首先將大閘蟹用刷刷乾淨, 之後放上沸水鍋裡隔水蒸約 20分鐘~~

記得蟹肚向上, 用紫蘇葉蓋住蟹身, 餘下的可放於水中!!!

最簡單既就係睇條水草啦, 通常公既就用水草, 雌既就用綿繩~~

我最鐘意食公蟹, 又香又黏身既蟹膏香噴噴, 流哂 D 蟹油出黎;

雖然今年既大閘蟹蟹膏未算澎湃, 但味道鮮甜, 肉質亦嫩滑!!!

蟹膏黏住口腔既感覺真係好正, 令人回味無窮~~

說到大閘蟹當然是上環最多選擇了上年就在上環永利威買了大閘蟹,質量非常不錯所以今年家人一說要吃大閘蟹立刻就想到這家質量有保證的店鋪一走進店裡就看到了超多的大閘蟹真的不知怎麼挑選好還好這裡的員工都很專業細心地幫忙挑選了公和乸的蟹除了大閘蟹,店裡還有很多陳酒可以搭配大閘蟹飲用最後挑選了2隻蟹公和2隻蟹乸蟹很有活力,放在雪櫃裡整天拿出來的時候還是眼在錄錄把附送的紫蘇葉放在水裡煲再把蟹放在碟子裡隔水蒸大約15-18分鐘就可以了剛剛蒸好的大閘蟹已經是爆膏狀態了真的令人超期待裡面的樣子蟹公的膏雖然較少不過超油令令的而且味道很甜美甘香大閘蟹的蟹肉雖然較少但是還是挺細嫩香滑的個人比較喜歡直接吃,不沾任何醬汁這樣更加能嘗到大閘蟹的香甜味道而蟹乸的膏簡直就是爆出來!!10月絕對是吃蟹乸的最佳時機連續吃了2年永利威的大閘蟹雖然說今年大閘蟹失收但永利威的質量還是超有保證的!!最後記得把附送的黑糖和薑塊煮來喝幫助去除大閘蟹的寒氣 ❤

每逢蟹既季節,自己都會出去餐廳食大閘蟹套餐,因為有人整晒比自己,坐係度就有得食。食得多都會想轉下,今年就諗不如買蟹番去自己蒸嚟食。係上環永樂街買幾隻蟹試下番去自己整,鋪頭專賣大閘蟹,而且係老字號,就咁睇蟹都有好多唔同價錢,仲有分公乸。揀完蟹見佢地仲係活生生識郁,夠晒新鮮。鋪頭當然仲有其他食大閘蟹會有既野,好似蟹醋,酒等等。番到屋企先洗乾淨蟹,放幾片紫蘇葉於蒸鍋既水中煮沸,蟹不解水草,肚向上放係盤中隔水猛火蒸20分鐘。蒸好已經急不及待去食,首先揀左隻公蟹。打開蟹蓋已經見到黃色啫喱狀既蟹羔向我招手,蟹羔入口口感滑溜,蟹身中間位置同樣有蟹羔,所以其實一隻蟹已有大量蟹羔。食完蟹羔,再食蟹身同埋蟹腳既肉,十分鮮甜。食完蟹公再食蟹乸,打開蟹蓋一樣見到蟹羔,但今次就係偏橙色既羔,入口頗有口感,但感覺上羔既份量好似比公蟹還要多。食完蟹,整番杯薑茶當然係指定動作。其實今次都係第一次買大閘蟹番屋企自己整,出嚟既效果又真係拍得住出面食,什至蟹既本身更勝出面餐廳所用既蟹。睇嚟以後每逢蟹的季節我都會係屋企食蟹。

Can’t believe it is that time of the year again! I was told that Oct is the time to eat male crab while Nov would be for female crab. The fairy crab from this place comes from 太湖. The male crab $65/each has the clear-colour eggs which has a stronger in flavour as well as thicker in texture, while he female one $85/each has yellow-colour eggs and a lot firmer in texture but lighter in taste. We took away the crabs and it came with the herbs and vinegar. We took away the crabs and it came with the herbs and vinegar. It is recommended to cook them fresh in the same night but if you are really busy or if there is any change of plans, you may still keep the crab in the fridge with a wet towel covering the crabs to provide some moisture for the crabs to keep them alive.

Though the size was not the biggest, there were lots of eggs in the shell, as well as in every legs. The freshness from the crab was really great with the vinegar and I couldn’t help but demolishing 4 of them by myself! I can’t wait to eat more hairy crab later this month, or next month as I am sure the taste would be changing throughout these two months!

秋風起,是吃大閘蟹的風好時機。去年在永利威買過,今年也沒有原因唔去幫襯!店內大雪櫃放滿了公和乸大閘蟹,相隔一年,已忘了公和乸怎樣分辨,幸得老闆悉心指導,很快又學懂了! 有繩的是乸,體積較公的小,但聽老闆說比起公較為好吃。 有竹葉的是公,體積較乸的大,味道同樣好吃! 買完後,老闆還附送紫蘇葉、薑、赤糖和淅醋。 用薑、赤糖調製出來的淅醋份外美味! 薑和赤糖亦可做出薑茶呢!臨走前,老闆還細心送上名片一張,上面教授了大閘蟹教學,非常方便!今年第一隻大閘蟹要開動了... 乸的蟹膏呈橙黃色,濃郁軟滑,味道鮮甜,還獨特的清香。 而公的蟹膏呈淡黃色黃色,同樣濃郁軟滑,味道鮮甜,但整體來說乸的確比公好吃。

終於正式步入秋天,天氣轉涼之際,香港人傳統就係買幾隻大閘蟹回家,一公一母,既可禦寒又可以品嘗蟹膏滋味,不過就好高膽固醇!所以吃2隻就剛剛好了。去年吃過幾間團購,當中比較喜歡永利威的,因為他們有陽澄湖跟太湖選,陽澄湖蟹膏比較多,而且肉質入口比較香甜鮮嫰,所以沒有陽澄湖的我通常不會惠顧啊。還有不少其他搭配大閘蟹吃的產品,比如鮮甜的花鵰就是其中一種,因為大閘蟹非常寒涼,所以很多人都會連著花鵰一起吃。拿著這個酒壺喝,真的有種變了古人的感覺呢!一公一母!沒有騙你們啊,兩種口感不同,公的膏比較軟,亦比較大只,所以我比較喜歡公,母的膏比較實,而且細小,實在難以滿足我!一打開就知道沒有選錯,果然膏多量足。而且這隻是母!雖然肉量不多,但蟹膏很軟,而且口感很豐富,非常鮮甜,比太湖的好上一截。看這裡的膏量,實在多得很~公的肉量更多而且膏身稔軟,吃下去更是滋味。記得不要浪費蟹腳中的肉,只要剪成一條條,就可以用尾爪把它按出來,比想像方便。不是說要連著花鵰一起喝?說到做到,馬上來一瓶!這款二十年佳釀甜而不刺喉,色澤深而醇厚,跟大閘蟹很配!

買回家後以紫蘇葉蒸蟹約十五至二十分鐘,橙黃色的大閘蟹即澄現眼前

今晚,老豆加餸,買了大閘蟹!大閘蟹來自太湖,每隻約4両重,每隻盛惠糿$60-$70!回家洗淨紫蘇葉和蟹,然後將蟹放在葉上,蒸20分鐘就食得!唔識煮都可以做大廚!先吃公蟹。打開蟹蓋,就見到黃澄澄的蟹羔,約有2支砂糖小匙般大小,口感甘香柔軟!除了蟹蓋,蟹身也有相約份量的蟹羔!品嚐蟹羔之餘,也欣賞蟹肉,肉質鮮甜結實,每隻蟹腳也挺肥美的!再吃蟹乸。雌蟹的羔是橙紅色,質地和密度比起雄蟹的要結實得多!羔味更香濃!打個比喻,雄蟹羔似未煮熟嘅雞蛋黃,雌蟹羔似熟嘅咸蛋黃。蟹羔填滿蟹蓋兩端的「角」,名符其實的「頂角」羔!至於蟹肉,雌蟹比雄蟹鬆散一㸃,但差別不太大,味道也鮮甜。吃畢2隻大閘蟹已經十分滿足(我想2隻剛剛好,再多就會滯膩)。再嘆杯薑茶,消滯驅寒!正!

今晚,老豆加餸,買了大閘蟹!

大閘蟹來自太湖,每隻約4両重,每隻盛惠糿$60-$70!
