其實我成日係九龍城食野,一直無為意呢間坤記。本身對牛腩唔係話特別好,之前食過間中環老字號都覺得不外如是,真係屋企個工人姐姐都整到甘上下。好啦入正題,係坤記個feel好唔同,唔逼而且裝修懷舊。聽夥記聽叫左碗沙爹崩沙腩同清湯腩,食左第一淡已經嘩出黎,點解之前唔黎試下!口感真係無得輸,仲有最緊要係超抵食!埋單一日都係一舊水甘上下,邊到搵!

My friends wanted to go to Kowloon City for lunch. I searched on Openrice and suggested to try this noodle shop which is famous for beef brisket.My friends and I all ordered a bowl of beef brisket noodles. You can choose the type of noodles you want. I chose vermicelli. Each bowl served with 6-8 pieces of beef briskets and a lot of green onions. So special reminder for people that dislike onions, please let them know that you don’t want any in your noodles. Beef briskets were very tender

My friends and I all ordered a bowl of beef brisket noodles. You can choose the type of noodles you want. I chose vermicelli. Each bowl served with 6-8 pieces of beef briskets and a lot of green onions. So special reminder for people that dislike onions, please let them know that you don’t want any in your noodles.

Beef briskets were very tender, and we could taste a very nice taste of marinated sauce. You can let the shop know on what texture you want for your original noodles as I heard some customers from anther tables wanted their noodles less chewy.

晚上有事、所以5 點多就要開飯、路經九龍城、一於嚟坤記牛腩試一試。由於時間尚早、基本上只有二、三枱客在用饍、非常舒服。~ 清甜蘿蔔好、夠清甜腍滑、火喉足、睇得出老細願意買好嘢奉客。如果要挑剔的話湯頭唔夠熱、加上舖頭冷氣強、不用2分鐘成碗蘿蔔就涼哂、味道也打了節扣。。。賣$23 蚊一碗但比足料!~ 牛丸、墨魚丸米加腩汁走蔥好、好、今次成碗嘢熱辣辣、湯頭清爽可口、火喉足。牛丸係選用牛筋丸、牛味足、墨魚丸爽口料靚!~ 咖哩牛腩飯可以、雖然咖哩汁標榜係師傅用咗37年功力嘅秘方、不過。。。作為一個咖哩粉絲的我、個人對港式茶餐廳的咖哩汁並沒有太大愛好。。。。。。賣$54 蚊一碟非常合理!

牛腩的味道,雖然還是有點甜,亦都煮得非常之入味
,不論牛筋,抑或牛腩,其實滷水味都挺香濃。但是與本人一向喜歡哪一種清湯腩的甜香,卻有少許分別😑。
牛筋,其實非常軟林,軟林得來又不會覺得太化🤗。牛筋上面亦都不會黏着有毛,這個值得一讚。而牛腩,夠林,瘦處亦都不算非常痴牙。


辣椒油的味道算香濃,不算是一味死辣,有點粒粒在裏面,但不知是什麼,好像有點輕微花椒及蒜香😯。





總括來說,由於牛腩不是我最喜歡的部份,而且湯底也不像清湯腩那般,感覺上滷水以及柱候味
的味道比較濃郁,因此不算非常之欣賞這間坤記牛腩的味道,和港島區那間九記一樣,都是試一次便夠了。

星期六, 無節目, 見好耐無去九龍城醫肚, 就專乘去果度覓食, 記得去年食過坤記, 佢地既牛腩雖然唔平, 但真係好味, 今日決定食過反尋味, 叫左坑腩河走青嘆下, 點知........ 一啖湯先入口, 咸到傻...., 舊腩又UN 又實, 已經唔想食落去, 再夾一住河粉, 硬.... 而且有D 冰凍, 睇嚟已煮定好耐擺到.  咁既水準收 $68,  , 普通面檔都好食過佢, 下次請都唔嚟.

星期六, 無節目, 見好耐無去九龍城醫肚, 就專乘去果度覓食, 記得去年食過坤記, 佢地既牛腩雖然唔平, 但真係好味, 今日決定食過反尋味, 叫左坑腩河走青嘆下, 點知........ 一啖湯先入口, 咸到傻...., 舊腩又UN 又實, 已經唔想食落去, 再夾一住河粉, 硬.... 而且有D 冰凍, 睇嚟已煮定好耐擺到.  咁既水準收 $68,  , 普通面檔都好食過佢, 下次請都唔嚟.

這裏標榜吃新鮮牛腩,香港普遍吃到的牛腩都是雪藏貨,這裏是其中一間能吃到新鮮牛腩的粉麵店。新鮮牛腩看起來顏色比較深一點,肉味也比較香濃一點,牛腩要好吃,火候炆到啱啱好,炆不夠會很硬咬不開,炆得太久又會變成煲湯渣的味道,加上牛腩部位厚薄不一,這增加出品穩定性的難度。坤記我來吃過很多次,每次出品的水準尚算穩定,肉質很好,炆得很淋,比尖沙咀另一間同樣標榜新鮮牛腩的水準穩定,尖沙咀的那間,試過一兩次牛腩很硬咬不開,雖然通常都很好吃。我通常吃牛腩粗面,粗麵很好沒有鹼水味,咖喱牛腩飯的咖喱汁對我來說有點杰,個人不太喜歡,但味道很好。自家製辣椒油也不錯,但這兒的牛骨湯很美味,不適宜落太多辣椒油。

九龍城聯發同樣老闆既店鋪坤記牛腩一樣既裝修,人流較小叫了碗牛腩牛根河這裏打的名堂是用上新鮮牛腩,不是普通粉麵店用上既冰鮮牛腩新鮮與冰鮮之分別在於新鮮較為un一啲,但牛味卻濃很多呢到既牛根也不錯,唔會炆到過lum,都唔會太硬。湯頭也的確充滿牛骨味唯一不足既係河粉太厚,唔夠滑軟身,較為爽身既河粉,個人就不太喜歡。

不單套餐設計和用料值得俾like,「架生」的來歷同樣有段故:原來是店主早前去日本旅行,發現這種瓦煲和爐具,地點是100円店,於是逐間店掃,搵都幾多買幾多,然後托番香港!這壓根兒是小店的出汗細活,得來的就是品質的保證、和自己的滿足感。

牛頸脊的咬口和濃香,那「標誌」和質素是入口即知的。追加也不過$48,是616那種水位,客人「追」得放心,店家也立不敗之地。其他配料也具水準,美中不足的是一加就要加六七粒,對獨行俠不夠friendly;其實可按定價邏輯,增加$21-22牛丸魚蛋雲吞每樣一粒的選項。向店主反映時,他說未有其他客反映過;其實需要可能不是製造出來,卻肯定是發掘出來,唔試點知?

回到同街另一家店工作的店主,見我們食飽離開經過,急急腳冒著寒風出來,站在街上問我倆的意見;那可說是比隨便給個折扣更有誠意 (當然,若有折也樂意接受喇!)。那份認真,令他配得把食肆生意做到這個規模。

做食肆,幾時都係要用腦 (其實有乜嘢唔係呢?)。與其生意差,推說是市道唔好,不如問為何客人都跑到別處去了 (肯定不是絕食) 而不是到貴戶光臨。而質素,肯定從來都是基本一環。在這一家,我看到了腦筋,也嚐到了質素。有了連鎖店沒有的貨式與品質、沒有了連鎖店有的洶湧與危險,九龍城不是個方便的地區,這次卻讓我們不枉此行。

當然,有些是不可抗力。我們前往的下一家店 (http://fungpc1.blogspot.hk/2018/01/the-darkest-hour.html),當明白這一道理。
