有人話on dining係michelin 1星,下? really? are you kidding me,唔通想做平價dd又想賺埋lunch,又驚影衰on dining果名所以改埋名叫le bistro?if thats the case, this tactic is too low grade, why app will accept this?

唯一好既係因為無人幫襯,夠靜,坐下飲野ok, lunch 就不必lar.

認真,我食過佢地其下upper modern bistro都好好,有種物有所值感覺,但今次我太太太失望了.

以 fine dining 餐廳定位,麵包籃唔合格。起初見到切片法式長麵包用絲絨袋盛載、牛油又用模具刻了「ON」的餐廳英文名字;雖然麵包款式有點普通,但其他的配搭又做得非常有心思,以為會有驚喜 ⋯⋯ 但麵包既不溫暖、外皮很硬、中心又不夠軟綿,普通一間稍為高級的西餐廳的麵包籃都要比這幾件好吃。

先送上餐牌上沒有的三款開胃小食,分別是鵝肝脆三文治芝士脆筒配熱情果芒果醬三文魚籽卷;全部細細件,甚講求廚師手藝。三文魚籽卷的賣相有點似迷你壽司,外表同樣是黑色,不過由紫菜變成了麵粉皮;白米飯就變成了芝士。由於實在太細件,濃烈的三文魚籽及芝士的味道都未能清楚細嚐。

三款開胃小食之中,芝士脆筒配熱情果芒果醬最為突出。先從脆筒底的尖端咬下去,細細個的芝士脆筒非常鬆化、兼有淡淡芝士鹹香。脆筒實在太細個,第二啖就已經是脆筒的頂端;由於填滿了熱情果芒果醬,酸、甜、香的熱帶水果味道掩蓋了芝士味,非常開胃醒神。

L’amuse bouche - Tuna Toro Tartare。とろ一直是最愛的刺身款式之一,但增加了一個微暖的醬汁,變成一個日法 fusion 菜色之後,個人而言不太懂得欣賞,とろ質素(尤其是切成 Tartare 將即使存在的缺點都掩閉了)無可挑剔,無筋膜、兼油脂甘香。

頭盤有兩款選擇,一個是雅枝竹 (Artichoke & Mache Salad, Mustard & Shaved Truffle),之前食過雅枝竹但不懂得欣賞;所以一齊揀了 Warm oysters, scallop tartare, truffle & lemon butter, Sago。一如菜式名字,新鮮生蠔加入了廚師自家調製的松露鮮檸牛油,然後連殻稍為加熱直至牛油呈半溶化狀態,最後放上一小撮紫菜絲。

高級餐廳所採用的生蠔質素當然無可置疑,雖然沒有說明品種,亦並非很大隻,但非常鮮甜、亦夠厚肉,屬於 creamy 質感,兼有淡淡海水鹹香。連殻加熱只是將生蠔的表面稍為烤熟,大約是三成熟的狀態,與生吃沒有太大分別;但配上松露鮮檸牛油,又有一點焗蠔的影子,可以說生吃及熟吃的優點集於一身。其實,單單這隻生蠔已經很美味,廚師還要加入帶子刺身他他,增加口感之外,鮮味倍添。

之後是 Pan fried Foie gras, Goose breast slice, Grapes, Salsify, Sauce Chateau-Chalon。墊底的就是 Salsify(婆羅門參)。孤陋寡聞,上網查證之後才知道原來 Salsify 是植物根部,別名西洋牛蒡,因為兩者外形及煮熟後的質感皆有點相似。據網頁資料,Salsify 煮熟後帶有蠔肉鮮味 ⋯⋯ 但真係食唔出,只係覺得質感軟身、咬落爽口、味道帶蔬菜的清甜。

還是其他三款食材更吸引。青提子去核剝皮,清甜多汁。鵝肝內𥚃軟滑,又完全沒有筋膜,每一啖接近入口即溶,鵝脂油香溢滿口腔;只是表面煎得雖然金黃,但稍嫌唔夠香脆。鵝胸肉是整塊煎香底面兩邊然後才切片,所以每片皆呈均勻淡紅色,並沒有任何煎過的痕跡,同法式煎鴨胸的烹調方法差不多。配合白酒(Chateau-Chalon) 調制而成的醬汁,肉味香濃,但不夠嫰滑,而且有些筋膜。

第二道主菜 Roasted Pigeon Gauthier, Eggplant, Berries, Black Garlic, Salmis sauce 的焦點除了去骨及胸腔骨殻的法國小乳鴿之外,當然是深褐色的 salmis sauce。法式禽類料理中,通常會去骨起肉烹調,或燒烤或煎或焗;剩下來的胸腔骨殻如果被壓榨成極濃稠的汁液,再隔渣調味煮成濃汁就是 salmis sauce,著名的血鴨就是 salmis sauce 的經典。

乳鴿大約七至八成熟,肉味香濃,肉質結實而柔軟,加上表皮煎得夠香口,比起前一道主菜鵝肝及鵝胸肉片好食。蘸滿同樣鴿味濃郁的 salmis sauce 簡直無可挑剔。

第四次黎係早已經係book第三次時book左。係17/5 下午大約2點左右將原本26/5改為25/5。

當25/5 晚到場,發現餐廳職員完全無寫低我改左25號。本人非常質疑餐廳既職員既工作態度。下午2點左右已經係過左午膳時間,點解會漏改時間。

之後果晚職員都有繼續帶我地入座,入到去完全唔係full。 serve 我地既係一個金黃色頭髮既法國女人。中途又好不辛地又係果個又高又瘦serve我地。超唔滿意係距伶食物出黎,放低,伶開碟既cover走左去,初初以為距只係放低個cover會再番黎。果時都覺得好奇怪,未試過去米芝蓮1-3星有咁既行為。等左一陣,完全5見距再番黎。見到距走左去第二張臺,先知道距唔會再番黎。當時當然不滿。金髮女waiter經過,同距講番,之後距同我地道歉。話會同個男waiter 講番。到下一道菜,又係果個男waiter 伶過黎。經過前一道菜經驗,距有解釋道菜內容同有道歉。不過距勁快講句對5住,就即刻走左。完全覺得距5係真心覺得有錯。

到最後甜品,明明book位果時講左係我老公生日。上甜品果時完全無生日快樂既字眼。之後即刻同果個女waiter講,距當時好難為情亦有道歉。之後再後補番個甜品同加左生日快樂。

總括第三次同第四次,不得不讚果個女waiter. 雖然5係距錯,但每次都會即刻道歉同做一d補救方法。 另一方面,不得不批評果個男(法國)waiter. 完全唔professional,工作態度無熱誠同差。唔知係因為距經驗不足,定係根本唔鍾意做緊既工作而唔上心。
廚師方面,希望距可以檢討下,下次煮野食要加倍留意,特別係檢查清楚有無切徹底清除龍蝦殼。

希望果位男waiter 會注意下自己工作態度,改善下對工作既熱誠

而食物方面,還可以。

經過呢兩次既差體驗,以後都唔會再去。亦會同朋友講。

適逢「香港餐廳週」,兩位大哥為咗要賀XO仔剛踏八百篇之喜,上週五晚就專登以信用卡訂咗間榮獲一星o既「ON Dining Kitchen & Lounge」,諗住慶祝一番。樓上西餐廳位於中環一幢頗新o既「安蘭街18號」食廈內。如果喺慣老蘭蒲,地點一啲都唔難搵。步出升降機門,左邊有個半開放式廚房,透明度都幾高。廚房旁邊為有高櫈坐o既酒吧區。佔用面積兩層o既餐店樓底都幾高吓,不過最令小肥不安o既就係落地玻璃窗長期打開,成晚都要食室外食客o既二手煙同雪茄,環境及衛生當堂大打折扣。三口子被安排入座半梳化式餐桌,望落就幾靚,但坐落就覺偏矮咗啲,用餐時要不斷就位,當真極不自在。每個座位面前都有餐巾、麵包刀、麵包碟、及餐廳為「香港餐廳週」特別設計o既菜譜。$598一位o既晚餐包有開胃小食、頭盤、主菜、甜品、咖啡或茶,其中頭盤及主菜都要三選一,另收加一服務費。為咗要影齊咁多幅相,三人終決定每人點一款。眼見單點一杯餐酒都要成$98,但配齊三杯香檳、紅酒、白酒則只需加$188,話明係慶祝會,當然係要飲得高興啲,要哂三杯啦!落好單,態度友善o既姐姐仔先送上雕有「ON」字o既牛油。XO仔唔係話想挑剔,只係如相所

。以細佬認知,試酒好似每枱只有一個人負責,而並非全枱人都試。為節省時間,哥哥見狀即示意佢一人試酒即可。

第二,小弟並非專業人士,對飲食文化及禮儀認識唔深,只係印象中去過o既星級食府及高級西餐廳大多都會係先為客人準備酒品,方才呈上食物。當關乎到配酒時,如果食物要反過來等待靚酒就會影響其新鮮度
,尤其係當大廚設計好白蘆筍忌廉汁要喺食客面前淋上,即代表淋上汁後要盡快享用吧?!

。意粉只屬微暖,咬落有啲偏硬,感覺就好似攤咗喺度好耐咁,唔夠新鮮。如相所示,碟上確真有細小o既龍蝦碎,但數量一隻手都已數得哂,真係好難推介親友黎食喎。。。

喺小弟心目中,有份參與「香港餐廳週」o既餐店大多都係有意為自己作出宣傳,以優惠價吸引貴客一嚐大廚主打菜式,展示一吓實力
。今年兩位大哥所選o既「ON Dining Kitchen & Lounge」雖標榜獲取一星榮譽,但無論係煙味濃厚o既環境,定係不甚協調o既餐飲流程,以至菜式質量及配搭都似乎未達識少少扮代表o既XO仔最低要求
,所謂之香港餐廳週優惠變相有啲似誠意欠奉兼偷工減料,個人覺得反而係造成反效果,當真衷心希望此篇喊評可讓餐店正視多方面o既問題。

另一個燉牛肉就一般,不過酸酸地嘅紅酒汁,配燉完仲係軟身嘅牛肉。都唔錯,但之前d 太好。相比下失色。

食完好滿足但唔包,跟住上甜品拼盤。估唔到咁多款式。不過我懶再打,仲之好味,估唔到都係出色。重點要high light - 蕉味嘅餅 同檸檬tart 。 有別於出面食到嘅甜品

總結:整體性美味,一星實至名歸!

我果日食咗:
Starter: Egg ravioli

Egg ravioli 做得好好,dressing 同配料(龍蝦、bb洋蔥)都同隻半熟日本蛋夾得好好,可惜有個失手位就係D提子乾🤦🏻‍♀️廚師用咗太多/太耐苦酒醃製,令到提子乾太苦,破壞咗整體嘅協調,我分返晒出黎食就ok.

今次嚟唔係食ON Dining Kitchen & Lounge,而係食呢間餐廳29樓嘅期間限定Le Bistro At On,menu比較平啲😉雖然話係比On Dining”平啲”,但價錢都絕對唔平😅先來一個Egg Ravioli,基本上都唔係一個餃嘅形狀,係有兩塊麵皮咁解,咖哩味唔係好strong,配啲juicy嘅菠蘿好易入口,味道ok,不過份量好少,幾啖食哂。Sicilian Cavatelli,呢個貝殼粉同平時嗰啲唔同,呢個厚身啲好煙靭,口感好好,龍蝦切到細細粒但都幾濃味,好食👍🏻半份烤雞,配左沙律同薯條,估唔到呢個份量又咁多😮沙律同薯條都係standard野,冇咩好挑剔,個烤雞就睇下咩部位,雞腿同雞胸肉質係好大分別,雞腿幾滑但雞胸勁嚡。食頭幾啖都覺得幾好,但食到近骨嘅位會食到有雪味,香草落得勁重手都食到有雪味,以呢個價錢嚟講係幾失望🤦🏻‍♀️個人認為唔係好值,價錢真係唔平,份量唔多,味道同擺盤亦同一般西餐廳無異,服務係幾好,不過可能要真係去樓下28樓食貴嗰個menu先會feel到有分別?

半份烤雞,配左沙律同薯條,估唔到呢個份量又咁多😮沙律同薯條都係standard野,冇咩好挑剔,個烤雞就睇下咩部位,雞腿同雞胸肉質係好大分別,雞腿幾滑但雞胸勁嚡。食頭幾啖都覺得幾好,但食到近骨嘅位會食到有雪味,香草落得勁重手都食到有雪味,以呢個價錢嚟講係幾失望🤦🏻‍♀️

個人認為唔係好值,價錢真係唔平,份量唔多,味道同擺盤亦同一般西餐廳無異,服務係幾好,不過可能要真係去樓下28樓食貴嗰個menu先會feel到有分別?

有四款甜點:貝殼蛋糕,柚子味朱古力,橙味啫喱糖同咖啡味棉花糖。每一款味道都唔錯,尤其柚子味朱古力質感香滑,香甜嘅朱古力味之中有一陣清新嘅柚子芳香。但個人覺得佢哋嘅brunch的甜品set比較出色, 有八款唔同嘅迷你甜品可以選擇,每種都好獨特好好味,真叫人回味。


整體而言以信用卡優惠買一送一定價1288係超值嘅,但若果以原價1288一位就有少少貴啦,還是覺得食lunch或者brunch性價比比較高。
