詳情如下:
我們沒有選Full set menu。但加了Wine Pairing Menu,又加了個雪糕魚子。
頭幾道菜是看得出廚師團隊很盡心去做,但服務就一般,酒的配搭比較有水準,不是一般餐廳給200元以下的餐酒。
可惜調酒師廚師的配合甚為差勁,去到帶子道菜,調酒師來給我們倒了小半杯的白酒,
這支白酒亦是我喜愛的因為我同太太曾經到過這個酒莊。在他們酒莊住了幾日。
好期待帶子跟這酒的配搭,我們等啊等啊等啊等超過了20分鐘,帶子終於上場,但因為杯白酒在酒杯裡已一段時間,溫度已到了能嗅到Oxidation。我只是問清楚他們有沒有一些安排,因為這杯白酒已不能提升這道菜。沒有期待下,招呼我們的經理先問‘你要喜歡白酒好凍嗎’?我的回答是‘不是,只是我覺得這杯酒的狀態會影響這道菜,因為白酒已在杯裡超過20分鐘,無論溫度和味蕾都會有影響。經理亦都隨口答應換一杯新給我。
但帶子吃掉了一半,經理才把一小杯的白酒拿過來,還跟我說已做了凍處理。
但杯白酒的跟之前的一樣。我都說算了。不想再在這問題上周旋。
經理離開後我太太說跟她看到他們把一小杯的白酒倒落個新的杯裏。
令我懷疑這杯是我原來他們拿走的那一杯。份量亦相約。
這個動作已完全失去米芝蓮任何級別。為了不影響一個開心的結婚周年紀念日我們就算了。
太太亦都提醒我訂枱時有沒有跟他們說清楚是結婚周年紀念日的安排。
我出去reception跟那位小姐問清楚我有沒有在訂枱是註明今天是什麼日子,前台的小姐沒有複查就跟我說有,‘梅先生我哋已準備好在甜品碟上寫好happy Anywhere’。
我滿心歡喜會到桌上跟太太說,他們已安排好。
直至到最後一道甜品上完5分鐘之後覺得有一些不對勁,於是乎找他們的經理問這是否最後一道菜,经理簡單回答‘是’。我亦都沒有在桌上跟他們理論,跑到前台去找那一位小姐。不見她的影蹤。唯有給兩位經理把白酒的事情和Anniversary的安排投訴。他們沒有任何反應只是一直在點頭。這樣都不用再說了。埋單離開。
這樣的經驗,米芝蓮要考慮一下下一次怎樣評分。性價比亦都不是太高。

魚湯用個螺殼盛住,旁邊係未熟嘅意米,唔食得,好得意,我命名為沙中的貝殼🤣,湯係魚湯,好濃味,幾好唔錯。

吞拿魚pancake 都有創意,不過其實我覺得有少少唔夾,吞拿魚魚生幾厚切而且新鮮👍,幾唔錯, 旁邊有Wasabi 同cream.

Dinner experience at Arbor few years back has left lasting impression, prompted this revisit for lunch and they have shown consistent excellence in their food and much improved service. Began with a umami bomb amuse bouche, a seaweed tart with tender octopus exploded with seaweed umami. It does taste very much like a sushi but in a way of a crunchy tart, interesting and very tasty.

Bread being the cover photo speaks volume how extraordinary their signature brioche is. As light as feather, so impressed with the intricate paper thin layers of fiber-like structure. Nice buttery aroma with a very subtle seaweed note. The saltiness of the mentaiko butter complements it amazingly well especially with the chili flakes.

The tuna wrapped in a thin pancake is another elegant Japanese inspired dish, served with 3 condiments including horseradish, ponzu jelly and a red rice cream. Tuna has been seasoned with soy and tops with some mustard seeds while both the heat from horseradish and zing from ponzu jelly highlighted the tuna. The seashell there was is a garnish but filled with bonito soup that embodied incredible umami and rich creaminess.

The Lobster is our favorite dish, not only as pretty as a painting on the plate, the perfectly cooked lobster with a deep rich lobster bisque sauce is so delicious, that jalapeño foam lifts it to another level, added the hint of spicy funkiness and balanced with the silken creamy smooth butternut squash purée. Simply perfection.

If the fish main brought you to the seaside, the pigeon main was the rich dark whimsical theatre. The pigeon breast was coated with sugar to create that crispy deeply caramelized crust, and the perfectly cooked extremely succulent meat. Pigeon meat was added to the onion chutney on the side that was packed with oniony goodness. The pigeon leg was served with a wafer thin crispy chicken skin. What a funky dramatic show.

Always favored a light dessert after so many courses, the tofu dessert was a perfect one. Tofu sheet added crispiness and the salted egg yolk crumbs underneath has a hint of saltiness to reinforce the soybean flavor.

This lovely beautiful lunch ends with excellent freshly baked lemon madeleine with coffee or tea. The madeleine has the crunchy buttery edges yet soft and tender but not crumbly within. A perfect lunch, I couldn’t fault anything.

Always a good idea to come once in a while for lunch, a good weather brightens up the place and even food looks tastier!Some dishes remain the same like the pigeon that it’s still nice done, rich flavour but not gamey. Besides the pigeon, another favourite is the tofu dessert, light and full of soy bean taste!

2 Michelin Stars Restaurant 🌟🌟

Was attracted by the Japanese French fusion concept but was left a bit disappointed after the experience.

Overall, it might be my own issue (though my friend had the same comment), the major thing that I can remember is SALT! The chef has been consistent with their salt seasoning as it is not one course out of a few but in fact it gets saltier and saltier, course after course 😱

The first two dishes were fine. The octopus tart tasted exactly like a sushi but with an added crunch ✔️. The tuna wrap is a mushed version sushi and was slightly overpowered by the mayonnaise like sauce.

From then, we started our salt journey. The cream soup on the side served inside a seashell was very salty. All I could taste was just salt. The lobster corn dish was also salty and the sweetness of the corn could only help it slightly. We were told that the broth was cooked from lobster shell so they could not control the saltiness of the lobster (?) 🤔

The pigeon was cooked perfectly but the sauce is once again a bit salty.

Finally, the dessert is a strong soy ice cream with crispy dry soy bean. It is a very refreshing combination but there were a few soya sauce braised beans. At that point, we already had a sodium overload 😂

The ending Madeline and chocolate truffle were actually the best of the whole meal. I can dare to say that the Madeline was one of the best that I have tried in town!

Not sure if it was my level of acceptance re salt, it would have been a much greater experience if everything is seasoned properly.

Price: HK$1000 pp (lunch)

這家餐廳應該是吃到目前為止,性價比最低的米其林二星,不会再去吃了食材用的極其普通,沒有吃到特別的的食材。另外味道也是非常不穩定,有幾道菜都非常咸,還能吃到幾顆巨大的粗鹽,主廚是週末都沒在餐廳上班嗎?太有失水準了吧!也沒有嘗到特別的做法或調味,沒有fusion的驚喜的感覺。雞尾酒做得算相當普通。洗手間也是完全達不到米其林的硬件要求吧!衛生條件不是很好,非常不推薦嘗試,同樣的價格有更多更好的餐廳選擇。

Food was ok, but for two Michelin stars I was expecting a lot more. I’ve been one Michelin star restaurants that are far better. Service was also not there. They did the bare minimum of putting down the plate and explaining the dish. But when my boyfriend asked a question, one of the waiters got clearly annoyed and gave a pretty condescending answer. Wouldn’t recommend going, not really worth the price. The only thing I was impressed with was the Madeleines and interior design. Nothing else.

普通。但我因為果下唔舒服,唔想取消預約,內心掙扎俾唔俾起碼五舊……(我唔舒服到真係想唔去,想問人地公司戶口過數,但唔想俾最少一位六百幾加一🥲。左諗右諗又唔想no show、又唔想同人交流、解釋……眼訓住企到起身行到就照去🥲)
個下一啖都無食到;返去用氣炸鍋加熱,質素果然一般😬
因為一上台睇佢個樣我會覺得佢唔算好食,米豬蓮或者好啲嘅西餐,麵包既級數唔應該咁嘅樣。
記得好似四分一拎去加熱150度兩分鐘?再160定高少少再一陣……

一般;係我自己唔鍾意熟咗嘅鰤魚?唔sure,唔記得。我係唔鍾意呢類嘅質感。係自己perfect銀鱈魚、燕星、桂花之類滑身既

原本叫咗乳鴿,個內心係咁掙扎,因為唔係全熟嘅,我驚自己食唔落,又唔想食豬,又唔想食牛(牛要加三百幾,我會寧願自己買一盒喺屋企燒😂😂😂😂😂,因為要加錢就唔想叫,如果加一百幾十就會😬)

個汁好味,濃魚湯同咩咩咩;又係唔會認真聽😅。好味到想叫佢比多幾啖我,因為佢係用個煎pan仔介紹完就畢幾匙落嚟。內心:俾多少少我🥲
其他咩新薯、菇同個有nuts既醬都無咩感覺

服務好好既,比得上我鍾意個兩間,但未夠佢地咁好。如果服務整體咁多次印象上,robuchon Petrus 有95。呢間都有89。
同埋會同另一半黎再食下😅,因為易book同正正路路

中環米芝蓮Nordic Japanese Fusion 菜由北歐㕑師主理,食材用很多日本食材,配搭方法新穎,味道很特別。Dinner set 包括了八道菜和兩道甜品,份量適中。麵包很鬆軟,牛油香濃,加入了紫菜,味道很特別。牛油加入了明太子,感覺很日式。urchin:北海道海膽非常鮮甜。配菜有紫菜tempura 。ebisu oyster:九州的蠔很肥美多汁,跟素麺一起吃的吃法延特別。湯底清淡,令蠔的鮮味更加突出。tuna:吞拿魚monaka 外面包著一塊wasabi 蘿蔔,吃法很特別,只是覺得吞拿魚不夠鮮甜。matsutake:松茸雞肉焼き鳥燒得非常好。外脆內面有肉味。外面再加上松茸絲,可以雙倍享受松茸的鮮味。lobster :加拿大龍蝦肉質結實,味道濃郁。配的醬汁是辣味,想像之外,但是跟龍蝦配搭得很好。主菜試了pigeon 跟wagyu 鴿子肉味非常濃郁,肉質軟腍,配raspberry sauce。另外鴿子腿是燒熟的,配上一塊薄炸皮。味道像焼き鳥,肉質鮮嫩多汁。和牛則中規中矩,不值得另外加錢點。料理很注重食材的鮮味,烹調有創意,味道特別,整體不錯。

主菜啲三黃雞同乳鴿今次都比咗好大驚喜比我,三黃雞比咗一件好mini啲雞肉棒,乳鴿比咗一件好細的乳鴿脾。兩件好似玩具仔一樣。勁cute!乳鴿燒得啱啱好,個皮好脆,內裡仲好幼滑,搭配啲醬汁,perfect!

食到後面已經好飽,甜品都有少少食唔落,Arbor啲甜品唔會太甜,分量唔會太多,最後配埋個café,真是最好啲結尾!

First time to visit and will definitely go back. I was told the pigeon is their signature dish, hence, I chose it as my main course. Freshly baked brioch with creamy and addictive mentaiko butter spread.Octopus on top of essence tomatoes - octopus was tender and the tomato essence was light and refreshing.Spinach pancake sandwiched with tuna and soup in the shell - the idea was interesting but I thought this dish was average when it came to taste. Freshly baked brioch with creamy and addictive mentaiko butter spread.

Octopus on top of essence tomatoes - octopus was tender and the tomato essence was light and refreshing.

Spinach pancake sandwiched with tuna and soup in the shell - the idea was interesting but I thought this dish was average when it came to taste.

Lobster cooked to perfection - it was problem 80% cooked, hence, really tender and a bit crisp in texture. The lobster bisque foam was rich in flavor 👍

Pigeon thigh topped with crispy chicken skin - the thigh was well seasoned and the crispy chicken skin added an extra layer of texture to this dish.

Medium rare pigeon breast served with beet roots, and caramelized onions and pigeon liver (hiding under the beet roots) - no wonder it is the signature dish. It was cooked to perfection.

Soy milk sorbet with crispy tofu skin. The sweet soy sauce braised black beans were “creamy” in texture … very interesting

Madeleines were to die for … really good 👍 Better than Plumcot’s …

Service was excellent with each dish well explained. Ambience was contemporary and not stuffy.

2020年米芝蓮2星午餐平日中午12時到達,客人並不多,服務算滿意,每道菜也有介紹食物方面,並未感太大驚喜,只可以形容在水準之中,末必再來試麵包個人覺味道怪怪,有日本麵豉味加紫菜,包身熱及軟綿綿唯一有驚喜及好味是魚骨湯,非常濃味甜美,可惜份量太小龍蝦配粟米湯,粟米湯很濃味,龍蝦也鮮甜主菜的魚/鴿,也在水準之上,肉質很軟送的朱古力中間好像有清酒,個人也不喜歡唯一吐槽位是入廁所前的路很黑暗,長者要小心

星期六和好友到Arbor lunch. 今次試了 Chef tasting menu. 4 course $888. 食物無論presentation, 味道 我和朋都很滿意。每道菜睇得出廚師用心計設,每款擺碟也很嘗心悅目。環境大落地玻璃非常grand😎. 雖然價格有點高但吃完真心覺得物有所值!
