我發覺我個lunch set 好似有幾塊Salami 火腿🐷,為淡淡嘅口味再帶點一點鹹嘅衝擊,將成個味道提升。
最後我嘅新嘗試~小豆蔻奶,淡淡嘅豆蔻香融入咗蜜糖,雲呢拿同奶,為依個寒冷嘅天氣帶來點點溫暖😌

🔊 對我而言,談風🆚再說,係我第一間係香港覺得好嘅cafe,佢地對生活嘅態度,對自己嘅要求,其實去過嘅都會慢慢感受到!由餐廳每一個擺設,懷舊嘅家具,回憶中嘅味道,至食材嘅用心!就算面臨即將結業,佢地仍抱有尊嚴同敬業嘅態度去推出新菜式,去認真對待,佢地嘅堅持和認真係我係餐廳少見到嘅⋯有人可能會覺得價錢稍貴,但我覺得值!當然見人見智)我期待著談風🆚再說回歸嘅一天✨

來過談風好幾次,每次都有不同的特色菜色,被其創意吸引,不過有很久沒來,從它的 facebook page 得知餐廳暫定營業至2月底,晴天霹靂,立刻預約於結業前來一趟。於工廈開設的餐廳何其多,但大部分都是室內修飾得有特色,談風則有大量窗,除可以看見附近的工廠大廈,還見到較遠的megabox,白天來特別寫意。先來的麵包,又香又鬆軟,不用塗牛油已經夠味。選了意粉及主菜各一。南瓜茸意粉顧名思義以南瓜茸做 sauce, 還有許多的真姬菇及芝士碎,再加上流心蛋,賣相豐富。把所有食物拌勻,味道出奇的相配,以南瓜茸取代忌廉醬,多了清甜,少了飽滯,但口感依然不失厚滑,是清新版的卡邦尼意粉,有驚喜。另一道鯖魚,魚質本身普通,不過煎得香脆,配以蕃茄煮的羽衣甘藍及新薯,出色的烹調技巧挽回不少分數。欣賞這裡的樂隊為興趣所付出的努力,亦為談風的暫別而可惜,希望之後有機會品嘗到他們的食物。

這間「談風VS再說」的咖啡店,一直都在我的Bucket List內。待在Bucket List一段時間也沒有機會試試,突然這天跟朋友打算在觀塘至牛頭角一帶找餐廳時,就給我想起了這間「談風VS再說」的咖啡店,這碰巧是時機的,正如一句:「It's about timing!」 「談風VS再說」由本地獨立樂隊tfvsjs所開,聽說咖啡店背後就是他們的Band房,他們的聚腳地,這個一舖二用的也相當合乎現在的香港吧。 咖啡店內採用簡約的桌子、椅子,放滿舊式的牌坊,咖啡店的傢具不算新淨,留下桌上的𠝹痕,是歲月留下的痕跡。牆身刻意帶點殘舊,沒有為牆塗上油漆,等待時間過去讓他自動剝落,感覺不但有點Raw也有點Vintage復古的風格。 餐牌主要以意國菜為多,看著餐單的菜式不禁有點擔心,似乎吃的都是不太飽肚的主菜,怎料pasta餐單就在餐飲部前面的小黑板上,可是我們已經下單了。 要應付一位揀飲擇食的朋友絕對不易,用刪去法已經剩下廖廖可數幾款可以吃的菜式,而這款炒魷魚就是其中一款。炒魷魚有點中式的感覺,可能是媽媽常煮的原因,當中跟芥蘭和粟米餅混在一起。 比較特別的是加入了牛油果醬,把味道額外多加一份小清新

話說如此,我也因為看漏了Pasta餐牌的,所以沒有點一些較為飽肚的菜式。我覺得環境和氣氛是很好的,可是在菜色方面最好也是份量多一點,在餐牌上多一點指引,例如展出該菜式的相片,那讓客人可以在點菜程序較方便! 暫時試過一遍,食物沒有什麼特別,對我來說份量較少反而是致命傷。呼應著,It's about timing,希望下次光顧時可以有一試難忘的感覺。

想借用西芹炒雞柳這黃金配搭吧,可惜青色的西芹忌廉汁是沒有丁點西芹味的,叫炒雞柳拌白汁比較合適。
雞柳呢,附近有茶餐廳的比他們炒得更好,加上看似call貨的polenta cake和64C蛋 (其實現在的廚房, 溫泉蛋應比煎蛋好處理得多),看看有多誠意和"食水"。吃飽也沒滿足感
另外試了朋友的豬腩肉,質素和雞差不多,連腩位都煮得鞋鞋的,又是沒味的甘荀汁,整體吃起來只有煙肉味

不得不承認這兩個甜品的plating是不錯的,可惜食味真的平平,除了朱古力雪糕,其他的都是沒甚味道的脆脆,竹炭蛋糕,尤其嚴重,竹炭本身沒味,難度連蛋糕味也浮化了?

 Flat White: I guess this is could be one of the best flat white's i have ever had! 
 The espresso bean had a super strong coffee flavour with a taste of nutty flavour to it...which was super good! 
 and their milk foam was so smooth blends so well with the coffee.
 Matcha Latte: Supposingly this was their signature drinks, so i gotta try it. Turns out the drink is well known for it's strong taste of green tea. The latte had a very nice milk foam just like the flat white, but also it carrys a sweet green tea latte within. 
 i thought it might be a little too sweet. Although the sweetness, their strong green tea flavours are outbursting but again too much sweetness.

 Pumpkin Pasta: This was super good! 
 The pasta was a spaghetti like flat pasta, came with a lot of mushrooms with a pumpkin puree on the bottom. Also there was a semi cooked egg on top, and first thing is breaking it up and mixing it all together. The flavour overall is rather sweet from the pumpkin, and its rather strong after taste too.
 with the egg mixed in making it to be smoother. Mushrooms seasoned and had a mild taste which was good in this case, not taking away the flavours away.

Sauteed Clams: There were a lot of clams, and the taste was a little bit salty yet appetizing. 2 highlights of this dish, it had dried tomato skins on top which was super delicious. 
 and also the bottom came with a grey sauce which i cannot identify, but it tasted really good. The whole salty yet appetizing flavours come from that sauce. 


Generally this place is a really cool place, the design was very industrial which i liked, but was also really chilled brings back a lot of memories during our childhood. Aside from the location, i would like to return to try more of their dish as their menu changes.

下方中及左的是薯團,口感頗特別,但古友說不夠從前QQ
上面有2張啡色紙,古友以為是乳豬皮(其實這concept 也不錯喲,食肆看到也可看參考),但吃下卻是苦苦燒焦的味道,而芝麻糊般顏色的醬汁不知是否蜆肉所煮成的醬汁呢?杰杰的帶有點點腥味,沒有太欣賞。而古友所推介的薯團也真的廷特別,有咬口卻不是太QQ, 也有少少粉粉的,還是值的一試的味道和口感。
價錢:$128(有點貴,但造型是加分的亮點)
份量:目測有點細小,但吃下也是剛好的,醬汁和薯團也幾飽肚
環境也是不錯,但可能比較多人,冷氣是有點不足,有點焗促。
但2人世界或一大伙兒來Gathering 也不錯的選擇!

大部份樓上形式的cafe食肆都是賣環境裝修,提供一個舒適的空間予客人,跟朋友有好相聚交誼時間。而食物質素好與否則是Bonus~所以<<談風:VS :再說>>真的是有驚喜有BONUS 的一頓!

淺色的沙律,未吃已予人一陣清新。 青瓜切成長薄片然後捲起,一圈一圈的,配薄得半透明的沙葛,撒上乾紅菜頭碎,充滿田園氣息。爽口的青瓜和沙葛,一個索索聲,一個嚓嚓響,在口裡奏起春天的交響曲。放在下面的蟹肉份量不少,四個人分享都很足夠。浸得濕濕的,汁帶鮮味和微酸,拌餐牌說是忌廉芝士我卻認為是沙律醬的白汁醬,清新又好吃。紅菜頭乾韌韌的,吃不到味道。

Beet Root Latte
本打算點green tea latte,卻無意中見到遠處的黑板上,寫著beet root latte。在綠茶、紫薯大行其道的年代,紅菜頭的出現實在新鮮感十足。淺粉紅的泡泡,漂亮的拉花,叫少女心動。可惜,奶味濃郁的咖啡並沒有紅菜頭味。

友人信了我推介上次試過的Cardamon + Honey + Milk + Vanilla,覺得幾特別,奶配蜜糖總不會錯,結果太甜。破不到「第一次試總是最美味最驚喜」的定律。

Pan Fried Pork Belly 煎豬腩肉
Celeriac dice 西芹頭粒, carrot juice 甘荀汁, savoy cabbage 皺皮椰菜, bacon 煙肉
切成兩大塊的豬腩肉,比之前一大舊的,吃起來更加方便。豬肉欠鮮味,也醃得欠入味,只有脂肪化成油脂時才稍為香口,吃完口裡留下一點空虛。不嚡不韌,還偶爾吃到爽硬的軟骨。豬肉欠味,沾點醬汁不就行了?甘荀汁雖然清甜,但很稀,豬肉吸收有限。反而伴椰菜絲不錯,鮮甜的甘荀加上微鹹的煙肉,要是椰菜絲別太腍就更佳。

Fregola Sadra 撒丁米
Spinach puree 菠菜茸, cauliflower 椰菜花, cheese 芝士
上個月的意大利之旅,學了煮fregola,被它介乎薏米和意粉之間,滑溜、煙韌的口感所吸引,可惜特地去了超市卻沒有買到。難得在這裡見到,當然要試試。

甫上枱,便被它的一片青綠懾住。青綠之中,是一粒一粒的fregola,上面放了微焦的椰菜花碎,幾片昆布脆片。不同層次的綠色,加點淺紅的點綴,撞一撞顏色,才使賣相完美。Fregola不腍,但跟意大利的地道出品相比,這個可以更煙韌。沾滿菠菜茸,但淡淡的菠菜並不明顯,反而是芝士味很濃。未放入口前,已留意到叉子邊吊著幾絲芝士,在空中飄下飄下,入口更是傳來濃郁的巴馬臣芝士香。喜歡芝士的,必會喜歡這道,相反,或者會嫌它蓋過菠菜的味。切成碎的椰菜花,跟fregola的形狀差不多。吃到清淡的椰菜花味,同樣以芝士襯托,時腍時爽。明明全都是一粒一粒的,卻各有不同口感。腍韌的紅色伴碟,吃不出是甚麼,沒甚味道。

Red Bell Pepper Braise Lamb Shoulder 紅椒燴羊肩
Red pepper puree 紅椒茸, warm tomato slice 暖蕃茄片, basil oil 羅勒油, spinach gnocchi 菠菜薯團
這道菜的焦點,論賣相抑或論味道,也必是紅椒茸。顏色鮮豔,濃稠如醬,味道卻十分清新,把紅椒的清甜發揮得淋漓盡致。羊肩肉嫩,一絲一絲的,沒有羊羶,不過不失欠驚喜,印象不深。墊在下面的菠菜gnocchi煙煙韌韌,表面煎過,微焦帶脆。不看顏色的話,應該說不出是菠菜味。

Sautéed Clam 炒蜆肉
Dry tomato 風乾蕃茄, green olive 青水㰓, chilli 辣椒, mint oil 薄荷油, gnocchi 薯團
再為它的醬汁讚嘆不已。淺灰色的醬汁,如紅椒茸般濃稠,換上濃郁無比的蘑菇香,配煙韌的gnocchi一流。Gnocchi稍大,咀嚼時間較長,讓人有太滯的感覺。蜆雖然細細粒,但炒得夠香,帶惹味的輕辣,伴風乾蕃茄絲都幾滋味。

說不上完美,每道菜都尚有改善空間,如某些配料中看不中吃,豬腩肉的汁跟肉未能合二為一。但絕對欣賞餐牌的創意無限,而且用料特別,配搭花心思。尤記得第一次造訪,除了被Carbonara深深吸引,還有墊在配和式醬汁的豬腩肉之下的薏米。就如這次的fregola和紅菜頭咖啡一樣,選材很廣,有新鮮感。充滿夏日氣息的擺碟,在窗外射進來的日光襯托下,有種沐浴於陽光中,在郊外遊玩的青春。
