最近工作忙碌係時候要對自己好D食番一餐好嘅,今晚特意訂了Tosca義大利餐廳是米芝蓮一星餐廳, 餐廳為於 Ritz-Carlton 酒店 102/F 可以睇到維景的晚景,樓頂高掛著一盞高貴的水晶燈環境既浪漫又有情調。Dinner Meun以白蘆筍做主題有4個 course 或者 5 個 course選擇,我們選了4個 course都已經食得很滿足。餐前來三款小食和外脆內軟的麵包,餐前的一個點綴,不錯。頭盤白蘆筍 北海道海膽 蕃茄 時令歐洲白蘆筍非常爽口,海膽鮮甜配上蕃茄mix 醫汁真是令人開胃醒神。白蘆筍飯 烏魚子 西西里甜椒份量剛剛好而飯質口感軟硬適中,薄薄兩片烏魚子真是不夠喉,正所謂小食多滋味。紅石斑魚 青露筍 乾蔥 蒔蘿賣相已經好有藝術感,紅石斑魚煎得外脆肉質鮮味嫩滑。食到最後甜品都令人好滿意白蘆筍 大黃 杏仁奶凍 青蘋果雪葩青蘋果雪葩好清新,杏仁奶凍配上白蘆筍真的很夾。

老公加咗$120升級左前菜Hamachi Fillet with Fava Beans with Salmoriglio, Mint, Tomato and Kaluga Caviar,似係好新鮮生醃製嘅魚上面,加咗黑魚子,有少少蕃茄粒,綠豆類同新鮮嘅調味菜。雖然材料比較高級,魚醃製得不錯,魚子可能我不太懂得欣賞,沒有覺得太特別,反而調味菜帶有草青味,味道上感覺冇第一個水牛芝士蕃茄咁滿足。

接下來就係兩款第一主菜, 第一款Busiate Trapanesi Aglio e Olio with Trio of Bottarga and White Fish Belly,就係長嘅面條,面的質地有啲煙韌,一片片嘅係魚BB, 所以係幾咸, 要整細d同麵條送入口,味道主要靠魚BB調起。

去到甜品環節,一向食Tiramisu嘅我受到餐廳嘅推介都叫咗一個Traditional Tiramisù with Coffee Granita,果然好驚喜, 真係一定要叫!一啲都唔漏, 唔會覺得好似食咗Pat 溶溶地嘅嘢入口,隔離仲有一個咖啡味嘅沙冰可以一齊入口,特別又好味!

甜品真的讓我印象深刻,說真的,我很害怕吃到一些很膩的,但我很驚訝的他們選用了比較輕盈的起司,而底部的手指餅亦改用自家製的咖啡餅乾。這個比較創新的吃法,相信其他人就會喜歡它。

另外選擇了wine pairing 由餐前酒甜品環節,總共嘗試了8款酒,包括3款白酒,氣泡酒,紅酒,甜酒,威士忌,焙茶酒。

這裏每一樣員工都很有禮貌,而負責服務我的待酒師和員工更在每一道菜完畢後,詢問我的意見。每當我問有關菜式的問題時,他都能一一回答。幸好遇上一位健談的待酒師(Leo),他很願意分享一些酒的知識,更會了解我的喜好而讓我品嚐不同類型的酒。他知道我比較喜歡日本的酒, 所以在我離開前再讓我嘗一杯日本的焙茶酒和威士忌。他所選擇的威士忌有別於一般日本的威士忌,他解釋這間廠商沿用蘇格蘭的木桶釀製。而令我最深刻的是甜酒,這款甜酒不像市面的充斥着藥水味,而是有淡淡的堅果味,那種清甜,真的讓我很喜愛。

主廚在尾段環節會向每位客人徵詢意見和感謝客人的到來。而這位主廚很樂意分享他的煮食經驗,我大膽的問他如何製意大利飯和carbonara,他真的很有耐性跟我慢慢解釋。
只要勇敢地向主廚或知識豐富的員工請教,除了能品嚐美食外,也可獲益匪淺。

繼續貫徹海鮮嘅特色,醬汁用上鱸魚、鯛魚、多寶魚製成,仲混入埋台灣嘅烏魚子,原來係因為大廚曾經喺台灣逗留過兩、三年😯!
醬汁本身帶有少少魚嘅鮮味,在細細咬一啖鹹香烏魚子,真係好夾,好食😋!
另外仲有少少鮮魚碎,令到成件事更加鮮甜。
值得一題係我好鍾意佢哋個意大利粉,果然係一星期意大利餐廳,嗰種粗幼軟硬拿捏得剛剛好,有少少咬口但又唔會過硬,係成餐最難忘嘅一道菜。

而呢道常有嘅菜式唔需要加錢,反而更獨特同出色,聽講亦係佢哋嘅招牌菜🔥。
用上蒸煮嘅方法,外國菜式較少見,而且外國廚師通常都冇咁善於蒸魚,但呢道魚都算蒸得剛剛好,只係本身魚質都係偏紮實。
跟上大廚調配嘅馬塔羅塔魚湯,少少似蕃茄羅宋湯咁,酸酸甜甜。最正係佢側面嘅脆餅,點一點啲湯嚟食超好味😋。

終於有一道係有返少少情人節氣氛,覺得今餐甜品比起鹹食出色😆。
心形甜品,層次豐富。先有表面半透明嘅香脆紅莓玻璃糖皮,內裏包含着酸度高嘅黑加倫子醬、香滑無假味嘅杏仁忌廉,香脆牛油味重嘅餅乾,青檸皮、蛋糕底、白朱古力、士多啤梨sorbet、紅莓醬。
成件甜品真係幾酸但又幾refreshing,成完咁多主菜後作結尾幾好🥰。

💞整體來講
意大利人一向出名對食物有執着,而且較少改變既有嘅煮法,喺呢度都有類似嘅感覺。所有菜式都係好食,但都係較為常接觸到嘅味道,未有太大驚喜,不過係較為穩陣嘅選擇。至於環境、服務就當然都好高質,喺度食飯居高臨下,望住香港嘅景色的確幾浪漫。
P.S. 明明我哋起碼嗌咗四道要加錢嘅餸,但唔知點解最後淨係計左$160同埋$220嗰兩道😯 (希望佢哋而家睇唔會計返我錢啦😂)

We had Burrata Cheese and Squid for our appetisers. I like the cheese one because it’s so refreshing.
For the pasta, I am not a seafood lover as I hate the smell of fish but I do really love the Sicilian red shrimp. It’s flavorful! We chose Red star Grouper and Iberian Presa for our main courses. The meat and the sauce were rich but not greasy.
The dessert!! We had the pumpkin cake with rum ice cream which is definitely a must try. And we got an extra dessert for my birthday!! It’s totally a lovely surprise. We would like to thank people who served us. They are friendly and helpful.
We had an unforgettable moment there and we will definitely come back!!

其實萬萬估唔到,原來好戲在後頭,呢度嘅甜品真係驚為天人咁好食。我哋原本嗌咗呢度嘅推介tiramisu ,但係見到佢推住架cheese餐車經過,真係忍唔住要轉番做cheese platter ,可以喺咁多種芝士裏面揀四至五種,佢哋會細心介紹每種芝士嘅來源地同分別。而另一甜品cannoli 亦都真心推介,配上開心果碎,清新又有果仁香,而配角chocolate sorbet 亦都香濃幼滑。

✅Overall nice dining experience, good service with detailed description on each dish. Very comfy environment.

Went for dinner. They first put us on a table with one long sofa seat that I had to share with other diners. Whenever someone sitting on the sofa moved, I moved. It felt like being seasick on a boat. Already -10 points. Dunno why some Chinese waiters insisted on speaking in English. Managed to switch to a standalone table. Ordered 2 pastas (linguine with sea urchin and some Sicilian pasta with red prawns), turbot fish and Aveyron baby lamb. Pasta was ok; the Sicilian pasta might be a bit too al

Baby lamb was not as good as Bombana’s. Highlight of the nite was probably the range of 5 olive oils to choose from.
