湯底由蜆、魚同豬骨熬製而成,混入海鮮後令湯底相比純豬骨湯更清甜,加上少量白松露油亦令層次更豐富。叉燒肥瘦適中,惟切得較薄。麵質一般,份量偏少。優點在於冇落味精,食完唔會覺得好口渴。
The soup is made from clams, fish and pork. By adding seafood, the soup becomes sweeter than a bowl of pure pork soup. Few drops of white truffle oil enrich the layers. Cha Shu tastes soft with an adequate level of fat, but it's too thinly sliced. The noodle is of average quality and the portion is quite small. Since no MSG is added, you won't feel thirsty after having this bowl of ramen.

整體上與貝汁鹽味拉麵類似,湯底會鹹少少,但仍品嘗到蜆嘅鮮味。另外,一旁亦伴上牛肝菌粉同牛肝菌油,同拉麵一同品嘗味道不錯。
Overall, this is quite similar to the Shio Hamaguri Soup Ramen, except this is slightly saltier. In addition, it is served with porcini flakes and porcini oil, which tastes delectable together with ramen.

個人比較喜歡貝汁鹽味拉麵,因為相對比較清新 。我不太喜歡太濃烈嘅味道 ,然而貝汁醬油拉麵也是頗出色的 ,吃得出湯頭的鮮味, 如果清淡不少少會更理想。

叉燒比較簿,好吃是好吃,有點 意猶未盡。
做得來說質素也不錯 ,不過價錢是有點貴, 也許試過便算了。

至於服務方面
如果佢係摘星餐廳嘅話
我就覺得服務水平真係要再提升吓

碗麵到咗之後我哋發現得一對筷子
咁當然就要同侍應哥哥們拎多對啦
但係可能因為就落場嘅關係
大家都忙於做後勤嘅工作
叫咗兩次都冇人理我哋
最後係一個坐咗係一邊做緊文書工作嘅侍應哥哥見冇人理我哋先至去拎多對筷子俾我哋
而佢拎對筷子俾我哋嘅時候好刻意望左張枱一個圈
好似好奇怪點解我哋要攞多對筷子咁樣😐
唔使望啦
因為從來就只係得一對筷子😂
但有2個人同2碗麵😅
如果帶位嗰個經理或者擺低兩杯水嗰個同事夠細心嘅話
就唔會出現呢一個尷尬情況了

日本拎到一星米芝蓮既過江龍拉麵店,可能我係佢臨落場果陣, 唔駛等好耐,5分鐘已經有位。入到去,最難忘係個店員服務好好,會同我介紹番d食物,最後簡左人氣之選既貝汁鹽味拉麵+一份餃子。個拉麵湯底一流,濃而不膩,有蜆同魚既鮮甜 ,配合豬骨既香味,3種味混合埋無搶味之餘仲非常合襯,加上少少既牛肝菌醬,令整體味道更有層次。而肉方面,2塊不同既肉各有特色,三層肉同埋慢煮叉燒口感上都係截然不同,三層肉偏鬆軟,叉燒偏味濃,係唔錯既配搭。麵身偏幼,我個人不太喜歡,但掛湯能力一流 ,可以混合美味既湯底。餃子煎得不錯,但味道唔算特別。整體黎講服務同環境都幾好,而拉麵既湯底係美味,但價錢方面偏貴,如果喜歡鮮甜味湯底既朋友可以試試。

個人好鍾意食蜆,所以知道佢係蜆湯之後,就點都要嚟試吓,叫咗個醬油拉麵,個湯底其實幾好味,但個麵唔掛湯,而且份量太少,味道一般,男朋友兩三啖就食完,而作為女仔都覺得食完唔飽,於是我哋又叫咗個叉燒飯,結果反而係個飯幾出色,比起個拉麵更值得食,重點係佢個叉燒好香,而且個糖心蛋都好好味。總結性價比唔高。

見好多人話覺得碗嘢太鹹 我食得鹹又覺得還好
佢個問題係在於食到一半你會開始食唔到鮮味 得翻鹹味
雖然配上牛肝菌醬 松露油同煙肉碎之後係多咗層次同口感 但其實牛肝菌醬又輕微蓋過咗個湯底
拉麵話係自家製 但覺得完全冇麥香味 亦都冇咩口感可言
最後有兩塊薄切切嘅叉燒 幾入口即溶嘅 但你唔好再薄啲🐒
我係成碗食得曬嘅 唔會話難食 但真係又貴又普通...

The broth was quite salty and oily, and had none of that refreshing sweet briny seafood flavour I was expecting. 個溏心蛋亦都好高質,生熟度岩岩好,難得既係一啲都唔會太咸但係又食到濃濃既醬油味。相比起其他元素,叉燒既質素就差少少,雖然唔乾唔鞋,但係偏瘦,而且切得好薄,食落平平無奇,但係食得出有用醬油調味,唔係普通白烚叉燒。

💡P.S. 關於哩間餐廳,網上既評價好兩極,哩度既拉麵同一般香港食到既拉麵好唔同,我自己就幾鍾意哩種清澈又鮮甜既味道,但係對於一啲偏好湯頭濃厚、口味濃郁既人黎講可能未必接受到,所以如果大家有興趣試哩間可以不妨睇多幾個review先。另外,雖然間店推薦貝汁醬油拉麵,但係我覺得鹽味會比醬油味更加食得出蜆味既鮮甜,哩點大家可以參考下😉

之前睇到IG介紹呢間米芝蓮一星餐廳,趁放假就黎一試究竟。我同朋友點左必試兩款米芝蓮星級推介:貝汁醬油拉麵和貝汁鹽味拉麵。貝汁醬油拉麵($128)未吃之前已嗅到黑松露香,趁熱喝一口湯,立刻吃到濃郁的蜆肉鮮味,加上松露菌香非常提鮮。這種湯底有別於一般豬骨湯麵及蝦湯的濃郁厚重感,蜆肉湯底喝起來十分清爽,喜愛海鮮的話必要一試。貝汁盬味拉面($128)鹽味拉麵則會較清,能喝到有白松露油的香氣,拉面上亦有香草及煙肉碎點綴。我個人比較喜歡盬味,因為味道較多元化而且松露香更重。雖然價錢偏貴,但招牌「黃金湯底」跟市面上豚骨拉面很大對比,絕對值回票值價!
