尖沙咀鬧市中地舖中開左一間新omakase餐廳,今日慶祝朋友生日,訂左兩位晚上omakase!店內唔大,只有10個座位,侍應對每位客人都細心照顧。當晚唔多人,師傅同左我地講好多野,介紹每一道菜既做法、食物既產地,過程中又欣賞到佢既技藝,所以omakase貴在除左食物好食、食材矜貴外,重要既係同師傅既交流,欣賞佢對食物既堅持,對藝術既追求,事實上每一件食物都好似藝術品咁!我揀左幾款心水既介紹比大家:先附 (抹茶豆腐、天婦羅魚春、水雲)抹茶豆腐作為前菜,一開始感到有少少奇怪,以為係甜品,但食落口,先有淡淡的抹茶味,後勁有豆腐濃濃嘅豆香,令人耳目一新!水雲係藻類,食落口黏黏稠稠,有少少酸酸地。再加上天婦羅魚春,先附有齊不同味道,不同口感,真係好有驚喜。北海道粒貝呢種貝類好特別,爽口清甜,亦有淡淡海水味,配左檸檬汁同海鹽令貝味更出。秋刀魚壽司呢度做法不用一般既鹽醋漬,改用新鮮上,加上特切法,完成品好靚!中拖羅壽司拖羅配鹽第一次食,少少鹽既咸香中和拖羅肥膩嘅感覺,出奇地配合。其他魚類樣樣都好新鮮,師傅工功精準,壽司飯恰到好處,總體嚟講,呢個omakase都幾值得去!

先附 (抹茶豆腐、天婦羅魚春、水雲)
抹茶豆腐作為前菜,一開始感到有少少奇怪,以為係甜品,但食落口,先有淡淡的抹茶味,後勁有豆腐濃濃嘅豆香,令人耳目一新!水雲係藻類,食落口黏黏稠稠,有少少酸酸地。再加上天婦羅魚春,先附有齊不同味道,不同口感,真係好有驚喜。

位於尖沙咀鬧市,呢間餐廳毫不起眼,鋪面面積雖小,但入到去好似跳入左另一個維度,平靜得與世隔絕。一坐低店員細心同我地講解是日menu, 師傅亦迅速開始為我地準備食物首先遞上精緻嘅前菜,我小心翼翼拆開盤上嘅結,三道前菜分別係抹茶豆腐、天婦羅魚春及水雲,抹茶豆腐無加特別嘅調味,所以味道淡而只係食到抹茶嘅香味,感覺清新而特別深海池魚 有平日食池魚嘅肥美,特別再帶一份爽口北海道粒貝粒貝的確比較少機會食,食落有啲似象拔蚌,爽口帶清甜魚子蘿蔔蓉呢杯魚子不得了,可以奢侈地一羹一羹魚子擺入口,下面有白蘿蔔蓉墊底,上面再撒了檸檬皮碎,魚子嘅鮮味再加添了清新嘅味道鮟鱇魚肝魚肝鮮味而結實,味道唔會腥,配上面頭嘅西瓜漬及食用花夠晒心思太刀魚魚煎得香口而唔會太乾金目鯛、白鳥貝、真鯛、秋刀魚、火炙鯖魚、中拖羅、海膽 壽司嘅水準整體屬於中上,印象深刻嘅有白鳥貝,口感偏爽口較特別,真鯛上面鋪了竹炭鹽及蔥令到味道昇華,鯖魚選擇了火炙而唔係一般嘅醋漬,意外地唔腥反而仲食到油香赤味噌湯粟子雪糕秋季將至,雪糕係時令嘅粟子味,味道唔會太甜

朋友最近請食飯,帶我到呢間位於尖沙咀嘅日式餐廳食廚師發板,覺得水準幾高,食物新鮮好食,想同大家分享下。=前菜=賣相好吸引,順菜製成嘅水雲海草,配上自家製北海道粟米豆乳,旁邊有無花果。=小食=富山白蝦炸成嘅小食,非常香脆,另外,北海道生蠔,入口好順滑,旁邊有特製嘅酸汁和海草。=刺身=師傳好刀工,wasabi係即場生磨。金溥地金目:師傅好貼心,介紹食法有兩種,可以加wasiba或者連紫蘇花一齊食海螺:北海道出産,貝味重,爽口,伴海鹽和青檸毛蟹:北海道出産,好多蟹膏慢燒太刀魚: 魚肉非常嫩滑黑鮑魚:來自九州,配撘北海道海膽,非常好味=壽司=深海池魚: 油脂多北海帆貝:清甜,以竹碳鹽調味燒疏子魚:表面燒到好香北海道青魚:少少酸並帶點回甘中拖羅:柚子帶出淡淡清香大拖羅:海鹽帶出拖羅嘅鮮味北海道海膽:一手包住超多海膽=湯=赤麵鼔製成嘅麵鼔湯=甜品=全部自家制,濃郁焙茶奶凍配上香滑豆腐朱古力
