隨著壽司手磨芝麻準備牛蒡配菜及手握飯糰後,
🍣頭一客是加了醬油柚子漬的厚切獅魚
味道鮮甜開胃,鮮味由喉嚨滲出,慢慢刺激味覺。

🍣紋甲魷魚,細心切紋火炙魷魚表面,
變得爽脆中又有內層軟熟滋味口感。

🍣吞拿魚醬油漬,加上兩款調味令魚身提鮮,
血紅吞拿魚本身唔係小編的菜,
但食落有別於平時的味道,油漬調味水準可記一功。

🍣燒拖羅,魚肉炙燒過的油香被迫哂出來,

銅鑼灣Zing!樓上的雪見係今年8月新開的高級日本菜,裝修甚有格調,樓底又好高,盡顯氣派。今次來食Omakase 和壽司set 🥰刺身上的蜜柑鯛配以酸汁,這個清新的配搭從來都是絕配。蜜柑鯛在口中散發淡淡的甜香。另外鰤魚、北海道帶子、拖羅和金目鯛也無可挑剔,由好爽身的白身魚打開頭陣。壽司方面,深海池魚、加上鹽昆布的鮫鰈魚有淡淡鹽香也不搶鏡。燒拖羅腩油香十足,池魚都好鮮!赤海膽入口好鮮甜,海膽份量又好澎湃!最後仲有勁濃魚湯、烏東同可以揀甜品或咖啡作結,正呀。我想Omakase的吧枱就是師傅的舞台,能欣賞師傅的刀功。幾下手勢就處理好空運到港的時令食材,這個功架真的需要長時間的經驗累積。

聽聞有間新的Omakase在銅鑼灣,決定試一試。我們點了最高級別的「雪」廚師發辦- 順序上有蟹肉和螺,魚生、魚肝、生蠔、魚湯、燒牛肉、關東煮、長腳蟹、壽司,魚子/魚子醬/碎魚生飯,最後還有日本蜜瓜。雖然我們的期望已相當高,但每碟來到是仍有驚喜。材料新鮮,魚生、壽司、長腳蟹都很有鮮味,有質感。我們第一次吃季節性的鮫叠魚,口感爽滑又鮮甜。生蠔配青檸啫喱也很特別。唯一魚湯較鹹,否則魚味會更突出。每一道菜的視覺效果也很吸引,簡直色香味俱全,猶如置身在日本京都一樣。而且餐廳環境寬敞,服務殷勤又不失尊重客人的私人空間。值得一試!

Elegant and homey with a zen touch, Yukimi offers a perfect venue to savor Japanese delicacies with friends and family. We came for dinner in a group of five adults and three children. Four of us opted for Omakase (where the chef decides what you eat), and the rest ordered from the menu. It turns out to be a joyful and satisfying experience for everyone the children are already asking about the next visit to Yukimi!
