Spicy black fungas and Chinese radish:
The spicyness was quite mild but it was flavoured with sichuan peppercorns which slowly numbs your tongue.
The chinese radish in this was nice and sweet.

宅女一個人來也吃不了太多東西, 就''簡單''一點來個麵好了.

不用5分鐘便上桌, 份量比我想像中大一點. 麵條果然是十分寬大, 比平日吃到的意大利寬條麵還要寬, 更帶點厚度, 很有份量感. 面頭還放了5-6件腩肉, 再洒上蔥花和芝麻, 老實說, 賣相真的比其他粉麵店漂亮得多, 看得人食慾大增. 夾一口麵吃, 麵條雖然寬大, 但不算好硬的, 帶點煙韌感且有嚼勁, 最重要的是麵條都被醬汁包裹著, 入口每條都很入味, 而且汁和油份下得宜, 口感很滑但不會吃到一口油. 整個麵味道很夠, 但不會過咸, 實在好吃.
而最欣賞的是其炆腩肉, 每塊的件頭十分大, 而且肥瘦分明, 每件都炆得很入味. 入口尤其鬆化, 肥脂部份爽而不膩, 瘦肉更是柔軟可口, 肉味濃郁, 加上醬汁帶點酒糟的香甜, 真是甘香味美.
隨麵會附有一碗清湯, 喝一口, 清得來帶點微辣, 完全能清除吃完重口味的那份滯膩感, 不錯.

看到圓碌碌的蛋浸在少許酒內, 顏色偏黃一點. 未吃先聞一下, 一陣很香的酒味湧上來. 咬開來, 內裡的蛋黃慢慢地流出來, 質感濃稠, 入口蛋味其實不算很濃的, 不過蛋黃香甜, 蛋白也彈牙嫩滑, 其實以流心蛋來說這個做得很到家, 味道的確是很好吃的, 不過如果說是酒浸的話, 宅女便覺得酒味淡了一點, 如果酒味再濃一點吃起來會更香. (利申: 宅女不是酒鬼來的)

埋單HKD$46, 只收現金.
其實覺得這裡的麵很有特色, 味道感覺不錯, 而且配搭很有新鮮感, 收費亦算相宜.
之前在阿鴻小吃吃飯時, 也曾聽過鴻哥提過他們這店, 說這裡的老闆對吃也是很有熱誠, 本身不是從業飲食界, 也努力投身來開這家小店, 不斷學習和改進, 的確值得欣賞.
雖然不太清楚老闆結業的原因何在, 不過我想也是不外乎店鋪租金貴之類的問題, 但聽說老闆也正在物色店舖 (好像仍是會在港島區), 希望來日可以重開.
執筆之日正是店鋪結業之時, 很想再去吃多次可惜暫時只能以圖片來回味了. 希望老闆可以快點解決好問題找到地方後再來大展拳腳, 宅女會耐心的等這一天來臨的.

老闆, 後會有期!!

又是採用鴨蛋製的麵又闊又厚身
麵質帶滑而口感十足
較之另一家位於佐敦的馳名自製撈闊條麵十分不同
那家川菜小店不用蛋、麵呈白色且是有一大條十分長而不規則的闊條麵
麵質不爽也不稔身,而是很滑溜和掛汁、重在辛辣的醬汁
此處則是港式撈麵
用上店家秘製豉油
甜甜咸咸的於我而言已夠滋味
當然也可自行加入沙茶醬或辣油

店內人手只有老闆收銀出菜包外賣和廚房一人
稍後才另有一女工回來做樓面
吃罷已近一時
人客開始多、外賣好像更多
也不久坐了
期待以後再光顧

老闆提議我們來一客鮑魚腩淨吃,主食點了3味,蝴蝶腩配鴨蛋做的QQ麵,咸雞配粗麵也有一客酒糟炆豬腩肉粗麵!



鮑魚腩就是豬面頰肉,是這裡的名物,煮得稔身而入味加入口滿口肉香加上肉質鬆化,相信也下了點酒才做成,味道十分出色!

吃畢已接近9時半..也時開門的時候了,想到不知何時有機會再吃到這裡的誠意出品,心裡是覺得可惜的!食物品質好固然重要,但用心製作也是不少得的!謝謝老闆是晚給我們推介了這麼多好吃的,我們吃了這麼多再加上飲品才4百多,很相宜!而光顧當日是老闆的生日,友人更帶了清酒與他舉杯祝壽呢!

今天(一月二十日)是壹碗麵營業的最後一天了,昨天到訪時但見店內人頭湧湧,老闆米高忙得團團轉。見到這個情況,當然是買外賣了,讓店裡的空間可招呼更多客人。齋菜撈粗麵不加豉油改撈店子的招牌沙茶醬,一樣美味。重點當然是百吃不厭的 QQ 闊麵啦!老闆米高創意無限,經常有新點子,「鮑魚腩」(豬面頰肉),便是其一。鮑魚腩本身貨源難求,但自推出後一真大受歡迎,畢竟也成了壹碗麵的名菜。鮑魚腩以自調鹵水汁燜焗後,竟有三分似牛𦟌,質感卻比牛𦟌軟嫰爽口;配合以鴨蛋製成,近似油麵的 QQ 麵作撈麵,雖沒馳名闊麵爽滑,卻是坊間難得一見。米高,你還是趁小休的機會好好享受天倫之是樂喇,某天你再出山的時候,你的一大班粉絲可在等你呢!

(本來想消化一下這個消息才寫出來的,但實在憋不住了,希望老闆米高不要見怪了。)話說好久沒有去過壹碗麵,今晚突然心血來潮想去吃它的溏心浸酒蛋。才推門進店,已見老闆米高在身後。道明來意之後,老闆竟然告訴我一個噩耗:由於各種原因,壹碗麵要跟大家暫別了!營業期至明年一月二十日止。破開吹得彈破的蛋白,我看著橙黃色的蛋黃漿緩緩流出,流進酒香撲鼻的花雕酒汁裡,不禁出了神。吃完蛋白以後,再將蛋黃酒汁一乾而盡,這晚的溏心浸酒蛋,格外美味。當然除了感情因素以外,這個蛋也真的做得出色,才令我魂牽夢縈了。謝謝老闆請客,這篇該不會是這裡的終章,因為我還要趁機會再回來回味你的獨門撈粗麵,還有要很多人看了這以後,來一嚐這好滋味!

The egg I got this time had a runny yolk as claimed, however the wine tasted really different to my last visit.
I was given more wine on the last visit and this time there was less.
The clarity of the wine was clearer and the taste of the wine this time was strong and alcoholic with no savouryness it had last time.
Overall the egg was nice this time because the yolk was runny as claimed but the wine was not as good as last time.

This time the yolk was runnier than my first visit only 20% of the yolk was hard boiled which is the bottom part of the yolk that you can't see.
Anyway, it was delicious and I will be back for another one and eat it the proper way.

I really liked the way the tripes had been sliced thinly so it is more manageable to eat. The ox tripe had been cleaned thoroughly there was no smell. The squid was slightly chewy though.
You can actually get these from street stalls but since I get food poisoning easily I generally avoid it even though it is considerably cheaper.
