中午經過謝斐道的澳門過江龍黃枝記,忽然想試試除了著名的粉麵類外餐廳的其他美食,便走上位於一樓、中式裝潢的店面大快朵頤。以前曾吃過澳門本尊及香港店的雲吞麵,兩間店的麵類都並非浪得虛名,值得一試再試。這次就試試不同食品,看看是否能夠維持水準。首先出場的是粥麵店必備的炸魚皮。炸魚皮能夠維持一貫的爽脆口感和味道,鮮味逼人的上湯能夠把魚皮天然的鹹味略略中和但又不失爽脆可口,值得一試。千挑細選後,最後選擇了滑蛋蝦仁炒河。選擇它的原因大概有著周星馳於《食神》選擇煮叉燒煎蛋飯作為決勝負的菜色一樣,是由於普通之餘,要煮得好還是要用心。閒話休提,黃枝記真不愧為老字號,巨大的蝦仁配合嫩滑的滑蛋和粗幼一致的河粉,吃起來特別有嚼勁。剔透的芡汁不會太過油膩,河粉入口即化,味道一流。黃枝記果然是一家老字號食店。經此一試,證實除了馳名的雲吞麵外,這家澳門過江龍對於其他食物款色亦相當用心,下次有機會再試其他食物。

媽咪揀咗佢最鍾意嘅撈麵,一絲絲幼麵入口蛋香四溢,麵打得夠爽所以食起嚟夠爽脆,有少少al dente感覺,口感非常好,而且冇鹼水味道,唔鍾意食麵嘅我都好鍾意食呢個麵;碗上嘅豬軟骨份量可接受,軟骨上黐住頗多豬肉,幸好煮得幾入味及軟腍,一咬就骨肉分離,將麵醬撈落麵一齊食非常惹味,食飽都唔會覺得好膩,果然係招牌菜!

貴價嘅黯然叉燒飯就冇錢食喇,呢個平平哋我就試吓啦!用一隻公雞碗載住4片叉燒及一隻煎蛋,豉油另上;叉燒唔係想像中嗰款紅色叉燒,而係喺叉燒表面加上砂糖後再火炙,顏色比較深,每塊叉燒邊都有火炙過嘅痕跡,食落有輕微嘅火炙味道,肥瘦適中而且有豬肉味道,其實似豬頸肉多過叉燒,亦都幾軟腍;煎蛋冇流心嘅效果,否則撈埋一齊食真係會好好多;豉油偏甜但冇乜鹹味,否則就會蓋過叉燒嘅火炙味道喇

先試麵,冇硯水味,但彈牙欠奉,唔知係咪煮耐左,麵餅亦冇攪鬆,吃起來仲差過二三流麵店,再飲湯,好似麵啲硯水走晒去湯裡,硯味重,飲唔出蝦籽味,味精亦出眾,比池記食的更重,再食雲吞,跟剛才情況一樣,內餡結實,魚尾收緊,味精更重,都算,成碗野最大敗筆係---冇韭黃,你比幾條蔥我當韭黃?啲韭黃用晒所以得蔥嗎?枉你間舖咁有心整個歴史博物館出黎,而你竟然衰喺條韭黃度,食開雲吞麵就知條韭黃有幾咁緊要。到辣椒醬,要問侍應攞,枱面嘅係辣椒渣,非那回事。醬屬普通街邊貨,冇乜特別,由此亦可感受到店家的心態。

食到這裡,自覺與它緣盡於此,留下一麵二湯便毅然放棄。

總括黎講呢個麵係唔合格,亦好多瑕疵,唔知係因為下午茶所以師傅hea做定其他原因,而雲吞浮面可能各家做法不同,但個湯底同個韭黃真係致命死因,呢碗野亦令在下今日寫呢三篇食評。記得之前有一娛樂投資者說小成本電影怎可能好過大卡士制作攞最佳電影,然後攞雲吞麵攞唔到米芝蓮來比喻,其嘴臉令人作嘔,在此不表論述。可能今時今日有心做一碗雲吞麵嘅人越來越少,諗住發達嘅人越來越多,一碗好嘅雲吞麵變得隱世,令到老一輩人看不起它,年輕一輩人不認識它

黃枝記傳統既麵店,當然要擇麵食啦。但又想食豪d,所以點選了鮑魚蝦球粥,炸鯪魚球,凍檸茶。黃枝記既幼麵,因為用全蛋做,非常幼細,非常柔韌,而且彈牙,係有功夫既師傅才能做出這種幼細而彈牙既麵,相比其他傳統麵家既麵,可以算係首屈一指,其他地方食唔到既麵。再加上名貴既鮑魚粥,加上蝦球,非常鮮味。另點了炸鯪魚球,粉漿很薄,非常香脆。最後,點了一杯清香既凍檸茶,為端午節劃上了完滿既句號。

呢日中午, 同朋友嚟幾出名既黃枝記食細蓉。嚟碗我最愛既細蓉先。為怕麵浸淋左, 食左麵先, 麵幾煙韌而且幾香鴨蛋味。雲吞細細粒, 一口一粒, 滑而爽, 好味!! 豬手就未夠稔, 調味都唔錯。粥裏面既皮蛋同肉多到成碗都系, 非常誇張! 粥好綿好滑, 皮蛋雖然多但唔太夠香, 美中不足。朋友大食, 叫多隻糭, 唔太鍾意食糭既我都覺得唔錯, 唔會有好膩濟既感覺。糭糯米比例較多, 包着咸香既蛋黃同五花腩, 既香口又邪惡。食物水準唔錯, 環境亦好, 唔會食到成身汗, 值得再嚟!

西餐吃得多, 吃膩了, 就想清清淡淡吃碗雲吞麵和粥。雲吞麵麵質稔了點, 未夠煙韌, 但頗有蛋香, 雲吞是正宗的金魚尾, 皮薄而滑, 蝦和豬肉比例恰當, 爽口鮮香, 不錯。皮蛋瘦肉粥足料得不得了, 皮蛋和肉絲的份量都很多, 皮蛋滑溜香濃, 但瘦肉略嚡, 未夠稔滑, 而粥底頗綿滑, 倒是不錯。腸粉皮太厚, 未夠薄滑, 口感一般, 叉燒甜甜的, 味道則不錯。最驚喜的是蛋黃醬葡式包。包烘得外脆內軟, 夾着香濃的蛋黃醬和嫩滑的炒蛋, 一脆一軟, 很好吃!!想不到最驚喜的是葡式包, 看來找天要再來吃吃新派菜式呢。

最驚喜的是蛋黃醬葡式包。包烘得外脆內軟, 夾着香濃的蛋黃醬和嫩滑的炒蛋, 一脆一軟, 很好吃!!

星期六睇戲前先吃個下午茶。我雖然係茶餐廳粉絲, 但有時都想轉下口味, 轉下台吃我的Comfort Food雲吞麵。人在銅鑼灣, 心目中只有麥奀或黃枝記。最終後者跑出因為它們供應下午茶。粗略一看餐牌, 粥粉麵飯乜都齊, 價錢由入門 $35 –殿堂 $50雲吞麵 (細蓉) 加熱飲或凍飲 $35雲吞麵和熱奶茶差不多時間上枱, 由於枱太細所以同一時間放多小小野已經覺得好迫, 加上繁忙時間要搭枱, 但我唔仲意搭枱, 但最重要河水不犯井水。細蓉以麵蓋頂雲吞墊底而麵份量和平時單點相約, 沒有因為下午茶而減小。麵不夠幼細, 爽口度一般冇鹼水味。雲吞賣相唔太靚仔, 明顯看到有筲箕紋。蝦肉的口感不俗, 爽口新鮮,湯底清而鮮。熱奶茶質感略為鞋口, 茶色深, 茶味濃但澀。當然不能和茶餐廳出品媲美, 以銅鑼灣區 $35有麵有飲品也吃得滿足已經合格。

For a change I decided to get the dandan noodles and the Jahjiang noodles because I always get these two mixed up.

Jahjiang noodles:
The jahjiang noodles had lots of pork on top and the sauce was very sweet.

Also had the Portuguese crusty bun with mayonnaise and egg because I love their crispy buns, there is a truffle version but I have already tried that.
