20161114--一直想到新加坡品嚐當地美食,但又因很多原因遲遲未能成行,得悉潮江春做新加坡美食推廣,相約家人光顧。星期一的關係,不用等位,侍應很快便可安排入座。二人被安排坐了小的圓桌子,尚算舒適。二人點了:黑胡椒蟹--期待吃星洲黑胡椒蟹很久,蟹上桌時本人真的很興奮,傳來陣陣胡椒香,蟹面也佈滿胡椒,賣相吸引,蟹是大肉蟹,蟹新鮮,蟹肉實在,不會水水的,可是味道不但沒有太多胡椒味,而且太咸,咸得有點苦,廚師是否放了雙重鹽? 白白浪費了一隻新鮮肉蟹。臘味炒芥蘭--這道菜炒出來不會太肥膩,臘味份量多,芥蘭淋甜,味道不錯。埋單:忘了價錢,只記得當時用恒生信用咭有85折優惠,折實後價錢也不算便宜,因為特別來吃蟹,味道令人失望,有點不值。自問算是潮江的FANS,真心覺得理境、食物和服務也是有水準的,曾經對家人豪語:潮江春無論甚麼點心也好吃,想不到是次光顧晩餐,真的很失望,希望只是偶爾的失手。事後想著還是加把勁計劃到新加坡吃地地道道的胡椒蟹吧。

難得老闆請食團年飯,當然要黎啲高檔啲既地方食啦。呢間野都多人幫襯,所以都早左黎攞位。座位比普通茶樓闊,台同台之間既通道都闊。蠔仔粥雖然唔算大煲,但好足料。粥唔係稀到無倫果啲,你仲睇到一粒粒米,似足住家煲嘅粥。蠔仔數量多,唔係得少貓34隻hea爆。牛仔粒每一粒都切到差唔多size...但就細粒左啲。味道食落好似和牛feel,軟硬適中。雪山包好在外面個雪山皮唔會一咬就掉哂落黎,裡面叉燒量都ok,唔會散收收。呢個鵝片我覺得超正大大塊入哂味又唔韌。掌翼無食不評論。白菜仔呢個餃咬落去都幾煙韌,蝦肉同菜量適中。金錢肚我嫌佢稍為大件左牛肉腸ok裡面係芋頭呢個唔使點醬都覺得咸左啲。

蝦餃,燒賣,牛肉球,奶王包,鳳爪(好大碟)
蘿蔔糕, 炸兩, xo醬蘿蔔糕粿,鮮蝦腐片卷...魷魚蘇

仲有香芋流沙包(我以為佢係紫色的, 但原來是...灰色的..因為佢吾係紫薯...)

以下食物, mama地...

叉燒腸0既叉燒好似肥肉多左少少,
魷魚蘇,lee度0既魷魚蘇比較油膩..

粉同魷魚本尊是分開的..

以下食物要比個likeeee~~

但值得一讚的是那個蒜片牛柳粒非常好食!

非常林身, 好有牛味...係略嫌份量太少同切得太細粒....

前菜好好食, 入面有咸酸菜,花生,青瓜,

加左少少麻油, 咸酸菜好開胃!

平時d酒樓只會比nuts...

另外順帶一提2件事..

1) 一般酒樓都係用ceramic做的茶壺,

lee度0既茶壺係不锈鋼來的, 
導熱性能好好, 所以岩岩倒完熱水就不要掂個壺蓋,

不然會辣親手...

另外, 我地叫左2種茶...但茶壺上面完全冇標明係咩茶...

2) 好好彩坐左入房仔, 因為我地遲去..飲茶飲到4點幾...

酒家開始要準備晚上婚宴...要擺位...

出面清曬場, 我地仲可以慢慢坐...

在眾多美心中菜中,潮江春是我比較喜愛的品牌。從前經常去大埔的分店午膳,特別喜愛那兒的點心。後來轉換了工作,近年再沒去大埔店。今天約了居於上水的友人晚餐慶生,選了位於上水匯的潮江春。上水匯是近年新開的商場,空間比一般的商場小,電梯亦窄得只容一人通過。商場人流較少,雖然餐廳樓面不大,但星期五整段晚市都不滿座。四人共點了四個小菜,三肉一素。四款小菜有兩款 - 沙薑肚尖蒸雞和酒香紅炆肋骨,以木桶盛著,有助保持食物溫度。沙薑肚尖蒸雞蒸雞肉質較諧,豬肚尚算腍身。廚師加進了紅棗去蒸,為咸味的醬汁滲進自然的紅棗甜味和香味。酒香紅炆肋骨肋骨炆得很腍,口感近乎梅菜扣肉的那種腍。肋肉間夾雜著點點的脂肪,讓肉吃起來更香更滑。淮山土魷炆腩肉腩肉炆得很腍很甘香,土魷較硬難以咀嚼,改用鮮魷會好得多。淮山新鮮爽口,但個人不太喜歡它潺潺的口感。上素扒白玉肥厚的冬瓜煮得很腍,完全索滿芡汁的水份。冬瓜環的中央有冬菇、竹笙和蓮子。整體菜式味道不俗。茶位$13 一位,價錢略貴,餐前花生亦要$14 碟。小菜價格不算便宜,但四款小菜的份量卻非常豐富,四人合力都吃不完,需打包回家。這餐除開每位不到$130,非常抵食。

想食潮洲菜,可以去大排檔打冷,又可以上酒樓食我鍾意坐得舒舒服服,所以去潮江春,這裏服務很好,侍應都很有禮貌杏汁豬肺湯:超正湯是白白香香的杏汁,飲得出好夠火喉,豬肺好林,吾會有豬臭味,洗豬肺真係好教功夫,這個湯足四人飲,都係$108,自己真係做吾到呢個味道滷水鵝片,鵝肉好林,好入味少少肥更能帶出鵝的香味鵝肉很多,反而碟底的豆腐吾多,足料其實啲豆腐都很多吃,索晒啲汁嘛咸肉煮紹菜,味濃,菜嫩咸肉切得薄薄的,咸香咸香的,送飯一流三五知己,坐在一起,不用限時,悠悠閒閒,真是一樂也

最近,好多時也是2個人開飯。到了上水,不知道吃甚麼,想到還未到過上水匯的潮江春。過了中午繁忙時間,沒有食客等位,侍應很快安排入座。酒樓裝潢不錯,坐在禮堂前的位置,射燈火數很大,坐久了,照住很熱。開了烏龍茶,假日$12/人,2個人點了:滑蛋蝦仁炒河--蝦仁爽口彈牙,有甜味,炒河不會很多油,份量不是太多,2個人分到約5碗。蝦餃--皮薄,蝦新鮮爽口。燒賣--豬肉鮮味,熱騰騰,大大粒,好味道。埋單$208,物有所值的,到屋村酒樓,我很少會點蝦類食物,因大多材料不新鮮;到潮江春,美心呢類酒樓,我好多時都會叫蝦類食物,因為每次也會是水準以上的,有信心保證。是次光顧,除了某位侍應生好以睡眠不足、遊魂,要講幾次先聽到和做到,有點扣分外,無論環境、食物、服務,整體感覺不錯。下次有機會平日來試下下午茶。

好多年冇食過潮江春啦~可能因為太耐冇去大埔啦,見到上水又開左,都係要去試下先沙律名蝦角蝦量十足,而且隻隻飽滿,用油亦食得出比較鮮,不錯~雞絲粉卷冇乜特別,要讚既係味精量既低,同埋雞肉既鮮味,少有酒樓有雞絲粉卷仲可以食到雞味的蠔仔肉碎粥, 蠔仔既量多到可以一啖一些都得,而且仲加入左柴魚,脆脆地好易入口,食過後非常爽皮!

蠔仔肉碎粥,

蠔仔既量多到可以一啖一些都得,

而且仲加入左柴魚,
