曾經到過”滾得棧“天后店,印象非常好。偶然知道油麻地開了新店,今晚特意前往。油麻地站B2一出就見到。新裝修完成,樓下有卡座,樓上有六人、四人枱,還有兩個包間。點菜紙印刷成一張晚報樣子。部分食物可以點半份,人少也可以多點幾種試試。湯底點了港式風味的蕃茄薯仔拼沙嗲,鴛鴦湯底也不用另外加錢。三秒腐皮,響鈴也。果然三秒鐘就可以從鍋中取出,沾滿湯汁,濃郁美味。店員極力推介的招牌手切牛頸脊,顏色紅潤,雪花分佈均勻,牛肉非常香濃,而且肉質比較細嫩。鮮帶子,色澤新鮮,不用煮長時間,味道新嫩。什菇藍,份量不少,新鮮無變色,而且洗得乾淨,又沒有腐味。食物一樣新鮮有水準,下次再來試試其他湯底。

近年香港人越食越嘴叼,任飲任食只能滿足部份人,尤其是年紀越大,本承貴精不貴多的理念,寧願貴少少食高質食物都不願浪費自己Quota。這間滾得棧就是其中一間高質的火鍋店,沒有任飲任食,食物可以揀半份,人少去食都不成問題。先上調味醬料,每位$16。夏日炎炎,叫返渣竹蔗水解渴。火鍋湯底點了鴛鴦鍋,潮州湯底拼味菜胡椒豬肚湯底,前者以大地魚為基礎,加上些肉碎、蔥花及豆腐等;後者有白果、馬蹄及豬肚,味道比較濃。打邊爐必點的肥牛,今次要了牛魔王,有齊全部牛肉款式包括牛頸脊、脊髓、牛柏葉、牛肉粒、肥牛片、牛眼根及牛展。其中牛頸脊味道最濃郁,肥瘦均勻;其次牛眼根肉質爽口。丸類必食蝦丸及墨丸,兩者都是新鮮手打,非常彈牙,而且有粒粒蝦肉及墨魚肉。鮮蝦雲吞裏面充滿蝦肉,而且新鮮爽彈,但豬肉餡不會過多。熟食點了炸蝦餅,外層粉漿很薄,蝦肉爽彈,點上泰式酸甜醬,中和油膩感。整體食物高質,價錢合理,性價比高,絕對抵食。

呢間分店最近新開,因為近我返工地點唔洗專登去天后店所以又來試下。水準保持、服務同天后店一樣咁好,員工個個都好快手快腳,最緊要係食物質素,除左主要食材全部都好新鮮之外,我覺得連碟菜都「醒神」過好多所謂大集團。店內環境舒適,兩個人都可以座卡位,地方keep得好乾淨整齊、上菜時間迅速、伙記換碟都換得好密,好難得有一間火鍋店由食物質素、環境、服務都可以做到咁好,值得一讚! 推介牛頸眘、蕃茄蟹煲。

朋友之前係咁同我講之前係深井食過滾得棧好好味,不過深井對我黎講實在太遠啦原來最近係油麻地都開左一間即刻叫埋朋友同我一齊去食果然係新裝修,勁寬敞同埋坐得好舒服朋友極力推介蕃茄芫茜豆腐湯底一開始個湯底有點酸,應該係落左好足夠既蕃茄,不過越煲味道越喎啲酸味不再炸魚皮炸得好薄身,好脆唔會硬綁綁果種脆。不過就要盡快食哂,如果唔係就會淋左啲蔬菜好新淨呀其實火鍋料新鮮就是最手切牛頸脊(例)啲牛肉好靚呀雪花分佈得好平均,食落完全無根的蘇格蘭竹筒蚌我地只係叫左兩隻,但有四件不過唔知係唔係我地淥耐左,有少少韌鱔片好少係街度食會見到咁大塊咁厚肉既鱔片超好味象拔蚌丸+墨魚丸第一次見象拔蚌丸咋,不過味道比較重蟹籽味個人還是覺得墨魚丸會比較好食啲

一開始叫咗特級美國肥牛,夥記強烈推介招牌手切牛頸脊,話來貨質素非常好.我見價錢差唔係好多,咁就叫啦.雖然我冇見過的美國肥牛,但係都覺得加錢換牛頸脊係正確嘅選擇.雖然呢一種唔係非常嫩滑嘅牛肉,但係牛肉味好濃郁,有咬口. 好怕鞋既牛肉,開頭嗰幾件都煮得特別生,甚至有一丁點嘅紅色,因為怕煮得太熟會韌,浪費咗靚牛肉.之後掛著同朋友吹水,牛肉煮耐咗先攞返出嚟,咬落去完全唔係生生地嘅牛肉可以比既,肉質變得綿嫩而且油脂业香,索多咗湯汁再加上牛肉本身嘅味道, 真係....

墨魚丸-我可以肯定,墨魚嘅比例應該好高.係咁多~ 
蝦丸-感覺似食緊蝦餃,因為咬落係有蝦嘅質感同埋味道,而唔係食緊用蝦肉整成既丸.
牛丸-實實地,唔係面粉丸,不過都係另外叫既果碟更好.
鯪魚球-鯪魚味激重,印象係用鯪魚滑加固整成既丸.
