🐷點了一道「豉汁排骨炒麵」,沒想到上桌時,炒麵波波脆,完全沒有一般茶餐廳的‘軟麵危機’,當下猜測廚房裡面必有一位厲害的大廚在內。不囉嗦馬上‘即場考試’,再加點「鹹魚雞粒炒飯」,凡是愈簡單的菜式愈考功架。

👨🏻‍🍳大廚休息一下聊天時,才知道「強哥」果然有來頭。強哥從畢業之後從酒店、酒家樓、小菜館開始學廚,出師之後在知名的港島南區石排灣祥興大排檔做了20幾年!之前一年祥興因為火災兩次,又是比較古早的大排檔沒冷氣,剛好有前輩要頂出西貢的餐廳,強哥就挾帶他的最強項「鑊氣小炒」、「海鮮料理」、「私人炮製靚湯」⋯進駐西貢萬年街。

🕖白天以茶餐廳的形式,但對街坊來說,茶餐廳價格,可以吃到大排檔主廚水準,簡直是物超所值!

👋🏻當然不能埋沒了強哥的手藝,把他關在茶餐廳菜式簡直就是「浪費」!所以,應太多慕名食客要求,店又位於西貢碼頭旁,只要買好海鮮(可自買收代客烹調費用,或是直接請強哥代買海鮮亦可),晚上就轉身一變為「包場營業」的「私房菜!」

😻中午吃的太驚艷了!決定晚上也請強哥出手,請他幫買挑好當季的海鮮。菜式由他拍板,我們就是先去西貢海濱逛一逛,傍晚回來等吃大餐!

烏冬(烏龍麵)吸了大蜆的鮮湯汁,油鹽是最簡單的調味,但能帶出海鮮的新鮮。

🌟 豉椒炒蟶子
一隻30公分的蟶子,爽快啊!

🌟 蒜蓉粉絲蒸元貝
新鮮大元貝,一樣淡淡的勾一點味道即可。又有蒜香鮮湯可以允粉絲,但是蒜香只是點綴,因為是新鮮元貝,而不是像一般餐廳卯起來加大蒜只是為了來掩蓋冷凍冰櫃味的。

🌟 椒鹽瀬尿蝦
💯必須滿分!對於大隻的瀬尿蝦料理,強哥確實讓我拜服!大隻瀬尿蝦是不好料理的食材,一不小心炸到過了火位,裡面的蝦肉會瞬間「麋」掉。但強哥火候控制得當,外殼酥脆椒鹽香,殼一捏就脆碎,我可以輕輕鬆鬆的撥出一整條瀨尿蝦出來。不需要用剪刀✂️剪蝦,實在是強啊👍🏻

🌟 椒鹽豬扒
🏆這道菜是強哥在之前大排檔任職時,每桌必點一道的招牌菜!一樣外表爽脆,咬開時肉汁香甜,絕對不乾不柴,難怪成了招牌菜。

一家大細入西貢,凍冰冰唔想出碼頭食海鮮小菜坐街邊,行過見到呢公眾停車場附近開左間新餐廳,餐廳新裝修唔似附近茶仔咁污糟,價錢ok就試下!原來唔止得小炒,老細仲走出黎介紹試唔試下海鮮,原來餐廳每日都會去碼頭同街市拎新鮮海鮮,就試左粉絲蒸扇貝!蒜容粉絲蒸扇貝 - 好大隻同新鮮 ,一隻自已經夠數冰鎮咕嚕肉 - 有創意,冰鎮得黎咕嚕肉仲好鬆脆  ,唔係一般茶仔咁食炸粉豬骨椒鹽鮮魷 - 呢個都超推薦 ,老細食到一半出黎介紹,原來係用新鮮魷魚炸,所以一都唔"Un"餐廳小店經營,3-4個人又想食少少海鮮,小菜,唔想出海鮮酒家咁貴,推薦呢度!PS 題外話杯奶茶都幾好, 有茶味同好滑!

今日同女友去西貢諗住行下,咁黎得西貢梗係想食海鮮,見到有間餐廳食海鮮小菜,價錢又冇出名果幾間咁貴,就比個機會佢咁啦。點知原來有驚喜發現,環境ok,老闆細心講食材來源(仲以為食緊西餐🤣),我地兩口子都唔係食貨,諗住兩碟海鮮加碟菜夠哂,點知瀨野,原來份量好大!呢個價錢,真係估佢唔到,重要係好食。市區冇$200-300一位都唔得....仲有例湯都好飲,唔係味精野。食得出老闆既心思。會同屋企人再試👍🏻
