna Pávlova去澳洲及新西蘭表演時,紀念她到訪而創作的,現在已成為澳紐兩國節日的主要慶祝菜式之一。
吃下去的感覺,很特別,如上述那樣,脆和軟的感覺混在一起,你可以想像是麥提沙的口感,只是內外層倒轉(吃進口內混在一起就是一樣啦)。
然而問題是這個蛋糕本身很甜,在下是愛甜的人也覺得太甜,配合有點酸的士多啤梨混在一起吃還好,只吃蛋糕部分就真的會投降。配上的是Chardonnay Gelee,Chardonnay是一種很流行的白酒,用來製成啫哩,又是很新鮮的感覺。
整體來說是新鮮感十分,但味道卻未得在下的歡心,值得試一次,但不會有下次。
之後朋友看到有外國人在購買Cup Cake,於是她就好奇地去詢問,拿來了一張手寫的Cup Cake種類表,之後我們就叫了兩個來吃。
拿回來的是這個包裝的,看來Cup Cake真的是外賣限定,但我們當然也在現場把它們KO。
其實是很正常的東西,就像我們吃的「說謊蛋糕」,蛋糕本身是鬆軟,味道OK,但問題就出現在面頭的Cream,實在是超超超超超甜,吃下去有如吃朱古力味的砂糖。
在下愛甜也覺得太Over了,朋友直頭把餘下的Cream抹走才吃。或者,是吃慣超甜Donut的外國人才喜歡的甜度吧?事實上外賣Cup Cake的人,在下所見全部都是外國人。

總括來說,這店的甜品是令人驚喜的程度,配得上其價錢,就算在下覺得不好吃的,大概是因為在下的口味和外國人不同吧?此店的顧客,在下幫趁的時段超過一半是外國人,以他們的口味做主打也無可厚非。
之後順手上網看食評,基本上所有劣評都是因為其服務而非甜品質素,所以其水準是不用懷疑的。而提及服務,在下覺得是OK,不會太差。的確此店的人手太少,三個員工要招呼十多個客人、倒水倒酒,還要為甜品加裝飾上菜,絕對不夠,但在下又不見有黑面的情況,頂多是沒有笑容埋頭工作而已。
幫趁了一小時左右,加了兩次水,在我們臨埋單時他還想加第三次,算是不錯,見到我們開始拿錢出來他自動去埋單,可以說是很醒目,或者有人會認為是趕客?
其實以高級餐廳的服務水準比較是不太對的,在下覺得應該用酒吧的服務水準去比。酒吧的Bartendar基本些就是默畎地抹杯不理客人,在下認為這店給人的感覺就是這樣,一邊吃甜品飲甜酒一邊聊天,不受店員騷擾反而更好。
但的確,因為店面太細,滿座時店內是很嘈吵的,絕不能靜靜的聊天,或者是適合三五個愛甜的知己來的地方。如果要服務的話,或者去五星級酒店吃會更適合。
絕對是適合愛甜品人士一去的地方,個人推介Sift Chocolate Cake,在下有機會路過也可能會再次幫趁!

因為有friend同我一樣失業就有機會同like dessert既人一齊去這間Dessert House3:15pm arrived, the table next to the window has been occupied by 4 Japanese and Honkie ladies. We were very suprised that someone was even earlier than us to arrive, cause you know the opening hour start from 3pm.......This was the first time i have been there and found that the shop is really really tiny, like a shoe case. Only 3 tables and some bar seats, and a backyard (no idea how many seats will they have there). The amtoshpere is not th

The amtoshpere is not that good in the daytime, i don't think they have enough lighting system at all, very dark inside.....

Things that order:
Chocolate & Strawberry Pavlova - Me
I think it did a fantastic work for Choclate Pavlova. i liked the crunchy texture when i knocked it. It was fragile. When you put it into mouth, actually it melted. It was absolutely very sweet by it own, but it was balanced when having it with strawberries and cream.
Chardonnay Gelee, is not my food, i don't like bitter. After flavour of bitter, it changed to flavour of berry jam, sorry......

Variation on Strawberries - Friend
I tried his Strawberry Vanilla Panna Cotta. Very nice, very strong vanilla flavour but the surface was completely dry out when refrigerating it. Except the "dry out" surface, it was perfect. Other two items were just so-so.

If the weather is good, i prefer sitting outside, cause the room is very tiny and the "open kitchen" is just next to the customer, so it is very din always. it was one of the drawback.

One more thing disappointed me was they couldn't serve ice-cream due to the ice-cream machine was broken..sigh..cause i really wanted to try the Sticky Toffee Pudding which contains banana ice-cream on top.....Hope ice-cream can be served when i go there next time.

It is my favorite dessert place. Just that sometime I feel bummed out with the waiting and having to leave when you finish your dessert. Like what many other say, you can't just sit and chill with your friends, unless it's a quiet night.But I have to say recently though their quality has slightly deteriorated.Unlike the usual, the pavlova was not chewy inside, it was too crunchy. Is it cause they are too busy with managing so many stores now?Hope the next time I go the pavlova will be as good as

星期6,係我第一次夜晚去sift (之前都係tea time)~以次係我專程帶幾位朋友去食 !!!!好好彩我地早到唔洗等.之後我地order 左4 杯飲品 + 4 款dessert ,味道不錯,特別係strawberry polova ~^^~可惜........食左陣人流開始多,環境較噪吵加上地方有d迫 ~而且一位應該係經理or owner 既女士要求我地結帳...(可以唔埋ma..?)本來想好好同朋友傾陣計...都唔得我地埋單時,我地後面有幾位客人等 ......(茶樓ma...?)最後我們唯有再搵地方坐 .....雖然sift既 dessert 係好好味,但甘既服務 & 環境...就令人止步!!!希望下次夜晚去都可以有下午既service la ........

given there was a very huge minimum spend for booking out the whole place, i've pretty much tried everything this place has to offer. most notable must try is the strawberry pavlova and the sift chocolate cake.

the sift chocolate cake was heavenly, really good mixture of ganache, crispy, cake. although all chocolate, still complex flavour and texture but at the same time not too sweet. so it was possible to finish the whole dessert oneself.

the strawberry pav was gorgeous as well, crunchy on the outside, chewy inside. named after a russian ballerina, my russian friend approved (tho it's NZ in origin). the champagne jelly was not that great though, if it is to clear one's pallet, it was a bit too bitter and dull, would be better if it had more strawberry/rasberry flavour.

the macaroons here are not bad. again still can't compare to laudree's gems but it'll suffice till my next trip to paris.

also had a birthday cake from here, forgot which one but it was also very good.

yes service here really sucks, and worse if the owner is there cuz the staff seem so nervous in front of her. so if u can ignore that then you'll enjoy the desserts here. sitting at the back outside might be a good idea then u don't get exposed to the bad service as much.

today下午同同事又經過sift ....平靜悠閒令我想起上星期6既恐怖經驗.........成反比本來開開心心食完dinner 專程去食-sift 既甜品去到人頭湧湧...幸運我們係兩位好快到~我地order :最好味既pavlova x2 =脆而且煙韌,very good 一隻細既champagne=易入口,nice ^^可惜以係餐店環境極噪吵,而且好似人手不足,order,收錢,收位,整甜品都係兩個女仔做,另一位疑似owner以女士,不斷要倒酒給我們,但我們一半都飲到....=="(好似趕客甘)之後仲精彩bar檯得三個位入4個客...仲要個客立係到得到,翠華 都會要求d客人甘做 ~其實想做多d生意唔係唔o岩,但希望可以顧及其他客人既感受...?

Not as "original" as they make out to be but some enjoyable desserts nonetheless. the strawberry pavlova exhibits the right degree of chewiness and its sweetness is balanced well by the slightly bitter strawberry gelee. The sift chocolate cake carries hints of hazelnut - very light and won't make you too full. The chocolate fantasie on the other hand is much richer overall and was probably enjoyed the least out of these four desserts because it was 1. too much chocolate for my liking, and despit

I wouldn't give much praise to the service in this place but it wasn't bad enough to be worth complaint either. All in all, I had a good afternoon here.

so i got a chance to visit sift again and expected much improvements after my last very-unhappy experience, turned out nothing has really changed and i doubt whether i would come here again, EVER.first, their menu NEVER CHANGES. perhaps the owner is just not creative enough or couldn't make any better desserts but hello, we do need to see some changes in our lives. new items should not only be introduced during festivals but maybe....monthly? honestly i feel sick trying to pick something from yo

first, their menu NEVER CHANGES. perhaps the owner is just not creative enough or couldn't make any better desserts but hello, we do need to see some changes in our lives. new items should not only be introduced during festivals but maybe....monthly? honestly i feel sick trying to pick something from your menu because i have tried every single item on your menu and would seriously like something new for my taste buds. seasonal desserts should be introduced, rather than only chocolate, chocolate and chocolate.

had strawberry pavlova and wow, it's completely collapsed. strawberries were sour (please consider using korean strawberries, you'd appreciate its sweetness) and it's just isn't pretty.

i feel kind of sad to see HK has no other proper dessert place. sift is almost the ONLY choice when it comes to dessert bar or so, despite the fact that sfit is super overpriced for the food served and for the horrible service provided.

Chocolate Fantasie - 喜歡朱古力的人一定會愛上這個甜品的~ chocolate napoleon很脆~每一樣甜品都充滿濃濃的朱古力味~不過我在四款甜品之中比較喜歡chocolate creme brulee…很濃很幼滑~不會太甜…剛剛好…

Apple tarte tatin - 我還是第一次吃~非常非常喜歡這個甜品~原來Apple tarte 本身是因為一次錯誤把撻反轉來烤而發明的, 這都是開心的食友告訴我的呢~這個製成品出奇地好吃~ tart和蘋果微溫再配上雲呢拿雪糕…甜度剛剛好~perfect!!!! apple cider granite是蘋果酒碎冰…酒味不算很濃…我也吃得下…清清的可以中和口裡的甜味~很不錯…而伴碟的那塊糖膠就有少少苦呢~不知道用什麼弄的…但賣相就很漂亮~

Variation on Strawberries - 這個是我的強烈推介~strawberry vanilla panna cotta, 奶凍很幼滑…如果把strawberry都溶進奶凍裡面…味道可能會更突出~中間的strawberry napoleon…香脆的酥皮夾著又香又滑的cream custard, 再配上粒粒帶點酸的士多啤梨~very nice~不過要數最得我心的就是那個mini strawberry baked Alaska…即是焗雪山~但是這裡最不同的地方就要用軟軟的綿花糖做外層…而非蛋白~外面的綿花糖輕輕的燒過~再配上中間的strawberry sorbet和鬆軟的蛋糕底…是我吃過最最好吃的焗雪山呢~而且賣相亦十分可愛呢…

最後的就是食友盛讚最好吃的chardonnay gelee…但是有酒味的~不適合我…我只覺得好苦…sorry~但是chocolate and strawberry pavlova我就很喜愛了~要是下次我想吃這個甜品的話~一定要帶一個喜歡chardonnay的人了…原來pavlova是源自sheep的家鄉紐西蘭的呢~這個pavlova外面脆…而內層因為有大量空氣打進蛋白裡…所以十分鬆化…配上cream和strawberry一起吃就最好不過~因為那些strawberry實在太酸了…哈哈哈~

我從來都不是一個甜魔…甜品真的一款起兩款止...不過我今天發現了更多我從未見過的甜品~對甜品又有另一番的體會~確實要帶sheep來試一試才行呢~

之前跟一群朋友去試看看甜點,我只能說在中環開甜品店,價位不低,卻完全沒有服務的一家店。 真的不知道為什麼還有人會繼續去消費。 有可能老闆以為選在SOHO,針對某消費族群就可以賣甜品賺錢,但完全沒有客服的專業,仔細想想老闆只想賺錢,不怕沒有新的客人上門的心態吧。 有時候不能怪服務員,他們只是打工,老闆才是幕後的最大責任。SOHO是競爭很激烈的區域,相信常去那邊的人會認同SOHO地區的餐廳一致上服務都還可以,但沒想到一家小小的巧克力甜品店可以經營的那麼的驕傲,我不會再回去消費,相信在景氣不好的時機下,消費者是聰明的。 這只是分享的我的經驗,但我都告知我朋友別浪費錢,不值得。

琴晚同兩個朋友去左間好耐無去過既dessert bar ~我order我既最愛既sift chocolate cake ,真係好好味,特別係有層脆脆!!^^b,但之前係同海怡個間試過都係中環味道d ,層次感好d ~仲有chocolate cup cake ...但有d可惜有小小乾同butter cream好少,=/\="海怡個間可能係cup cake專門店,so 好食,而且butter cream 亦較多點 !!!!! 最後係佢地推介既Chocolate Fantasie ,係朱古力fans一定要試 ,有4樣不同既朱古力變化有脆脆既拿破崙,有熱食既流心chocolate tart <-最熱,皮又薄又脆 ,而creme brulee亦更滑,仲有好濃郁既sorbet ,正小小的店鋪, 雅緻簡單既裝修,店員態度都友善,適合三五知己談天!!!

同幾同事去soho食完dinner 後,想搵間有dessert食既地方坐坐 & 聊聊天.同事先這間店既chocolate cake isreally famous !!!去到先地點了4款:sift chocolate cake =really really nice apple tart = 擺碟精美,但份量較少.....Sticky Toffee Pudding=本人pudding 夠鬆軟& sacue 夠熱,覺得really good !!!!值得推介strawberry thing = 有3款用strawberry不同口感既食品,精緻又好味,但有點稍甜 ~服務態度都ok ,女同事問了不少關於dessert,佢地都有答都有笑容~環境都不錯,特別有outdoor ,so nice,but太凍我地係坐bar 檯 !!!!(open kitchen)Even though the price 有d 貴,but quality is very good !!!

上星期天,我帶我的女友去這裡食甜品因為是她生日。本來以為這樣的安排會令她很開心,點知這間店的服務態度令我們食到一肚氣。我每次想落order,個員工都扮見唔到,同埋當我問店內的員工有無外賣時,她竟然說"又問"。我只是問了她一條問題,真係估唔到今時今日竟然有咁嘅服務................:
