抹茶忌廉冬甩,冬甩做得非常鬆軟,按下去的回彈力很強,鬆鬆軟軟的很是美味,抹茶忌廉的茶味濃郁,配搭得不錯,略嫌吃到最後有點膩。但唯一美中不足是外層的白砂糖實在有點太多,食用不方便而且太甜,我回家後拍掉了很多才吃,仍然吃到一臉都是白砂糖。

這個紅桑莓冬甩和抹茶忌廉冬甩一樣,冬甩底都做得鬆鬆軟軟很美味,兩個對比我更喜歡這個紅桑莓的口味,因為酸味濃郁,我這個喜歡吃酸的就覺得正好可以中和冬甩強烈的甜味,酸酸甜甜也很解膩,吃得非常過癮。

這個法式鄉村鹹派尺寸有一隻巴掌那麼大,顏色金黃,外層酥脆,餡料有傳統的雞蛋、煙肉、洋蔥等等,煙肉鹹鹹香香非常提味,回家放進烤箱愛吼熱後享用,就如新鮮出爐一般,熱呼呼的鹹鹹香香,做早餐或下午茶都是一流的。

Sourdough egg tart $12/each
這家烘焙店的招牌就莫過於這個葡撻了,店主人的拿手絕活就是酥皮,這個酥皮用上酸種麵包的做法,比一般的酥皮更為酥脆,層次更加分明,而且油膩感也減少,酥皮的味道有一點鮮味,可能是因為有發酵的味道,所以能成為這裏的招牌是有原因的。
蛋撻內餡其實和一般的蛋撻差不多,但因為這個酥皮的原因,分數提高很多,因為咬下去不再油膩,而是穌穌脆脆鬆化的口感,不過要注意是烤過後要放涼一點才吃,我剛剛在烤箱烤好就忍不住開吃,蛋撻餡料非常湯咀,有點燙傷了。

融入香港特色,這家店也有幾款菠蘿包,分別買了鹹蛋黃焦糖菠蘿包及蘋果肉桂菠蘿包。
首先是的是鹹蛋黃焦糖菠蘿包,餡料其實比較像吉士餡料,有少許的鹹蛋黃香味及焦糖的香甜,不過更多的仍然是吉士的味道,這個菠蘿包最出色的地方仍然是其外皮。
眾所周知,菠蘿包面層的菠蘿皮是精粹,這個菠蘿包整個外皮都非常酥脆,菠蘿皮更是鬆化可口,而且不像一般的菠蘿包,咬下去的時候菠蘿皮並不會掉到一地都是,更好的貼合了整個麵包,仍然是內涵可以,麵包皮非常出色的一個麵包。

相比起上一款的鹹蛋黃焦糖菠蘿包,我更喜歡這款蘋果肉桂菠蘿包,一來是我也很愛吃水果,二來這款用烤箱烤好後就像是一個蘋果批,外層酥脆鬆化可口,一咬就斷,餡料的蘋果肉桂也做得出色,酸甜味道剛剛好,而且餡料也很多,滿滿都是,這個價錢物超所值。

純粹享受外皮的酥皮丹麥條,也是店主的拿手絕活之一,這個酥皮蓬鬆,用料紮實,在表面灑上很多巴馬芝士,非常鮮味,看着也已經食指大動,而且切開後更可以看到內裏的酥皮層也是層層送化,中間還有巴馬芝士做內餡,增添鮮味與口感,以酥皮來說真的做得非常出色,美中不足當然是會比較乾,沒有飲品就有點難以下咽。

總括來說這裏的包點都很出色,而且價錢合理,怪不得無論是那一間分店都要大排長龍,絕對是物有所值。
看到有一些食評說外層不夠酥脆,我只能夠說千萬不要偷懶,拿回家之後要好好地用烤箱烤過才吃,那個酥脆才會呈現。

見到成日有人post上網,搞到我都想試吓這間麵包店。由於我10分喜歡吃鬆餅,所以在這裏叫一個原味鬆餅,一個提子鬆餅,和一個上面有士多啤梨的丹麥包吃完後,原來鬆餅是很重肉桂粉味的,所以就要睇吓自己究竟鍾唔鍾意肉桂粉味,我就喜歡沒有玉桂粉味的鬆餅,所以這一間的鬆餅不少的首選,我覺得士多啤梨的批比較好食,因為士多啤梨下面仲有吉士醬,當然會比較甜,但是西式餅店的賣點就是這樣。

吃完後,原來鬆餅是很重肉桂粉味的,所以就要睇吓自己究竟鍾唔鍾意肉桂粉味,我就喜歡沒有玉桂粉味的鬆餅,所以這一間的鬆餅不少的首選,我覺得士多啤梨的批比較好食,因為士多啤梨下面仲有吉士醬,當然會比較甜,但是西式餅店的賣點就是這樣。

佢鬆軟得黎好乾身
唔會食到一pat的口感
而且都幾飽肚 一片=一餐下午茶😋

至於味道
首先講Matcha white chocolate先
好嘅係 佢甜度都岩大眾口味
本身驚佢超甜(因為食過doughnut覺得甜到不得了)
但事實係無我想像中咁超甜
白朱古力味唔會突出左出黎
佢balance番抹茶嘅苦澀味
不過抹茶味略嫌唔夠濃郁唔突出

至於Double chocolate味
香濃的黑朱古力味🤎
乾身啲嘅brownie口感
朱古力友覺得很滿意
但唯一覺得可以更好的是
朱古力粒如果可以再突出少少
會增加到口感層次
或者令到翻熱後能有少少流心感

說到Greg的Bakehouse在飲食業界來說, 是這次疫情的逆市奇葩, 相信沒有太多Foodies反對. 單是尖沙咀新分店, 無論在任何時間也是人潮如勇, 還是將會在銅鑼灣開其第四間的分店, 沒有太多食肆有能力還有決心, 在這艱難時間擴張生意. 真的夠厲害.Bakehouse的蛋撻不是傳統的港式餅皮或酥皮做法, 用上酸種麵糰製作的酥皮, 外脆內裡煙韌, 空氣感平衡. 蛋漿烤起來焦糖甜味濃郁但不死甜, 比一般葡撻更出色. 冬甩也是我喜歡的烘焙品, 同樣是外脆內鬆軟, 在中心注入酸酸的Raspberry Cream去中和冬甩本身的甜膩, 再加上冰火的對比口感, 同樣吸引.酸種麵包是Greg和Bakehouse的初心, 雖然不是最熱賣的產品, 但就是最為Orginial的. Bakehouse is a miracle in HK F&B industry. During the pandemic, Greg had opened TST branch and plans to open another new branch in CWB. Egg tart is the key item here. The outer pastry crust is made by sourdough dough with crispy and flurry texture, as good as her famous croissant. The egg custard has wonderful caramelized taste. Sourdough bread is Greg’s original intention. Sour taste with wheat flavor are balanced enough. With the genmai aromatic flavor, all are very well.

呢個真係有啲失望,抹茶忌廉冇想像中咁多,完全冇爆漿嘅效果😂冬甩做到唔油膩,麵包都好有口感好軟熟,有麵包香,抹茶忌廉都非常香濃,一啲都唔會甜,兩者都平衡得好好,都係好好食,但$38細細個真係有啲貴,個餡又唔多又比較細舊,寧願食多3個蛋撻,唔會再買來食🤣🤣

🍴 Strawberries Vailla Danish $36 (7/10)
士多啤梨奶油丹麥酥,都有1.5粒士多啤梨🍓呢個反而覺得比較普通啲,個忌廉都好香奶油味 ,但偏向港式奶黃味多少少🤏🏻唔係想像中好重忌廉味好重,好香奶味嗰種,丹麥酥甜甜地,個包都係好食但偏濕,都好食但冇特別想再買嚟食🤣🤣

推薦指數: 9/10
真心去到一定要買蛋撻,蛋撻係最好食,最高CP值,其他麵包其實基本上都好食,但有啲偏貴,寧願將所有錢買晒蛋撻😆 如果一定要揀麵包,揀啲冇忌廉同冇餡嘅會比較好,會食到麵包
原始嘅香味。

這個有點選錯了,不是不好吃。而是筆者比較喜歡忌廉質感的冬甩。但選購時看到紅色的果醬滿溢,實在相當吸引🤣 味道方面,冬甩包密度較高,吃下整個會相當飽肚。果醬類的餡當然會偏甜,尤其冬甩外還滿佈白砂糖。需要苦中一點甜的朋友,這一款絕對是一絕的選擇。冬甩味道不錯,但筆者認為這款太甜,不太適合個人口味。
