清蒸河鰻 ﹣ 河鰻肉質滑溜,非常好! 但河鰻有很多細骨頭,要吃得很小心;我拿了魚肚位置,因而避過一刧

I gotta admit, I love Shanghai Cuisine and I used to love the food there. But this didn’t last long. Even though I heard rumour that the Top Chef of Shanghai Fraternity Association has joined another newly opened Restaurant in Causeway Bay called Zhi Wei Shanghai Restaurant 知味舍. I didn’t believe it until I tried so.
Last Sunday, 15/08/2010,
I went there to try the food with some relatives.
However, the food is not as tasty as in the past.
脆鱔
used to be the most favorite dish in the restaurant.
However, it is not crispy and with the strong stink smell of fish.
燻蛋
can be called smoked egg. Well, it does have a strong smell of smoke but it is not delighting at all. I wouldn’t call it smells good but it smells stale or polluted. I strongly DO NOT recommend this dish.
煙燻雞
is just the same as燻蛋, it is called the smoked chicken in English.
However, the smell of smoke is strong but like I said it didn’t smell good but stale and polluted. Also, it wasn’t hot enough to bring out the taste of chicken.
走油元蹄
is just too heavy and healthy. As refer to its name, it is called less oil. However it ended up with lots of oil which is totally not enjoyable.
生煎包
the skin of it is so thick and it wasn’t juicy at all.
After the whole dinner, I am really disappointed. Do not even mention it is one of the best shanghai restaurant. It is a shame for them to cook and sell food at this quality. You may think I’m picky but I have demand when it comes to food. This restaurant is NO LONGER recommended anymore.

小籠飽 -反而有點失望呢! 不是不好吃, 但因為這道菜在外面吃得太多了, 期望上海總會造的會有點驚喜, 如果飽皮造得薄一點會更加好味~


湯:
白菜咸肉湯 -味道清清的, 令我想起小時候嫲嫲煲的湯!


整體來說對這家餐廳印象不錯, 不過今天上菜的速度實在太慢了, 吃完三道冷盤等了很久才上主菜! 不過服務態度還可以呢~


而味道跟外面已改良配合香港人口味的上海餐廳很不同, 吃多了外面的, 再來這裡, 你會對上海菜有奐然一身的感覺!

我本身都好中意食上海菜

但今日食完上海總會之後

我覺得市面上其他好多打正旗號食上海菜既餐廳(e.g 王家沙, 上海婆婆等等) 真係完全不外如是

因為在實施嚴格會員制既上海總會

是晚每一道菜都令人感覺到廚師同佢地既團隊真係好比心機去做

桂花魚-->上面有非一般既大頭菜絲, 撈埋d逐條逐條起出黎既魚肉一齊食, 魚肉香得黎爽滑, 又有酸酸甜甜既味, 真係一流~

薰蛋-->入面有溏心, 黏黏地, 好好味~~

雞煲翅-->都幾粗既翅, 加埋金華火腿食, 中和番d咸味, 味覺一大享受^^

清炒豆-->應該係用荷蘭豆逐粒逐粒mok出黎

仲有生煎飽, 炒蝦仁,
油浸雞(層皮係脆既, 加埋佢放左d好似係醃菜既野係上面, 係我食過唔同款式既雞之中最好食既), 唔知仲有冇講漏。。。。。。

收到南瓜兄的邀請,知道是來實施嚴格會員制的上海總會,好唔好吃我就唔知,我只是知道機會難逢,試試不同店子的手勢,對我來說總是有興趣的,立時訂了兩個位,預埋女友一份,二人來到之後又是指定動作,等食。在等食期間,吃吃一些在桌上的小碟,分別是花生及涼菜,涼菜是醬醃菜,吃起來的口感有如榨菜,加了點芝麻在面的,不知是否從浙江海寧來的,吃起來爽口而又不死鹹,只帶非常輕微的鹹度,吃多了也不怕腎負擔太重;花生是炸過而加了點碎海苔在面的,吃起來有點點鹹,也有點點甜,吃起來有點海苔味,加上花生又夠香脆,好吃!不過都是不要多吃。之後就來冷盤了,是夜有五個涼盤,第一味是燻蛋,燻蛋未端至上桌,已經是嗅到很香的煙燻味,雖我還有很多上海館子未吃完,但比較至少十數間的,此處的煙燻味真的是最強,店家替大家先下了鹽,其鹹度適中,那煙燻味濃起來是陣香味,而不是澀味,加上蛋黃都夠溏心,有蛋香而蛋白味又未至於被其他味全蓋過了,確是做得很有水準。第二道是醉乳鴿,雖說是乳鴿,但其個子絕對不小,但鴿肉又出奇的一點也不嚡,但稍嫌部份鴿肉有點粉散的感覺,而值得一讚的是鴿肉確有花雕味,就算是厚肉的胸部,鴿肉也有不錯的花雕酒味道,但個人認為那

第二道是醉乳鴿,雖說是乳鴿,但其個子絕對不小,但鴿肉又出奇的一點也不嚡,但稍嫌部份鴿肉有點粉散的感覺,而值得一讚的是鴿肉確有花雕味,就算是厚肉的胸部,鴿肉也有不錯的花雕酒味道,但個人認為那個花雕的香味可以再突出一點,不過其實也明白用來做菜的花雕,都絕不會是陳年的,陳年的讓我喝了更好,哈哈!

第三道是脆鱔,脆鱔顏色是頗深了,但吃起來未夠重醬,莫非未能貫徹滬菜濃油赤醬之風味嗎?實也不能一球定生死,脆鱔灼過後,走了兩次油,明顯的是走得清趣利落,鱔段脆口的不得了,吸飽了醬油及香醋,吃起來相當惹味,可恨吃不出紹酒的味道,但光是論及其炸功及火侯都絕對是值得欣賞。

之後來的是素鵝,這個素鵝人家沒說過是煙燻的,沒煙燻味也是相當合理,這個涼吃的素鵝,比油炸的清淡得多,外層的腐皮吃起來有層次,咬起來夠腍又不油膩,加上內有冬菇、金針、紅蘿蔔及木耳作餡,炒勻過的餡吃起來有點醬油香味,吃起來又有咬口,也是一味不錯的涼盤。

最後的涼盤是四喜烤麩,烤麩明顯的是用手撕的,其粗疏的氣孔在炆煮的過程吸盡了味道,加上醬油味道夠濃,吃起來一點酸味也沒有,都知道此道菜師傅在背後下了多少準備功夫,榨水沖洗的過程一絲不苟,甚是抵讚,加上同煮的的冬菇、木耳、筍及毛豆也是煮得入味又剛熟,伴着味道最為濃郁的烤麩一起吃,真不錯。

在喝湯之前,先來兩味海鮮類的主菜,相信其價位也相當不菲,畢竟就算在杭州當地有點名氣的館子吃個河蝦仁,也真的挺貴呢,是日的清炒河蝦仁,真的是河蝦仁,不知店家是從哪兒來的貨,蝦仁炒得很夠熱,蝦肉有咬口不霉散,本身一點腥味也沒有,蝦味又重,光吃不蘸醋都很不錯,要彈的反而是黑醋,真的不太香,真的不蘸醋吃更好。

另外一味海鮮菜是醬炒青蟹年糕,什麼三絲炒上海炒年糕就吃得多了,今天那個醬很好吃,伴起年糕來吃很甜的,試想想一隻那麼大的青蟹,用了海鮮醬與酒、薑及蔥一起炒過之後,再與年糕焗在一起,年糕一邊煮軟一邊吸味,蟹肉甚是清甜不腍散,質地夠結實而嫩口,本人更有幸吃到青蟹的蟹鉗,一口咬下,大量的蟹汁爆出來,味道非常之甜,配起濃醬與年糕一起吃,真的是人間美味,這個年糕真的不由得我不讚好。

接下來的終於也到下一個大項目了,是火瞳雞燉魚唇湯,店員在上桌之前已經幫大家分好了,還將湯渣放到桌上讓大家吃,其實這個燉湯,咁大一窩又真的挺矚目的,看見那碟金華火腿,真的是多得誇張,不知是否店家連本身高湯底用的火腿也搬了出來充大數還是怎的,但怎說也好,湯頭的而且確是清得來非常之鮮甜,那個豬肉的鹹香非常之鮮美,而魚唇滑滑的,有咬口及少許的黏性,但稍嫌不夠腍,有點煲的未到火侯,莫非兩者是同床異夢?但個湯真的不得了,用超清無油超甜六個字形容絕不為過。

之後來一味燻嫩雞,繼剛才的燻蛋之後,又一煙燻的力作,也真的不讚嘆店家處理煙燻菜式的手藝,同樣的這個雞的煙燻味極重,本人真的很欣賞那個煙燻味,跟蛋都是一樣的一點也不會澀,是很香的味道,加上燻雞的難度要比燻蛋高得多呢,可惜隻雞明顯是弄好了很久,不夠熱,雞皮腍哂,是勁多水份回潮了,這是食物的大忌,好好的一碟雞,就此大大的被破壞了。

真的發覺是夜的菜式也挺豪的,繼蟹及蝦之外,又有魚的菜式,這條龍鬚桂魚,確又是一道功夫菜,廚子要將大大條的桂魚起肉切成絲狀,非常之考刀功,再要走油爆炒熟,魚肉細膩嫩滑,絕不嚡口,火侯控制又記一功,加上吃起來又一點也不油膩,調味下得不重,好讓魚天然的鮮味不被遮蔽,其實這條魚真的不錯。

最後來一個挺為Heavy的主菜,而且是Heavy到極點,皆因這味走油元蹄得個肥字,肥膏比肉多一倍,確是過多了,變得吃起來不是甘香,變成了負累,瘦肉部份又很嚡,肥的部份跟瘦的部份未能做到渾然天成,唯一抵讚的是個汁味道很自然,不會有些上海館子,求其的打個超濃醬油生粉茨,所以用來蘸銀絲卷吃一流的,銀絲卷吃起來夠腍有包香,但未夠層層絲絲,做得不夠精細。

最後的主菜終於有丁點纖維了,這個火丁甜豆,屬時令之物,這個甜豆其實是豆殼之中的種子,甜豆又爽又甜,粒粒都非常飽滿,比留園雅敘的更大粒,是取貨的問題,甜豆跟火瞳肉粒同炒,吃起來其實是甜之中帶點鹹香,咬到粒粒的火瞳肉粒,味道也不錯,但跟留園雅敘的比,此處的火腿味又沒有那麼重,各擅所長,真的要看看大家的口味,才能下結論。

單尾來一客生煎包,生煎包很夠熱,底部確是煎得很脆,包身夠軟有芝麻香又不會太膩,如果可以再鬆一點會更好,肉餡過份的實心而不夠鬆化,但其肉餡的肉汁又確算挺多的,說真的,這個生煎包的而且確,是已經要比很多香港的上海館子好吃,但距離完美還有一大段的距離。

吃得飽飽的進入甜品環節,但其實甜品也是一味非常之飽肚的東西,原來是南瓜紅米八寶飯,等店員為我們分好一件件之後,就可以吃了,蒸熟的紅豆蓉及紅米飯,加了其餘的寶如核桃仁、甜櫻桃、瓜籽、南瓜籽、芝麻及蓮子等,全都一早被醃得甜甜的,又煮得夠腍,瓜籽間中帶一點咬口,紅米飯夠黏,南瓜也是蒸得超腍,吃起來有着南瓜自身的甜味,又有紅豆蓉的香味,加上伴來一點桂花糖漿,糖漿不太稠而又夠清甜,有着陣陣的桂花香,味道及口感方面都一流,雖然說自己是飽,但面對這個甜品也令我足足吃了兩件。

總括來說其實都好食,但可能是期望真的過高吧,吃後又不是有飛了上天的感覺,但是夜確是有數道菜是值得來專程一吃,有幸來此一吃,本人是心存感激的,在此再次多謝南瓜兄的邀請及穿針引線,與及占士兄出的面,這類型的私房局,實在是非常之有吸引力,希望是長吃長有吧。

烤麩, 是另一個滬菜中流行的素食前菜, 亦即是烤麵筋. 上海的麵筋, 用上滬式的鹵醬去調味. 同齋鋪的廣東式不同. 這個烤麩, 明顯的比較乾水, 麵筋滲滿了醬汁, 內裡外裡, 味道濃郁. 正宗的上海人口味.

脆鱔, 果然是炸得脆卜卜, 細細條應該是黃鱔肉. 膳肉, 本身用了醬汁醃過, 炸得香脆但一入口, 就是醬汁的味道. 感覺好滬.

燻蛋, 煙味好重. 咸咸地的蛋, 味道非常之好. 不過那煙味就好似皇了少少, 而且蛋黃顯得過熟, 同樣的出品, 寧波會做得比較出色.

醉乳鴿, 乳鴿幾好肉, 用上上等的紹興酒去醉佢. 酒味香而濃. 鴿肉帶芳香. 用此兩句去形容, 簡單又貼切.

食完5個份量十足既前菜. 一道道的主菜陸續的遞上, 首一味, 來個淡口少少的. 一個上等的清炒蝦仁. 細細粒既蝦仁, 清炒起來一樣爽口甜滑, 小小的蝦仔, 膠質豐富, 咸咸地的原味實在令人想吃多一口. 只不過, 比較油. 這是傳統上海菜的一個不好處.

醬炒青蟹年糕, 不學廣東人用薑蔥伊麵底. 上海人用濃醬汁加上海年糕底. 味不同, 道一樣, 都是想將蟹肉蟹膏鮮味, 帶落底下的麵中. 所以一但這樣弄蟹, 弄龍蝦, 主角, 是底下的麵. 是次用上上海年糕, 成碟菜既精華, 就在那一片片煙韌彈牙的年糕中. 什麼蟹膏蟹粉已經不在蟹殼內, 所以個蟹蓋, 無人問津. 蟹肉同年糕香味十足. 呢味菜有10分.

是晚菜式中有一個湯. 我們不食翅, 改為一個魚唇湯. 全名火腫雞燉魚唇湯. 湯帶著甘香的火腿肉味, 成個調味, 就是靠那一塊連皮的金華火腿, 飲湯, 不妨也夾一塊金華火腿來吃. 湯味道香甜, 充滿了金華火腿, 同雞肉的精華, 魚唇也爽口帶腍. 金華火腿肉, 煲過之後味道一樣極重, 吃多一片, 味道太濃了, 皮又太肥美了, 為了繼續享用下一道菜式, 只好放棄, 飲埋碗湯算.

一煲靚湯過後, 就是餐餐都有既雞, 不過此雞不是一般食到悶既炸子雞, 而是江南菜中既煙燻雞. 同燻蛋一樣, 煙味甚重, 未夾起, 那股煙味, 已經燻到我面前, 雞肉是嫩滑的, 雞味好不好, 用這一種方法去弄, 雞味香不香己變得不重要了. 那肢煙燻香, 雖不是人人喜歡, 但這樣燻出來的鹹香, 是非常香口的.

酒宴中, 實有一味是魚, 龍鬚桂魚便是是晚的魚類主打. 魚肉魚骨事先已挑了出來. 留下魚頭魚尾, 可真費廚師既功夫. 骨不要, 魚肉切成絲, 再走一走油, 再加點調味. 若不是因為走一走油而令到已菜式油多, 也許更合胃口. 有時多油, 味道太濃, 只是不合個人口味而已, 不是做得不好食, 像明星馬先生般咁劣評上海菜, 真的只會令人恥笑.

名字叫走油元蹄, 滬菜中, 去骨元蹄是其中一個精髓之作. 說是走油, 食落, 的確不是太油. 元蹄皮味道夠濃, 豬皮膠原豐富, 滑口不膩. 可口可口.

主菜中的尾聲, 是火丁甜豆. 用少許的火腿粒來炒甜豆中裡面既豆, 殼不要, 淨搣豆取出一條約4至5粒的小豆已經是需要大量的人力. 雖不是甚麼考功夫的菜式, 但是絕對是一個費功夫的菜式.

上海的名點, 生煎包, 作為餐後的麩食. 皮靚餡甜. 絕對是自家製的包. 一咬, 帶有少許的肉汁從邊位漏出. 若淨食呢個包做晚餐, 3、4個也吃得下. 而兩條銀絲卷, 欠了煉奶而令到我對佢地既與趣不大, 大家看圖算.

最後, 是甜點, 南瓜紅米八寶飯. 有什麼八寶, 有什麼發寶, 沒有去撩了, 我只管食, 我只會吃. 紅米加上南瓜, 味道特別的甜美, 其他八寶中醃到變彩色的車厘子我是不會食的. 紅米香, 南瓜甜. 雖然是一個令人更加飽肚的甜品, 奈何, 食一口, 令到甜哈胃大開, 真的要忍一忍, 才不會出手再夾多件.

朋友說, 上海總會晚上10點關門的, 所以出到湯之後, 餸菜開始機關鎗般奉上. 離開時, 果然, 我們已經是最後兩檯客. 味道出色, 是晚難得的飲食經驗, 實在非常之感激搞手們. 特別的一個體會, 由美食的開始, 也由美食的終結. 不知下一個會所宴會, 又會在那兒舉行呢?

套用貴網其中一位殿堂級食家,在食評中常用的四個字:望穿秋水,來形容這一晚的飯局.中環雲咸街南華大廈內的上海總會,長期以來在我的名單之內,中環區有很多不同的會所,港大校友會,寧波同鄉會,五陵會等是門襤較低者,蘇浙同上海總會,難度比前三間高得多.因為兩間都不收現金同信用咭,要會員在場簽單.作為此兩間會所的會員,除了要本身是上海人之內,身份地位同身家也缺一不可.幾萬銀入會費,不是你我也能負擔.或者門襤太高,不是人人也去到之緣故,上海總會在貴網上的記錄,也只是六個食評而已.我笑說這次是"打大佬",同大廈的五陵會,華商會,Jimmy Kitchen的關卡不難破,當一去到上海總會,就是最後一關",打埋就爆機.蘇浙同鄉會的飯局,在兩年多前已達成,唯獨是上海總會,一直聞樓梯響,得個講字,幸好身邊的朋友J兄,認識一位上海總會會員,而她亦首肯為我們安排,所以是夜便聚集兩圍三十多人,在會所的二樓的廂房內,熱熱鬧鬧來享受一頓正宗滬菜.在免開瓶費之下,大家亦自攜酒品,與大家分享.說其是"高官飯堂"也不為過,同一夜的另一邊廂,巧遇發展局局長林鄭月娥在此擺兩圍,大家見狀異口同聲"超錯",也算是對政改方案的一種不滿.

南瓜紅米八寶飯

燻蛋水準不錯,有溏心之外,味強亦不失蛋香,但是有些朋友的燻蛋,略為過熟.烤夫是手撕出來,軟綿綿的質感,濃甜的醬汁.實在好吃,醉鴿充滿芳香酒味,鴿肉入味嫩滑,脆鱔入口香脆,素鵝亦有水準.

清炒蝦仁用料佳,蝦仁爽而鮮,比早前在某大酒店的中菜館吃過的,好不知幾多倍.年前在蘇浙吃過一味普普通通的六月黃炒年糕,今次在上海總會,有一味醬炒青蟹年糕.青蟹比六月黃更有肉感,醬油濃甜,貫切本幫之濃油赤醬本色.將本來沒有味道,質感煙齦年糕,一下子精彩起來,其實此道菜,年糕才是主要,青蟹便淪為大茄了.

是夜捨翅取魚唇,說到尾還是同出一脈,這個火朣雞燉魚唇湯,並不在最佳狀態,因為湯底的金華火腿味未盡出,當拿一件火朣入口,還是很鹹,明顯未"出味".如果花多一點時間燉多一會,味道會更加好.近年吃得煙燻雞多,最好的是得龍的太爺雞,是夜的煙嫩雞,煙味十足,而且頗為霸道,每一口無論雞皮,或者雞肉,盡是煙燻的香氣,但雞不如其名,肉質不夠嫩滑,吃落有點感覺粗糙.

龍鬚桂魚是功夫之作,將桂魚肉拆到如魚麵的外表,每一條魚絲沒有一點細骨,入口鮮嫩,魚味濃郁.如果身在新漢記吃著此道菜,恐怕要一支辣椒油,才夠像樣.元蹄是吃得清淡之人大敵,但吃得傳統上海菜,很難說得上清淡,雖然是叫走油元蹄,本身也是一樣肥,醬汁味道極為濃惹,元蹄肥瘦分明,外皮肥美之外,膠質同樣豐富,皮下肉鬆化可口,絲絲入扣,非常之入味,接著侍者奉上的銀絲卷,用來沾上元蹄的醬汁吃,很美味.火丁甜豆是火腿粒加甜豆之組合,火腿的鹹香,同甜豆的甜,兩者產生平衡之作用,甜豆其實是豌豆,本身鮮嫩沒有渣.結尾的生煎包,外皮厚薄適中,餡料有肉香,肉汁就不算十分豐盛.

最後甜品為南瓜紅米八寶飯,南瓜的質感帶點"粉",八寶飯黏而不膩,以這個甜品作為此夜的結尾,無憾矣.

多謝J兄的穿針引線,同會員L,此夜才能成事,而我亦還了一個小小心願.

I gave a sloppy review without pictures - had dinner here again upon returning to my dear HK, feels so good to have solid, authentic shanghainese food again!!!! it was dinner with dad's friend, a gentleman from shanghai. he ordered as he is more 'reliable' with his shanghainese background...

appetizers:

1. ma larn tou (diced ma larn tou vegetables with firm tofu): we have this every single time we come here. never been disappointed. appreciate the knife skills used to chop the ingredients into minuscule atoms!

2. smoked fish 'fun yu': my favorite appetizer of all time! i always deliberately eat the bones; the sauce is mildly sweet and flavorful with slight sesame oil in it; i always save it for the rice! the fish meat is flaky, it often has a nice skin that dissolves in your mouth!!!!!


3. smoked eggs: the yolk is undoubtedly the best part!!!!


then came the main dishes:

1. shredded fish ('gwai yu') with shrimp and preserved vegetables: so refined! fish is almost pillowy as was the shrimp. eat it with vinegar; it completely brings out the umami and freshness of the seafood!!! preserved vegetables were not salty at all!!!

2. stir fried eel with shrimp: (uric acid alert!! i am a big fan of shrimps) i don't like eel but guess it is quite common in shanghainese cuisine. the sauce was quite thick and perhaps a bit too salty to my liking. this dish is also good with vinegar.

3. smoked chicken: we always order this. chicken meat was tender in the white parts; moister in the dark parts...awesome, as usual!

4. spinach-like vegetables in broth: while this tasted good i personally believe they overcooked the vegetables - it's too limp; all the nutrients are basically destroyed by the heat!!!! but it was very soft. broth is also quite clear with slight dots of oil on the surface. OK.

5. Xiao Long Bao: same old same old, but that doesn't mean it's bad. just what i'd expect - small amounts of soup inside the thin wrapping that was surprisingly strong and didn't break until we had it inside our mouths!
meat filling was very tender and juicy but slightly greasy.

dessert was the usual pan fried 8 treasure rice: lots of ingredients used - lotus seeds, pumpkin seeds, red dates, chinese almonds, red beans, raisins, at least 2 kinds of rice (purple and glutinous rice)...and LOVE their slightly crisp exterior with the chewy glutinous rice...!!!!!!

Malantou (馬蘭頭, chopped Indian aster and tofu) - I thought it would be interesting to introduce this dish to people who aren't Shanghainese, as it's really not easy to find this outside of Hong Kong. The flavors are so distinctive and refreshing.

Smoked duck egg (薰蛋) - halved with wonderful yolk, the smoky flavor was a bit lighter than I would have preferred. But it's been a while since I've had this so I was pretty happy.

Pig trotter jelly (肴肉) - this was pretty good since it's not as salty. The trotter meat was delicious and there was enough gelatin to make the texture interesting.

Drunken pigeon (醉鴿) - very nicely done here, both in terms of the presentation as well as the taste. The meat was very tender, and the taste of the Huadiao (花雕) wine was good without being overwhelming.

Strange flavor chicken (怪味雞) - spicy and very much atypical in terms of Shanghainese tastes.

Stir-fried freshwater shrimp (清炒蝦仁) - the shrimps were medium-sized and not as small as some of the ones you'd find at other restaurants, but it was still nicely done.

Honey-soaked ham (蜜汁火腿) - now this is something I haven't had for ages! The slice of ham was paired with a piece of deep-fried tofu skin, then sandwiched between the two halves of a steamed bun. Not bad at all. We should probably have had left the plate on the table, so that I could dip the bun into the sweet and sticky syrup...

Stir-fried freshwater eel (炒鱓糊) - the classic Shanghainese dish where the eel is shredded and stir-fried with yellowed garlic chives (韭黃).

Fish fillet in rice wine (糟溜魚片) - one of my favorite fish courses in Shanghainese cuisine, this is prepared with lots of starch (which both coats the slices of fish and makes up the sauce) and some Chinese wine. The accompanying jelly ear fungus (黑木耳) adds a contrasting texture to the fish.

Stir-fried crab with rice cake and edamame (毛豆年糕炒蟹) - the sweet taste of the sauce and the sweet crab went very well together.

Raw-fried buns (生煎包) - a nice way to finish the meal, and I couldn't resist having two of these...

For dessert we had the usual glutinous rice balls in fermented rice wine (酒釀丸子), and much to my surprise my stomach wasn't on the verge of bursting. I think our host ordered very well.

this is honestly shanghainese food at its best - very authentic; and the variety of the menu is huge. when i am in HK i come here at least once a month. and the food is always consistently good. i strongly recommend the 'foo gwai gai' (literally luxurious chicken), 'chong shu yu' (fried sweet and sour fish), and all of the smoked dishes - smoked eggs, smoked chicken, oooh especially SMOKED POMFRET! it's slightly crisp on the outside, tender and to-the-bite on the inside if you're a fan of red be

if you're a fan of red bean buns you should definitely try them here. they are good sized (not teeny!) and the proportion of bun-to-paste (ie. not too much filling nor too much skin) is just right - but make sure you order them in advance because you need to.

their 8 treasure rice (dessert) is good, i prefer it pan-fried than steamed but if you eat it steamed they serve it with wolfberry/date syrup and that is awesome. i drench my rice in it everytime


the only downside is it is members-only - but i can take you!

本身不是上海人,不過曾於浙江一帶住上好幾個月,故對這類菜式往往有一定要求。雖只有幸透過同事飯局光顧過上海總會兩遍,但已可肯定其菜式水準在中環區內雲雲中菜會所中算是數一數二,不但菜式選擇多,且味道亦拿得準,不油不膩,「寧波同鄉會」固之然比不上,唯一能與之匹敵的「蘇浙同鄉會」恐怕在某幾度菜式上也會被比下去。早陣子瀏覽《蔡瀾歎名菜》的網頁也發現載有上海總會的介紹,很奇怪為何OpenRice網站內找不著這家店的任何資料,不得不為她寫下畢生第一篇食評。在過去的兩次飯局中,嚐過海蜇頭、醉雞(花雕味香濃,不如坊間做的刺鼻)、素鵝(腐皮十分鬆化,一試難忘)、燻蛋(入味、有溏心且不鹹)、嫩雞煨麵、雞火拌幹絲、百葉棠菜(三味菜式味道相若,清淡健康選擇)、上海炒年糕(煙韌、不鹹)、煎窩貼(皮脆肉香,看似普通但難得好吃)、樟茶鴨(味較濃有點失分)、八寶飯(煙韌且甜度適中,不膩但頗為飽肚)等等,不能盡錄。某幾度菜式確實做得出色,其餘的皆屬中上之選,在中環區內難得一見。由於美食當前又是同事飯局關係,每每無暇亦不好意思拍照。下月在上海總會又有聚會,十分令人期待!
