我那位出名精打細算的老公總認為去餐廳食牛扒是非常不值得。他的金句是:「不過是開猛火煎,家裏都做到,為什麼要出街食?」終於有一次,我忍不住回他:「家裏的雪櫃做不到dry aged steak 吧?」就係咁,我成功爭取到我倆的團年飯可以出去食牛扒了。這次去了灣仔的hEat, 因為這家餐廳的set dinner除了風乾熟成牛扒,也有海鮮類的菜式,啱曬什麼都想試的我。餐廳沒太多浮誇的裝修,門口以一個鐵絲網屏風隔開用餐區,桌椅都以自然色系為主,營造舒適的氣氛。最奪目就是天花掛着七十年代風的吊燈,和前面大大的雲石吧枱,在簡約中帶出一點型格。當然一定要參觀風乾熟成牛扒的櫃子。在特定的低濕度和溫度中,牛肉會進行熟成的過程,產生酵素令肉質鬆軟,牛肉會失去部份水份令肉汁更濃。但是因為表層已硬化成保護層,保留在中心的水份就令肉質保持鮮嫩。很吸引吧?別心急,先吃前菜吧。我選了”Summer truffle porcini toast”。多士烘得香脆,抹上毫不吝嗇的牛肝菌松露醬,是最愛的菇味,沒有不喜歡的理由吧。老公要了生蠔,據他說日本那只比較爽口,美國的比較嫩滑,都十分新鮮有海水味。第二道菜是海鮮,有兩個選擇

當然一定要參觀風乾熟成牛扒的櫃子。在特定的低濕度和溫度中,牛肉會進行熟成的過程,產生酵素令肉質鬆軟,牛肉會失去部份水份令肉汁更濃。但是因為表層已硬化成保護層,保留在中心的水份就令肉質保持鮮嫩。

很吸引吧?別心急,先吃前菜吧。

我選了”Summer truffle porcini toast”。多士烘得香脆,抹上毫不吝嗇的牛肝菌松露醬,是最愛的菇味,沒有不喜歡的理由吧。老公要了生蠔,據他說日本那只比較爽口,美國的比較嫩滑,都十分新鮮有海水味。

第二道菜是海鮮,有兩個選擇”King Crab Leg” 是炭燒日本巨蟹腳。炭火濃縮了蟹肉的鮮味,同時添了一陣淡淡的焦香。旁邊還有一小盅香草牛油,加幾滴上去,香味更有層次。

另一個海鮮的選擇”Daily seasonal clams”.所用的不是常見的貝類,大概是外國進口的,夠大也夠爽甜,配上香茅辣椒忌廉汁。忌廉十分香滑,而香茅和辣椒的味道其實輕得似有若無,剛巧能帶出蜆的鮮味而不會把它蓋過。

然後今晚的主角”Dry aged 30 days “Greater Omaha” Sirloin “ 出場了。我要的是五成熟,切開見到牛肉中心的紅寶石色很漂亮。一咬下去,馬上感覺到香濃的肉汁,因此只要點少少海鹽已經很美味。而肉質也十分柔軟,但不是由脂肪和油份帶來的入口即溶,所以感覺不肥膩。熟成30日,果然是有原因和價值的。

旁邊的伴菜說是四川風味,原來就是花椒油的香味,麻而不辣的炒什菜竟然跟牛扒出奇地相襯。

由於老公是無飯不歡之人,特別為他加點了”Silver Hill duck oil special rice” 這個可說是西式的豬油撈飯,不過鴨油比豬油的香味來得清香,口感軟棉又煙靭像極了糯米飯,跟牛扒是絕配,吃完大滿足(當然前提是胃納要夠大)

甜品我們都要了”Dark Chocolate Tiramisu”。打發得柔滑鬆軟的mousse 充滿著濃厚的朱古力味,底下還藏着一塊小蛋糕。還好分量小小的,吃光了也不算太邪惡。

餐飲也不是一般的咖啡或茶,而是客制特調mocktail. 老公要蘋果味,我要士多啤梨味,然後就見到侍應在吧枱用力搖動調酒壺做出來。顏色鮮艷美麗,味道也淸新可人,沒有化學味,是一頓晚餐完美的終結。

打算結賬了,原來還有彩蛋!之前提過門口有個鐵絲網屏風?其實是一個四面圍着,長方形的網。如果你和我們一樣,開了一支有水松塞的酒,就可以玩cork wishing。只要把願望寫在水松塞上,誠心祈求,然後拋進網內,願望就會成真 (冇FC, 心誠則靈吧)

What kind of steak restaurant does not sell wine? Yes, they are applying for a license but they are taking online and other bookings from customers without informing them that they should BYO if they want to enjoy wine etc with their steak.In addition, the staff are a bunch of young people who appear to have absolutely no supervision or training whatsoever. No surprise that they had no customers on a Saturday night.

Apart from that, it was a perfect evening.

They won’t survive in this HK economy-

聖誕將近,餐廳各出奇謀出了聖誕大餐。今日約了好友預早慶祝聖誕節,楝選了這間餐廳,有靚景,有美食。聖誕期間有限定午餐套餐,價錢約二百至三百,ok 抵啦!南瓜忌廉湯質感濃稠,味道濃厚,甜美,好應節曰氣氛。主菜是比目魚,份量不少,魚肉滑溜。有酸醃洋蒽和柚子汁伴吃,非常開胃。甜點是意大利tiramisu, 似朱古力慕絲多過tiramisu, 味道一般,有點失望。Mocha又比想像中稀,沒有朱古力的香,又是失望。

The size of the seasonal clams were massive, they were cooked with creamy white wine sauce which go so well with garlic bread. The dry aged 45 days “creekstone” rib-eye was cooked perfectly and the chicken risotto was very appetising.
