I’ve been wanting to try Mashi no Mashi for a while and finally got the chance. 2 of us went for dinner and shared the wagyu don, gyozas and the original hot wagyu tsukemen. Both the noodles and the rice were excellent. However, the gyozas weren’t as tasty as expected. The atmosphere was trendy, simple and sleek and it was great to be able to watch the chefs prepare the food right in front of you. Overall, we had an amazing time and would definitely like to go back.

我來到灣仔裡面的內街街道「愛群道」的時候,天色已經完全入黑,幸好「MASHI no MASHI」店外,也沒有太食客正在排隊,只剩下「MASHI no MASHI」的店員,在店外接待食客。

連同上次手機未報銷之前,我第一次來到「愛群道」光顧「MASHI no MASHI」的時候,食店裡面的自助售票機,已經消耗我的「八達通」,裡面剩下的港幣二百七十元,怎料我那次光顧食店後不久,手機就意外報銷了。

結果我被迫重新上路,換上一部新的智能手提電話,和新的「開飯喇」戶口。「八達通」也只能夠面對殘酷的現實,再次以現金儲值,在銀包裡面使費了港幣二百七十元。

我前後兩次光顧灣仔「MASHI no MASHI」,結果足足花了港幣五百四十元,食了兩次兩碗的「和牛沾麵」,以及兩次兩碟的煎「和牛餃子」小食。

雖然「和牛沾麵」跟「和牛餃子」裡面的牛肉味道非常濃厚,而且「和牛沾麵」跟「和牛餃子」裡面的牛肉,都是「MASHI no MASHI」廚房,以乾式熟成的方式,再加熱煮熟的,然而乾式熟成牛肉跟慢煮牛肉完全不同。

乾式熟成牛肉的口感,跟慢煮牛肉口感很不同,另一方面,食客在進入「MASHI no MASHI」主要開放式廚房吧檯之前,就已經需要在「MASHI no MASHI」店門旁邊的自助售票機裡面,購票和選擇自己想食的沾麵食品。

「MASHI no MASHI」裡面,除了沾麵食品的價錢不便宜之外,就連店內的飲品價錢也都不便宜。單是一份「可口可樂」汽水飲品,食客已經需要支付港幣二十五元,我就寧願飲水好過。

另一方面,「MASHI no MASHI」始終不是傳統日式的拉麵餐廳,「MASHI no MASHI」廚房店員招呼食客的方式,有異於一般傳統的日本拉麵餐廳。

「MASHI no MASHI」廚房裡面的店員,每次順利製作完成「熟成牛肉」沾麵的時候,把沾麵送交到食客手上的時候,都會刻意擺出頗為造作的展示食品甫士動作。

或許這就是「MASHI no MASHI」為了取悅食客,而作出的宣傳手法。偏偏不少上門光顧「MASHI no MASHI」的食客,對於「MASHI no MASHI」廚房店員這樣的手法非常之受落,亦會很配合地拿出手提電話拍照留念。

相反地,其實我不是太喜歡「MASHI mo MASHI」廚房店員這樣呈現食品,和送交食品給食客的手法,因為我其實也有屬於自己拍攝食品的手法。

「MASHI no MASHI」這樣預先安排呈上食品的方法,好像沒有完全顧及食客自己的想法,只想將自己製作和送遞食品的一套手法,強加於食客的身上。

所以「MASHI no MASHI」廚房店員以這樣的主觀手法,送交主食品「和牛沾麵」,以及小食「和牛餃子」到我的手上,對我來說其實不能完全受落,我最後還是需要自己再拍照多一次。

而且,經過前後兩次拍攝「和牛沾麵」和「和牛餃子」過程過後,我發現自己為食品拍攝照片,比食店廚房店員主動端起食品在手上,更加容易找到合適的角度,拍出更理想的食品照片。

說回「MASHI no MASHI 」的主打牛肉沾麵食品「和牛沾麵」,由於日本和牛牛肉以乾式熟成的方式煮熟,所以牛肉的顏色有點像慢煮牛肉,是鮮艷的血紅色。

所以乾式熟成牛肉的實際口感,跟一般的慢煮牛肉十分相似,乾式熟成牛肉的口感很軟腍,入口之後不需要花牙力去咀嚼很多次數,我只遵守一向食用的程序,咀嚼二十下直接吞下去。

由於乾式熟成牛肉的外表跟慢煮牛肉一樣,還是鮮嫩的血紅色,所以乾式熟成牛肉口感軟嫩的同時,裡面的牛肉原味味道還是非常的濃厚。

至於「MASHI no MASHI」沾麵裡面的麵條,質地跟坊間很多拉麵店的沾麵麵條一樣,都是呈類似烏冬麵條,粗身而且粗枝大葉的外形,口感則尚有彈牙的感覺。

至於「和牛沾麵」用來點沾麵的湯汁,則仍然是傳統的豚骨湯底,豚骨湯底的沾麵湯汁味道,因為有不少豚肉作為湯應材料,所以湯汁味道有豚肉的鮮甜味道。

「MASHI no MASHI」的廚房店員,在處理食客享用「和牛沾麵」後期剩下的沾麵湯汁,做法還是跟大部分日本拉麵餐廳的處理方式十分相似,都會再加入灸熱液體到沾麵湯汁裡面。

不過坊間有些日本拉麵餐廳廚房,處理沾麵湯汁的方式,會是加入魚湯到豚骨沾麵湯汁裡面,然後食客可以開始享用,混入湯汁而成的沾麵湯汁。

然而「MASHI no MASHI」為沾麵湯汁加入的液體,則只是一般的灸熱滾水而已。所以加入灸熱滾水之後的「和牛沾麵」豚骨湯汁,湯汁的甜味會比食沾麵時稍為減弱。

但是「MASHI no MASHI」這樣的「和牛沾麵」湯汁,湯汁裡面原先不能直接飲用的鹹味,在加入滾水之後,就幾乎消失得無影無蹤。

至於「和牛餃子」裡面的牛肉味道,也都跟「和牛沾麵」配備的豚肉湯汁一樣,餃子裡面的牛肉餡料味道,有很濃厚的乾式熟成牛肉甜味,配合辣味的花椒醬汁一起享用,效果也不差的。

不過「MASHI no MASHI」食品裡面的乾式熟成和牛牛肉,牛肉口感很嫩很軟,感覺不遜色於慢煮的和牛牛肉,即使沾麵價錢不便宜,偶然光顧嚐試一次也不算差的。

后記:見網評好壞都有,本身都有啲擔心名大於實....但男友死都話要食,唯有陪佢試下😑點知咁驚喜😍而且廚師好chok,上菜前會定格比你影相打卡😂雖然價錢唔平,而且份量亦都唔算大,但確實真係好好味,難怪只係做晚市都咁多人慕名而來👍🏻👍🏻👍🏻

店鋪好似日本拉麵店咁,用自動售票機落order。以開放式廚房嘅設計配埋銀色鋼板餐枱,令小妹覺得自己好似係喺廚房入面食飯咁,一邊食一邊睇住廚師整。另外,呢度嘅一大特色就係店員會拎住碗飯/麵大大聲叫,同擺埋pose俾你影到夠先上菜,都幾酷嫁!!(小妹絕對覺得要自戀嘅心態先可以係度做🤣) 順帶一提,呢度星期一同日都唔開,亦冇得book 位,去到要買左票先可以等位嫁。小妹平日晚上去都唔算太多人,但都等左30-40分鐘。
