食物的質素如下:

溫室冷蕃茄

薄薄的切開十多片,像一副樸克牌攤開一樣,一片疊著一片,整整齊齊。但上面鋪了一些醬汁,令賣相變成血紅色,有點嚇人。嚐了一片,發覺醬汁極酸,把原來的蕃茄味完全蓋過了,浪費了整個蕃茄,感到可惜。

其實溫室蕃茄不需要調味料,極其量只需另配一些果醋已經可以。

銀雪魚西京燒

起初以為只有一片,但原來有兩件,份量充足。

魚肉表面有淺啡色,是塗了一些醬油,令味道更香。銀雪魚的肉質幼細鮮嫩,輕輕用筷子一撥已逐層化開,泛起雪白色的魚肉。味道甜美,有油香,每一口皆柔軟,亦沒有黏著魚骨。

魚皮燒得乾身香脆,爽口而帶有鹹香。整碟銀雪魚煮得很有水準。

壽司拼盤(10件)

顏色豐富、吸引,每件壽司都像經過精雕細琢,活像一件件藝術品。魚生新鮮,全都泛起光澤。
(由左上角開始,上至下,左至右,分別如下)

池魚晶瑩剔透,紋理分明,魚味濃郁,沒有帶腥味。

吞拿魚呈深紅色,煙韌有質感。

吞拿魚腩呈粉紅色,肉質細嫩,真正做到入口即溶,油脂豐膄,陣陣魚油香浸滿每一顆味蕾。那種感覺停留在口腔久久都沒有散掉,餘香令人一再回味。

三文魚腩的脂肪分佈平均,雪花紋清晰有條理,味道帶微甜,油脂濃郁芳香。

北寄貝刺身散發著耀眼的光笀,口感嫰滑無比,感覺像有軟綿綿而滑溜的貝殼類海產在舌頭上蠕動。

油甘魚算是厚切,呈銀色半透明狀態,入口能感受到它的肉質纖維,鮮甜而不膩。

紫菜卷很迷你,飯團結實包著一些碎切的魚生。

黑松露左口魚是新奇的配搭。黑松露有點兒攻鼻,令口腔和鼻腔同時感受到黑松露的特殊香氣。左口魚質感堅韌,有點像魷魚,但表面光滑。

海膽很大片,有清甜的海水味,像新鮮補捉一樣。口感像蟹糕,入口時那種甜甜的滋味滲進舌頭的每一處空間。

鰻魚燒得剛好熟透,並保留了炭燒過的風味,但表面還未出現焦燶。加上鰻魚汁,更添惹味。入口有鹹香,同時亦有鰻魚的甜味,肉質亦柔滑。

麻醬炎燒三文魚,造法特別,芝麻醬酸甜惹味,刺激食慾,令人立即提神。稍為燒過的三文魚的香味更見突出,油份亦滲透出來,有一種吃煎三文魚扒的感覺。

進食過後才發現原來共有11件壽司。無論如何,每一件都用了幼細軟棉的日本珍珠米,每一顆米粒香滑可口,充滿飯香。米飯亦沾了日本的醋酸味,鮮香醒神。

牛肉稻庭烏冬

店員送上來時,牛肉仍是半生熟,快快把它們放進熱湯裡,令它們變得剛剛熟透。牛肉細嫰,棉滑無渣,感受到淡淡的油脂感覺,及齒頰留香的味道。同時,肉味甘香,薄身軟腍,質感不錯。

烏冬是幼身扁平的稻庭烏冬,雪白光亮,入口非常滑溜,而沒有重重的麵粉味。中間夾雜了波菜和芽菜,令每一啖都顯得爽口。

湯底只有一層薄薄的油脂浮起,是牛肉的脂肪,不算肥膩。清湯呈淺棕色,尚算清徹,有濃郁的甜味,是來自牛肉的肉汁。

選了壽司10件定食,壽司由師傅發板,當中有赤貝、 鯖魚配薑蔥、三文魚、油甘魚、左口魚配白松露、拖羅、海鰻配芝麻、火炙三文魚配沙律醬、帶子配蟹膏和加拿大海膽。整個壽司的配撘感覺很fusion,非常多元化。不過,當中的拖羅很多筋、蟹膏亦很腥,最特別還是左口魚配白松露,由於左口魚味道比較淡,配白松露後味道比較平衡,就連壽司飯都有帶有濃濃的松露香氣。

另一個定食點了北海道丼,三種食材包括海膽、帶子和三文魚子,全部均產自北海道,但不知何故,海膽有很強烈的苦澀味,十件壽司定食中的加拿大海膽比它更加鮮甜柔膶。另外,三文魚子皮厚帶腥,味道怪怪。最正常只有帶子,一隻已經仿如豉油碟大,非常吸睛。師傅已經帶帶子切開,夾起一小粒,側面看有成寸厚,非常厚身,味道鮮甜,總算慶幸。

Oh, another satisfying and moreish dish. The best part was the sauce used to dress the plump, starchy grains. Could plough through one whole dish myself but thankfully sweetheart was there to shoulder the calories. Aah. Eating this dish just made me extremely happy, satisfied, mmm. Not too salty, slightly sweet. Only downside was that the eel was a bit too slithery - too much skin, not enough meat. Perhaps they should've deskinned the fillet before mixing it in the rice.

Not an absolute must-try item, but if you're wrinkling your nose at the thought of slimy skin, one thing ought to be clarified - it is NOT only salmon skin. There's actually substantial chunks of salmon appended to the skin. So it's actually like a fried cubed salmon salad. Leaves were average - the dressing is everyone's favorite sesame dressing. A bit heavy-handed imho but we had a bit of rice to soak up every last drop of delicious sesame mayo hehee. Yumyum. 

Conclusion:
Came back for lunch after 2 weeks. The
seared miso cod lunch setI ordered was delicious too - extremely fatty! Crisp, caramelized skin yummy. Reservations recommended for lunch.
題外話/補充資料: Who you're with really matters. Sweetheart and I sat at the sushi bar, thoroughly enjoying the food, but even more so, each other. Thank God for good food, and good times.

Located on the 12th Floor of the thin building on Stanley Street, the decor of Gyotaku is sleek, yet utterly cosy. Comfortable lighting, simple colours and wooden furniture imbue the space with a casual and modern feeling. The restaurant is usually very fully booked during lunch hour almost every day, so we had to book a table at least 2 days in advance. Service is polite and attentive. Gyotaku serves a special daily set lunch menu that changes every day and also its more pricier lunch menu. What amazed us was its wide variety- from sashimi set to sukiyaki set, it really included almost every items you could imagine from a Japanese restaurant! A lunch set comes with a salad and a miso soup. Lunch is reasonably priced at $150 to $200 per person.

(1) The Baked Marinated Salmon ($130) is C's favourite and is the must-have dish every time he visits. The salmon was extravagantly tender and succulent, and was baked in an alluring way to bring out the vibrant and intense flavours of the fish with a hint of spiciness. The mayonnaise further lifted the enticing taste of the dish. It was an outstanding dish that is highly recommended for everyone who is a fan of salmon.

(2) San ordered the Grilled Miso Cod Fish Set ($150) and it was another accomplished dish. The cod fish was wonderfully grilled. Each piece of fish was adoringly soft and tender, and delicately moist to keep its surface shiny. San found the dish to be very enjoyable.

(3) Everyone seemed to like the Marinated Pork in Ginger Sauce ($108 Set Lunch Price) including Chow Chow. The pork had a gorgeously firm and bouncy texture. The soy-sauce-based marinate was sweet and decadent, but it was hard to find the ginger taste in the dish.

(4) The 3 Type Sashimi on Rice ($118 Set Lunch Price) was a bowl of joy. The 3 types of sashimi varied based on the availability of the day. That day we had Salmon, Tuna and Scallop. The raw fish were all very fresh and tasty and the flavours were well balanced. We just hoped that they could be more generous with the portion of each slice of the sashimi.

(5) Lastly, the dessert, Sesame Pudding was a real showstopper! It only came with the normal lunch set menu. The medley of sesame mixed with the soft, chewy pudding texture formed a symphony of tastes in the mouth that was utterly the perfect and unforgettable end to our lunch.

不過想引起自己的選擇困難症也不易,一定要先訂位,因為魚作的面積不大,又非常受歡迎。

我和IM都從夏季特別set中選了燒三文魚,此三文魚的魚肉應該是取自三文魚一個特別的地方,我忘了那裡,好像是鰭下的肉,不記得了,反正就是一條三文魚只有一份。這個set大約170元-190元,不便宜,但考慮到其燒的魚肉是一條三文魚只有一份,便覺得還好。

先來的是魚生沙律。好吧日式的沙律在任何地方好像都是這樣的。魚生的色澤很鮮,不過三文魚卻有點韌,咬不開。

主菜來了。我被這份量嚇了一跳,有很多三文魚,很大堆頭的一碟。三文魚以正方立體的姿態出現,表面燒至金黃及微焦,有一部分焦了。不過,我愛吃焦的部分,所以我不介意,而且整體上看起來很吸引。

細心的看,只有底及面是燒至金黃色。三文魚看上去已感覺到是嫩滑,吃下去便印證了這一點。咬下三文魚的第一感覺是,很燙!剛燒起的當然是燙。外皮不用說也知道是脆及香口,偶有很焦的部分便要去除。魚肉上原來灑了少許調味粉,有一點點的辣,為三文魚增添了不少惹味之感。除了有立方體的三文魚是啖啖肉之外,還有一些是連骨頭的。
不過,這燒三文魚有一很大的問題,便是太多油了,這堆三文魚下面滴了很多油,多得我要用吃不完的白飯來吸油。建議店方應該把三文魚放在吸油紙上或乾脆下少一點油吧。至於白飯,質地比較濕潤,乾一點會比較好。
儘管如此,這個三文魚其實是不錯的。

On Monday my hubby and I decided to give dinner a try as we've been wanting to come for a long time. The place was totally different at night, quite, unlike lunch where its very loud and people having to que for a seat at this popular joint.

Our usually waitress guided us to a empty table as the restaurant was only 50% full. She remembered me as a usual lunch client, and even knows that this is the first time for dinner!

I was given the menu and the prices are a bit higher, but still affordable. We ordered the Japanese Gyoza's, Superior Sashimi, Mango and Foie Gras Maki, and a bowl of Udon to share.

Everything was great, I will not go into detail about everything but the Superior Sashimi is a must try, and is very very VERY good for its price/value. They gave you everything a sashimi lover would like, Toro, Uni, Hamachi Belly, Salmon, Oysters, Aji and some seasonal fish. We were actually quite surprised with the portion as it was quite big and everyting was super fresh, and I think it was only 400-500 dollars.

We left with our bellies stuffed, and would definitely come back again! Good job Gyotaku, ill be there for dinner more often!

The sashimi were fresh with a lot of variety like uni, toro, oyster, shrimp, etc. The sushi were creative with foie gras as one of the choices to be served as nigiri. I have read reviews where this place can be compared to Sushi of Gari in NYC which serve creative sushi as well. This place is nowhere near the quality of Sushi of Gari as the foie gras sushi was really just a slab of foie gras on rice - it's two separate things - whereas Sushi of Gari takes two unexpected ingredients and pairs them perfectly on sushi. Their cooked dishes, though, were excellent. The ox tongue was grilled just right so it was juicy and dashed with salt and pepper. The foie gras fried rice was rich and aromatic - we kept ordering more as the rice disappeared really fast each time!

I also tried their umeshu (plum wine) as I saw large clear jugs of umeshu with actual plums inside. It's looks homemade so I was intrigued but the flavor was bland and as not sweet as I like.

My first time having lunch here, so decided on trying out the daily special chirashi bowl. The set comes with soup and salad but no dessert if you order the special of the day. My bowl of chirashi came out and all I see are small chopped up pieces of tuna & salmon sashimi with one piece of scallop then topped with couple salmon roe. There's also couple pieces of tomago(Japanese egg) that's mixed in. The fish was so sparse on top that I can see the rice on the bottom. I had to eat my sashimi spar

Other than that, I wouldn't come back and order this lunch set again.

中環餐廳很多,大多是西式的或粥粉麵;粥粉麵大概都是從前留下來的,而西餐應該是滿足這邊的上班族;反而日本菜比較少,即使有,價位都很高,要價位適中的,那只好吃連鎖店。其實連鎖的不是不好,但總提不起勁走進去。這天,決定吃日本菜,希望找到一間不太港式而價位又可接受的;找了又找後,決定來魚作。立即打來訂枱;或者這邊的上班族都很早吃午飯,所以我說訂一時多都有位,高高興興便來了。第一次來這座大廈吃飯,餐廳真的蠻多的,天天來都要吃上兩個星期才可試完。幸好這邊的電梯都不算慢,否則會心急如焚的。1:15pm來到,全場坐滿,等了數分鐘後,便入座了。餐廳的面積很小,有一張壽司枱、一張坐到十多人的長枱和4張4人枱。打電話來訂座時,侍應說只有中間的長枱有位,不過來到後,剛好有4人枱結帳,我們可以坐在窗邊的4人座,真好。午餐menu,有十多款選擇,以一間小店來說,選擇是頗多的,無論刺身、燒物、鍋物都有非常不錯。不過有時因為太多選擇,真的很難揀呢,我實在太花心,甚麼都想吃.....套餐有一份沙律、味噌湯、鹹菜、白飯和甜品。除了午市定食餐牌,還有每日精選,即使同一款食物,不同時間吃便是不同的價錢,說實話,這張精選真的頗

除了午市定食餐牌,還有每日精選,即使同一款食物,不同時間吃便是不同的價錢,說實話,這張精選真的頗抵食。不過,價格是便宜了,但就沒有甜品,頗適合男士呢。

麻醬沙律
大多日式定食都配有這款沙律,既簡單又美味;用了上乘的麻醬,質地很濃稠,味道非常濃郁;而沙律菜不是只有生菜,還有多款不同的綠葉。沙律,只要有新鮮的綠葉,鮮味的醬汁,已很美味。

味噌湯和鹹菜,味噌湯十分清,當中的豆腐十分滑溜,而且豆味亦濃郁;除了豆腐粒,還有昆布。而鹹菜的味道也不錯,雖說是鹹菜,但不算很鹹,其實用來伴飯應該不錯。很久沒吃過黃蘿蔔,十分清甜爽口。

刺身定食 ($180)
我們一行三人,點了三份午餐,原意是想share食,但實際上是很難做到。因為刺身的份量不是x3,所以分不到。這盤刺身來到時,看著不同的款色,真的很吸引,這樣多的款式,真想每件都吃

我吃了其中的甜蝦、拖羅和少少海膽;甜蝦非常新鮮,入口很creamy,黏黏甜甜的,真的很美味喔;最愛就是那拖羅,雖然很薄,但真的很肥美,入口即溶,齒夾留香,油脂滿瀉,我真的很愛牠。

三色刺身定食($140)
深海池魚,帶子和油甘魚;這定食其中一款刺身是三文魚,但這天沒有三文魚刺身,更好,來到這裡我也不想吃三文魚,三文魚換上了深海池魚,太好了。池魚在刺身當中是比較高品質的,其脂肪度比較高,肉質很軟腍,入口比較爽口,吃時充滿魚香。
這件帶子看上去已經很肥美,吃進口比外貌更吸引,入口超creamy,非常肥美,鮮甜十足,絕對是上等貨色;我真的超愛吃這帶子。
而油甘魚入口甘香肥美,肉質軟腍,退冰時間很足。

照燒安格斯牛排定食 ($140)
其實這幾天我都吃得很飽,但沒理由點3份刺身吧,第一次來,也要試試這裡的熱食吧。這是我的定食,因為要燒,所以都等了一會才有得吃;在等的期間,看見同事們吃著肥美的刺身,口水已流......
好東西,不怕等,等牛是值得的。本以為這牛排只有數片薄薄的牛肉,想不到份量蠻多的,而且都算厚身。牛排已切好並排得十分整齊才上枱的,大約有十多塊,單看賣相都覺得很吸引,香氣樸鼻。牛肉不是便宜的貨色,肉質很軟腍,牛味濃郁,應該不是醃製品;每件牛都充滿了不少脂肪,吃時感到油分爆出,感覺很棒。整份牛無論份量或味道都是一流,唯一一個問題牛排已一早浸在醬汁中,所以底層的牛偏鹹,個人覺得如果醬汁是另上會比較好,畢竟不是每個人都喜歡吃得那麼鹹;而旁邊那球白色的沙拉醬似乎也有點多餘,白白浪費了。

芝麻布甸味道不錯,不論奶味或是芝麻味的份量都剛好,不會顧此失彼;而質感是彈下彈下的,很滑溜,而甜度也適中,很好的飯後甜品

我們差不多兩時多便走了,來時都坐得滿滿的,走時都已經沒有人了。Counter位和4人座都好,最不好的就是這張長枱,感覺像在飯堂一樣,始終現在是百多元吃個午飯而不是幾十元。
食物很好,沒太多需要挑剔的,材料都很新鮮,雖然二百元吃個午餐似乎有點貴,但也要看看吃的是甚麼吧。只要味道是好的,有時吃午餐其實更划算,因為晚飯一定不止$200。餐廳內都是落地玻璃,正值中午,特別光猛,在如此陽光普照的環境,涼著冷氣,吃著刺身,感覺很爽。服務方面,或者午市太多人吧,所以都是一般的service,沒甚麼特別。來這裡吃午餐是不錯的,更優惠的是點每日精選,有機會或會再來吧。不知道晚市又是怎樣呢?

this review has been long due... its been 2 months since i was here - i do feel that gyotaku does deserve a review from me just because of their wonderful service and kindnessfirst the food, i had the eel rice, it was good, im not a foodie myself, but i enjoyed it. little bits of bones, with sweet eel sauce. it was cooked perfectly, very soft and tasty, loved it. I also had the 30 dollar side sashimi, really bang for buck, fresh and they give you 5 slices!didnt really bother with what my friend

didnt really bother with what my friend ordered so no comment on that.

anyways, i was given the wrong bill, a more expensive one, but still paid for it without looking at the receipt. I was the approached at the lobby by who i thought was the owner (which turned out to be) that i was given the wrong bill. He gave me the change which i was suppose to get. I dont think many places in HK will actually do this. Anyways thank you.

朋友一行10人在這里聚餐。之前看評分很高,所以決定一起來試試看。怎么說呢?其實味道也就馬馬虎虎,沒有什么菜品讓人留下impression。但是食物的份量讓人印象深刻!因為實在是太迷你了!!! 無論是點的各種壽司、前菜還是hot pot,都是極其迷你的份量。我說的迷你,是同其他壽司店作比較,也就是一般日本餐廳提供的尺寸。所以我們最后點了大概至少4輪,才算勉強有點飽意。當然上餐速度的確也不是很快。建議去的朋友不能太餓,不然絕對會失望哦。應該不太會再去了。

但是食物的份量讓人印象深刻!因為實在是太迷你了!!!


無論是點的各種壽司、前菜還是hot pot,都是極其迷你的份量。我說的迷你,是同其他壽司店作比較,也就是一般日本餐廳提供的尺寸。所以我們最后點了大概至少4輪,才算勉強有點飽意。當然上餐速度的確也不是很快。

建議去的朋友不能太餓,不然絕對會失望哦。應該不太會再去了。
