Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

真鯛薄切刺身配海膽醬,半透明若隠若現盡是誘惑,原味品嚐。淡淡微弱清清的純天然魚味,再來浸浸海膽醬,鮮甜味澎湃,特濃海膽味只甜不腥,黏黏的付在刺身上,雖有點喧賓奪主感覺,但淡淡白肉撞上極濃鮮醬,真的十分美味無比﹗


特選大吞拿魚腩刺身,內外都肥到豬肉一樣,油潤滑潺潺不容易用筷子夾起呢。一下子跣到舌頭上,超級嫩滑,翻滾半秒已完全溶化,甘甜絕頂,魚脂香到天堂,餘韻纏繞所有味蕾,久久不散。


日本直送海膽刺身,不知為何又一城會用上雞尾酒杯演繹,不是用板會更美觀整齊吸引嗎?應該不會是即叫即開活海膽吧﹗清甜沒半點腥嗅,難得一遇到味道,大大劈海膽用脆口紫菜捲著,冰涼濃味開胃醒神食多兩舊,暢快舒服﹗


榮螺壽司,極速 30 秒轉眼出現面前,有在迴轉帶上取用之厭喎 ﹗淡淡然的螺味,有點沉實不鮮,嚥韌有螺汁。飯粒不濕而甜醋味略淡,中規中矩,食下無妨。炙燒極上和牛壽司,和牛味道比以往香濃味美喎,終於都長進喇 ﹗鬆軟和牛,加上炸蒜片及蔥花更添風味。甜蝦蟹膏軍艦,爽爽鮮甜黏彈蝦仔,搭上濃味蟹膏,一咸一甜還有清爽青瓜片亙相擦出愛火花,滋味無窮。


千兩壽司,極上吞拿魚腩蓉加海膽併三文魚子,撒上蔥花芝麻,整舊啪入口 ﹗前呼後擁,肥美魚腩蓉,鮮彈海膽肉,咸香三文魚子脆卜卜,飽滿飯粒,融為一體百味交錯好好味啊﹗千兩手卷,原來跟千兩壽司 double 左都無為意添,浪費左個 quota ﹗兩者異曲同工,基本上一模一樣。手卷添加香脆紫菜捲著,味道更上一層樓。


牛油燒七彩緋貝,在坊間或街邊見到的緋貝肉都是發育不良,薄薄細細縮水奀滋滋,眼前如此肥美特厚都是首次遇上。肉質竟然是爽爽的彈彈的,鮮甜味出眾非凡,質感及味道都有點似沙插,但更鮮甜更嫩滑。鰈魚西京燒,魚油勁到立立令反晒光,肥到十足銀鱈魚一樣,有過之而無不吸。滑嘟嘟結實的魚肉,魚味濃郁帶甜食極唔厭。


板燒慢煮叉燒,我真的飲多了 ﹗在腦海浮現的是一舊舊中式叉燒,當菜色送到面前才如夢初醒,正解是日本叉燒來的呢。乾乾鞋鞋吸收大量甜甜醬汁加洋蔥味道,不喜歡。炸軟殼蟹,新鮮出爐立即唧下鮮檸汁,整件掉齒舌之間品嚐。她們非常鬆化,有咸香有蟹味,味道混濁,鮮味欠奉,不過不失。


串燒雞腎,爽甜雞味濃濃多汁,調味得宜最好味 ﹗串燒雞翼,有點過火乾爭爭。串燒豚肉,硬硬韌韌咸味稍重。冷稻庭手打烏冬,我最愛的冷手打烏冬 ﹗間中有空都會在家親自下廚烹調呢。混入蔥花薑蓉,還有必須的靈魂 Wasabi ﹗已經準備就緒,我唔客氣喇,易打打易麥士﹗


涼浸浸彈滑嚥韌的冷烏冬,米香非凡突出,淡淡醬油散發蔥花香氣,夾雜薑蓉的辛辣微甜,泛起青芥辣的芳香清新,陶醉萬分不能自拔,不停大大力吸啜吸啜,迅間所有烏冬都消失得無影無踪﹗

All time cooked fish favourite. Nothing can really replace it.

Scallop Sushi
I actually prefer cooked scallop to raw ones, but having scallop sashimi/sushi once in a while is satisfying. 

Oily Fish Sushi
Also one of the must-orders, fatty texture of the fish is irreplaceable.

Salmon Belly Sushi
Raw salmon is full of bacteria but it's uncontrollably delicious. So just control yourself to have one or two pieces is fine.

好少可喺壽司連鎖店入面見到咁用心嘅甜品系列💖 呢個組合分別有抹茶鞠福,焙茶卷蛋同埋熱豆漿。 鞠福即係大福,抹茶甘香,加上紅豆蓉同煙韌既大福皮好好食😘 師傅做諗咗個特別嘅方法,就係加入豆漿令到鞠福嘅甜味減低,較適合鍾意少甜嘅人士😉 至於焙茶卷蛋,淡淡嘅焙茶味配上鬆軟嘅卷蛋質感,食完之後好幸福🥰

今日小公主要去小一入學面試,時間很趕;之前又食了一大份早餐,既然午飯唔需要食太多,又已經有一段長時間沒有幫襯「千両」,決定就在「千両」食晏。不過也等了差不多10分鐘才有位。「千両寿司」源自日本枥木縣,隸屬於日本元気寿司旗下的高級版迴轉壽司。二十幾年前元気首先進駐香港,以平民價的迴轉壽司成功地在香港將壽司普及化,間接推動香港人接納及學懂欣賞高級鮨店。之後,香港《美心集團》引入「千両」,並在香港越開越多分店,成功地在香港打造出高級迴轉壽司的地位;反而到了今天,日本竟然只剩下兩間「千両」。既然係高級迴轉壽司,食材就不能馬虎了事:採用日本宮城縣產珍珠米、日本當地釀造醬油及豊州市場直送漁產。可能鋪租實在太貴,連門口也不放過,設了一張吧枱招呼客人,不過就採用人造石面;吧枱後亦沒有壽司師傅或者任何刺身雪櫃,感覺有點奇怪。今日是週末、並非上班時間,客人未至於特別超級多,不是很多客人願意坐在這張吧枱。始終是迴轉壽司,迴轉壽司吧當然少不了,不過卻有更多舒適卡座位。燈光昏暗,裝修雅緻;既不似迴轉壽司店、也不像高級日本鮨店,反而更似一間新派日本居酒屋。坐在卡位就要用點單紙。除了壽司刺身之外,也有多款熱食供應。

小公主食牛肉稻手打烏冬($52)。牛肉質素似乎非常高,見到清晰的雪花脂肪紋,油脂甚至溶入清湯內,湯面泛起不少油花。加上牛肉份量少、又非常薄,可能真係日本產牛肉,只不過唔係最高級嗰啲和牛。食一塊牛肉,的確非常美味;不過烏冬同湯底就差啲。烏冬唔夠彈牙、亦欠嚼勁;湯底也實在太清淡。

總共叫了9件壽司日本特大帶子($22)油甘魚腩($22)、香蔥吞拿魚腩蓉軍艦(2件)($56)炙燒左口魚裙邊(2件)($38)甜蝦蟹膏軍艦(2件)($28)牡丹蝦($46),價錢普遍貴過其他迴轉壽司店。論賣相,比其他迴轉壽司店好,最低限度做到外型工整,飯團唔會大大嚿、亦唔會一夾起就完全散開 ⋯⋯ 不過始終可能係機器制作飯團、又或者係師傅功夫未到家,飯粒始終有啲鬆散。日本特大帶子油甘魚腩牡丹蝦壽司的外型最好,遠遠勝過普通迴轉壽司店,有中高級鮨店的影子。至於味道方面,秉承「千兩」一貫的優質食材質素,魚鮮夠鮮甜,與坊間的中高級鮨店有得比較。

甜蝦蟹膏軍艦香蔥吞拿魚腩蓉軍艦外型就唔係好掂,又長又扁,尤其是點綴用途的甜蝦軍艦的兩片青瓜及吞拿魚腩蓉軍艦的白葱絲,就更加顯得非常隨意。甜蝦蟹膏味道比較差,尤其是蟹膏,只有鹹味、欠缺香氣及蟹味。吞拿魚腩蓉質素很好,魚肉沒有凍冰冰、接近室温,亦有吞拿魚腩的油脂。如果閉起雙眼品嚐,味道與中高級鮨店沒有太大分別。

整體來說,每件壽司的賣相事實上已經好過普通迴轉壽司店,不失「千両」作為高級迴轉壽司店的定位;魚鮮質素及壽司的整體味道亦遠遠優勝過普通迴轉壽司店,如果閉起雙眼品嚐、唔睇壽司外型,部份壽司的味道甚至可以媲美中高級鮨店。12:45 入座,13:16 埋單離開;前後只用了30分鐘就食完午飯,快得難以置信。翻查一下點單紙價目,日式海鮮茶碗蒸(蛋)、海鮮味噌湯、日本餐雪糕分別取價 $30,日本產海膽及おとろ壽司大約$60 / 件,加加埋埋其他款式的 10件壽司,原來「千両」價也要大約 $360;至於中環及銅鑼灣商廈樓上舖中高級鮨店的午市12件壽司套餐大約 $400~$480(未係香港的頂級鮨店價),還包括前菜小食、咖啡/茶,及殷勤服務,而且,壽司食材質素及壽司師傅技巧更加高。比較之下,「千両」其實不便宜。

今次主要是為了海膽軍艦而來的 之前在尖沙咀分店吃過後一試難忘 於是今晚心血來潮再嘗一下那種滋味今次明顯水準下降了 只嘗到陣陣雪藏味 唯一不變的是包著壽司的紫菜還是脆的反而其他壽司味道不錯 值得一讚的是牛油果軟殼蟹卷 每一件飯卷入面都藏有軟殼蟹 用量絕不馬虎 而且還吃得出是剛炸好沒多久的 甜蝦壽司亦維持一貫水準 鮮甜可口 蝦身size算大三文魚腩壽司味道不錯 魚腩新鮮肥美
