呢度既池魚碎切又係鎮店之寶。鷲澤先生話佢只會用手釣池魚。我唔知手釣同網捕有什麼分別,只知道既池魚細條D但肉質較有別家更有口感。而且唔醒。重點係配池魚既薑蓉極之有味!唔知有咩配方令到D薑蓉可以咁香!道既池魚配薑蓉鼓油有別家高級壽司店吃不到的味道!每次黎都會叫!

最後以三色飯作結。之前講過小弟對Toro不太喜好。但呢個三色飯既Toro 係碎切後架鼓油白蔥撈埋一齊,極好味!配埋海膽同三文魚子成為一個日本海鮮市場特色既海鮮丼。

今次唯一可惜既係食唔到麵豉雞肉茄子同左口魚薄切。希望下次係新鋪可以食到。

總結:
一間只能座十五人既小店可以係棉登徑迄立不倒二十載,當然有過人之處。有食家講過一家日本餐廳既菜水準如何,取決於佢既木魚湯底做得好唔好。道既湯底味道二十年不變,全因鷲澤先生每日都用心調製湯汁。鷲澤先生雖然脾氣有點古怪(偶然會發脾氣),但睇得出客人欣賞佢既食物時佢既喜越。就係對食物既執著同堅持,鷲澤先生係棉登徑才能打出名堂。

眼見幾年前棉登徑只得見城同道兩家到而家成街水準參差既食肆,有點為道感到不值,希望搬到租金較平既新舖後鷲澤先生能繼續努力,帶更多高水準既日本地道料理比香港既客人。

Our dinner at Washizawa's Kitchen Michi was excellent.
The restaurant is a traditional Omakase : very quiet room with wooden tables and bar, relatively small. You can see the food being prepared behind the bar, it contributes to the solemnity of the atmosphere.
Green tea is being served all the way, the service is very fast but silent, very efficient.
The food itself was very good. At the beginning you are asked about what you like/ dislike, and then the dishes will come to you until you say "stop".
You can say there are certain type of fish or seafood that you don't like but I'd say that you won't enjoy your evening if you are not a raw fish person.
That being said, the products are so fresh! I can't think of having had this feeling before, the feeling that I am eating a fish directly from the sea. Like almost with sea water surrounding it you see?
We have had Toro sushi, a type of yellow fish sushi, raw prawn (deliciousely fresh and nutty) and then a sea urchin maki, slightly cooked toro sashimi, miso soup (fish version with fish in it!).
We had a sesame ice cream as a desert, and it was delicious.

I can only recommend this restaurant to sushi amateurs.

Service (9/10)
The place was homey and gave off a very Japanese vibe. There are not a lot of seats.
There were two Japanese chefs and two Chinese waiters. Service was good and dishes were cooked in front of you behind the sushi bar.

The chefs started cooking your next dish as you are about to finish your current course, so everything is fresh and hot.

There were 4 types of sashimi – Toro, halibut/flounder, mackerel and sliced sardines (as I couldn’t have shrimp, the chef kindly swapped it for mackerel). All of the sashimi was fresh. The sliced sardines were mixed with some ginger and garlic. It was nice combination!

There was eggplant, green pepper, noodle sticks (the fan-like thing in the back) and a salmon roll. Tempura was properly done, and the salmon roll was the highlight of the evening. From outside to inside, the roll composed of tempura, seaweed, salmon, seaweed, and salmon caviar. It came together amazingly!

OMAKASE SET LUNCH
最出名的就是呢個午餐,$160加一,雖也有其他的午餐選擇,但是最後也挑選左呢個!OMAKASE顧名思義就是全拜託廚師拍版決定的意思,也意味對廚師的絕對信任,看到鷲澤san的認真樣,已經是信心保證,於是我毫不猶豫選擇了它,而幾乎全程我都看著鷲澤san整哂成SET LUNCH出來
OMAKASE也有晚市版,但份量較大,價錢也比較高,而食物同食法,甚至上餐方面也有少許分別,不過晚餐的OMAKASE在$600UP起跳,加上開酒,酒費要$1000(呢度有菊正宗同啤酒等等開)
先說說OMAKASE既內容:

1.麵豉湯----夠熱,也是煲出來的,但味道較見城淡,主用豆腐,3塊麵根同海帶和蔥粒

2.味菜+蘿蔔-----配搭好清爽,一食就會想食哂

3.白飯魚仔-----這個需要配白飯食,齋食沒咩味,一倒入白飯卻是令白飯口感完全不同

4.薯蓉------用一般黑椒+青瓜絲同蘿蔔絲配搭,不過我覺得非常好食,仍然是清新既口感

5.小缽/溫泉蛋----佢是我食咁多間暫時我認為最好食既溫泉蛋!!點解呢??首先一般拉麵店大多是半熟蛋,只有內裡流心,一風堂有溫泉蛋,但感覺似食一PAT野既蛋白+蛋漿,賣相味道都差....不過呢度既溫泉蛋卻是完全成功,表面看似半熟蛋,不過卻是真正溫泉蛋既口感,包括流質蛋白,糖心蛋黃,而且佢配既木魚醬油雖然鹹左D,但將隻溫泉蛋撈埋來食卻是非常不錯

6.小缽/煮物(筑前煮)-----豚肉,蓮藕,蒟蒻,冬菇,紅蘿蔔,筍,醃得入味,也是一食就不能停口既系列

7.刺身魚生-----鯛魚,吞拿魚各2件,仍是不太新鮮,要我說比見城過夜貨仲差少許,不過鷲澤san自己承認不是做刺身的行家,所以也勉強接受了,WASABI同見城一樣,是用新鮮山葵磨成芥末

8.燒魚---兩件燒魚分別是三文魚和鯛,燒得好香,但肉質不太佳,未致鞋口但同見城的滑嫩比有距離,可加檸檬汁吊味,送飯OK

9.天婦羅----南瓜,矮瓜,青椒和蝦,都各一件,都是新鮮油炸出,脆而香口,點蘿蔔蓉天婦羅豉油,但份量比見城的松花屋盛少,MA,不能這樣比吧XD

10.白飯----不是日本米,也就是佢輸蝕其他兩間的其中一樣野

甜品有咖啡和雪糕選擇,我仍然是選擇綠茶雪糕,比見城大舊,而且再不是明治貨了,我食不出佢是咩牌子日本雪糕,但香同CREAMY

午市跟晚市有很大分別,除了價錢同份量,仲有一點,午市佢是一次上哂以上1~10件的,而晚市卻是先上1~4,之後5,6,然後10,最後7>>>8>>>9分開上,最後全食完上甜品....午市時間鷲澤san叫我可以不按順序喜愛先食邊樣先也可,但是晚市卻反其道而行,後來細心一想我總算明白為什麼了!!
因為8的燒魚和9的天婦羅是趁熱食最好最美味,如果午市似晚市一樣的順序食的話,以上2樣就會變涼而沒咁好味,這一點鷲澤san雖然沒明說,但我有了"啊??"恍然大悟之感!!

OMAKASE總體而言屬於清淡,但我是能食飽而且感到滿足,如果要食濃味的或許食炸豬扒定食或其他會更合適!!不過佢是極好味嗎??
其實"道"算不上極度好食,但要挑剔既野偏偏好少,而且佢給到一種溫暖的回味感,有點家的感覺!!

以往我不了解日本動漫中所說廚師注入自己心情的味道,不過,在"道"我找到了這種味道,人情味十足的小店,我必定會再來!!
禮貌嗎??完全不用多說,比大酒店更有水準,而且連店員也非常有耐性同人情味.

這裡就是樸實無華,踏進木門之後就預備好享用美食,等待師傅準備的盛宴。其實我有點被這裡的美食寵壞了,我現在已經很少在中午去其他地方吃日本料理,因為這裡食材實在是太棒了!

回味指數:95/100 (我相信我應該會常常光顧,晚餐也很值得嘗試)

5. 蛋: 本來唔想食, 見到好似生咁, 但問落老細話8成熟, 就食左2啖. 雖然老師傅落左甜鼓油, 但都係接受唔到唔熟哂的雞蛋, 唔好意思
6. 綠茶雪糕
: 餐飲有COFFEE, 但我唔飲, 老師傅就俾左一球綠茶雪糕我, 好香奶味, 為餐飯畫上完美句號~~~

飯唔夠可以添飯的, 老細就添左一碗
TOTAL 2個人190蚊落樓, 其實唔算貴, 因為餐飯真係有質素的
