New restaurant bang in Central by the group of Palco. What struck me as I walked inside was that it was very dark, and noisy. There were 2 counters to choose from: either teppanyaki or sushi on either side; tables of 4 in the middle. Private room seating 8 up the stairs. Since we didn’t want a heavy lunch, we opted for the sushi counter. 3 sets to choose from. We picked the mid-priced one with 13 pieces of sushi ($788).Ordered a glass of burgundy white.First to come was the appetizer, being deep

First to come was the appetizer, being deep fried tofu in soupy sauce with uni. Presentation was a bit poor, some blobs of uni slabbed in the tofu, other blobs on the side. Tofu no longer crispy cos been soaking in the sauce...
Then came the sushi, not very big pieces. Rice was marinated by red vinegar. No need to dip soy sauce and wasabi cos chef would give each piece its own condiment (organised in the tray).

真鯛 with salt inside
彷彿魚+紫蘇花
深海池魚+柚子酸汁
金目鯛+紫菜
石門鯛+柚子辣椒
赤背+lime sauce
Truffle mushrooms with steamed egg- pleasant surprise. Egg was very soft, and went well with the mushrooms.
銀雪魚+ fried garlic
右囗魚+烏魚子
目鱂魚+三星漬- very interesting mix of punchy salty and sour.
北海道蝦 marinated in 昆布 overnight, with 蝦膏 on top
黒睦+豉油脆脆- Picky Eater preferred 赤睦
Otoro +芥玉子- mustard made a nice balance with the fatty texture of the toro.
Uni in seaweed- Picky Eater noted that it was a very high grade cos the legs of the box were higher than the normal ones.
Tamago mixed with 江戶前魚子
Soup
Melon and strawberry as dessert.
In summary: interesting experience. Can try.
