最近附近開了一間很別緻的的餐廳,今天相約朋友們午飯,我早了到,就四處參觀。餐廳外種植了很多樹木,景色怡人。在餐廳內,彷彿置身在另一個地方,與外面的西環舊區相比,完全是另一個世界。餐廳內的設計佈置一絲不苟Lunch Menu,每款都想試!麵包溫度夠,又很軟熟,味道不錯,小妹還是喜愛點牛油,不過牛油則比較硬。煎菜:魚子蟹肉啫喱+蕃茄,比利時蕃茄,個人口味比較重,覺得啫喱味道可以再濃點,蟹肉份量足。主菜:牛扒,Preset 5成熟,肉質腍,牛味足,下面的是芹菜頭,味道清淡,小妹覺得如果是菠蘿會開心點~另一前菜:煎鱸魚,小妹覺得這個魚做得相對較出色,魚肉新鮮,鬆化可口,加上旁邊的puree,一起吃更能帶出魚的味道!甜品時刻,芝士蛋糕,質感較一般的腍身,加上TOPPING的熱情果汁,清新果香,為芝士蛋糕帶來不同層次感的酸美味。Tiramisu,小妹一向不太好,不過這裡做得不錯,酒味不太濃,配以咖啡味雪糕,味道很夾。這個甜品是我最喜歡的,辣朱古力,這個黑色的就是辣朱古力,第一口不感到辣,吞下是淡淡的辣味才慢慢慘出,旁邊的花生醬雪糕及蜂巢,為此味蕾帶來不同的刺激~整體上,這裡的食物具高質素,看得出廚

這個甜品是我最喜歡的,辣朱古力,這個黑色的就是辣朱古力,第一口不感到辣,吞下是淡淡的辣味才慢慢慘出,旁邊的花生醬雪糕及蜂巢,為此味蕾帶來不同的刺激~

  先來餐包,未入戲肉就已經開始感受到餐廳的藝術趣味。非常明顯,以Lego砌疊成小籃,鋪上餐巾,把片片餐包擺放的美觀雅緻。個人最愛果乾配果仁的麵包款,剛好在此時出現,更是有我喜歡的核桃呢。果乾的酸甜,果仁的香氣及咬口,加上包邊的脆感,忍不住要放縱地吃。沾上點點十年黑醋醬,甜中帶微酸,稠稠的易蘸又更是味濃香口。

  我選的頭盤為Scampi Ravioli $198,食物擺盤本就是一門藝術。用色不只是一味跟隨著Ravioli的黃,而是有著青豆蓉的青綠,以及紅菜頭Beet Oil的紫紅。多重色彩點綴之下,來得賞心悅目,讓人胃口大開。Ravioli外層頗為綿稔,最好是一次過一口吃掉,仔細嚐嚐那雖味淡,但帶彈性的小龍蝦肉。伴著的南瓜蓉味道甜而突出,旁邊其他的,包括黑蒜醬海鮮湯汁,則顯得低調。

  友人點的Smoked Tuna $178,賣相讓人想起日韓的石鍋系列。吞拿魚他他整齊地置高,表面依然是有心思的點綴裝飾,顯得清新同時高貴。吞拿魚本味出眾,沒有半點腥膩,調味中的芥末柚子酸甜清香有著大功勞。還有紫椰菜花的加持,略顯粉紫紅的蓉醬襯托出氣質。朋友指在新加坡的米通來得幼細很多,不過粗身也有自己的好處。就是吃著脆中略帶煙韌,用來伴著吞拿魚吃也不怕油膩滯悶。

  湯品方面,我們選了比較清新輕盈的Chicken Consommé $88。先上來Masala Jelly,說到Masala就會想起我喜歡,以前常吃的印度菜。當注進清澈如水的清湯,啫喱漸漸溶化,變薄,變少,湯味則越發香濃。不過味道沒有想像中的烈,只是溫和清新的微鹹香氣。

  主菜選了點套餐要加$200Earth $448,但一上桌就覺得沒有白加。首先不管味道,單看以菇菌蓉製作的「紙張」。上面註引了Henry David Thoreau的名句,用心構思的藝術品。而重新煎香過,熟度為Medium Rare慢煮和牛,油脂豐腴不腥臊。肉味滿溢,腍香不韌,同時帶有牛肉本有的彈性嚼感,肉質不會過分鬆散。旁邊的薯仔粒鹹甜交加,讓人想起韓國반찬的常見款,亦有清甜蔬菜作伴解膩。

  最後來到甜品時間,店方送上另一份甜品餐單。讓人目瞪口呆的十多款甜品,分三大項--Hong Kong Exclusive、Classics及Contemporary。每一款都非草率馬虎的配搭,心大心細,幸好我們人多勢眾(事實不然),甜品胃大開了。

  香港獨家的道地款式,要數我們的經典街頭小食--Gai Daan Zai $118。要等十五至二十分鐘,沒問題,說說笑笑轉眼間就過了。走精緻路線,不是平常一大底的豪邁,雞蛋仔當中的爆炸糖傳來熟悉的彈跳刺激感。外層脆身,內部有如蛋糕,不知道這樣的雞蛋仔又是不是你杯茶了。配上鹹蛋黃的鹹香細膩,以及Brown Butter Stout Icecream,很甜,但香得很。

  接下來有Classics的代表,為人熟悉的Tiramisu $112。對於盛載的器皿不敢恭維,但內在就不是那容器感覺的一味古板。正正常常,用到MascarponeKahlua咖啡酒,加的不是手指餅而是海綿蛋糕。更有Kahlua JellyEspresso Icecream坐陣,苦甜濃郁的香氣共存,甜而不膩。正當以為入口只有滿嘴細綿稔軟,就會嚐到粒粒的脆米,微脆微韌,來少許對比也無妨。

  來到Comtemporary,酸清的Cassis Plum $158據店方指,是為人氣之選。冰脆的黑加侖子白朱古力外殼十分薄身,一輕敲開,中間乳白色微稠泡沬盡現。看樣子還以為是忌廉,實為接骨木花酸乳泡沫,細滑不膩。底下墊著的是以Choya梅酒紫蘇葉製成的沙冰,櫻粉色調太夢幻了。還伴著如繁星的黑加侖子軟糖Yuzu Pearis,個人比較喜歡後者,帶清香及軟糯。

  十分漂亮的配色,想起什麼海枯石爛之類的場景語句來了。Chocolate H2O $145,灰黑如大石的就是65%黑朱古力加入Evian,經過一輪工序後的成品。帶著可可香氣,我最愛的苦,明明只是65%,但甜度來得比65%為低。高知縣柚子雪葩,非時令,依然帶著青澀酸甜及香氣。澆上濃濃的鹽味焦糖醬,甜,一絲鹹,沒有破壞整體的清。

  典雅的紫--Purple $98,最後要一說的甜品,神奇不過的配搭。沒有想過將紫薯黑莓兩者湊在一起,淡清微甜,濃烈重酸,不和諧,倒是有趣。薰衣草棉花糖香氣極清,要先吃,否則會被其他味道搶過來了。
  Janice Wong,不知道該稱她為藝術家還是廚師甜點師好了。配搭用色呈現出來,每道菜均有亮點,由頭盤開始,到甜品,大多驚喜連連。在此總結一下,鹹食方面,最滿意的是主菜,牛肉肉味油香實在是教人難忘;比較平平無奇就是湯品,雖然難得清澈如此,但味道不算讓人印象深刻。最喜歡的甜品是Basil White Chocolate,配搭新意以及味道都啱心水;Tiramisu不算太特別,Purple的味道不是我所愛的。有始有終,回到開題處,簡單地說,女性其實也可以發揮得不錯,以上為一實証。

     当我在吃第二道甜品的时候,Z小姐发来微信说,她在圣淘沙有艳遇。她说她自己去环球影城的鬼屋,还没走几步就吓得魂飞魄散,只能死死地抓住前面一个人的手臂,闭着眼睛跟着前进。等到出来了,睁开眼一看,她就觉得自己跟眼前这个男的会有故事发生。

      这家店除了甜品外,还有提供一些小吃。Z小姐迟大到,于是我自己先点了两个小吃垫垫肚子,分别是foie popsicles(HKD$98)与 tapioca cracker(HKD$65)。前者是鹅肝小圆球,巧克力外层,咬开来里面是带着酒味的鹅肝蓉;后者是西米脆饼,香脆可口,很适合当看电视的小零嘴。

       半个小时后,当我慢悠悠地吃完最后一块脆片,Z小姐正好走进来,一脸笑容。
        “干嘛笑得那么荡。”
       ”我遇到他了,新加坡鬼屋那个。”
        Z小姐说,她一出香港大学地铁站,就碰到他了。这次她立马拦住,好在K先生也记得她,大家加了微信,留了联系方式。
        “他叫Kevin 。”
        我知道这一餐,无论吃什么,Z小姐恐怕都觉得是甜的。其实就一分钟的相遇,Z小姐却可以一直滔滔不绝地描绘着,在听了第三遍后,好在甜品终于上桌了。
        Cassis Plum:我第一个就点了cassis plum,想和在新加坡吃的对比下。可是吃后有点失望,虽然是一模一样的一款甜品,但是吃起来香港的这款比新加坡的逊色很多,味道比较单调,有点“干”,没有新加坡的那款有夏日雨后的清新感。

        Green Tea Tart(HKD$108):反而这款抹茶塔就很出色,半溶心,吃起来香滑浓郁,又带着点回甘;而且旁边搭配的茉莉香米雪芭也有惊喜,它的口感不是像我们一般吃的雪芭那样,而是黏黏的,像米一样。

       对我来说三款味道完全不同的甜品,Z小姐却都直呼“好吃到飞上天”。我看着她这样子忍不住笑起来,春天果然,是个让人容易蠢蠢欲动的季节。
      “重逢意味着注定要在一起。”Z小姐已经准备好开始一段新恋情了。
       虽然对我来说,这次跟2am dessert bar的重逢并没有百分百的完美,Cassis Plum没有怀念中的美好。但我还是很开心很满足,因为这次再见,我遇到了美味的抹茶挞。有遗憾又怎样,就像对着同一个人,在不同的时间与不同的地点,Ta给你的感觉也不尽相同。我愿意去了解,愿意去尝试,愿意去看到你的每一面.
      只要,我们能重逢。

總括黎講,對甜品最印象深刻,新加坡出名既甜品師真係名不虛傳,下次一定會再 Encore。

Other Info. : Openrice 是否近期嚴格左?定因為我不是高級會員。居然一份錯通食評會被openrice 評為"餐廳或其代理人以優惠或任何方式的利益驅使下提交食評"。真的非常失望。

成餐飯都好滿足,侍應生服務好好,每次有食物上枱都會介紹食物名稱、食材,但又唔會阻礙或者拖延到食物凍晒,見水杯無水又會自動自覺 refill,一切都好貼心。

至於洗手間,乾淨闊落不再話下,設計亦好呼應到餐廳整體感覺,好正!!

I was impressed with the artistic presentations and creative flavors in most of the desserts here which are definitely worth a try for the reasonable prices, and I'd definitely be interesting in coming back to try the savory menu as well! Executive lunch sets start from $198 while dinner set starts from $428 along with a 13-course degustation menu at $1280.

Finally, I went with their Red Miso Caramel ($108) to close things out. On paper they got something quite special in this marriage between miso and caramel and the result was pretty compelling. Mustard yuzu meringue, miso foam and miso yuzu liquid nitrogen ice-cream are the three key components here resulting in the contrasting texture and temperature. Definitely worth the try.

Kimchi marinated chicken was deep fried to perfection before they wrapped thing up with a kimchi gel, wasabi mayo and home grown wasabi leaf atop. The combination of flavors was excellent; coupled that with the crispy batter and we got here a very nice dish!

被譽為亞洲甜品女廚神的Janice Wong在香港開的甜品店,最近開始試業,艾琳熊一知道即刻飛撲去朝聖! 她設計的甜品配搭新穎,想不到連咸點都有驚喜。這道Faux Bone Marrow,用上和牛條及蘿蔔扮牛骨髓,外形似模似樣,還用炭爐上枱,造型大大加分! 味道幾好,但蘿蔔味略為搶了牛味。最推介大家試這道Charcoal Plum Mantou,是竹炭包夾泡菜慢煮豬肉,客人還可以自己夾配菜,那些菜更是餐廳自家種植,有心思!豬肉煮得入味,配上新鮮蔬菜,和暖暖地、鬆軟的饅頭,味道與口感並重。我和D.S.叫了兩款甜品分享。外型搶眼的Cassis Plum,是Janice在Master Chef的表演作品。由黑加侖子與白朱古力造成的外殻,入面有梅酒和接骨木花製成的乳酪,配以梅酒沙冰和柚子珍珠來食,口味酸酸甜甜,夾雜酒香,是一道不膩的甜點。Shades of Green是斑蘭雪糕配椰子慕絲和開心果蛋糕,味道很配合,食入口很有東南亞國家的感覺,難怪店員說此甜品被新加坡旅遊局選為代表新加坡的甜品。飲品都有不少選擇,其中有一系列甜品口味的茶,是由Janice研製,全部用上天然的茶葉、香料等材料配製而成

Charcoal Plum Mantou $88: 9分, 其實文迪有預備晚餐給小晴晴, 但她看見這包包, 當然嚷著要一客. Charcoal Plum Mantou, 用上了竹炭, 是我的本行, 相信我, 真的很有竹炭的風味. 有趣的地方在於讓我們自行把其他配料加入, 配上慢煮手撕豬肉同吃, 是幾惹味的.

Chocolate H2O $128: 9.5分, 來到甜品的環節, Chocolate H2O是甜點師根據死去的珊瑚創作而成的甜點, 浪漫中帶點淒美. 擺盤相當靚, 65%黑朱古力當然味道濃烈, H2O就是Evian, 再配上鹽味焦糖以及Kochi柚子雪葩, 中和了黑朱古力的味道.

Cassis Plum $138: 8.5分, 還記得很久很久之前曾經吃過精彩的炸彈, 這次吃的是黑加侖子炸彈, 外層已經是酸酸的, 而炸彈內的是接骨木花乳酪泡沫, 旁邊還加上了梅酒沙冰以及柚子珍珠, 全部都是酸酸甜甜的元素, 怕吃得太甜的朋友, 這個會是個好選擇.

Tsujirihei Green Tea Tart $108: 9.5分, 抹茶甜點從來是萬人迷, 這客Tsujirihei Green Tea Tart, 就是必吃之選. 撻帶點微暖, 撻底香脆, 抹茶餡是流心的, 帶幽香的抹茶味道. 旁邊的是茉莉香米雪葩, 帶米香的雪葩配抹茶撻, 很特別的配搭, 有驚喜.

Red Miso Caramel $108: 9.5分, 至於Red Miso Caramel, 亮點是芥末柚子做的脆餅, 芥末味道不會太濃, 反而有柚子的清新感覺. 配上的是麵豉泡沫, 以及麵豉柚子雪糕, 以麵豉作甜品的元素, 想不到是有很好的化學作用呢.

Shades of Green $118: 9.5分, 吃甜品, 靚的擺盤自是更加吸引. 但如果側在一面呢? 藝術, 或許就是要把想像空間提升, 留白的部份, 留待閣下去構想好了. 開心果蛋糕質感鬆軟, 帶開心果香, 椰子慕絲質感細滑, 椰子味道香濃. 班蘭雪糕最討好, 每口也有班蘭葉的清香.

essertbar, 就是在享用一頓味覺跟視覺的盛宴, 每道菜式皆是藝術的一部份, 擺盤, 設計, 配搭皆很有心思, 甜點師豐富的想像力, 帶來一個接一個的驚喜. 店子的環境其實很有歐洲星店的感覺, 而這裡也委實值得大家的注視.

最後的是Shades of Green, 突意把甜品的內容放在一邊, 其餘部份是空碟, 是藝術的一部份吧. 主角是開心果蛋糕, 再配上椰子慕絲以及班蘭雪糕, 很綠色的感覺, 特別喜歡班蘭雪糕的清香.
