The interior design of the bar is modern and fancy. The bar tender area is like an open kitchen. There are also adequate rooms for seats and tables to be seated comfortably. We had a day off and booked Flint for an early dinner at 6:15. When we arrived there, the restaurant was pretty empty, except there were some people having happy hour outside. We ordered clam chowder and steak for both of us. The food portion was pretty huge, I could not managed to finish a clam chowder on my own. The steak was well-cooked and the baked garlic at the side made the dish taste more refreshing.

Here's what I got from the buffet, from top center: cold soba noodles, fried shrimp roll, some Italian cold cuts, bread and cheese, a salad made of lettuce, onion, olives, and "pepper" dressing (tasted like ranch), salmon sashimi, and some other salmon thingy on crispy bread. The main other things at the buffet that are not represented here are cold shellfish, like mussels, half lobsters, crab legs, and clams. I'm not the world's biggest shellfish guy when it's hot in a tasty sauce-- cold, it's just not for me. My main disappointment was with the salad bar: there was a bunch of different types of lettuce, but not a lot of veggies to put on the salad. I'm a big shredded carrots guy. Maybe some tomatoes. Perhaps some salad pasta. And croutons. Something pickly like a pepperoncini. Anyway, I got lettuce and onion. The pre-made salad game was pretty weak too.

The first thing we got off the hot menu was tuna and salmon. I should've taken a picture of the menu, so I could tell you more precisely. This is two orders of each, so be aware that the hot menu largely consists of one or two bite morsels. We liked both pieces of fish, and I was particularly impressed with the tuna, which was peppery and came in some sort of mustard sauce.

Next we got some french fries and some gyoza-- again, two orders of each. The gyoza were a little cold when they came and not really all that great-- I have had frozen gyoza that were in my opinion better (obviously, after being cooked). The fries were crisp on the outside, but in my opinion undersalted and a little too "potato-y" on the inside. It's hard to describe, but if you eat lots of fried potatoes, you'll know what I mean.

At the server's recommendation we got the cod (right) and the lamb rib. The cod was good and inspired me to make fish the next day for dinner (my fish was pretty good too). The lamb was altogether too fatty. I know I'm in Hong Kong and people start booing you and throwing things at you if you say you don't like straight-up animal fat, but to tell the truth, I don't really. The meat was fine, nothing spectacular.

Our last hot menu plate was asparagus and tempura. I had ordered the shiitake and shrimp tempura, but we got shiitake and sweet potato. The only flub in what was fine, if a little inattentive, service. Neither was all that great. The asparagus was very plain, and I was disappointed, because it's easy to make great asparagus. I nevertheless recommend it as a source of veggies, which I felt were lacking at this establishment.

Finally, there was a large dessert buffet table. I considered ice-cream, but the flavors were unlabeled and I don't do Russian ice-cream roulette. I settled on two chocolates and a chocolate chip cookie. Chocolate is really the only dessert I care for. The chocolates were great. The cookie I was wary of: it looked a lot like a British digestive biscuit, easily the worst kind of cookie ever invented, but it turned out OK. Not nearly soft, chewy, and sugary enough, and could've done with a glass of milk. I also got a thing that was labeled 'plum wine' or something like that, but it wound up being like a jello shot. Still, OK.

The buffet is like $5XX with $180 free-flow champagne & cocktails. I won't evaluate whether it's worth it; I'm sure if you're excited enough about lobster, you can get your money's worth. I guess I secretly just wanted a really good salad or two plus some other things to nibble on, but I guess the buffet is more geared to people who are trying to get their money's worth and not pay 500+ smackers for a salad. I can't really fault the restaurant, but I didn't really care for much beyond the cooked fish and the chocolates.
Other Info. : I definitely did not need a reservation on a Saturday.

眼見The Lounge 在裝修,想吃JW 的 Brunch便只好移師到Flint , 反正沒有試過,一嚐也無妨。這裡的Brunch除了有Buffet外, 仲有一個Menu是随便任叫的,加180另外有free flow 的紅白酒,香檳選擇。外頭Buffet主力serve cold dishes. 熱盤就在Menu上。和The Lounge的Brunch相比,這裡沒有魚子醬之外,焗龍蝦,鵝肝,牛扒,羊架變成了菜單上的任叫item , 當然以份量去計的話, 攤晒出嚟,視覺效果吸引,而且快不用等,但逐碟上便合適喜歡每樣嚐一口的人。論選擇,這裡沒有中式點心,沒有Egg Benedict , 没有意大利飯,沒有Sashimi , 但Sushi卻比The Lounge 好,也有天扶羅,龍蝦湯的選擇。而味道方面,和The lounge沒有太大分別,平穩的選擇。如果給我選,我還是選The lounge。

With the food on menu the lamp chop, ox tongue, angus beef, foie gras, cod fish are strongly recommended. The asparagus are also a choice if you want some greens.

Ham 有4款,iberico, parma & 2 salami ,吃了前兩者都覺得質素很高,鹹香適中,小吃多滋味,多吃也不壞肚皮~  反而刺身方面,老公失望地說帶子淡而無味,魷魚反而挺好。

Order方面每件都大約是bite size,所以我們差不多點勻全個menu~ Order形式的好處是食物質素更有保證,比起放在buffet枱,無論在賣相、味道及溫度方面,都可以給予食客最好的,又不會造成浪費,win-win~~

我倆一致認同,羊、牛脷及雞翼都是值得encore。lamb chop大大件,生熟程度處理得很好,而且肉味香濃,食肉獸不能錯過。牛脷超級冧,配上燒汁,孕媽媽吃了4件~ 燒雞翼,很多人都鍾意食! 而入味又冧的雞翼真的叫人欲罷不能~

在云云的食物中,小王子對大部分的都沒感興趣
 我倆唯有點一客意粉給他試試,兒童餐包一杯果汁。這餐意粉份量足夠一個胃口不大的成人女士吃呀! 三大粒牛肉丸,加上由鮮蕃茄濃縮而成的醬汁,旁邊有2塊蒜容多士給你mop up the sauce,$110 也算收費合理的。

可惜,我們最終要打包回家,給了孕媽媽做午餐,而我須強調是一個很好吃的意粉! 除了不會是al dente之外,整個意粉的口味都乎合大人口味,很高質素~

難道當了爸媽就一定要認老? 吃罷這個brunch, 不知何解我倆到第二天都沒有飢餓感,吃一次brunch可以滿足2天的食慾,抵~

We were immediately greeted by the associate & ushered to our table; she proceeded to make small talk asking if we had been here before & highlighting brunch itself.
We were seated next to the Cold Section of the Buffet on High Banquette Tables.
Before we could look around our surroundings we were greeted by another associate with the menus & first drinks.
We opted for the Free-Flow Drinks Package @ $180 HKD which includes Champagne (Verve), White, Red, and Rose Wines & Chipotle Bloody Mary.
She explained the Semi Buffet Selections the bottomless Bites Selection from the Kitchen which had around 12 items on offer.
The Cold Section on offer was Sushi & Sashimi, Charcuterie section with condiments, small DIY Salad Section, Cheese Board & pre-made Canapés & Salads. All Items was tasty & well presented.
The Highlight for most people would be the Chilled Seafood Section, boasting Boston Lobsters, Crabs, Mussels, Prawns & Sea Snail just this alone would have many coming back for more.
The Main Course/Bites had a Japanese Edge with Ingredients and Cooking Methods in that Style.
All items came quickly meaning most of them had been pre-made all items with the exception of a few was 1 to 2 bites. Some Hits & Misses.
Uniforms were casual Jeans & Shirt with Supervisors/Managers wearing jackets
Music was cool & funky keeping to its youthful casual feel
Service was attentive but not obtrusive the Manager Joy came around to tables while check on the Brunch on a few occasions.
Dessert Selection was small with Home-Made Biscuits, Cut Cakes, Puddings, and Fruits. Ice Cream & Sorbet was also available.
Overall a very enjoyable Sunday Afternoon Brunch

 Petuna ocean trout with finger lime, fresh seaweed ($190) - This is an interesting one. Two pieces of the ocean trout was lightly seared while a third one was almost entirely cooked. Odd isn't it?

I thought it tasted alright but a little more acidity would have done this dish a bit more justice (Grade: 3/5).

 Seared foie gras with veal shank, hazelnut, quince and parsnip ($190) - I haven't had seared foie gras for a while now so personally, I was really looking forward to this dish. As my partners in crime have never paid much attention to cholesterol, I let them have a larger portion while I took a smaller piece. Interesting to see veal shank in play here and surprisingly, that little experiment worked out well with the seared duck liver. Not bad (Grade: 3.5/5).

 Grilled Iberico pork chop with roasted pumpkin, red mustard, calvados and crackling ($300) - We decided we just wanted one main course to share and ended up choosing pork over beef for no particular reason. But this grilled Iberico pork chop had to be one of the more disappointing dish of the evening.

The pork was definitely a little on the hard side and more importantly, the rich flavors we often found from Iberico pork were kind of missing from action (Grade: 2.5/5).

幾乎沒有多想, 就揀了Lobster bisque - 因為, 它一直是我的同事的最愛! 單是視覺上已經察覺到有所不同, 湯的顏色淡一點, 質地也如絲般的非常幼滑。入口, 驚訝地發現味道也是相對的柔和。平時飲龍蝦湯, 口腔之中總會嚐到的輕微澀味, 這裡的卻沒有。

雖然喝過之後覺得不膩不滯, 但可能自己的口味比較重, 喜歡更鮮明的菜色, 不能說它是我飲過最愛的龍蝦湯。說賣相, 也不及美國會那一份令人愉悅呢。

同事所食的crudo, 反而更加深得我心。三文魚他他聽上去好似好普通, 不過, 一入口就來個鮮味大爆發, 極是好吃。旁邊的法式忌廉也沒有騷騷的奶味, 幼滑的泡沫狀, 加上旁邊的脆脆(是黑麥吧), 味道、口感都是非常完整的一碟。

主菜方面, 剛剛這幾天牛扒吃多了, 不如就來份豬吧。一向都深深相信要把豬做得好吃, 比煎好一份牛扒難得多。

烤豬上枱, 就忍不住微笑了。這是最靚的豬腩肉啊, 一層層的肥瘦相間, 有一點點油花, 香氣四溢。豬皮肥香可口, 豬肉多汁嫩滑, 好吃得說不出話來。肥肉透明豐腴, 入口卻不覺得油膩, 絕對、一定要吃掉!

碟子上的薯蓉也是一個不可錯過的美食。質地極盡柔滑, 難得, 把食物做得滑溜, 是FLINT的拿手好戲嗎?

完美的一餐又怎可以沒有甜品呢, 抹茶閃電泡芙是意外的夠濃夠甘, 只是泡芙的部分不夠鬆香。Black forest 原來並不是黑森林蛋糕, 而是Kirsch mousse, 圓滾滾的好似大福啊! 清淡不甜膩, 以此作結, 真是完美。

真希望FLINT之後都會繼續參與restaurant week呀!

我最鍾意食lobster,試完呢間之後真係令我覺得有時d野真係貴精不貴多,人大左與其食quantity不如食quality 呢隻新鮮燒龍蝦$400+10%,well...如果要我比既話都有d肉痛,不過正所謂一分錢一分貨,4百蚊係值既,隻龍蝦新鮮唔係雪藏野,香草牛油燒,燒得啱啱好,肉質鮮嫩彈牙再加埋香濃既牛油真係令人再三回味啊~~~~佢仲有個自家製既sauce,酸酸地令人好開胃除左龍蝦之外佢個餐前包都好正,熱辣辣好軟熟仲有好香既麥味,未食main dishes之前都忍唔住encore左一次真係好yummy~~等出左bonus要去豪多次啊
