呢個夏天真係熱到痴線,難得前排係凱悦軒食到個幾出色嘅椰子入饌嘅menu,好啱呢個咁熱嘅天氣介紹下。先吃椰香紫米脆雞卷靈感來自於醉雞卷,大廚以腐皮包住三黃雞,蝦膠、紫米、萵筍、甘筍、馬蹄粒炸到熟透,入口勁脆,有肉汁而雞肉非常之嫩,點椰漿絕對係再提升其鮮度。金沙椰香脆龍蝦以原隻龍蝦烹調,大隻到不行嘅龍蝦肉每個位置也沾滿咸蛋黃椰漿,兩個味道相輔相承,在旁還有饅頭仔俾你,食完龍蝦唔夠滿足仲可以沾上蛋黃椰子醬汁同吃,成件事再完美得多。我覺得最好嘅係鮮椰青肉菠蘿炒本地黑毛豬。椰青肉嫩鮮甜,就咁食又唔駛郁手,雖然我不是太愛椰子但吃到咁甜味豐滿的椰肉都會開心,再加上不太肥又有咬口的本地黑毛豬肉,加上好多荷蘭豆、菠蘿和少量辣椒,在旁就有椰清水製作的炸椰果,吃完一口再一口,特別好。不是新menu,但呢個乾粉絲蝦球煲係我吃個最好的乾粉絲煲,之前係尖東Nara Thai食過最好的泰式粉絲,呢個蝦球係拳頭咁大,每條嘅粉絲都絕對有其鮮味與彈性,絕對值得再叫。甜品係芋香椰子糕。聽師傅講椰子肉係轉成香滑椰漿,加上芋頭蓉和椰子片,製成凍糕後就完成,入口椰子香非常濃郁,愛椰子嘅不容錯過。有興趣食嘅,係8月31日前都會有機會試到,一齊感受下椰子的唔同感覺,要食椰子入饌嘅menu唔係剩係得椰子雞煲架,來感受下不一樣的椰子魅力。 continue reading

入座以后等了很久服务员也没拿菜单过来,后面点完菜,龙虾等了很久才上,服务员一开始说只要15分钟,后来才来解释说因为第一只龙虾不新鲜换了一只的关系,现杀的龙虾不新鲜??炒牛河和鸳鸯米里都有锅底结着的黑块。炒牛河味道平淡,牛肉有点炒糊了炒牛河和鱼汤鸳鸯米都不建议点,不如普通茶餐厅龙虾炒鲜奶还行,不过用的波龙,食材一般。服务四舍五入没有,最后才来加了一次水。整体体验很差,和隔壁丽晶轩差远了!菜品也没有人家丰富 continue reading

大家都在著重Sustainability(可持續發展), 而海洋保育與飲食也息息相關.  最近, 尖沙咀凱悅酒店推出六款海鮮佳餚, 均是採用由水產養殖管理委員會、海洋管理委員會或來自水產養殖改善項目的可持續來源的水產.先來分享頭盤 - 涼拌油雞㙡菌皇帝蟹肉法邊豆.  賣相帶夏日感, 一梳梳肥美肉厚的阿拉斯加皇帝蟹腳肉、翠綠爽脆的法邊豆與薄切雞脾菇, 整體配合層次豐富, 點睛之處是特製的油雞㙡菌醬汁, 少少麻辣, 好開胃. 這夥 '荔枝' 認真抵讚!  米通脆炸魚肉丸子以龍脷柳魚肉與越南蝦製成, 外層沾脆漿和脆米後落鑊香炸, 再加上大廚的擺盆, 栩栩如生. 吃時不妨沾糖醋醬, 更為滋味!很有睇頭的是這份崧子波士頓龍蝦炒鮮奶, 以龍蝦油來炒鮮奶蛋白漿, 嫩滑香口, 龍蝦肉也鮮甜, 放在炸麵餅上吃,  一脆一嫩, 海鮮味爆發.超推介素翅菜膽蟹肉雲吞雞, 雲吞餡是蟹肉、鮮蝦及豬肉, 大大隻, 雲吞皮不會糊口, 每小口咬著雲吞, 也同時喝濃甜雞湯, 好吃得沒話說! 更加要吃的要全隻嫩滑雞件, 煲湯肉來說仍然能保持雞肉的嫩滑, 明知再吃會很飽, 但也敵不過雞件的呼喚. 鍋內小棠菜也為雞湯貢獻不少, 湯的香甜也滲出蔬菜的甜, 這湯十分高分. 愛吃煎炸又怕肥膩, 很多時都會避開點這類, 然而這道欖菜乾煸蓮藕帶子肉鬆, 色香味均獲讚.  以精緻的脆筒來盛著加拿大帶子粒、冬筍粒、馬蹄粒、蓮藕粒、紅椒、腰果碎等, 認真香脆! 再看以炸米粉做成的鳥巢, 並沒有因為醬汁而變淋或過軟, 它不止是一個容器! 不同客人有不同要求, 尤其吃湯麵時, 湯的份量多或少, 也會影響口感. 大廚深明這點, 在雪菜濃湯海皇煨麵這道菜, 貼心地把雪菜濃雞湯分開奉上. 喜歡吃湯多一點的話, 就可從功夫茶壼倒入. 同場加映, 凱悅軒蜜汁叉燒$238, 肥瘦均勻, 永遠都受歡迎.方魚炒芥蘭$248, 菜之中, 我是挺喜歡吃芥蘭的, 這個帶少少酒香及薑味, 方魚的咸香, 菜的爽脆, 多多也吃得到.酥皮流沙盞$68有4件, 是菠蘿包、奶皇湯圓及牛油撻的合併, 流心程度好好, 趁熱吃是必須的~踏入秋天, 我選了冰糖燉雪耳雪梨滋潤一下, 好順喉, 甜度也是剛剛好. continue reading
