日本北海道首創的濃蝦湯拉麵,以甜蝦頭的湯頭混入秘製的湯底,相信北海道無人不知。早前進駐了香港,雑誌也有報導,腦袋裡早己把它列為我要去嚐試的列表中。今日剛巧出發去澳門前,在港澳碼頭橫掂要吃午餐,腦海浮現了拉麵店的名字。算是偶然吧!火炙味噌濃湯蝦拉麵湯底是拉麵的靈魂。嗅一嗅,感覺到火炙焦香的味,湯頭濃郁,蝦的香味出眾,十分好飲。拉麵灣灣曲曲掛湯力高。义燒肉質軟熟,香口惹味。配菜是粟米芯,都是火炙過,特別香甜。真是名不虛傳,美味可口的拉麵啊!

湯底是拉麵的靈魂。嗅一嗅,感覺到火炙焦香的味,湯頭濃郁,蝦的香味出眾,十分好飲。拉麵灣灣曲曲掛湯力高。义燒肉質軟熟,香口惹味。配菜是粟米芯,都是火炙過,特別香甜。

味噌蝦濃湯拉麵
湯底方面, 係香濃嘅蝦湯味,應該用咗足料嘅蝦去煲,另外再加上櫻花蝦,令蝦味更提升一個層次。

本身櫻花蝦都帶點油,令到個湯都充滿蝦油,食得濃味嘅朋友可以試試。

麵質比較硬身,豐有彈性,唔會因爲吸引收湯而變太得軟

豬骨湯拉麵就食得多啦,黎試試蝦湯拉麵🍜緣屋係一次拉麵館舉行嘅比賽中首次推出蝦湯拉麵並勇奪第二名,創立咗全新拉麵流派,因此係北海道拉麵界都頗為有名架!不過依家唔洗飛去日本都食到啦拉麵一黎到就見到湯底呈微微嘅橙紅色,十分吸引!聞落香濃不膩,飲落鮮甜香口,蝦嘅鮮味係口入面揮之不去火灸味噌蝦濃湯拉麵($88)除咗蝦嘅鮮味,隱隱約約仲會飲到味噌嘅甜叉燒肥瘦適中,嫩滑又鬆化。加埋大量嘅櫻花蝦乾,鮮味up up味噌叉燒蝦濃湯拉麵($98)如果你係食肉獸就一定要試呢款拉麵啦!有成五大塊叉燒架!不過櫻花蝦乾就少咗好多......蝦多士($38)再黎多個蝦嘅小食~新鮮即炸,非常香脆!面頭舖滿蝦膠,食落又夠彈牙!得三塊真係唔夠喉啊~

又到午飯時間,近期喺公司做到呢,所以今日同個同事出去行下,食個靚飯。都有一排無食過拉麵,所以今日去左上環信德呢間新開嘅拉麵店。每次 Lunch time 經過都幾多人排隊,但既然今日唔想太早返到公司就即管排下。呢間個招牌係蝦湯底,所以我就叫左呢個。先講下個湯底,佢係濃味嘅,不過唔係蝦嘅鮮味。我諗佢應該係有熬個湯底,再加味精 (因為食完都幾頸渴)。啲蝦味係喺佢另加嘅櫻花蝦乾度黎。所以,我都唔知佢算唔算係真係蝦湯底。麵底都係普通,有啲似平時超市買到嗰種。嗰半粒蛋同嗰一塊叉燒都普通,兩樣都唔係好夠味。個同事怕唔夠飽(其實我覺得 Ok),仲叫多左個白飯,因為佢好奇怪地無得加麵。整體黎講,作為一個返工 lunch time 求其揾野食都算 ok, 不過如果鐘意食拉麵嘅話就可能覺得唔夠好。

香港好食拉麵店越嚟越少,而日本過江龍店好多開業不久亦保持唔到應有水準,所以喺香港真係越嚟越少食拉麵,但今晚想食拉麵所以嚟到呢間位於上環信德中心嘅緣屋拉麵,緣屋拉麵係日本第一間推出蝦湯拉麵嘅拉麵店亦可以話係蝦湯始祖,香港店湯底分別有蝦湯同豚骨湯,而蝦湯亦有味噌, 醬油同鹽味選擇,我點左味噌蝦濃湯拉麵($76+10%服務費),湯頭入口真係好香濃,味噌唔會死咸而且好香甜,蝦味亦好濃厚,麵條用上北海道慣用嘅曲身麵,掛湯力高,口感夠滑同好香小麥味,而叉燒肉就薄薄一片比較普通,而另一以蝦湯做主打嘅日本拉麵店X幻我都有食過,個人覺得緣屋做嘅蝦湯唔會比X幻差。

This new ramen shop opened for a while, but its my first time to try. It is a shrimp soup based ramen, therefore I tried a couple of signature items.I ordered the Miso Rich Shrimp Broth Ramen with extra BBQ Pork, the soup base is pretty rich, the miso taste is quite balanced with shrimp, that one would not overpower the other.
