已有一段日子沒來凱悅軒了,聽說近日有人蔘主題菜式,夠晒滋補養顏。餐前先來個三式點心,分別是「腿蓉遼參燒賣」、「鮑魚燒賣」及「星班百花卷」。遼參泡浸得軟稔,入口滑溜,配以豚肉的味道,相得益彰。鮑魚燒賣是常見,但鮑魚Q彈入味,豬肉吃得出的鮮味,我喜歡。以星班片來包裹蝦膠,來種截然不同的口感,清淡怡人。前菜的「紅棗人蔘豬手凍」,真是佩服大廚的心思,晶瑩剔透的人蔘雞湯凍,內裡是嫩滑的豬手,連皮切片後,與鮮人蔘粒、紅棗和蜜豆籽表面放上黑醋啫哩,不單平衡了油膩感,更有提鮮的作用。再來是帶懷舊菜氛圍的「杞子人蔘花膠鴿吞素翅」,靈感源自懷舊手工菜「仙鶴神針」,用上了體型較大的頂鴿,去除胸骨後釀入已煨煮入味的金華火腿、關西遼蔘絲及素翅,全鴿與花膠人蔘湯同燉。鴿肉厚實多汁,咬落酥軟,湯底清澈鮮甜,入口一陣醇香,喝起來舌底生津。「梅欖骨」又是一道潮州的家常菜,師傅先將排骨蒸三小時至軟糯,再炸至鬆化,配以Homemade梅膏醬及潮州菜常用的欖角,酸甜開胃,用來送白飯一流。菜蔬是「豉汁蘆筍炒帶子」,其實好簡單,食材新鮮已經贏了一半,帶子炒得恰好,肉質粉嫩,配以掛上豉汁的蘆筍,好味。單尾是「窩燒麒麟鮑魚人蔘雞飯」,概念是源於經典菜式「金華玉樹雞」,鮮美的鮑魚片、三黃雞件、甘筍片及北菇片舖在加入人蔘鬚粒的米飯之上,拌和了香濃的人蔘鮑魚醬汁焗製而成,冒著熱氣上檯,非常誘人,但飯粒依然是粒顆分明,狀態大勇。仗著人多,甜品是叫了好幾款大家分享,蓮蓉西米焗布甸、楊枝甘露、蛋白杏仁茶及桑寄生蛋茶。畢竟可以一齊share最開心。P.S:部分菜色供應期至4月30日。  continue reading

自從上次與朋友前來挑戰點心放題,都有一陣子沒來拜訪 尖沙咀凱悅酒店   既中菜廳   凱悅軒,是日相約友人前來餐聚,原來已換上了用「蔘」製作新餐目,以人蔘入饌,很特別,亦很期待 前菜選了人蔘餐目中既 紅棗人蔘豬手凍,賣相精緻,Q彈的口感,入面則是切粒的嫩滑豬手並滲出紅棗和人蔘的獨特香氣,還有黑醋啫喱,味道層次極為豐富陳皮脆鱔   也是大讚的!加入陳皮燒製,味道芳香無比,鱔肉厚身又爽口,一點泥味也沒有,真的很好吃!滋潤一下,有 杞子人蔘花膠鴿吞素翅,利用原隻頂鴿並釀入金華火腿、關西遼蔘及素翅等名貴材料來燉,再與花膠和人蔘燉三個小時以上,湯頭是極其清甜,並滲出陣陣人蔘香氣,加上厚身花膠,實在是滋補良物梅檻骨 乃這裡的名物,先將排骨蒸至軟腍,再炸至酥化,最後加入大廚自家製作的梅膏醬及檻角,入口肉質軟糯,酸中帶甜的,更是佐飯良伴哩豉汁蘆筍炒帶子 大大隻的日本帶子,爽口鮮甜,配以新鮮蘆筍,很清新的一道窩燒麒麟鮑魚人蔘雞飯 用鮑魚片、三黃雞件和北菇片等材料製作,並於飯內加入人蔘鬚粒,並再以鮑魚醬汁來焗,最後以「金華玉樹雞」的排列方式呈現於大家眼前,味道香濃人味,令人吃不停口再嚐甜品,吃完    蓮蓉焗布甸,無憾了 continue reading

母親大人生日,同佢出去酒店食吓中菜先,呢間餐廳我之前食過幾次,同埋飲過茶,覺得無論環境同味道都唔錯,所以想同母親大人慶祝,點知朋友仔話質素差咗好多,因為已Book位,原本唔抱太大希望。有啲菜式真係冇以前咁好味,例如:叉燒以前燶邊半肥瘦,以前入口後好甘香好好食,但而家好似燒得麻麻。但值得一讚嘅係片皮鴨同以前一樣,都係咁好味又唔會太肥。 continue reading

星期二放假又去食好西!今次跟老婆大人同埋朋友一齊去食人蔘嘅菜式,啱晒我呢啲有年紀嘅人食補補佢嘛哈哈。再次嚟到尖沙咀凱悅酒店嘅凱悅軒開餐,我同老婆大人都好鍾意呢度招呼周到又坐得舒服。先嚟第一樣人蔘嘅頭盤紅棗人蔘豬手凍!個樣靚到好似甜品咁,其實佢係用咗人蔘雞湯整出嚟嘅啫喱凍。人蔘雞湯啫喱食落又爽又滑,入面仲擺咗有皮嘅豬手肉、鮮人蔘粒、紅棗同埋蜜豆,口感超級勁豐富個味仲好鬼甘香,人蔘味有得嚟又唔會太濃好易接受到。老婆大人最鍾意食鱔所以就叫咗呢個陳皮脆鱔過佢嘆!白鱔燒得個皮好香脆魚肉仲好鬼彈牙夠晒新鮮呀,最特別嘅係佢加咗陳皮嚟燒,食落去多咗一份甘香嘅味道出面比較少食到。跟住就要食呢個杞子人蔘花膠鴿吞素翅!大大隻嘅頂鴿入面有金華火腿、關西遼參同埋素翅,放入去花膠人蔘湯道一齊燉,就算你係一「翅」唔食嘅朋友都可以盡情咁食。一次過可以食到香滑花膠同濃郁鴿肉,仲可以飲埋嗰啖甘香嘅人蔘雞湯,話唔滿足都係呃人嘅。呢個時候梗係要整碟正菜嘆吓!豉汁蘆筍炒帶子夠晒惹味喇啩,大大隻嘅帶子好有彈性同鮮味,加埋翠綠嘅清甜蘆筍好食到不得了。如果你係食肉獸呢個梅欖骨就一定要試!呢個排骨肥瘦啱啱好咬落去勁彈Q仲好有肉香,重點係嗰個自家製嘅梅膏醬味道酸甜開胃,加埋鹹香嘅欖角一齊炒好食到停唔到口囉。繼續送俾食肉獸有呢隻脆皮香雞!呢隻新鮮龍岡雞真係雞有雞味,不過我覺得佢嘅煙燻味仲出色,除咗雞皮好香脆之外嗰朕煙燻味去到雞肉入面勁濃香。雖然食晏晝但點都要整個飯先至夠飽肚嘅!呢一煲係窩燒麒麟鮑魚人蔘雞飯,除咗三黃雞之外外仲有鮑魚同埋北菇,個樣睇落好似中國名菜金華玉樹雞,但其實佢係一個人蔘雞煲仔飯。雞肉夠鮮嫩鮑魚都好彈牙,最正係吸晒鮑魚汁嘅飯仲混咗甘甜嘅人蔘粒,加埋係令到我冇可能食淨一粒飯嘅好味道。呢個酥皮流沙盞有菠蘿皮又有酥皮仲要有奶黃湯丸,成粒啪口感勁豐富層次感強勁真係好鬼正。最近天氣唔好成日雨粉紛飛好容易令皮膚氣管出現問題!呢個時候嘆碗香滑無比嘅蛋白杏仁茶抵抗皮膚氧化亦可潤肺止咳強化支氣管,呢度嘅蛋白杏仁茶做得好香濃勁多滑嘟嘟嘅蛋白,賣$58碗隨時平過喺出面糖水舖食。 continue reading
