最後的灌湯餃有一塊頗厚的花膠,
食落入口即溶,膠質豐富。
灌湯餃皮薄多汁,內裡有大量的瑤柱碎,
和少量的冬菇和金華火腿粒,
食落鮮味無窮。
但個人認為上湯的味道比較複雜,
清澈些應更好。
而 餡料也略嫌不足,
食落去材料鬆散。
這裡的環境和服務滿分。

跟其他的酒樓相比,
這裡用的食材質素明顯較高水準,
而且點心的造型精緻, 皮薄餡靚。
但這裡走的是偏傳統的路線,
跟我預期的有少許偏差。
或許是因為沒有太多的驚喜和創新。

嘉麟樓係比較古色古香既設計, 周圍都好多比較古舊既擺設。
我同經理講D 邊邊位好多擺設好靚,  問佢如果下次訂位想坐個D 邊邊位應該點講, 佢話其實每個位置都好有特式! 
佢話中央位係通空, 可以望到2樓的, 空間感比較好, 抬頭就見到90年代舊上海既設計, 有琉璃玻璃窗; 坐近BAR 位就比較漂亮, 拍照很好; 旁邊都放有好多特式古舊擺設, 可以欣賞!
我見佢咁識講野, 都非常接受佢呢個答案, 哈哈!

而且從佢既對話中知道, 呢度係1998年裝修, 主題係90年代上海, 當時間久了來到現在, 真的變得有特式有味道!
1998年前的裝修是以粉紅為主色, 比較華麗感重, 聽到十分好奇粉紅色的嘉麟樓是怎樣的, 但上網搵過又沒有呢! 期待下次再發掘更多東西呢!

嘉麟樓極品炒飯用小窩保溫,上枱之後仲有微微熱氣散發,唔洗講,炒飯粒粒分明兼且有鑊氣,仲有少少蝦米提鮮,我地一粒飯都無剩以表誠意。另外因為沒有比較沒有傷害,頭抽和牛崧藜麥炒飯只係用普通飯碗,形色上稍遜一籌,但米芝連嘅炒飯亦都唔會馬虎,調味同配料都有落足,都係一個滿意之作。

最後收尾環節點少得甜品,普遍米芝連中餐都係以楊枝金露同杏仁茶作為甜品,嘉麟樓亦唔例外,但亦唔算太大驚喜,反而嘉麟樓附送嘅點心好出色,入口好鬆脆!

總結: 嘉麟樓係香港歷史悠久,作為傳統粵菜經典,無論服務同食物都唔應該令人失望,但今日可能全場都滿座,難免上菜速度稍慢,整個用餐時間接近2.5小時,菜與菜之間嘅間隔差不多20-30分鐘,侍應雖然都有作出跟進,但都稍稍扣左少少分,但食物方面水準好好,而且tasting menu係同類星級中菜黎講性價比算高,屬於可以專程一試嘅餐廳。

這間十分出名的中菜不容易預約。星期六的午餐,差不多滿座。我坐樓上,環境比樓下靜。開茶後,有一碟合桃,非常好食!點了3款點心及3款小菜,點心整體不錯,不過作為米芝蓮一星,有很多進步空間。小菜有鵝肝金錢雞,這個菜色很特別,其他中菜很少有,十分出色,味道很好,值得一試!另外有蝦球,這個也很不錯,蝦球很大隻,很爽口,配菜亦很夾,有少少辣,一向不太吃辣的我也能吃,但味道非常好!最後一個小菜,花膠雞煲,雞明顯是雪藏的,完全沒有味道,一點也不滑,花膠亦很少,感覺就像熟的雞跟湯混在一起,這個菜有點失望!服務態度不錯,整體尚算可以,5星酒店的餐廳來說,價錢也不是太貴。
