白色的泡沫是由GinMare 及 tonic 打成的, 而Ginmare就是basil, thyme, rosemary, Arbequina olive。

慢煮12小時的乳豬肉, 下層不是完整的乳豬肉, 而是一細塊一細塊肥瘦豬肉所堆砌而成。

外皮很香脆, 至於豬肉我就覺得太多脂肪了, 有點不習慣。

中間來了一個小甜品 Jelly & cream Licor 43 with Sangria snow 清理一下味蕾, 可以更有胃口迎接下一道菜。

Licor 43 西班牙甜酒以柑橘類水果、香草和香料等由43種材料而成。Licor 43 的啫喱及cream酒香清醇, 伴著青檸雪糕及紅色西班牙特飲Sangria雪葩, 還有最頂的橙色點綴, 整體配合很清新, 味蕾也即時喚醒過來, 很想再來一杯!!

熱情果及香蕉片以真空包裝, 令到香蕉片吸收了熱情果精華配以濕潤的布丁蛋糕, 香蕉肉很熟散發著香味。

而香蕉味雪糕質地很軟滑, 也是充滿香蕉味而不會膩的。而很酸的熱情果醬跟甜的香蕉片味道造成一個強烈對比, 原來又幾合襯。

當晚十分盡興, 跟朋友捧著大肚子滿足地離開。雖然還未機會到西班牙旅遊, 但在Quemo已感受到正宗的西班牙地道風味, 加上貼心的服務態度及每位親切的笑容, 很值得再來光顧。

在QRE眾多食肆中,只有QUEMO擁有露台,對於用餐中需要吸煙的朋友,有賣點。不過,根據經理Gazment Cifliku說這𥚃每個星期五(好像是)都有Live music,在天氣轉涼之際,能夠和朋友們在這開揚之處把酒暢談,也很不錯!

獨門武功(三):大廚駕到 Chef Martin Carrasco
這天客人不多,剛好有幸可以和友善好客的主廚Martin交談。原來Martin來自西班牙的巴塞隆拿附近,來港之前已經服務過不少當地的米芝蓮餐廳,包括米芝蓮一星的Neichel和Alkimia等。他雖然來港不久,但已經開發出一系列的菜式。我試了一些,其中最喜歡的包括以下幾款。

Martin用上鮮嫩的豬肉,放在炭爐𥚃(真的用炭燒)慢慢煮的,這小塊Terrine,用上了豬的不用部位,吃落有股炭燒味,豬味也很濃,好吃!不過要注意的是它份量雖然看起來不多,但比較「膩」,女士們要特別小心。

吃完略膩的Suckling Pig Terrine,Martin建議來個「甜品」清一清喉嚨。嗯,好吧,本來估計是雪糕之類,但卻一誠難忘!
Martin用上Licor 43,一種擁有43種成份的西班牙酒,聼說包括柑橘、水果、雲呢嗱和一些香草等。我沒有喝過這種酒,但Martin將之做成啫喱狀,在頂層放上Sangia冰沙,口感十分清新也很有層次感。Sangria本來是在西班牙/葡萄牙一帶流行的水果酒,我之前喝過,想不到Martin將之做成冰沙,好像更能突出不同水果的味道。十分有創意!

這款是當晚我最喜歡的一道菜。Red Prawn是野生的,體積不算大,大約和叉子差不多大小,但吃落清甜、爽口。不過,最重要的是它的「汁」!Martin在端上來時用刀叉將蝦頭的汁擠出來。嘩,真的很多蝦汁。混入飯𥚃,和噲了湯的飯一起吃,非常滋味。老實講,我去過西班牙多次,對他們的海鮮飯真的不敢吃太多。不是不好吃,而是太「鹹」了。這款海鮮飯不但滋味,飯粒有嚼勁,略硬的口感很地道,味道剛剛好,濃之餘又不會太鹹,做得很出色!聽Martin講,是用了一款叫Bomba的米,它煮久了不會太軟之外,米的密度可以讓湯汁充分吸收入內。下次自己煮時可以買來試試!
值得一提的是GUEMO的Paella曾被Time Out雜誌評為「Best Paella in Hong Kong」,實力應不錯!

今日下午約了一位好友於公司附近午膳,好友偏好西餐,灣仔的 Brim 28 及 QRE 都是餐廳比較集中的好選擇。因筆者早兩天才於 Brim 28 用膳,今午還是放眼於 QRE 。大家在大堂集合齊看水牌,很快便決定試試一間西班牙餐廳 QUEMO 。餐廳格局四正,以木系裝潢作主調,簡約時尚,不會予人一份拘謹的感覺。在入口處設有一大酒櫃,放置了各式佳釀。再行前幾步的正前方,則是一張西班牙風乾火腿枱。水吧旁設有一凍櫃,內放了不少新鮮海產,彼鄰正是廚房的出菜位置,設有三四個高桌坐位,可在用餐的同時從旁欣賞大廚們的手藝。難得 Chef Table 無人坐,筆者多口問句又確能安排喎!在 Chef Table 的正上方有一手寫的黑板,上面寫滿廚師推介與精選,是日午餐都以推介菜式為主軸,並參考了主廚的建議。 頭盤小吃首推西班牙風乾火腿,有關火腿分了多個級別,餐廳供應的 Dona Lola 100% Iberico Ham 屬最高級別的 Bellota 等級,風乾熟成了 40 個月,並選用了更肥美的後腿部份(Jamon)。咖啡有咖啡師,品酒有品酒師,現在火腿也有火腿師。閒談間得知兩位火腿師最少有十多年經驗

今日下午約了一位好友於公司附近午膳,好友偏好西餐,灣仔的 Brim 28 及 QRE 都是餐廳比較集中的好選擇。因筆者早兩天才於 Brim 28 用膳,今午還是放眼於 QRE 。大家在大堂集合齊看水牌,很快便決定試試一間西班牙餐廳 QUEMO 。

餐廳格局四正,以木系裝潢作主調,簡約時尚,不會予人一份拘謹的感覺。在入口處設有一大酒櫃,放置了各式佳釀。再行前幾步的正前方,則是一張西班牙風乾火腿枱。水吧旁設有一凍櫃,內放了不少新鮮海產,彼鄰正是廚房的出菜位置,設有三四個高桌坐位,可在用餐的同時從旁欣賞大廚們的手藝。難得 Chef Table 無人坐,筆者多口問句又確能安排喎!

頭盤小吃首推西班牙風乾火腿,有關火腿分了多個級別,餐廳供應的 Dona Lola 100% Iberico Ham 屬最高級別的 Bellota 等級,風乾熟成了 40 個月,並選用了更肥美的後腿部份(Jamon)。咖啡有咖啡師,品酒有品酒師,現在火腿也有火腿師。閒談間得知兩位火腿師最少有十多年經驗,對西班牙火腿的製法好壞皆瞭如指掌。一客四小塊的火腿併盤,每塊皆摘自不同的部份,由右至左分別是近腳踝的部份(jarrete)、大腿後方(maza)、大腿前方(babilla)及大腿最上方(punta),口味依次由淡至濃,由瘦至肥。老實說,不是火腿師的介紹,之前也沒有那麼細仔考究一只火腿的不同部位。

根據建議,先嚐近腳踝的部份,肉質比較瘦削,口感實一點。來到大腿後方,脂香明顯更豐盛,口感亦更腍身,有頗強的餘韻(after-taste)。至於大腿前方,肥美度和大腿後方不分上下,但餘韻似乎不及後者。最後是大腿頂端部份,食感最油潤,鹹香感亦最烈。綜合而言,筆者較喜愛大腿後方的部份,因不論味道、質感與油潤度都較平均。

筆者喜歡吃生蠔,但很少機會一試產自西班牙的款式。 Giant Spanish Oyster Duo Foam 用上 Galicia 生蠔,產自西班牙西北面的水域,鹹淡水交界,水質優良,海產特別豐富。 在此優良環境長大的 Galicia 生蠔,入口滑溜,細嚼爽脆,海水鹹香度不會過烈。為增加菜式的風味,大廚用了兩款不同的醬汁為生蠔添味。其一是用上 gin tonic 打成的泡沫,以西班牙的 Gin 酒調製,味道微甘,並帶上含蓄的酒香。其二是用酸瓜雜菜伴以橄欖油的醬汁,食感微酸帶脆,有助引出生蠔的鮮味。

接下來是主菜時間, Marinated Seabass with Potato & Green Bean Terrine 是相對味道輕盈的主菜,大大的海鱸魚塊,只是輕輕以食鹽醃製提味,保留天然的鮮魚香,魚肉質感白滑。鱸魚上方有一團 gin tonic 泡沫,與生蠔所用的一樣,蜻蜒點水式的留下一股微甘酒香與西班牙風味。伴碟的選材主要是一件薯蓉餅,外層煎至焦脆,內裏混入一些時令菜粒添色添口感。為增加擺盤的可觀度,大廚在碟邊用上不辣的紅椒蓉輕輕畫上一筆,面上再放滿綠嫩的菜段,色彩奪目。

燒乳豬是西班牙菜的名物,當然不會錯過。 Slow Cooked Suckling Pig Terrine with Potato Foam and Seasonal Vegetables ,先慢煮乳豬肉 12 小時,以保肉嫩多汁,繼而挑選最細嫩部份拆肉起骨重新塑型,面上再放回燒脆了的豬皮,十分美味可口。更另人驚喜的是配上的醬汁,是以豬骨豬肉餚煮 72 小時而成,味道濃郁細緻,伴上乳豬吃收畫龍點睛之效。

稍事休息,是日最味濃的主食 Mediterranean Red Prawn Soupy Rice 也準備妥當。西班牙湯飯主要以海鮮餚成的醬汁明火生煮成有嚼勁的米飯。菜式的亮點當然是那只地中海紅蝦,窄長紅紅的蝦身,頭與身的長度差不多一樣,食感十分爽甜,而精華部份則仍隱含於蝦頭之中。在上菜之時,大廚會於食客面前擠壓蝦頭部份,大量的蝦汁一湧而出,拌勻滲透至每一粒米飯都帶有濃郁的蝦香。除紅蝦外,飯面另放有四只海蝦,相比紅蝦,這四只海蝦蝦味比較清淡,脆彈口感則更勝一籌。

另一道甜品 Banana's Ice-cream & Pudding with Passion Fruit Cream and Crispy Peanut,製法更為複雜。大廚先以新鮮香蕉切片,伴以熱情果肉放入真空袋抽真空,製作過程中熱情果肉與精華會深深的印壓在香蕉片上,從而改變香蕉本身的味道,是份子料理的做法。這些清新酸香的香蕉片下方,放有一小片香蕉製成的布丁,彼鄰則是自家即製的幼滑香蕉味雪糕,伴上的醬汁同樣是以熱情果鮮製。以兩款生果展示多款製法與賣相,可見主廚的心思與功力。

香港人吃魚都真是被寵壞了,不是最新鮮的都會覺得有點欠缺。不過這味菜的伴碟就給了一些驚喜,這廚師用了菜芯來作伴菜,輕輕的用油炒了,使菜爽口得來又有甜味,很適合香港人,配搭又夠創新。

與中國的不同,這乳豬不會是全隻上,而是起肉,砌成另一形態。因這是慢煮,所以用質很嫩,油份也能保持,當然也保持了肉味啦。美中不足的就是外表不夠脆。

地中海紅蝦湯飯。當這道菜放在枱上後,廚師便說原來是有一個秘技的,就是蝦頭。廚動手把紅蝦切開,並把蝦頭的精華擠進湯飯中。在擠的同時便聞到很香的蝦味,真是精華所在。伴有這精華的湯飯自然是美味非常。

剛才步進餐廳,已見專人在切風乾火腿,不禁產生品嚐的意慾。原來店家非常講究,可讓顧客選擇豬腿的部位,喜歡那種質感和味道,直接落單即可。

今晚一次試齊四個不同位置,順序由上圖的近至遠,分別是Jarrete、Babilla、MazaPunta。個人最喜歡最後一款,即是近豬腱肉的部份,該處相對乾身帶有嚼勁,越𡁻越香,鹹鮮的味道濃烈但不過火。配合葡萄酒細味,所有香氣在口腔縈繞,餘韻悠長。

製作這款二重奏的生蠔體積巨型,店家特別挑選加利西亞品種,此地位處西班牙西北部,屬於鹹淡水交界,孕育豐富的海洋生物。廚師處理其中一隻生蠔時,利用分子料理劑出氈酒忌廉,味道帶甜又可增加濕潤,滑溜得直墬喉嚨。至於第二隻則加上蕃茄蓉等調味,質感更為爽脆,蠔香也較濃郁。

利用刀子切開這件乳豬時,已感到其腍軟鬆化大量肉汁同時溢出,形態對辦。原來廚師採用慢煮方法花上12小時浸熟乳豬,怪不得幾乎無需用力,便能輕易把乳豬分開。乍見肉絲纖維條條分明,微微鹹香絕不過乾。頂頭的豬皮煎得香脆無比,與豬肉形成強烈對比。一般餐廳可能配上薯角或薯蓉,這兒卻拌著薯仔泡沫,較有特色。碟旁的荷蘭豆從附近街市入貨,發揮消減膩感之效。

進入中場時段,不妨試試這個甜品。莫看其只有小小一杯,其實已包含多個層次最底是以西班牙酒製作的啫喱和忌廉,上面是柑橘雪糕和Sangria雪泡,最頂層則是新鮮刨下的橙皮。採用的西班牙酒名為Licor 43,由不同的果汁調製,並加入雲呢拿和香草,一共有43種成份。小妹舌頭的靈敏度未達化境,無法一一識別那43種材料,只知底層甘甘甜甜,配合酸度頗強的雪糕,輕怡清新,能夠洗滌味蕾迎接下道菜式。

最期待的地中海紅蝦海鮮飯出場!成品以巨大的平底鑊盛載,送來時冒著白煙,香氣徐徐飄送,心情不禁興奮起來。廚師即席把紅蝦蝦頭切開,並把裏面的精華劑出來,然後把飯和材料撈勻。飯底採用西班牙米bomba rice,雖然吸收湯汁後變得濕潤,但絕不腍糊反而煙煙韌韌。由於所有味道都鑽入了米飯,鮮美濃郁、豐馥無比,即使不添配料已夠好吃。紅蝦體型珍寶,肉質緊緻鮮甜,飯粒夾雜著中蝦、魷魚粒等,倍添嚼感滋味無窮。

甜品賣相雖然沒有太大驚喜,但材料搭配同樣經過精心設計。主體慕絲滑滑溜溜,可能加入清香的椰子,沒有構成沉重負擔,細味之下又會發覺薑的蹤跡,微微的辣為舌頭發來刺激。底層的芒果忌廉沒有太過厚身,酸酸清清幫助消化。至於最頂的朱古力碎,則甘甘甜甜。同一甜品齊集甜、酸、甘、辣的味道,互相調和又不搶風頭,構成複雜口感,絕不簡單。

The ham tastes strongest nearer the bottom because of gravity which is the bit I like but most people will probably like the part just before the end where it is flavourful but not too strong.
After having the ham, we had the oysters, one was dressed in Gin foam which had a sweet aftertaste to it and makes the oyster really silky and seals in the flavour.

The other one had a stronger dressing which I liked but I personally prefer a sharper taste.

然後就係燒豬肩啦,得每人2片,又超好食,又唔夠飽,好似有套好精彩嘅電視劇完咗咁,好唔捨得完。

If you are new to Spanish cuisine, have no fear. Their signature dishes are sure to impress. These include: slowcooked baby lamb, roast suckling pig, sautéed mussels, and their famous hand-carved ibérico ham. In addition to offering authentic Spanish food, Quemo also boasts an extensive selection of beloved native Spanish beverages such as gin & tonic. 

Quemo places an emphasis on a fun experience- every week, they hire DJs and saxophone players to perform in their terrace area to provide customers with a chance to unwind after a long week. In addition, their restaurant offers a small private dining area for around 6 people, which is a good option for those who are looking for a venue for small special occasion meals. 

Overall, this restaurant is a 10/10. The staff are passionate and friendly, the food is scrumptious, and the atmosphere is lively. I will definitely be returning to Quemo soon to sample the rest of their menu. The only part of the restaurant that I would criticize would be certain prices of dishes on the a la carte menu- they can be slightly expensive given the portion sizes. If you're looking for a meal priced between $200-250, make sure to go during lunchtime for their set menu. Otherwise, if you're looking for something more extravagant, dinner at Quemo is an excellent option.

For starter, it was sharing style. Not much surprises for the starters, nevertheless all dishes were well seasoned. Being Asian, I like sharing plates cause I get to try a lot more. I had better tapas elsewhere. Not much I could comment on the cheese platter. Pan Con tomate was essentially tomato on toast, perhaps it wasn't served immediately, it was slightly soggy. The yolk for the fried egg was still runny which was good dipping. I liked how the egg was not seasoned as the chorizo was salty enough. Patatas Bravas was deep fried potatoes. They were not crispy at all, even with the sauce on top, they tasted bland. Crispy Fish Tempura on the other hand was indeed crispy and the chili dipping sauce that came with it gave a good hit of heat. Mackerel Salad was just an ordinary salad, good to have some veggies tho.

Charcoal Grilled US Rib Eye

For main, we had Surf and Turf Paella and Charcoal Grilled US Rib Eye. The paella was not the typical saffron rice. It came in a plate pan and the server helped us to portion it all straight away. I would prefer it being left on the pan so that we could slowly work our way through to the crispy rice. The chicken was tender but overall, slightly over salted.

I enjoyed the Rib Eye a lot. Char-grilled gave it a nice smokey crust and added in loads of flavour The inside was still pink and juicy. The beef is good enough on its own and I didn't even use the sauce.

Quemo has always been renowned for its authentic food but the a la carte lunch previously deter me from going there often.

Appetizer-i choosed the air dried beef and cherry tomatoes salad. The air dried beef is home made and chef told me that they actually used 100 days dry aged spanish iberico beef. The taste is very intense and has a meaty aroma. It is a superb dish and a MUST TRY for beef lover.   

Soup-The mushroom soup is more like a clear broth as it is not made with cream. The texture is smooth and has a earthy flavour and it is not filling. This is a great hearty soup for winter.

Main- I picked the pork paella as it is the signature dish in Quemo. It is voted the Best Pealla in Hong Kong by HK Magazine. Normally the paella cost 398 for 2 person. Now i can savour it at 1/3 the price. The dish did not dissapoint me. The rice is caramelized on the side with a crusty texture while the rice at the centre is more chewy. This is the authentic way to cook the paella.

Dessert-I went for the Caramel custard and it is done just right. It is not too sweet and a good way to end the meal.

The manager told me that they started the Sunday Jazz Lunch with live saxophone performance. The menu will be the same offered on weekdays. I will definitely come back for this attractive offer.
