一進場便看見一個頗大的壽司吧檯,內有數名在認真工作的師傅。我們選擇了餐廳深處的四方枱。
My colleague and I had originally planned to have a bowl of noodle around the area. But after walking under the blazing sun for 15 minutes, we decided to go for something nearby. This new Japanese restaurant at Hotel CUE caught my eyes.
What is interesting about this restaurant is that it serves 3 completely different types of Japanese cuisines depending on which level you're at. The 1st floor serves Japanese style western food like pasta and cakes. The 2nd floor serves teppanyaki and the 3rd floor served sashimi. The 2nd floor seemed too extravagant for lunch and we weren't confident about the portion in the 1st floor. So by elimination we choose the 3rd floor. 看過餐牌後覺得午市定食比附近一帶的昂貴,當時沒有任何食評參考,但既然已深入虎穴,便決定放手一博。我點了鉄火丼,同事點了吞拿魚茸丼。
At first I was fairly hesitant as the lunch sets here were far more expensive than those in the area. But in for a penny, in for a pound. I ordered the tekka don set and my colleague ordered the minced tuna don (negitoro). 不一會,我的定食便到達。
先來薯仔沙律和味噌湯。弄得美味和有口感的薯仔沙律其實說難不難,但說易亦絕對不易。
關鍵是薯仔的種類,煮薯仔的溫度和時間。這個薯仔很爽口,很對辦。
味噌湯同樣正宗,溫度亦剛好。之前說過, 味噌湯和忌廉湯同樣不能煮得過熱, 否則會破壞味道和結構。
First came the potato salad and miso soup. A potato salad may look deceptively simple but there is a lot of technique behind it. The potato salad here was wonderful, the texture and temperature of the potato was just right. Just the right balance between smoothness and chunkiness.
The miso soup (not shown here) was also authentic. Similar to a cream soup, the key is not to overheat it. Otherwise the heat will completely destroy the flavour. 主角出場。一看覺得食材顏色和賣相對辦,但由於赤身是用了醬油漬的方式處理,所以只憑肉眼觀察不能作準(起碼我還未有這功力)。
My tekka don arrived after a short wait. Lovely presentation: 先吃一片赤身,溫度和口感剛好,不會過冷或暖。味道鮮美,亦有輕微優質醬油的甜味。這醬油漬赤身很讚。山葵這重要的細節亦很妥當, 是生磨的。
另一重點當然是米。這裡使用的日本米很不錯。有清新的米香,黏度和濕度剛剛好。令人滿意。
The akami was very fresh. It was slightly marinated in soy sauce hence there was a slightly sweet aftertaste. Still, the umami of the fish shone through nonetheless. The temperature was just right. The wasabi that came with the sashimi were freshly grated.
The Japanese rice was aromatic and flavourful. The texture of was just right.
I was very pleasantly surprised with my set. 咀刁的同事亦對他的吞拿魚茸丼感到非常滿意。
My picky colleague was also happy with his negitoro don set. 套餐連 甜品及飲品。埋單約$280再加一。不便宜但物有所值。
服務員的態度非常友善,環境舒適,雖然這裡是中環區的價錢,但食物質素高。物有所值。推介。
We concluded this lovely meal with some desserts and a cup of ice coffee.
The bill came down to about $280 per person plus service. Most certainly not cheap considering the area it was located in but it was worth it. The quality of the food was very good. Recommended.
