既然呢間店主打係拉麵,當然就一人一來一碗
1. 豚魔:賣相的確唔錯,糖心蛋都好食,但個麵就唔知係屬於那個日本地區?食落好似上海拉麵,彈性欠奉,
湯底好怪,應該係落左好多生粉,又傑又無味

2. 辣魔:=豚魔加左辣味

食完只係覺得好飽 因為個麵一pat pat 食得好辛苦
而通常日式食店都會有熱茶供應,這店就只有凍滾水
想加d garlic source 落d 蒸蛋到(因為無味)點知d garlic source 己變酸


當然無下次,亦希望食店要有良心去經營......

在網上看了評價也不錯, 而且開張了不久, 便特意來試試!這大廈應該只是落成不久, 電梯仍是很新, 那些膠袋還未拆那裡人不太多, 只是坐了一半左右, 可能時間還早的關係豚魔(硬), 醬魔(軟) - 先講個碟小蔬菜, 不是白烚的, 吃得出是有味精味的...但又幾好吃喎, 可能平時食菜無試過呢隻味啦! 兩個湯底很好味, 個人覺得醬魔好味點, 但豚肉略嫌太多肥膏, 溏心蛋很滑!!! 但是啲麵軟同硬就好像沒什麼分別既??!明太子雞翼 - 沒太大驚喜, 雞翼也不是太大隻, 同埋就辣了一點芝士焗土薯 - 當然有薯仔同芝士, 而已還有洋蔥同煙肉, 又有茄汁, 咁多料絕對是誠意之作!這店服務不錯, 店員不停加水, 手腳又快, 出菜的速度如果快一點就更好了, 會再幫襯啊!

豚魔(硬), 醬魔(軟) - 先講個碟小蔬菜, 不是白烚的, 吃得出是有味精味的...但又幾好吃喎, 可能平時食菜無試過呢隻味啦! 兩個湯底很好味, 個人覺得醬魔好味點, 但豚肉略嫌太多肥膏, 溏心蛋很滑
!!! 但是啲麵軟同硬就好像沒什麼分別既??!

芝士焗土薯 - 當然有薯仔同芝士, 而已還有洋蔥同煙肉, 又有茄汁, 咁多料絕對是誠意之作!

這店服務不錯, 店員不停加水, 手腳又快, 出菜的速度如果快一點就更好了, 會再幫襯啊!

一行數位朋友去了這家拉麵店試食。近年多了很多新的拉麵店,大多都是平平無奇。可能這家舖近旺區,七時多早已爆滿兼且等位。打開菜單發現選擇不多,甚麼味魔、辣魔...其實是不同的湯底。另有多不同的小食,很多都不是日式的。主菜拉麵的麵底用了幼麵,不過不失。最重要的湯底不用試都知係味精湯,但不知何解湯底帶一種膠質糊口的感覺。不是太大問題,但總是怪怪的。另一主角叉燒更冇肥瘦之分,平平凡凡的兩塊腩肉。到了小食,各有特式。炸雞軟骨就炸得幾香,兼且夠乾身。其他就平平冇奇不值一提。最失望的是一個叫甚麼鴨胸。一上菜,大家都有些嘩然。一碟極細的鴨胸只有五六塊,總共的份量只有燒臘舖的三塊叉燒左右,然後切成數微米的薄片。以為是甚麼矝貴的名菜,但味道極似普通叉燒。六十八元一碗拉麵不算太貴,但菜式毫無驚喜。不過不失,與云云拉麵舖店無甚分別。

一行數位朋友去了這家拉麵店試食。

主菜拉麵的麵底用了幼麵,不過不失。

最失望的是一個叫甚麼鴨胸。一上菜,大家都有些嘩然。
一碟極細的鴨胸只有五六塊,總共的份量只有燒臘舖的三塊叉燒左右,然後切成數微米的薄片。
以為是甚麼矝貴的名菜,但味道極似普通叉燒。

六十八元一碗拉麵不算太貴,但菜式毫無驚喜。
不過不失,與云云拉麵舖店無甚分別。

最近為了尋找美味的拉麵,四出搜尋已知而有好味大多都在港島區,為何九龍區就好像只有一間半間。尖沙咀繼K11,ISQUARE後,又有一幢新食廈,名為H8,各間食店也陸陸繼繼開始營業,其中一間正是以賣久留米豚骨拉麵為主,相傳是九州拉麵的始祖,亦有人稱久留米拉麵是日本第一,所以被吸引到此一嚐。時間正接近二時,店內的客人不多,但不斷都有客人進出,揀了一個卡位坐下,環境比一般耕麵店寬敞,空間感十足。待應遞上了一個餐牌,在五款湯底的選擇中,左思右度後與友人分別點了豚魔及鹽魔,另加上蟹肉海綿蛋。五款湯底中,豚魔是豚骨湯、醬魔是醬油湯、鹽魔是鹽味湯、辣魔辣味湯及味魔是味噌湯。蟹肉海綿蛋有別於一般煎蛋的鬆化,是結實細滑型,像是蒸蛋般,而且是凍食,蟹肉味算是濃,蛋味則有不足,算不上好食。豚魔先到,有豚角煮、叉燒、粟米、黑木耳及溏沁蛋。先嚐湯底,果然十分濃郁,是大廚用150斤新鮮豬筒骨熬製超過10小時而成,再加上使用軟水,使湯之滑溜香醇更能表現出,而且充滿膠質。麵條的質地爽口,而且幼細,更能掛住湯汁,使每一注麵亦能掛上大量濃味的湯汁。叉燒亦不錯,烤得香口,如果可以再燶些,會更加好味及香口。但我覺得豚角煮,口感

時間正接近二時,店內的客人不多,但不斷都有客人進出,揀了一個卡位坐下,環境比一般耕麵店寬敞,空間感十足。待應遞上了一個餐牌,在五款湯底的選擇中,左思右度後與友人分別點了豚魔及鹽魔,另加上蟹肉海綿蛋。五款湯底中,豚魔是豚骨湯、醬魔是醬油湯、鹽魔是鹽味湯、辣魔辣味湯及味魔是味噌湯。

蟹肉海綿蛋有別於一般煎蛋的鬆化,是結實細滑型,像是蒸蛋般,而且是凍食,蟹肉味算是濃,蛋味則有不足,算不上好食。

鹽魔隨後送到,鮮味的湯底帶上少許咸味,隱隱約約地有一股蝦的海水味,原來是加入了櫻花蝦,這是我以前從未接觸過的,十分特別。材料也是與豚魔一樣,只是多了櫻花蝦。再次不能不稱讚溏沁蛋的美味,下次再來時,必定另加溏沁蛋。而跟餐的漬物普通,另加的荀也不是太好。

暫時在九龍區的拉麵店當中,是出色的。濃郁的湯底,出色的溏沁蛋及香口的叉燒,交織出一碗平凡中見不平凡的拉麵。

今天試了魔麵,因為還未到午市時間,所以不用等位,食物也很快就到 這間麵店像豚王一樣,也有很多種麵:豚魔、醬魔、鹽魔、辣魔等...點了豚魔,是豬骨湯底。麵還頗爽和幼,不錯。特別一讚,叉燒非常好味,肉質很好又有味!可惜是湯底雖然有味,但不夠濃,麵吃起來也有點乏味,不夠香濃!相比中環豚王,這兒的味道還是比下去。不過好在唔洗豚王咁,大熱天時排成個鐘。

點了豚魔,是豬骨湯底。
麵還頗爽和幼,不錯。
特別一讚,叉燒非常好味,肉質很好又有味!
可惜是湯底雖然有味,但不夠濃,麵吃起來也有點乏味,不夠香濃!

相比中環豚王,這兒的味道還是比下去。
不過好在唔洗豚王咁,大熱天時排成個鐘。

不經不覺已踏入第四百篇食評了,在決定持續落去之時,亦想為這「雙零關口」出一篇紀念誌。今次所品嚐的魔麵,與早輪曾品嚐過的鳥華,是於相若時間一同崛起於尖沙咀的日式拉麵店,選擇此店,除了能夾成一對之外,無心算有心之下,亦是應了食友奔天人的承諾,對於用心付出的會員食友,其說過的話,我是會記重於心的。逛過尖沙咀也不知多少次,就是不大經過厚福街的地段,原來不知不覺之間,已屹立著一間食廈H8。按地址到達二樓之後,門口已見到那個大型的「魔」字Logo,旁邊並書寫著「久留米拉麵」這個字眼,從食友們的撰文所知,其所代表的,就是白色的幼身拉麵,入到內堂後的面積也算寬敞,以七時半來說,食客就不算太多,但其桌椅擺設,就給人很整潔和舒服的感覺。餐牌選擇也是不少,除了主打的拉麵之外,其餘的小食約有廿餘款,更有丼品供應,好適合不太愛麵的人仕。(註:有時帶家人前來嚐味,怎也要遷就他們的口味。)至於主打的拉麵,其湯底味道共有五款,較受注視的,應是源自基本的豚魔,和呈現火勁的辣魔,今次作短聚之下,就來了一碗豚骨湯底試其水準,同時亦點了小吃一款,相信足以裹腹。等候約十分鐘之後,我的豚魔拉麵已經上場,看這賣相已令人增加印象分。

等候約十分鐘之後,我的豚魔拉麵已經上場,看這賣相已令人增加印象分。順帶一提,每碗拉麵基本已有半隻溫泉蛋、一塊叉燒、兩塊豚角煮、另有粟米粒、木耳和蔥花等;以六十八元的價錢來說,其配料也真豐富。也象徵式加了五元來多一塊牛油,好令味道來得更加香濃。

拍照後急不及待舀了一口湯底來品嚐,在火侯十足之下,其湯身呈現出稠身的膠質狀,卻沒有給人「張」著喉嚨的感覺,在甜味之中,亦不乏來自芝麻的香氣,不禁暗讚一句:這味道果真鮮濃。據樓下的瓜兄所言,這裡是用上「軟水」來烹煮湯底,雖然所知不多,相信對味道不多不少也有提升的作用。而當那塊牛油溶入湯底之後,其香氣來得更盛。至於大家對湯底所垢病的鹹度,這裡反而不算過重,調味上甚有分寸,整體而言已是甚為不錯。
麵條和溫泉蛋已屬合格之上

試完湯底後再嚐其麵條,這白色的幼麵底亦算來得爽滑,當晚來說,樓下曾提及過的「口味選配表」就沒有出現過,只能口頭要求侍者,煩請廚房師傅盡量弄得硬身一點,幸好最後還是嚐出一點嚼頭。如果要改善的話,倒希望可以加多一點份量,或設置「加底」的配置。至於那半隻的溫泉蛋,相比起上次在鳥華出現的失陷,這裡就來得可觀得多。蛋心雖未致溏心流化,總算介乎於半固體之間,再嚐其蛋白,亦呈現滷水之香,看得出是下了一點心機。

肉類配料有叉燒豚角煮,前者於肉質腍化之餘,也是滿有肉香,有時吃日本拉麵,最怕遇見的,就是遇見一些嚡身的出品,這裡來說,已是合格有餘。另外屬於腩肉的豚角煮,通常會切成方塊之狀,這裡則是一刀切成兩塊條狀之物,雖未致於入口即溶,這半肥瘦的口感總算來得適宜。

進食這碗拉麵途中,我的小吃也被送上於桌前,一客時值廿二元的明太子釀雞翼,經過火烤處理之下,外層香口之餘,其肉質也見嫩滑,調味上略帶鹹香,至於內裡的明太子本屬鹹鮮之物,這裡的來貨味道就不算太搶,反而中間之處帶點滑糯之感,作為送麵的小吃,已算有所交代。

也可能下了粟米的緣故,對湯底味道也起了「調節」的作用。最後以平和的心態去完成這一碗麵,還把湯底飲個一乾二淨,以示對廚房師傅的尊重和肯定。總體而言,味道不俗之餘,還來得令人舒服,勝在各方面也來得平均,亦沒有重大的失誤,略有個別項目的優劣,卻能發揮出互補不足的作用。吃完後也沒有不良的身體反應.......雖不知何故這麵店以為名,其給我的印象反而偏向於,用心經營下的「料理之道」,以及原本進食者應有的「嚐味之道」

略談一些對「道義」的看法,近來是非也是不斷,嚐餐前後往往變成了批鬥大會,你來我往之下,令食味之中,也夾雜了不少「火藥味」,或者參與者認為有充份的理據,演變下來卻成了惡性循環,到想抽身時已是難於折返,實在要問一句「何苦」?! 卻於隱約之間出現人性的正面及光輝,一批不屬於「風頭躉」的食友會員,除了擁有一定的實力之外,也默默地付出應有的義務,最初只屬禮貌地向她們送上推介及作出詢問,換來的卻是親切而正面的回應,實在教人感動。有時回想之下,自己也是疏於回覆,只是相對起她們,懶散,就絕對不是借口,我應該可做多一點。

對比起一班大刺刺之徒,能夠惠及大眾的一群,才更值得令我尊敬.........同樣的誠意亦出現在這間魔麵之上,雖然個別的侍應來得急促一點,始終也只屬小問題,我相信仍會再來品嚐其麵的。

其實之前已見到呢間開張,而樓下果間亦即張開業。心諗開張期間搞試食會唔會係budget餐廳只求生意不求質素呢?所以初頭亦唔敢食住。到今晚,實在與朋友諗無可諗,終於上去一試。見到佢開張大約一個月到,內堂已經坐滿9成,生意好好。揭開餐牌,招牌魔麵,有幾款特底招牌湯底可以選擇,劃一價錢,想再加額外配料可以加錢。我選了豬骨湯底,朋友選擇味噌湯底。另外叫了一客芝士年糕及炸蠔。我的豬骨湯認真「落足料」,唔係好似味千咁只有顏色,但統一味道;朋友的湯底我都試左一啖,幾好但濃味左些少…炸蠔都唔算細隻,一定要熱食,再點少許醬油,一啖放入口的感覺好滿足丫~食完上黎望下食評先見到有幾個「喊喊」樣,本人覺得都唔差之餘仲幾好添。所以平日少寫食評都上黎為魔面平反一下~因為顧住同朋友傾計關係,始終未了解到「魔麵」名字的由來,有點可惜;但留意到原來這間跟同樣位於尖咀的「石澗」有關連的,怪不得芝士年糕一樣咁好食!~

因為顧住同朋友傾計關係,始終未了解到「魔麵」名字的由來,有點可惜;但留意到原來這間跟同樣位於尖咀的「石澗」有關連的,怪不得芝士年糕一樣咁好食!~

突然慶之所至去吃拉麵,之前看食評,好壞參半,一向我都相信自己的味蕾,每人口味也不同,自己試過不合口味的也是一次嘗試啊。所以一訪魔麵!來到店中正是晚飯黄金時間,不用等位,也好,最怕等了我們挑了卡位坐,闊落一點 但坐位上有澪落的食物碎,扣分天氣悶熱的關係,我們點了一碗鹽魔兩人分麵來了,先喝口湯,湯和暖狀態已經失望,連我預期中的鹽味都沒有,只有一丁點淡口豬骨味配料有半顆溏心滷蛋,粟米,黑木耳絲,兩片半肥叉燒,幼拉麵,賣相確是不錯,但吃進囗裡的味道卻是重點嘛!麵的質感是可以要求的,我們點了煙un一點都能達標,只是吃幾口麵後,湯和麵已經涼了,差!唯有寄望小食吧,但。。。也讓我們失望透啊!汁燒雞腎,大路甜汁,雞腎用上袖珍版,不爽口燒帆立貝,豬仔說沒有味的,所以我懶得試燒八爪魚丸,本以為是章魚小丸子那種,原來是來貨炸八爪魚丸,咬開沒錯是看到八爪魚蓉,吃落像是沾滿甜汁的粉團鹽燒雞軟骨,算是全晚最好味的東西,起碼軟骨上有鹽巴!預期中的味道。來個總結,麵跟小食都不是我們杯茶,不會再來啊!而且我和豬仔飯後一會都感到極口乾,可想味精的威力吧!

天氣悶熱的關係,我們點了一碗鹽魔兩人分
麵來了,先喝口湯,湯和暖狀態已經失望,連我預期中的鹽味都沒有,只有一丁點淡口豬骨味
配料有半顆溏心滷蛋,粟米,黑木耳絲,兩片半肥叉燒,幼拉麵,賣相確是不錯,但吃進囗裡的味道卻是重點嘛!
麵的質感是可以要求的,我們點了煙un一點都能達標,只是吃幾口麵後,湯和麵已經涼了,差!

燒八爪魚丸,本以為是章魚小丸子那種,原來是來貨炸八爪魚丸,咬開沒錯是看到八爪魚蓉,吃落像是沾滿甜汁的粉團

鹽燒雞軟骨,算是全晚最好味的東西,起碼軟骨上有鹽巴!預期中的味道。
來個總結,麵跟小食都不是我們杯茶,不會再來啊!
而且我和豬仔飯後一會都感到極口乾,可想味精的威力吧!

點了...75元的豚魔.....
拉麵來到我面前.我首先飲一啖湯..感覺只是微暖的.味道不是鮮甜.只有過鹹..鹹的程度.令我飲左幾杯凍水.之後我食塘心蛋.蛋已有8成熟..而塘心蛋的顏色竟然有點似鹵水蛋...已吃不到.塘心蛋滑而順喉.換來的感覺係相當難食....

之後我開始食麵.店員.第一次光顧店員有問我麵想要普通並硬今次就沒有...今次的麵全部過林的..明顯煮的時間過長....最後3塊豬肉只有1塊吃出甘香.鮮甜的味道....

從多方面看...只是隔了十五日左右光顧..退步神速..我亦體會到為什麼呢間店開始有喊臉??是的時運低..還是品質差了....?前文食家說老細著重意見,我去了二次...都沒有問我意見..我希望呢間店會有進步...至於我會唔會回頭.肯定不會..原因我太失望..

主要配料有豚角煮、溏心蛋和叉燒,再加上櫻花蝦、紫菜和蔥花等,最好味的是溏心蛋,咬下去真的是半熟,味道香甜,好味~~~ 豚角煮和叉燒也不錯,叉燒肥瘦適中,肉味亦算濃郁~ 相反豚角煮瘦的部分感覺乾身了點,但味道仍是十分惹味,所以整碗麵也是滿意的。

不過說真,這裡的小食質素認真麻麻,見蟹肉海綿蛋名字咁吸引就叫來吃吃看,結果... 可能與我想像的實在相差太遠,個人覺得一點也不好吃! 首先是幾薄的,而且咬下去凍冰冰的感覺,吃下去帶點甜味,但實在沒什麼玉子香... 而且基本上我連蟹肉的味道也不太嚐到.... 這個實在不太討好。

另外叫了的明太子雞翼比較好一點,雞翼表面帶點點香脆的口感,咬下去也有點點肉汁,但並沒有肉質嫩滑的感覺,而且明太子的鹹香度一般,未至於難吃,但味道也只屬一般。

對於拉麵,這個價錢有這個質素個人覺得是值得的,小食就真的覺得仍有可進步的空間。不過是日我只付了兩個小食的價錢,就吃到以上的食物,當然是超值啦!! 吃過魔麵總算一償心願! 最近太多食店太吸引,實在不夠時間不夠胃納呀!!! =D

最近一家又一家的拉麵店在九龍區開業, 繼上星期去了試新開業的鳥華雞白湯拉麵, 早幾天又跟友人試另一間豚骨湯底拉麵 – 魔麵。去這店之前在網上做過一些資料搜集, 據知大廚曾到日本久留米學師, 每天用上10小時去把150公斤的豬骨熬成超濃豬骨湯底, 所以對湯底有一定的期待。星期日的晚上7時15分來到店裡, 人流不算多。在點餐之前, 店員主動跟我們解釋五款不同的麵有什麼不同, 他說「豚魔」是最濃厚的豬骨湯底, 湯頭會比較厚身, 而且黏口; 如果怕太厚身, 可以選鹽魔, 豬骨湯成份最少。聽完介紹, 我還是選了「豚魔」, 始終第一次來吃, 想吃最原始的口味。約5分鐘後, 我的「豚魔」來到我面前。第一口先喝豚骨湯,喝後感覺是 比我預期和店員口中的厚身或黏口, 還有好一段距離, 比較之下, 我覺得之前在鳥華喝過的雞白湯底或豚王的豬骨湯底更加厚身, 更加黏口。魔麵的湯底給我的感覺比較平易近人, 不太厚身, 一般人都接受得到, 而且也喝得出濃濃的豬骨味道, 平過略嫌湯頭不夠熱, 來到我的面前時, 已經有點涼。喝完湯, 先來一啖麵。這裡的麵條是九州風的, 是幼身麵條。點餐時, 店員也有說麵條的軟硬度可選硬

喝完湯, 先來一啖麵。這裡的麵條是九州風的, 是幼身麵條。點餐時, 店員也有說麵條的軟硬度可選硬,普通或軟身, 最後我是選了普通的。如果說這是普通軟硬度的麵條, 我真的有點失望, 因為麵條真的有點過腍, 再加上一邊吃麵, 麵條吸了湯後, 變得更腍。我想如果下次再來, 還是選硬身一點的麵條吧。

「豚魔」的配料也有很多, 豚角煮, 叉燒, 木耳, 蔥花, 粟米, 溏心蛋, 紫菜~ 要數已經數到有七款, 完全滿足我這個吃拉麵時對配料最貪心的人, 每款也有一些, 不用再煩惱要否另外再追加別的配料。讚!
豚角煮是我比較期待的配料, 可能太高期望, 又有點失望了。一般的用在豚角煮的豬肉應是肥瘦適中,而且應該炆得勁腍,入口即溶的。不過這裡的豚肉卻把皮和肥都去掉, 吃下去一點即溶的感覺也沒有, 失去豚角煮應有的風味呢~

最後, 我把整碗麵幹掉, 更把整碗湯喝剩兩口, 之前我說這裡的湯底比較平易近人, 是因為湯頭不太厚身, 讓人吃光麵條, 還可以把湯喝光, 最重要喝完整碗湯, 並沒感覺到口喝, 可想而知幾真材實料, 不含味精。我想這店應該還在試業階段, 看得出樓面的店員都有點生手, 希望店主能在這段時間收集多點意見, 日後做出更好的拉麵吧, 遲一點我還是會再去光顧的, 下次要試試傳說中的「辣魔」, 看看有多辣!

Soup: The soup was indeed rich and dense like he stated. But compared to Butao in central the soup was not as thick, which is a good thing. A soup base to a ramen is very important, it determines how good the whole bowl of ramen taste. The soup wasn't that thick to the point it is gooey and finished within 5 sips which is a good thing. So you could slowly taste the soup and have some soup with each spoonful of ramen. Although the soup isn't that thick, doesn't mean the soup wasn't rich and bursting with pork bone flavour. i truly believe that it was made with 150 pork bones and cooked in ten hours. the soup was marvelous. It was really dense but it wasn't too salty. usually soup that rich in flavour would be salty but this wan't this was truly amazing and I couldn't stop drinking the soup.

Ramen: we ordered for hard ramen, which wasn't too hard. But the waiter did say eat it hot or it will turn soggy after a while. i took my time to taste the soup while taking pictures. after 15-20mins, the ramen definately turned soggy. So iw ould recommend to eat it as soon as possible for best quality. but the ramen was good, was chewy, not too sogy, not over cooked and refreshing. The only thing i would change about it would be the thickness of the ramen. it was really thin, I like my ramen to be quite thick. The texture of the ramen reminded me of vermicelli, thin but not soggy.

Roast pork & Braised pork: i found the roast pork and the braised pork here very good. i love the fact that they give you both the meat to try instead of making you choose one. Both the meat taste the same, using same thing to seasoned and marinaded. The differences of the two are the thickness of the meat. The roast pork is much thinner than the braised pork, the braised pork is thicker and comes in two. But both the pork is somehow crispy on the outside as the photo shown, which adds a great texture and a barbecue taste to it.

The roast pork here seems to be in a swirl. it could be the piece of pork was rolled up then barbecued to make that swirl. how special and interesting is that. the roast pork was not as tasty as the braised pork, the taste was faint due to the thiness of the pork.
The braised pork was a lot more tasty and rich in flavour as it was thicker so must have absorbed more taste. But as it was thicker the meat was not as tender and alot more tough and chewier. Whereas the roast pork had some fatness to it, it was alot more tender.

The egg: The egg here is semi cooked so the egg yolk is runny. usually I leave it til the end to eat with some warm soup. I leave it to teh last as it is the best part. But the egg here isn't as nice as ones i have tasted in the past. The egg yolk is not as golden orange as others, I cannot taste the egg yolk much. to me it just seems like a normal egg. i hope they can improve a bit more on this.

Service: The service was absolutely perfect- thanks to the guy that was serving us. He gave the best service I ever had. he always had the smile on his face, spoke clearly and slowly. Was very patience and with good manners. He was also very friendly but not over the top.

We were given two cups of cold water, after a while, he gave us the menu and asked if we would like a glass of hot water. I said only me would like a glass of hot water,a nd he smiled pleasantly and said no problem and gave me warm glass of water.

After we have decided what we would like to order, he was already near by and quickly took my order. we ordered 2 pork bone ramen, and i asked what kind of sides does it include in the ramen. Then the guy said with a smiled, would it be possible if he explained a bit about their menu. Of course i said we are more than happy to hear him explain the menu.
He gave us a short introduction of this restaurant's concept and history, then gave us some information of the different types of ramen.

*The pork bone soup base is cooked from 150 pork bones and cooked over 10 hours so the soup is very thicka nd dense.
So if we do not like it so thick and dense we should choose soy soup base or miso soup base instead as it is less rich and dense, although it is still partly made from pork bone but less.
* He also said the salty flavour soup base has the LEAST pork bone soup so it is more watery, definately less thick and dense.
* He told us all the ramen has the same toppings. So i asked for sweetcorn as i do not see any sweetcorns in the photo. He todl me that the ramen do have the sweetcorn just not in the pic but would give me extra sweetcorn as i requested.

He was very detailed and took his time to explain about the ramen. In the end he asked us how would we like the ramen. Hard, normal or soft. We said hard. He quickly took our order for us.
While on waiting for our ramen, we saw the waiters was watching out who needs to refill in their water very frequently.

The ramen came in a big bowl with a tray, which includes any extra sides on another plate. There was complimentary greens on a seperate plate.
When the waiter placed the two trays down, he reminded us and said try to eat the ramen hot as it will be soggy after. i have never heard any waiters reminding me that. i love their attitude. they actually care if you actually eating their food at their best quality. i love it!

I was paying attention to how well they serve their costumers. The waiter was patiently explaining the menu to nearly all costumers he served, which is rare. Water was refilled very often and they walked round to see if anyone needed help.

At one point, one of us has finished our bowl of ramen. He came over and asked nicely if he could take it away. wes aid yes of course. But he also took away that pair of chopsticks that we needed. So within a split second, he came back witha new pair of chopsticks. we were so gratefula nd helpful. He actually listened to our needs and was being very considerate. he did not even go in to get rid of the empty bowl of ramen then offer the new pair of chopsticks, but gave the new pair of chopsticks first. he was not annoyed that he had to do extra and even smiled. the service he gave was unbelievable.

When we were leaving, each and every one of them said bye and thank you for coming with a smile, and what so important is, they all said it with a smile. When leaving that particular waiter, my companion complimented on their ramen. that particular waiter was really happy and said "thank you very much" and he even walked us to the lifts and said he noticed how we have drank all the soup in the bowl too. Which in Japan, that is manners to finish all the soup, to show that the ramen is good. The waiter was really happy, not in a fake way. I could tell he was sincere about it. he had a massive grin and he kept saying that he is really happy when he sees his costumers likes the ramen. i have never seen any waiter be so happy when we compliment about the food. he made us happy for actually caring if his costumers actually like the food or not!

You can tell he actually wants his costumers to leave happy and satisfied. isn't that what all restaurants should be like? To make their costumers feeling 100 percent satisfied, and it brings them satisfaction?

Conclusion: In general the ramen was good, even the ramen isn't thick as i wanted and doesn't taste like it is made from fresh egg. But the soup really surprised me. it was so good. Rich and dense but not gooey thick. also best part is, it isn't salty. I can drink another bowl! It was certainly the best ramen pork base soup I have had.

The roast pork and braised pork was good, but average. if tehy could improve on that, it would be perfect. The seasoning was good, and i loved how it is crispy on the outside, but usually the pork should melt in your mouth, but it was bit too chewy and not as tender. they will need to improve on this first. The egg was also not my favourite but I guess it takes time to improve. there are a lot of toppings and even comes with a side of vegetable.

They served cold/ warm water here, but traditionally they serve tea in japanese ramen shop. i guess maybe it is newly open and not everything is ready. But that is just my guess as the water is served in a green tea cup. it was bit disappointing as tea wasn't served, something just aint right there.

i like how they came with a tray as they are not touching your bowl and also comes with any extra sides you have ordered. for the price that you pay and teh service and food quality you get, this place is worth you spending your money. next time i will try some sides. they provide from barbecued sides, to cold salad and ramen, to tempura. Lots and lots of choice. But one ramen is enough to fill you up even if it looks small.

We came at 5.58 and they weren't open yet, so please be sure they are opened before taking the lift up to the 3rd floor. they open at 6pm for dinner. There are plenty seats here, more than 15 tables and lots of seats by the window.

Not much view but the street but it is nice enough. everything clean and organized. the decoration is simple and with beige wooden theme. it is missing the cosiness and warmth as it is so big. usually ramen place are small and cosy with bar seats. But teh service makes up for what it is missing. the service here is fantastic which amkes me want to return and try more of their ramen. I cannot think of any other place that has ever made me feel so satisfied and welcomed. i loved their service an dattitude and i am going to rave on about it forever.

尋晚終於試左呢間魔麵,首先,我想同下面位留言者講茶同水呢個問題,先入為主唔代表果樣野正確,正如我之前係香港去所有地方食日本野都係比綠茶,呢間比杯凍水,我都有感到奇怪,但係我會問點解,個侍應講左兩間係Central嘅拉麵店名稱,問我食過未,他解釋因為客人食完一碗熱嘞嘞嘅麵,飲杯凍水係感覺好好架,然後我朋友就諗佢去日本次次食拉麵都係比水嘅,所以人地咁做係有原因!!我想嚟試嘅原因係我係openrice見到佢地講到個辣湯咁好食,我好喜歡飲湯,又鍾意食辣,所以一睇到就好想試下!!尋晚大約七點黎到,得小貓三四隻,可能好多人都未收工,我地有卡位坐,幾舒適!一看菜單,簡單到不得了,$69一個麵,有小小配菜,一塊叉燒一舊唔知咩肉!味度好食嘅!!!我order左個辣魔,而我朋友就要醬油,令外要左一個忌廉薯餅!!$18,得好好好好好細件,比多件就差唔多啦,味道係真係唔錯嘅!個拉麵一拉到,我即時飲淡湯先,個辣味真係幾好,又夠辣又香,侍應話他們所有湯個base都係用豬骨湯,我真係相信他們用150kg豬骨去au呢個湯底,因為真係好膠好香豬骨味!!然後試拉麵啦,第一口感覺好熱,比個湯熱好多,所以我即時覺得個湯唔夠熱
