難得約到朋友來個下午茶短聚,但星期日的銅鑼灣人口極度聚集,真的很想在鬧市中找間寧靜舒適的樓上cafe/餐廳。亂打亂撞的走到這間Fleur de Sel的門口,已即被那古堡般的夢幻走廊吸引走進去。這是一間法式crepe餐廳,環境優雅,而且非常的寧願,餐廳內沒有其他顧客。找了個理想的位置,就是很想坐那邊,甚料一個法國人黑著臉口,氣衝衝的走上來用粗聲粗氣的英文說今晚有event,不能坐這邊。但那時大約只是4時,跟夜晚還有很長的時間吧,他也沒有半句say sorry。即時換了位置算了,但一切愉快的心情與氣氛都給他破壞了。 好吧,都走進了來,懶去再找別的餐廳。mood大減之下,不想多點東西,只order了一杯cuppacinno和一個頗貴的crepe。咖啡很細杯,沒甚咖啡香,味道也普通。La Paulou $92 (crepe with Melted Tolerone, Marshmallow, Bailey's),賣相幾得意,crepe上有三顆輕燒過的大粒棉花糖,有三粒半熔的三角朱古力,旁邊跟一小杯Bailey's。crepe皮的韌度相當高,很有口感不錯,配三角朱古力來吃味道很好,棉花糖點少

這是一間法式crepe餐廳,環境優雅,而且非常的寧願,餐廳內沒有其他顧客。找了個理想的位置,就是很想坐那邊,甚料一個法國人黑著臉口,氣衝衝的走上來用粗聲粗氣的英文說今晚有event,不能坐這邊。但那時大約只是4時,跟夜晚還有很長的時間吧,他也沒有半句say sorry。即時換了位置算了,但一切愉快的心情與氣氛都給他破壞了。


好吧,都走進了來,懶去再找別的餐廳。mood大減之下,不想多點東西,只order了一杯cuppacinno和一個頗貴的crepe。咖啡很細杯,沒甚咖啡香,味道也普通。

La Paulou $92 (crepe with Melted Tolerone, Marshmallow, Bailey's),賣相幾得意,crepe上有三顆輕燒過的大粒棉花糖,有三粒半熔的三角朱古力,旁邊跟一小杯Bailey's。crepe皮的韌度相當高,很有口感不錯,配三角朱古力來吃味道很好,棉花糖點少許朱古力也是很好吃。可是這些都只是隨街買到的零食罷了,怎樣好吃都跟廚師毫無關係,而且忌廉有點吝嗇。整個甜品最貴的部份應該是那小小杯加了忌廉的Bailey's,吃完整個crepe喝幾口濃郁的Bailey's甜酒,感覺算是滿足。

然而,看著那個法國人跟伙計在露台吸煙,心裡還是一沉。一切都很美好,就除了那法國人很rude的態度。

今日約好姊妹食飯,佢提議食呢間野。裝修得好有古典美的一間餐廳。我的朋友叫一杯latte,而我叫咗一杯chocolate。杯chocolate有好濃可可味,但不太甜。latte由火腿同黑松露所造成。食落去有陣黑松露味。由煙三文魚同菠菜做成,好似食pizza。NO.39...啤梨好淋、食落去有陣淡薰衣草味,但唔似香皂味.... L'aumoniere,紅莓唔太酸,雪糕係vanila。

已經來過好幾次,第一次係因為驚奇的 crepes 款式、非常舒適的環境(French chic!) 而為之心動。去過 Fleur de Sel 之後,你基本上係唔會再去其他地方食那些所謂的 crepes 的。由法國人主理,menu 又好多款咸食 / 甜食的 crepes,經典的 plain 款式到好多豐富配料的都有,而且有好幾個 vegetarian 款式 由於係新鮮即做同餡料豐富,真係好難唔食兩個先走。個人最鍾意的咸食係 Vegetarienne ,甜食係 Suzette Flambe(加橙酒點火)。最後不得不試主理人特意引入的 Cider。正﹗

I am writing this review as a Frenchman, used to amazing, authentic French crepes in France. So I am going to be picky.First, the setting and decor. I like it, it is nice and casual, and surprisingly quiet. The atmosphere is very relaxing, you can almost forget you're right in the middle of CWB. On to the food. It is good, but not outstanding, the toulouse sausage galette for example, is a little bit bland and has too much onion, and some of the toppings on the other choices are a bit odd (

First, the setting and decor. I like it, it is nice and casual, and surprisingly quiet. The atmosphere is very relaxing, you can almost forget you're right in the middle of CWB.

On to the food. It is good, but not outstanding, the toulouse sausage galette for example, is a little bit bland and has too much onion, and some of the toppings on the other choices are a bit odd (i.e. non-traditional). I feel that "la creperie" in Wan Chai has better galettes, but fleur de sel really shines for dessert crepes, and the service is definitely better here. Their namesake, the salted caramel, is delicious. If you have a small appetite, I recommend sharing a galette between two so you have space for dessert. You can't really say you've been to a creperie unless you have both a galette and a dessert crepe, and washed it all down with cider (this last part is essential, galettes and cider go together like salt and pepper, or fish and water). It is definitely on the pricy side, but this is to be expected; even in France, going to the creperie isn't exactly cheap.

今天來到CWB覓食,選了大愛的Crepe。之前曾經在灣仔吃過另外一家,今天試試中環也有分店的Fleur De Sel。Fleur De Sel藏在一棟商住兩用的大厦內,門口不難找,就在優質良品隔壁。上到二樓更是明顯了,一大個牌就掛在那邊,想忽視也難,只是你會對環境衛生有懷疑罷了。Fleur De Sel的主題是Crepe,menu一眼清晰,就是甜跟鹹的Crepe,選擇蠻多的。店家也為一眾‘選擇困難症患者’及懶人提供了set lunch-就是一個鹹crepe+甜crepe。只是這個set的crepe比較簡單一點,對我來說吸引力不大,特意從27款鹹品艱辛的選了一個作為午餐。C小姐跟L小姐就點了set lunch。一點不是太令人滿意,FDS是沒有水的,差不多就是要你order drink就對了,這個要改善一下。雖然知道他們的cider很出名,但這種夾硬來的手法並不令人欣賞。最好笑的是set lunch menu上也有一句“Do Not Share”的大字,也是令人感覺不好,要不你就set個minimum charge吧,“Do Not Share”實在是令人難以接受。Bon Appetit~

Bon Appetit~!我的La Bourguignonne賣相極佳,材料也非常豐富:Snail Fricassee, Mushrooms, Bacon, Spinach with white wine sauce。Snail Fricassee本來就已經是一道地道法國菜,蝸牛怎麼煮都很彈牙的口感,配上本身清淡的蘑菇,菠菜,還有永遠帶著鹹香的煙肉,在creamy的white wine sauce裡面發揮各自精彩。本來以為蘑菇菠菜只是佐料,想不到份量十足,菠菜已經是厚厚一層,吃到最後一口都還有,一塊蝸牛配一口菜,大滿足~

White Wine sauce也值得一讚。本身很怕吃很creamy的sauce,但FDS這個醬汁不但滑喉,它帶著些少芝士,讓蝸牛的味道完全融入crepe上,只是這個sauce已經值80分!

C小姐跟L小姐的set lunch如我所料,比較單調,而且鹹品的跟我的比好像還更鹹一點(因為大量cheese在面上),整體比較像是靠蛋黃汁來平衡,跟我的明顯差遠了。set lunch的甜品沒有吃過就不點評了。

這棟商住兩用大厦雖然殘舊,但FDS裡面還是比較別緻的,而且窗戶也是大大的一個,下午一陣陣涼風吹著,吃著這裡的鹹Crepe,其實十分寫意,而且人流也不多,很適合三五知己談天說地。埋單每人連飲品都是$140左右,當然男生如果吃不飽的話會覺得偏貴,但女生來說應該是可以接受的了。

這裡這麼多鹹品選擇,就算是常來應該也能保持新鮮感吧

菠菜份量多,蝸牛為數也不少!
先食一角沒沾上醬汁既餅皮。入口溫暖軟軟的,口感煙韌,蕎麥味突出,厚薄適中,上乘之作。
唔會好似灣仔嗰間咁整到燶晒。
接著是餡料,味道濃郁既醬汁實在為之驚艷,為整個galette生色不少,配著煮得夠淋又入味既菠菜,好惹味,正!
我相信如果用呢個醬汁黎煮意粉會好正,哈哈。
仲有,bacon都整得好出色,本來我係唔食bacon既,但呢度既bacon肥瘦適中,有嚼頭;
由於切成細絲,配合醬汁而變得更加入味,好好食。

食完呢個galette,條氣即時順晒。

食過翻尋味,念念不忘,實在懷疑自己愛上了法式薄餅,因為呢幾日整個腦海都是它。
所以我在星期三既dinner time重訪,呢日無咁多人。

呢款餅皮同上次唔同。較薄,口感係crispy既,特別是邊緣部分。
無乜麥味,但有淡淡既蛋味。
其實都唔錯。但食野始終係depend on個人口味,我就鐘情上次嗰款餅皮多啲。
好喜歡餡料上的太陽蛋,拮穿蛋黃,啲蛋黃汁流晒落個餅皮度,加埋蛋白部分一齊食好正!
不過可惜,菠菜份量好少(上次明明咁多有無搞錯~),同埋煙三文魚味道死鹹,沒有魚鮮味。
同埋所謂double cream份量都係好少。

呢款餅皮又有唔同。口感係三款之中最煙韌同埋最濃蛋味既。
都好正!望落簡單,但就俾到驚喜我。
因為佢個醬好特別,係Home-made既,有啲似花生醬但又好味過佢。
下次要請教吓呢個係咩醬先得。(雖然英語不靈光...)
暖暖既餅皮塗滿甜甜鹹鹹既醬料,加上表面附上脆粒的雪糕一齊食,冷熱交錯得匹配,實在十分美味!

另外,好喜歡呢度既環境。
坐喺Outdoor位好舒服,relaxing。
店員好nice & humorous


仲有好多款想試,會重訪。
個人認為水準高過灣仔嗰間,Highly recommend.

這裡蠻難訂位的,特別週末更Full,我們唯有平日夜晚去。原以為它像其他餐廳,Hold起很多位置給Walk in,而給很少Quota團購,原來不是,我們平日去,晚上九點多,有很多顧客呢,幾乎爆滿。剛出電梯,已聞到一陣陣Crepe的香味,這間店是樓上舖,平日不會留意到,團購真好,可以多試試不同的店舖。由於人多,我們只得坐矮的桌椅,但都算蠻舒服的,這裡氣氛不錯,適合喝酒聊天輕鬆一下。團購$99 (+$9.9 service charge)有2個crepe,有一法國仔仔來和我們溝通,但可能我們英文爛,或他有點法國口音,溝通不太良好,不知怎地,沒有得揀Crepe,就送了兩個來。而飲品,好像團購只能選普通的,我們就揀了檸檬茶,但那杯茶實在很淡,淡如水,很想問是不是忘了落糖漿,茶和檸味又少,實在很怪,最後都得放棄。咸crepe的料有:ham ,egg, cheese, mushroom,味道好夾,有點像吃早餐,但一般的早餐怎會有這麼好吃呢,Mushroom有炒過,幾香的。甜crepe的料有caramel & salt with ice-cream,焦糖的味道好香濃,令人忍不住一口一口接著吃,加上雪糕

甜crepe的料有caramel & salt with ice-cream,焦糖的味道好香濃,令人忍不住一口一口接著吃,加上雪糕球,實在美味,想不到這麼簡單的樣子,都可以咁好吃。

有機會會再和女性友人到這裡吃吃crepe,聊聊天,感覺不錯呢。法國仔仔很熱情,喜歡和顧客聊天,可以認識一下法國文化啊。

男店員先詳細講解一遍此團購套餐所包括的兩客法式薄餅,之後就讓我倆慢慢享受這裡寧靜優美的環境。約十分鐘後,這客飄出陣陣香氣的傳統鹹 crêpe,La Super Complete with Salad 先送到。細看材料,原來十分簡單,除半熟蛋外,只有火腿、芝士及小量磨菇,看起來有點像 all day breakfast。先戳破蛋黃,讓蛋汁混和著餡料同吃。估唔到和著蛋汁的芝士,味道蠻濃,加上暖身的粒粒磨菇,與放咗法國海鹽及以蕎麥粉做成的 crêpe,味道十分匹配,不過筆者就稍嫌個 crêpe 唔夠脆底,但整體來說,無論用料和味道,都比已結業的「Kramp House」做得出色。

至於另一客甜薄餅,Crêpe Au Caramel Beurre Salé with Caramel Vanilla Ice Cream, 據說是以小麥炮製的,所以煎出來色澤較淡黃。又看看材料先,以焦糖雲呢拿雪糕配新鮮士多啤梨及鮮忌廉,再淋上自家製焦糖汁。薄餅入口香軟薄身,帶有牛奶和雞蛋香,而且邊位更十分脆口,加上香甜的焦糖雲呢拿雪糕,的確非常滋味,連平日不嗜甜的老公,也讚口不絕。

飲品方面,由於套餐已包了咖啡或茶,所以沒點帶果香的 apple cider, 不過其實這晚所點的凍咖啡凍檸茶,味道亦不俗,前者醇厚順喉,而後者亦散發出淡淡的檸檬香,屬水準之作。回家後翻看有關店子的報導,原來當晚所見的法籍廚師曾在法國米芝蓮餐廳及駐港法國領事館工作,來頭不少,難怪這朵鹽之花一直好評如潮。

It was a fine afternoon. Having met up my old friend K, we followed the openrice map and made it to an old building in the overcrowded Causeway Bay. Up we went taking the old lift, then through passageway with the whitewashed brick wall; we entered into a different world, a very different part of Causeway Bay. Unconsciously, I took an extra breath to soak up the atmosphere.

We were greeted by a young French waiter and I responded naturally "Bonjour".

The restaurant is not very big; or perhaps I should call it a cafe. The main dinning area consists only around 10 tables. What caught my eyes immediately was the balcony area with some wicker chairs and coffee tables. We requested to enjoy the sun at the balcony and were swiftly seated.

A simple menu with a long list of savoury crêpes (made with buckwheat flour and unsweetened) and sweet crêpes (made with wheat flour and slightly sweetened) - happily spoilt with so many options, it took us a while to make our final decisions (at the end, we decided to order a savoury and a sweet one to share!)..

There were a few types of Cider to choose from (on top of wine and, of course, other common drinks). Cider is traditionally known as a fermented alcoholic beverage made from apple juice exclusively; nevertheless, there is a pear variation on their drinks menu (!!!). I have an inclination to go for what the "traditional" is, and so we ordered a bottle of "dry cider". (I will go back for the pear one sometime soon
)

Cider is generally served in traditional ceramic bowls rather than glasses in crêperies in France. And (omg!) yes, Fleur de Sel does it in the CORRECT way.

First up, the savory crêpe "la truffe" - in a nice brown, served skin-thin, and delicately crisp. It looked super inviting and tasty, and it smelled amazingly delicious and mouth-watering. The crêpe was filled generously with ham, emmental cheese, black truffle paste and wrapped up neatly with an egg sitting in the middle. It was a moist and hearty combination - the distinctive earthy fragrance of the black truffle mixed with the creamy and aromatic emmental cheese (you see.. i have always loved emmental cheese - traditional cow cheese, with a hint of sweetness coupled with fresh-cut hay; goes super well with a good glass of wine
). This is what I would call "a perfect marriage"; neither component overpowered the other; they blended, they complemented, they made each other better. You have a choice of adding camenbert cheese with a small additional charge; we did, and I would highly, highly recommend everyone doing it!! The delicate salty taste of camenbert certainly brought the experience to a whole new level. I was satisfied, very satisfied.

Then our sweet crêpe arrived "L'After Eight". Yes, not too difficult to guess - a crêpe resembling the classic "After Eight chocolate". I thought that it was a good dessert choice; afterall "After Eights" are "after-dinner mints"
. Again, a successful presentation - it was something which made me smile
when I merely looked at it. I found this crêpe in a pretty homey gold, even thinner than the savory one; but interestingly (and I actually loved it), it was chewier! Topped with elegant stripes of warm chocolate sauce, a scoop of cacao ice cream (aka: chocolate ice-cream) with a piece of After Eight inserted in the scoop (not to forget a blob of cream and a berry as decoration
). The mint element, besides the minty bit sandwiched in the After Eight chocolate, was represented and brought to us by the jade-green shot of "Get 27" (a liquor with mint, typically 21% alcohol). A fun take on traditional crêpes. Instead of taking the shot in the "correct way", I gently poured some "Get 27" over the creamy and flavourful cacao ice cream. Each mouthful was divine. It was nice that the cacao ice cream was so creamy and boldly-chocolatey-flavoured; hence "Get 27" did NOT take over the scene, only hints of it lingered around and pushed our senses to a high-end.

Flash backs then came with memories of two summers back... the crêperie that we visited in St Malo, Brittany after our oyster feast by the sea... I breathed in deeply looking up the sky as K continued telling me about her "struggle" whether to date "Guy A" or "Guy B". I thought to myself.. if there is really such a struggle, one should date neither - there is not enough love..

吃起來是酸酸甜甜 , 很有層次感

這間店舖的crépè也會隨廚師而不同 ,請隨緣吧!
( 不過質素也很好, 請放心 )
推出不少的款式也令我定期光顧 , 但看見它好像招聘 , 不知道什麼事
不過希望能保留特色的小店 , 畢竟香港始終不多
!

走的時候和他們說了聲 Mercibeaucoup , 很高興 !
题外话/补充资料: 不過口味和習俗比較近法國本土 , 沒有免費的水 , 如果要的話是付錢的呀! :D

Located on the second floor of a nondescript building in Causeway Bay (opposite the Lee Theatre), Fleur de Sel is an intimate and cosy space. The menu is simple but not limited, with a selection of galettes (savoury crêpes) and dessert crêpes to choose from. The staff are predominantly French; the service could have been warmer, but it didn’t really bother me as I was there for nothing else but the crêpes!

The difference, to me, between La Creperie and Fleur de Sel is that the galettes at La Creperie are crispier, hence have more of a bite and are more delicious, whereas the ones at Fleur de Sel are a touch too soft and pliable; however, the fillings at Fleur de Sel are better, with the ingredients being flavourful and the tastes spot-on.

(1) We started off with La Super Complete ($78), which was filled with ham, cheese, egg, and mushrooms that came together nicely. The finely chopped mushrooms were full of flavours, and the runny-yolked sunny side up was beautiful.

(2) La Terre-neuve ($112), filled with smoked salmon, egg and spinach was equally accomplished. The smoked salmon had a remarkable taste, and the double cream added richness but was not overpowering.

(3) Ordering La Sarladaise ($128) made my meal complete, as it was filled with confit of duck that had deep and distinctive flavours, mushrooms, and potatoes that added extra textures to the galette. The duck was thinly shredded so it was easy to eat.

(4) La Bourguinone ($128) was by far the best dish at Fleur de Sel! Filled with mushrooms, bacon, spinach and snails fricassee that were tender and soothing, the galette was then smothered in a creamy and delectable white wine sauce.

(7) La Poire ($68) was topped with caramelized pear with lavender and crème brûlée ice cream, and was a fruity and refreshing option. The crème brûlée ice cream was decadently sweet, and the caramelized pear had a hint of pleasant alcoholic taste but could have been boiled a tad softer.

(8) Last but not least, La Macaron ($88) was many girls’ dream come true, as it combined two of our favourites, crêpes and macarons, into one! The macaron was caramel-flavoured, and toffee sauce was lovely and thick; it was sweet and divine!

我們的La Super Complete 及 La Bourguinone同時上枱,in fact,每張枱的order也是同時上枱的,絕對令你可以全枱人一起 "bon appetite!"!

不知是因為要全枱的order同時上枱的關係,兩份薄餅都只屬微暖,而且有點淋,不太脆底。之前亦有comment說這裡的蕎麥味不太突出,對於不太喜歡蕎麥那種有點像燶味的人來說這裡的galette可接受程度較高,但小妹就prefer濃郁蕎麥味。當然,有蛋汁與蘑菇芝士混在一起吃,水準不會太差。

相比上面的Classic版,這份La Bourguinone就複雜得多。

材料是snail fricassee, mushrooms, bacon, spinach and white wine sauce. 蝸牛,非常法國,放在薄餅上原來這麼特別!通常吃薄餅都不會用太濃味的sauce, 但因為 fricassee就有cream,頓時變得很惹味! 菠菜份量很多,也是與cream sauce十分匹配,值得推介!

Apple cider與galette是不可分開的,而cider也分了dry和sweet,我們就各要一款。

個人來說就比較喜歡甜的,因為果味較濃,但客觀來說又好似dry的比較合襯,飲杯蘋果酒都如此矛盾!


從前在法國做交換生,經常吃crepe, 所以對此食物特別有情意結!即使飽了,仍堅持要叫一份來懷勉一下:

自家製的朱古力醬,很有當時在法國街頭吃的那種感覺,我已分不清楚是幻覺還是事實。雪糕有點過甜,但與crepe同吃,一冷一熱倒是享受。這是一份很簡單的甜品,然而也叫我倆吃得滿足。

坐在這裡,聽著越入夜越大聲的音樂,也挺舒服的。食物雖未叫人心"花"怒放,但整個dining experience尚算滿意,與她的counterpart各有好處,也不好作出比較呢。

the crepes (or galette, technically called, since they are savory crepes and not the sweet ones) were great combinations of meaty, buckwheat healthiness and freshness of the ingredients (olive, eggs, etc)
the crepes seemed thin and small-portioned but we were actually quite full afterwards. Overall flavor profile is a bit on the tame side, would be nice to have some herb punch or vinaigrette/arugula salad on the side to wake up the senses a bit.

Time feels slower here, I definitely did not want to head back to work after lunch
Just want to call up another tea or sip on some cider and maybe read a book for rest of the afternoon~
