每次試拉麵都會食最基本嘅叉燒拉麵,因為基本嘢人人識做,但更顯師傅功夫。豬骨湯底鮮甜,稍稍油膩,叉燒同MENU張相一樣,有半隻碗咁大,半肥瘦,入口鬆化,粗身麵條夠煙韌,吸收晒湯汁一齊食,正。溏心蛋用醬油浸過,外面蛋白鹹香,蛋黃流心,又係加分位。但略嫌配料唔夠豐富,如果有粟米粒同筍就更加正。

炸雞食得多,但原來醬汁先係關鍵。呢份唐揚炸雞,蘸上薄漿去炸,雞肉稍稍醃過,少少鹹多多脆,中規中矩,但一食埋個芥末沙律醬,微辣清新,啲熱氣油膩感覺無晒,甜甜辣辣好開胃,成份雞即刻好食好多,依枝棒呢!

少有喺拉麵店飲清酒,但食炸雞嘅最佳拍檔就係日本酒。酒味清冽,順喉,尤其今次熱飲,揮發出酒味,配炸嘢食仲滋味。

通常拉麵店都只專注做麵,小食通常係弱項,難得今日食到高水準小食,比起食到豚角煮更驚喜,下次想飲酒傾偈,又多個好去處喇。

剛在apm 睇完戲,諗唔到食乜之際,見到麵屋唔係好多人等位,就入出試試。今次order咗白武骨豚肉拉麵,湯㡳好一般,麵條比湯底更一般,但豚肉肉質肥瘦均勻,整體來說尚算可以。其次亦order咗炒野菜,黑椒味太濃,可以不試。

學得雖然唔及日本個啲濃味
但係都好唔係話淡 有少少似合味道嘅咖哩杯麵味 但呢個係好味啲嫁!


好奇怪平時去拉麵店食會問我要幾硬嘅麵度

但呢一間無問到


試一試啲麵 係有啲軟 但都接受到嘅


唔係話林到糊左咁 只係我本身中意食硬麵


而啲豚肉片都幾多下 又唔係話好肥

仲有落左好多蔥 我覺得拉麵嘅蔥係最好味,因為佢草青味唔強


如果佢啲麵硬返少少 咁就完美嚕

行開APM,心動想食碗熱辣辣拉面。睇門面,就入左呢間店…無需等位,不過由一入門口就覺得好似中左陷阱。先係侍應無咩招呼,坐低之後點餐亦都係冷漠對待。面,只能算是很普通的貨。湯說濃不濃…說咸又不咸,而且我好辣所以揀了赤湯… 結果落了兩大匙辣辣油都無感覺,好失望;面和配菜亦是極之普通,而且係我食緊既時候,侍應生竟然同同事之間講『急屎』。當下那刻我真的stone mode 了!😕最後埋單,照舊,侍應生一句多謝、唔該、再見,以上句子一句都無。講真,絕不光臨第二次。不過多謝呢間店,令我有心將塵封己久既帳號重開。

睇門面,就入左呢間店…

成日周圍食拉麵既我今日又有新發現!呢間拉麵店有豬骨、黑蒜油、辣味等等既湯底,我叫左黑武骨豬腩肉拉麵。不久遠方就傳來蒜香,待應放低後即見大大件豬腩肉!五花腩層次分明,肉及肥羔分佈適平均,每一口都感受到五花腩鬆軟之感!湯底好香蒜味,不過有d油。而拉麵口感不及一蘭及拉麵來,不過不妨一試。

白武骨叉燒沾汁麵 ($78). 日本發明了半世紀的沾麵, 近年才在香港興起, 把麵條放入湯內才浸一浸才入口. 日本沾麵與廣東雲吞店的撈麵, 真是何其相似, 發明時間都是差不多吧. 沾麵沒有拉麵的熱度, 就如餐牌所言, 最合適的溫度是攝氏六十度左右, 夏天時候吃最佳, 吃完不至滿頭大汗.

沾麵的湯汁濃稠度不算很高, 但麵身較粗, 而且麵條經過特製, 中間有坑紋, 掛湯能力極高. 入口煙韌, 味道濃重, 友人試了一口, 嫌鹹, 我認為是剛剛好.

我好鍾情於沾麵, 好耐之前去日本一試已經愛上, 香港現在都有好多地方可以食到, 沾麵架好處係唔會咁飽肚, D麵唔駛索曬D湯, 入口時先沾湯係最好的,今日麵癮發就叫埋個FRIEND一齊去左APM食返碗赤武骨沾汁麵, 其實已經唔係第一次幫襯, 但個水準仲KEEP到, D有坑既麵軟硬度剛剛好,完全無鹼水味, 不過如果可以推出個地獄辛辣沾麵就更好啦, 我個FRIEND 就叫左個番茄豚骨湯拉麵, 佢都比GOOD, 話我冇介紹錯, 不過就貴左少少, 如果我請埋佢就一百分, 但係其實我地兩個人一人一碗麵, 再加一杯凍飲, 再加埋坐低吹水兩粒鐘都算係咁啦.

今日在觀塘放工和朋友就去到apm 的麺屋武蔵,門面與裝修都有日本風格 麺屋武蔵主打三種不同style 拉麵,有黑,白,赤武骨,自己唔鐘意太辣和太鹹的拉麵,所以叫左白武骨叉燒拉麵 ,而朋友就叫黑武骨叉燒拉麵。吹左一陣水,兩碗麵就一齊嚟,嘩 未食已經👃到朋友哥碗黑蒜香的味道😋,令人急不及待,我要いただき,但食之前望下個賣相先,一塊大叉燒,少!😓,紫菜80%沉降落湯😥,好彩流心蛋無出事😅。好,即刻嚐下我的白武骨的湯底先,好重豬骨味,我覺得鹹了少少,但可以接受。好,立即試麺先,是粗麺,口感適中,軟硬到位,再加多一啖湯,嘩,うまい😋。再試下佢成塊豬扒size 的叉燒先,厚度中有,口感偏都中,不錯😋。流心蛋當然無出事,好穩定。朋友的黑武骨就真係好鹹,愛鹹的人就不可錯過😂。但蒜香十足😋。黑武骨除左湯底唔同,整體和白武骨一樣。當然不能和在日本本土拉麵比較,但$80左右是接受的價錢。

我每行親都會想試,不過lunch 閒閒地70几都唔捨得食,呢個月為左奬勵自己,就點左個黑武骨,先講個湯底,用豚骨餚製,個湯濃得黎又杰杰地,黑黑湯底食牙齒會污左少少黑,其次就係豚肉,好有口感,又滑嫩,加上佢隻溫泉蛋好有蛋香同流心位好甜,蛋外面有醬汁包圍,濃味得黎又唔會太咸,麵條都好有彈性,如果價錢可調整下更好啦
